celebrating an occasion. had 5pax family dinner at ginzawa at palais renaissance on 8.11.2015. ^^

this the same restaurant as sushi kuu previously. there is no change of ownership so it is just a rebranding. 🙂

i called & they told me that they serve the donburi items like chirashi don, bara chirashi don, wagyu don etc on the set lunch menu for dinner, at the same price but w/o the set, just the donburi + soup.

there was also a S$130 set menu for 2 & omakase priced at S$80, S$120 etc.

we decided not to take the set or omakase, and ordered 2 chirashi don, 2 wagyu don & a A5 saga wagyu sukiyaki.

the S$45 chirashi don looked impressive as in the photos on the menu (& above photos). there was a botan ebi, a bit of uni, akami? (lean toro), tai, maguro, hamachi, salmon belly, hotate, tamago on a huge portion of sushi rice.

first look was great but in actual fact the sashimi cuts & quantity were very much inferior & pales in comparison to those at mikuni & kuriya dining.

mikuni’s chirashi don, also S$45 after 50% feed at raffles discounts, by comparison has 2 chutoro,heaps more uni, & 2 pieces for every quality sashimi cut.

& kuriya dining’s S$62 chirashi sushi zen set, a much larger set than mikuni’s is also top quality with more than double what ginzawa served.

the wagyu for the wagyu don was tasty but the sauce was superfluous & only serve to kill the taste.

& the slices were really thin. it was doable, but nothing great at S$50. i would take the S$88 uni ikura wagyu don at kuriya dining anytime c/w this.

the S$50 A5 saga wagyu sukiyaki was very poor (completely thumbs down!). beef was overcooked, very small serving & thin, hardly much to eat.

just compare this with mikuni’s kagoshima wagyu sukiyaki konabe. that is S$24 after 50% feed at raffles discounts, less than 1/2 the price of ginzawa! & beef are thick slices & sweet & tasty, the beef & the entire dish & experience is miles ahead of ginzawa.

overall, i would say that ginzawa’s chirashi don was one of the better ones, but totally pales by comparison with mikuni & kuriya dining.

the wagyu don was ok but not worth eating at S$50. i must go try sumiya’s S$30 wagyu don lunch set but i suspect it would be much better.

as for the S$50 wagyu sukiyaki, forget about it.

went with wife to watch the movie “spectre” at gv grand on 7.11.2015.

quite boring really…the opposite of “the intern”, no engagement, no development, no tension/expectations/relationships/chemistry among the cardboard characters..no anything…

like i was telling a friend on facebook, as boring as terminator or a 1970s chinese kungfu movie…fight fight fight fight fight..nothing in between…

after movie, we a bit “sian” to go zion road food centre, anyway not much to eat there also (don’t think much of zion road char kuay teow even though it is PM’s favourite), & didn’t feel like driving elsewhere for makan, so went down one floor to crystal jade lamian xioalongbao for a quick bite…luckily just waited 5mins at around 9pm.

somehow this evening the same dishes didn’t seem as shiok as that at hollandv.

the briskets were quite tasty, but both the briskets & overall taste of the beef brisket noodles 牛腩面 was NOT as good as that at SICC, i think quite a bit NOT as good, not just marginally.

also both this beef brisket noodles 牛腩面 & SICC’s & in fact all the beef brisket noodles in singapore do not use the 崩沙腩 which i love in hong kong’s 牛腩面, the belly cuts they used in the hong kong beef brisket noodles.

they have layers of collagen 胶 made them very flavourful & gelatinous when braised.

these were the cut of briskets which my friend bought in chinatown market, which i also did after learning from her.

she brought her fabulous 清汤牛腩 to my place for a for a homecooked 16pax 17-course dinner on 26.8.2015.^^

here it was ok too but somehow this evening like not as shiok as expected.

you can see the soup inside the xiaolongbao小笼包. it was very tasty & flavourful as always, the skin thin & the fillings very tasty.

we ordered a second tray of xiaolongbao小笼包.

dinner was S$34nett for 2pax after DBS card 10% discounts.

somehow the food this evening just did not feel so shiok, don’t know why.

i really enjoyed the movie. super! 🙂

robert de niro acting was just incredible. so was anne hathaway.

& such natural flow story telling, everyday humour, human story.

we can talk about friendship & loyalty & empathy & calming presence, but it is just that, human beings sharing, being there for each other, and just so being with the times, new economy business, 70 yr old retiree…

i had previously –

& it was good leh.

this is a very professional planned instant dish delivery, very quick turnover & consistent good standard.

deep-fried chicken pieces were pro-done, fried egg too.

the instant “chef” put the chicken pieces into the hot oil, the helper placed the rice, fried egg & some pickles on the aluminium serving wok on a tray for easy handling. then the chef fried the heated deep-fried chicken pieces with the salted egg sauce, probably took 1 min & then placed on top of the rice. voila!

S$6.50 was ok. quite enjoyable! ^^

anyhow i had ice kacangsalted egg chicken rice from the drink stall & my friend had iced cheng teng. S$2.80 ea but it was good. my ice kacang, great taste, good ingredients.

it was easy to do –

soak 1/2 packet of salted vegetables & cut into thin slices

fry 1/2 cut chilli padi, 1.5 tbsp spicy bean paste & sliced ginger till fragrant

add sting ray (500g diced) to wok & stir-fry to coat the flavourful sauce

add 1.5cup chicken (or vegetable stock), cover & reduce (about 10mins)

it is important to reduce the sauce to make the flavours intense & the sting ray very tasty. 🙂

the sting ray turned out pretty good.

almost the same as ye shanghai‘s spicy sting ray dish. ^^

i dropped by 6th avenue around 4pm to take a late lunch today on 4.11.2015.

was deciding whether to have the nice roast chicken rice which i like or to try the duck noodles.

this tao xiang kitchen had been around for a while & previously occupied the front stall but now have taken up the stall to the back of the coffeeshop.

it is supposedly helmed by a hong kong chef. i used to take the roast duck a few times many years back but have always found the stallholder & servers very abrasive & unfriendly, basically the nazi chef type. at the time, i thought the roast duck was pretty good & flavourful.

so today i decided to try the roast duck again, since i have not done for so long.

the stall holder was not very friendly but still tolerable today. but it’s the food that counted.

however i found it quite poor today. the drumsticks noodles was S$7. at S$5.50 i would find it very mediocre. at S$7 i think it was quite below par.

there was roast & duck flavours but it was just very average for me.

i think by comparison the roast duck at joyful palace 怡乐坊@ food loft clementi was just so much better! and still cheaper.

i tossed the noodles. noodles was loose & qq. chilli was good. both the noodles with the sauce & the chilli were slight salty.

overall, it was a expensive & forgettable S$7 roast duck drumstick noodles. don’t think i will try this stall again.

there is though a new zi char stall there that occupies the prvious tao xiang front stall location straddling to stall units that served fish head steamboat & crab beehoon (both the thick beehoon soup & the thin wet fried beehoon styles). i would want to try that.

i wanted to try the hua ting 华厅 SG50 6-course lunch (not shy la..haha!) so suggested the place. ^^

i have not been to hua ting maybe >10yrs? not sure.

used to come here when i was having the millenium & copthorne’s ala carte card which gives 50% discounts for 2pax. liked the braised goose especially but that was like for a very short window & never had that since.

so we mostly had braised duck & also the lobster noodles. but like i was telling my friend, lobster noodles now we can have it anywhere, & 2 of the best for me are tunglok signature & xin cuisine. 🙂

i felt it was a bit below par for a hua ting standard restaurant.

c/w what i had at xin cuisine recently, at least that was fragrant, tasty & chokeful of ingredients as well.

even the colour & look were much better. 🙂

i always like sea perch. the taste & texture is like cod. this one sat on an emarld tofu with minced pork sauce.

photo looks ok, and overall the taste of both the sea perch & the minced pork tofu were good too.

it was a good restaurant standard. we both thought that the combination was not the best matching – a quite robust minced pork tofu competing with a sea perch.

c/w min jiang’s steamed sea perch, simple & dignified, somehow hua ting’s version look a bit like food from past decades.

overall, it was a very enjoyable lunch, catching up with my friend about his business & family.

food was pretty good i supposed considering it’s a S$50pax 6-course set with sea perch & lamb, but really far below the expectations i had for a restaurant like hua ting. so either the restaurant standard has fallen far behind or they are not giving representative dishes for the set (which defeats the purpose of having a promo).

there’s a lot of buzz in the media & among friends lately about a japanese family who started a bakchormee mee stall at clementi west.

one friend rounded the rest of us up so today 9 of us descended on ah hoe meepok at blk 710, clementi west street 2 on 2.11.2015. ^^

some of us were there at 11.30am. there was no queue yet. nearer 12pm we had about 6pax & started queueing. there were then about 4 to 5 persons in the queue. but shortly after the queue was 10+ long and continued so.

singaporeans vote with their feet. as one of the reviewers johorkaki said, if the food were not good, the hype would soon fixxle out.

meepok was qq, texture was very good. the chilli & sauce coated the noodles well & taste was good.

there were loads of ingredients, i had 5 pork balls, 3 slices of shellfish, sliced pork, mushrooms &minced pork. there was no liver, or tipoh (the dried flatfish).

for me though, it could do with a bit more vinegar, and the chilli sauce though tasty, was not spicy & did not have the kick.

there was some garlic vinegar sauce i think, which a friend who was here for the 3rd time now said it was good, so i added that to the noodles & tossed.

i think it was similar to what we added to the ramen at Ichiran 一蘭 in fukuoka. it was nice, but somehow i still prefer the more fragrant black vinegar.

i certainly like this bakchormee here & will take it again, but it was not compelling or must have variety for me.

i would prefer-

  1. tai hwa bakchormee at crawford lane.
  2. lai heng bakchormee at changi T3 B2 kopitiam
  3. & also the 6th avenue jalan tua kong meepok tar though that is a different fishball noodles style

bakchormee was good & we had a great time among old friends 9 of us.

it is not something though i would specially drive myself to come & eat alone. unlike say my favourite ah heng curry chicken noodles at hong lim food centre; or

the really good why eat har big prawn noodles.

wife went to chinatown & bought some jui kueh today on 1.11.2015, very nice ones, i ate quite a few. ^^

didn’t take lunch, but had some fruits.

wife cooked wanton & i had a few for dinner, felt that i should eat something so cooked a packet of instant noodles.

it’s one of the cheap packets like 5 for S$2+, i think. 🙂

quite amazing these days they can produce really quite good instant noodles.

  1. instant chashu mala ramen (麻辣快熟面)
  2. nissin kyushu black instant japanese ramen
  3. mykuali’s penang white curry noodles

these are the more expensive ones, like S$4 for 5packets. i also like the cheap myojo chicken abalone soup noodles, which are also

had a most delightful dinner with wife @ disgruntled chef ang siang hill on 29.10.2015. ^^

we both liked the duck breast best but other dishes (except for the lollipop & dessert) were just as delicious & marvelous. 🙂

this was a 100gourmet dinner citibank promotion where overseas award winning chefs paired with 2 top singapore restaurants every month to deliver a 6-course dinner at S$100++

for this evening it was chef daniel sia of disgruntled chef & chef joris bijdendijk of restaurant RIJKS®

both lobster & chicken were superb. chicken had a very crispy skin. something i cannot make. & such a wonderful sauce.

& the scallops were excellent. colour & presentation was beautiful of course, and Chef Joris Bijdendijk, Executive Chef at the restaurant RIJKS® in the world renowned Rijksmuseum in Amsterdam, personally drizzled the oil over the dish at our table.

scallops were sashimi grade & the inside were still raw. one of the tastiest scallops i have take! bite, taste, everything! ^^

i thought it was ok, tasty enough. but it’s like glorified fast food? nothing special or distinctive to me other than trying to look different.

the cod was a return of another wonderful dish.

server warned us that some diners feedback that the nori butter made the dish quite salty & they were still adjusting the taste.

for us, the seaweed butter did give a distinctive salty taste but nothing overpowering & in fact flavoured the dish rather well, & the shellfish bits (cockles??) added great bite to a delicious sauce. the cod tasted a bit firmer, like a monkfish texture, anyway it was good.

& what a beautifully plated dish! 🙂

it reminded me of the excellent jaan’s hay roasted pigeon. that was quite long ago though, so this duck actually felt better.

the dessert was too ordinary to complement the excellent dishes, but still the mars mar thingy had a really nice chocolate & great texture. i am so so with the cream just took a little.

we have never been to disgruntled chef at dempsey or here at ang siang hill. i must say the service was excellent-polite, friendly, quite knowledgeable & attentive.

this was 1 of the best dinners i had for a while, except for the excellent japanese omakase at hachi. hachi is different cuisine, which we would prefer by comparison but it also cost a lot more.

it reminded me of the really sumptuous dinners & dining experience at jaan, which we do not go any more because it’s no longer offering feed at raffles discounts. presentation was delight & food was exquisite. jaan had 2 amuse bouche which were excellent PLUS a palate cleanser item, so total like 10-course.

for the price, i think this dinner at disgruntled chef was next to perfect.

today i went with a good friend to sumiya for lunch at 12.50pm on 30.10.2015. ^^ after that we walked over to orchard cineleisure to watch the movie “the martian”. 🙂

we ordered 2 “mixed bara kaisen don” set @ S$18.80 ea. we asked for sushi rice (there is a note on the menu to say the default is normal rice but you can ask for sushi rice with no charge).

it came with appetizer, salad, pickles, chawanmushi, miso soup & dessert.

most importantly, the chirashi don was very good. usually bara chirashi don uses small diced sashimi from leftover bits. this one here has larger cubes & the sashimi was really fresh & sweet. there was no expensive sashimi of course, just salmon, maguro & kajiki, with lots of ikura & tobiko, & avogado.

& the sushi rice was great too!

cannot ask more for a S$18.80 chirashi don set.

this feels almost like a joke..lol.^^

we had quite poor food for the price at chotto matte on 26.10.2015.

the kind of feeling where we felt not shiok enough, no point ordering more food, might as well go tapao char kuay teow from adam road food centre. 🙂

wife & i prefer hai kee’s char kuay teow, with its huge, plump, luscious “hum” or cockles

but we were not about to wait 45mins for it. so adam road would have ot do. anyway youngest daughter prefers adam road.

we ordered 2 packets, each S$3 plus S$1 extra cockles.

but cockles were so tiny, have to put on glasses to find them. still likes hai kee’s better la!

we were celebrating a family occasion on 26.10.2015, not sure why we ended up at chotto matte.

they have uob 15% discount & dbs 1 for 1 main course for dinner & lunch (limited to only 1 free main course for each table).

we were there at blair road about 7pm, but i could not find any parking, & ended up parking at the hdb carpark next to everton park. my daughter & her friend came later but managed to park along the blair road itself near chotto matte.

restuarant was tiny.  most of the recent reviews on hungrygowhere were poor, but mostly about the service. we had a chat with the male server & his attitude was actually quite good & helpful enough, but i think limited training & knowledge about the menu & the discount practice. ok la i guess.

we were expecting to try out some decent food first, and then order more.

but was disappointed enough to tapao 2 packets of char kuay teow from adam road food centre afterwards. no kidding…lol… sigh! 😦

it was dry, hard? i mean any normal pork would be a lot better than this in taste & texture, no need kurobuta!

just look at the iberico pork rack at foc. so flavourful, moist, marbled.

if foc’s is 9 or 10, chotto matte’s would be 1?? not sure 1 even if it is worse than normal pork.

must say though that the sashimi were all fresh, sweet & good. the sushi rice was not! there was 1 piece of chutoro, 2 good hotate, maguro, kampachi, kajiki etc.

c/w mikuni’s chirashi don, also S$45 after 50% feed at raffles discounts. well nothing to compare.

or with kuriya’s S$62 chirashi sushi gozen set. what’s there to compare right?

anyhow, after the few signature dishes that failed badly, we did not want to add any order.

the bill came to S$290 (including a S$95 bottle sake) after dbs 1 main course discounts. so less that it would be close to S$180nett for 5pax. may not be expensive on per pax basis but we did not order that much food & the standard was really poor for the price.

we went to adam road food centre afterwards & tapao 2 packets char kuay teow! 🙂

never come back again for me!

the seafood sweet & sour soup 酸辣汤 – S$9 was very good standard, fragrant & also lots of seafood ingredients.

i would say a very good soup except this kind of gluey soup & just a bit sweet (though it was ok for this type of soup) for me not really my preference.

at S$18 i am not sure i would order it again, the  lie tong 例汤 or the seafood sweet & sour soup 酸辣汤, at S$9 made a lot more sense. 🙂

this was really an excellent dish. the 梅菜was so flavourful.

i must really try to do a 梅菜 dish at home. in fact today when i was in sheng shiong i bought 1 packet of the dried 梅菜.

it was really an excellent meal for that price. ^^

Simple Home Dinner with Dry Wok Prawns on 22Oct2015

only 2 of us for dinner.

helper prepared some prawns & asked me to cook. it’s my usual dry wok prawns style – recipe here.

prawns were very fresh, so very bouncy, good bite & sweet. 🙂

this method of cooking is like baking the prawns in the shells, very flavourful becos of both the bbq charred flavours & the aroma of the fish sauce in a very hot pan.

overall, i think it was really a superb value quality 3-course set lunch at S$21pax after uob 1 for 1.

at the full price, it was actually ok quality but nothing special, so not something i would be much wowed bu.

eg if you (say) c/w les amis 4-course set lunch at S$45, les amis would be a lot better deal.

of course les amis doesn’t have this now, but the point is that is it is S$42pax then i would be looking around first none too anxious to try it.

i was looking around for ice kacang. the sing heng dessert stall was a bit hidden but i found it anyway. 🙂

at S$1.40 it’s probably the cheapest ice kacang in singapore. 🙂

the one i usually goes to is at adam road food centre. that is S$2, the usual price charged in most food centres.

i was thinking maybe they have a thing or 2 to learn from adam road when the lady  hardly added any evaporated milk. it’s like just a trickle whereas adam road pour like 20ml…lol.. onto the ice kacang.

surprisingly though, it was very good, even though i still prefer more evaporated milk. haha!

was with my sis & b-i-l this morning & originally we drove to alexandra village to take the song fish head. but even at 11am the carparks were completely full & many cars were waiting.

we turned back out at bukit merah & queensway to go to hong kong street chun kee 香港街珍记 at commonwealth crescent, but decided to drop in at mei ling market & food centre to try out the stalls on 20.10.2015.

daughter wanted to buy dinner for family + close family friends at ban leong wah hoe to celebrate an occasion. we went there for a 7pax dinner on 18.10.2015. ^^

i looked up hungrygowhere & openrice. the latest 7 reviews in hungrygowhere 2015 & 2014 were all bad. mostly about the bad service but also about lousy food & non transparency. only a single good review going back to mar2014 on hungrygowhere. for openrice it’s going back to 2013.

i noticed also the absence of pricing in the menu. i think that is quite an unacceptable practice today in zi char, restaurant or hawker centre, haha! so that’s why so many comments about non transparency.

we found the service ok actually, no nasty lady boss. service was ok & kind of expected for a zi char place.

but the place was quite crowded, so people were coming. youngest daughter managed to find street parking on the next street from casuarina road.

this crab made me appreciate my friend alan’s homecooked crabs even more. his chilli crab sauce had more intense & lingering crustaceans flavours whereas this sauce was mostly sauce just some crab taste.

alan’s crabs themselves though were not as good, not so “solid”. it could be that the sauce flavours were more intense because he used a lot of crabs (6 crabs!).

2 crabs were S$120. not cheap but i supposed ok. dinner for 7pax was S$222 or thereabout, so like S$32pax..

a very far cry from my recent zi char dinner at whampoa keng fish head steamboat, which also cost S$33pax

i guess sometimes it depends on whether we order the correct dishes. still, based on this quite poor experience, this is a place where i have no interest to try again.

Delectable Teochew Muay (Porridge) Dishes on 16Oct2015

after the very enjoyable 9pax lunch at ye shanghai recently, i am planning to do a teochew muay lunch for my friends. ^^

i can already make several nice dishes –

i just need to try out some vegetable dishes, & also the spicy sting ray dish (which is dependent on the supply of fresh sting ray at sheng shiong on the day!)

for today, as i saw some manila clams when in sheng shiong, i bought about 550g. 🙂

i made some excellent manila clams previously! ^^

it was easy to make-

i fry 1 cut chilli padi, sliced ginger (2cm piece) and 1 stalk of curry leaves (discard the stem) in oil in a pan till fragrant

turn on high fire & place manila clams in the pan, stir-fry & cover. add 1 tbsp oyster sauce, 1tbsp corn flour, 1-2 tsp (to taste) fish sauce mixed with 1/2cup water

cover & reduce till shells open up, just few minutes

when done just right, manila clams is plump & juicy & tasty, the curry leaves giving them excellent distinct flavours. i love the curry leaves. 🙂

the spicy tau jeon sting ray was my first attempt. very tasty with the salted vegetables & spicy bean sauce.

they turned out pretty good-

soak 1/2 packet of salted vegetables & cut into thin slices

fry 1/2 cut chilli padi, 1.5 tbsp spicy bean paste & sliced ginger till fragrant

add sting ray (500g diced) to wok & stir-fry to coat the flavourful sauce

add 1.5cup chicken (or vegetable stock), cover & reduce (about 10mins)

it is important to reduce the sauce to make the flavours intense & the sting ray very tasty. 🙂

the spicy black beans bittergourd also my first-

cut the bittergourd into 1/2′ by 2″ pieces & soak in water for 4hrs (i added 1 tsp salt). rinse thoroughly in slow running water to remove some of the bitterness

add 2 cloves chopped garlic, 1/2 cut chilli padi & 1tbsp spicy black bean sauce & stir-fry till fragrant

add bitter gourd & stir-fry to coat it with the tasty sauce

add 1.5cups stock, cover & reduce

the bitter gourd turned out to be very tasty, excellent dish among the 4 other dishes (the manila clams were superb!)

i did about the same for the other 2 dishes – stewed cabbage & stewed egg plant. basically add cut chilli padi, chopped garlic & fry, then add the vegetables, oyster sauce, fish sauce or light soy sauce, then add stock, cover & reduce.

they were both very tasty, though nothing special.

the egg plant was my second try. this time i did not add tomato sauce.

but the taste still different from ye shanghai’s excellent egg plants.

the egg plant was not as tasty as the wafu 和风 egg plants i did previously.

maybe i will try tsuyu to replace light soy sauce.

each dish takes about 10-15mins, so i did all 5 in about 1hr.

not too difficult & very enjoyable dinner with wife & daughter.
