Good Value Set Lunch @ The White Rabbit on 30Sep2015

wagyu carpaccio

wagyu carpaccio

had lunch today with a long time business associate/friend at the white rabbit at harding road, dempsey on 30.9.2015. ^^

this the first time i dined at the white rabbit. there is free parking & the ambience is nice. the restaurant occupied a nicely refurbished old chapel, bright & airy with high ceiling/columns & stained glass windows. 🙂

set lunch menu

set lunch menu

there is a ongoing uob 1 for 1 set lunch promotion till 31oct2015 (tues to fri).

the set lunch menu included the famous dishes like wagyu carpaccio, seared scallops, alaskan king crab tagliatelle, 60hr mangalica pork belly, 36hr short ribs etc. 🙂

bread roll

bread roll

we had a complimentary roll & butter to start. quite good. restaurant offered additional bread but we declined.

wagyu carpaccio

wagyu carpaccio

i had the wagyu carpaccio. it was very good, one of the better ones (or best) i had. 🙂

there was shaved parmesan & truffle cream, nice truffle fragrance, sweet, great texture.

seared bay scallops

seared bay scallops

my friend had the seared bay scallops.

seared bay scallops

seared bay scallops

it looked great & he said it was good. 🙂

alaskan king crab tagliatelle

alaskan king crab tagliatelle

friend also had the alaskan king crab tagliatelle.

alaskan king crab tagliatelle

alaskan king crab tagliatelle

i tried a little. pasta was perfect al dente of course. excellent flavours, nice crab sweetness with a bit of bisque veloute, not creamy. i liked the pasta.

60hrs braised pork belly

60hrs braised pork belly

i had the 60hrs pork belly. read one of the reviews about this special mangalica pork. for myself i don’t think it was naywhere near a good kurobuta in terms of the flavours & marbling.

60hrs braised pork belly

60hrs braised pork belly

pork was very tender from the slow braise, and the skin was crispy (but if it’s only about crispy skin i would prefer the chinese crackling roast pork over this anytime).

the pork overall quite nice though i not much into the white beans & miso broth. i made a tender tasty slow-braised miso belly pork myself so this dish not so wow for me.

choc fondant

choc fondant

friend had the chocolate fondant. came with macaron & ice cream. 🙂

choc fondant

choc fondant

i did not try it. friend said it was good. will try next time the molten caramel. 🙂

lemon merigue tart

lemon merigue tart

i had the lemon meringue tart.

lemon merigue tart

lemon merigue tart

also pretty ok, nothing special. but for the uob 1 for 1 promotion, the price difference between 2-course & 3-course was only S$2, so i took the dessert. 🙂

Nice Dinner @ Shelter in the Woods on 27Sep2015

quiche

quiche

wife, daughter & i went to shelter in the woods, greenwood ave for dinner on 27.9.2015. ^^

shelter in the woods

shelter in the woods

very nice ambience. we also managed to park just behind the restaurant. 🙂

this the favourite haunt of 1 of my friends. some months back he tried to buy me dinner here some time back but the place was fully booked, so he arranged a nice dinner at la braceria instead. 🙂

baguette

baguette

we had some complimentary baguette.

the server we had was polite, but she didn’t know anything we asked about the menu, maybe it’s difficulty with english.

endives salad

endives salad

wife wanted to try a different salad, so we had the endives salad.

endives salad

endives salad

pretty ok with the honey dressing. nothing special i guess.

escargot

escargot

the escargot tasted quite good, but was a bit dry.

escargot

escargot

it was served on a bone marrow, but unlike the lovely delicious wagyu with bone marrow at tess bar, here the bone marrow seems to be just presentation.

beef tartare

beef tartare

i loved the beef tartare, really nice! fresh, sweet small chunks of beef, and excellent with chooped onions, capers etc.

salt & pepper dispensers for beef tartare

salt & pepper dispensers for beef tartare

some quaint bottles to dispense salt & pepper. 🙂

beef tartare

beef tartare

i want to have this again, S$18 for an appertiser portion.

japanese sweet corn soup

japanese sweet corn soup

i ordered the japanese sweet corn soup because it was chef recommendation & also featured by other food writers.

japanese sweet corn soup

japanese sweet corn soup

should not have bothered. looked lovely in photos, but it was the poorest of the dishes. any of my own soup would be better. not that it was bad, but just ordinary, very sweet & basically not the kind of good savoury soup i like. 🙂

quiche

quiche

quiche was good. it’s not the kind of dish i fancy much usually, but this one here i can take again. 🙂

rack of lamb-almost raw

rack of lamb-almost raw

we asked for medium rare for the rack of lamb. it came almost raw. 🙂

rack of lamb-almost raw

rack of lamb-almost raw

i took a piece. my wife & daughter couldn’t, so we asked the restaurant to cook it more. the guy server now said their chef’s recommendation was medium (which was different from what we asked of the earlier lady server who did not seem to communicate well in english).

rack of lamb-almost raw

rack of lamb-almost raw

anyhow we went ahead with medium. it came out medium rare, & it was perfect! 🙂

rack of lamb-almost raw

rack of lamb-almost raw

so once we gotten the medium rare (though they say medium), the lamb was very good actually. & the sauce was very good too, not too “beefy”.

apple tart with ice cream

apple tart with ice cream

crispy apple tart was quite good.

apple tart with ice cream

apple tart with ice cream

cannot quite compare with the da luca version. still it was pretty ok.

the dinner was S$146nett for 3pax. they forgot to charge a glass of wine (S$19++), so we told them to add in the charge.

we enjoyed the dinner, food & ambience. the 2 best dishes for me were the beef tartare & the lamb rack (when done right!). the quiche was worth ordering too. the sweet corn soup can skip. the rest were average.

9pax Japanese Course Dinner on 28Sep2015

#1 shabu pork on grated radish & japanese cucumber, miso belly pork, & kakuni (japanese braised belly pork)

#1 shabu pork on grated radish & japanese cucumber, miso belly pork, & kakuni (japanese braised belly pork)

trying out japanese dishes like chawanmushi & steak don recently & decided to do a full Japanese course dinner for my good friends, RI friends & spouses, on 28.9.2015.^^

daughter came home & joined dinner so we had 9pax.

it was very fun! haha! 🙂

we had a 6-course menu

#1 i decided on a shabu pork starter after looking at a shabu pork salad recipe on japanesecooking101.

just to be sure, i try out with shabu beef the day before & it was very good!

the grated daikon (radish) was a great idea. below that i had 4 julienned small japanese cucumber. very refreshing.

but the key is the sauce – just 1part sushi vinegar, 1 part mirin, 1 part tsuyu. this like the best sauce ever! haha! ^^

i also had miso belly pork. this done 12hrs in 85degC oven then browned on medium low fire in non-stick pan. very tasty dish.

i also had kakuni (japanese braised belly pork), and a friend brought kimchi. that made up the first dish. 🙂

#2 second dish was a chawanmushi. it was pretty ok but not as good as my first trial of the dish few days day.

quality was inconsistent. i had to steam 2 batches of 4 ramekins for 15mins at each go when friends were here. for one batch my phone timer stopped at 12m20s in between & i lost the timing.

#3 prawn bisque - not so great today

#3 prawn bisque – not so great today

#3 my third dish was a prawn bisque. while it is european & not a japanese dish, i had been to a few restaurants in kyoto & also osaka where they served western starter & soup as part of a japanese course meal.

prawn bisque was below my usual standards.

#3 prawn bisque - vegetabkes base

#3 prawn bisque – vegetabkes base

the method was ok. i had enough good mix of vegetable base to balance the prawn shells & heads stock.

#3 prawn bisque - not so great today

#3 prawn bisque – not so great today

i think i should have reduced the liquids further to get a more intense bisque.

#4 wafu (和风) pasta, wafu (和风) braised eggplant & teriyaki cod

#4 wafu (和风) pasta, wafu (和风) braised eggplant & teriyaki cod

#4 the wafu (和风) pasta, wafu (和风) braised eggplant & teriyaki cod was an excellent dish though. ^^

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions - pasta was really good!

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions – pasta was really good!

#4.1 this the first time i did a kind of “wafu (和风) pasta” other than mentaiko pasta. & the taste was wonderful!

i followed the recipe on japanesecooking101 here.

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions - pasta was really good!

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions – pasta was really good!

simple ingredients – just streaky bacon, shimeji mushrooms & yellow onions. & the sauce again is the key – dashi (i used chicken/vegetable stock), mirin, tsuyu & a little sugar& reduced.

taste was just exquisite. it’s not better than most of my pastas which are also very good, but it’s good! 🙂

#4.2 teriyaki cod is one dish i cooked a number of times & always, invariably good.

this time i reduced the sugar & also a little less salty.

#5 wafu 和风 (japanese braised) eggplants - this dish was simply excellent!

#4.1 wafu 和风 (japanese braised) eggplants - this dish was simply excellent!

#4.1 the wafu 和风 (japanese braised) eggplants was simply excellent! this the first time i do a japanese braised eggplant. it’s so easy & the taste was just fantatsic!

again i got my recipe from japanesecooking101 here.

i still want to do the chinese version though (i like the ye shanghai one very much). don’t think much difference, probably just use oysters sauce instead.

#7 kakuni (japanese braised belly pork) don with miso salmon belly

#5 kakuni (japanese braised belly pork) don with miso salmon belly

#5 for the gohan course, i had a don.

the friend who brought kimchi doesn’t take beef, so i prepared kakuni, a japanese braised belly pork.

this time though i used a different braising method, a 6hr gentle slow braise in a crockpot from cold to 85degC (using meat thermometer). ^^

#5 wagyu ribeye & black angus ribeye steak don with miso salmon belly

#5 wagyu ribeye & black angus ribeye steak don with miso salmon belly

#5 for the other diners, i had a 400D grain-fed wagyu ribeye & a 150D grain-fed black angus ribeye. both were excellent!

and the japanese rice was perfect! so very tasty, one friend went to add rice & just ate the rice plain.

#5.1 miso salmon belly

#5.1 miso salmon belly

#5.1 the miso salmon belly was very good too.

#5.1 miso salmon belly

#5.1 miso salmon belly

very tasty, just like eating in restuarants in japan.

i also had tamago. the shape & folding was a disaster & one could not even make out the lines, but taste was pretty ok & quite a good addition to the meaty don dish! 🙂

#6 i not very sure how i lost it. haha! 🙂

lava cake was the very first dessert i made, not sure where has all the lava gone.

anyway seems that everyone like the taste though….wait till they have my really lava ones..haha!

like this one! looking back at the records, it was during a dinner on 28.1.2013! 🙂

“shanghai” moon cake

a friend brought “shanghai” moon cake, one lotus paste, the other red beans.

“shanghai” moon cake

so pretty, and very good moon cake too, mainly because the lotus paste was not so sweet like most moon cakes are, and the pastry, with some addition of nuts, was excellent! 🙂

Shabu Beef Rice Burger

shabu beef rice burger

shabu beef rice burger

made a shabu beef rice burger on 26.9.2015. ^^

i used to quite like mos burger but had not taken the rice burger for many years. until 9.9.2015 when 4 of us went early to watch workers’ party rally at bedok stadium, my friend parked his car at bedok mall & we bought some food to bring along.

i bought yakiniku rice burger & some friends bought subway sandwiches & other burgers. 🙂

anyhow i bought some shabu beef & pork at hentick & decided to try out a shabu beef rice burger.

i checked out a facebook rice burger recipe here. good enough for me.

later i found a more advanced preparation recipe here.

anyhow i cooked the usual sushi rice – 1.2cups water to 1 cup rice, added 1.5tbsp mirin, sushi vinegar & tsuyu (basically to taste) & i tbsp flat roasted sesame. then i pressed some rice on a cutting board & cut out 2 round pieces & browned them on both sides in a non-stick pan on low fire.

300g quick frozen shabu beef from hentick

300g quick frozen shabu beef from hentick

for the shabu beef, i poured boiling water over 300g of shabu beef (above) i bought from hentick for about S$7.20, and cleaned away the scum. then i prepare the sauce – 2 tbsp ea of sushi vinegar, mirin & tsuyu. trust me, it’s a very very tasty mix!^^ beef was already cooked but can always stir-fried a bit in the sauce if required.

for the vegetable, i just made do with what i had, so sliced tomatoes & grated radish, can also add onions or small japanese cucumbers etc.

anyhow, the whole concoction came out pretty ok. the shabu beef & sauce were really good. the sushi rice burger itself was good, very tasty but the compacting & shape need to be improved. 🙂

my daughter commented that eating it open sandwich style was like eating a don. of course we wanted to have low carbs, but i hear her that maybe for a proper rice burger i should do the burger style together with the seaweed etc. 🙂

A Great 中秋 (Mooncake Festival) Get-together Lunch at my Brother’s House

中秋lunch at brother's place

中秋lunch at brother’s place

had a great 中秋 (mooncake festival) get-together lunch at my brother’s place toady on 26.7.2015. ^^

tomorrow (27.7.2015) is the actual day for the mid-autumn festival or moon cake festival. 🙂

mid-autumn festival is the time for family & friends to come together again. as the full moon becomes whole & complete, so family & those dearest come together to be whole again. 月圆人团圆。

my favourite verse is 苏轼‘s 《水调歌头》

但愿人长久,千里共婵娟。

the verse (宋词) was actually 苏轼 thinking of his far-away brother 苏辙 on 中秋. 婵娟 means the moon, 美好 whole or prefect. so the poet is transcending time (长久) & space (千里)..sharing a moment..togetherness through time & space..but actually it was much more, many more levels of understanding. my other favourite verse is 明月几时有?把酒问青天.

the full discussion/analysis is here.

白斩鸡 chicken rice chicken

白斩鸡 chicken rice chicken

my brother thought this 白斩鸡 chicken rice chicken was pretty good.

my first impression – chicken not smooth enough, also chicken breast was moist but not sweet enough. as i took more pieces later, the chicken breast was actually pretty tasty because of the sauce.

but basically too much sauce made it not the usual smoothness & colour of a good 白斩鸡 chicken rice chicken.

(say) my own poached chicken (above).

i served it a number of times & most recently at a wonderful 14-course homecooked dinner get-together for 19pax friends on 24apr2015. always a crowd favourite. ^^

Best Omakase Dinner @ Hachi Restaurant on 18Sep2015

#2 uni & botan ebi in japanese corn veloute

#2 uni & botan ebi in japanese corn veloute

wife bought omakase dinner at hachi 0n 18.9.2015. ^^

this was the best omakase/kaiseki dinner i had. it was better than most of the excellent kaiseki i had in japan ryokans, including a very good kaiseki dinner at roppongi many years back. 🙂

i have to look back to my tohoku trip in 2010, where we had several very good kaiseki dinners at notably Yamayurinoyado Ryokan in Hanamaki (花卷) & ryokan new komatsu @ matsushima (松岛) for equally good or better kaiseki.

Superb Set Lunch @ Concetto on 23Sep2015

chilled capellini

chilled capellini

my RI friends decided to visit national museum & have lunch, so 3 of us met for lunch at concetto @ the cathay on 23.9.2015.^^

another 2 friends joined lunch afterwards, so 5pax. 🙂

concetto set lunch menu S$22.90

concetto set lunch menu S$22.90

last time i had the set lunch here was on 10.2.2015.

prices have gone up from S$20.90 to S$22.90, inflation i guess, but for me it’s still a good deal. 🙂

concetto @ the cathay

concetto @ the cathay

i missed the YMCA (that being nearest to concetto & national museum & cheaper parking rates) carpark entrance, so parked at park mall & walked over to the cathay. concetto looks out onto the road, and is bright & airy. 🙂

chilled capellini

chilled capellini

we all ordered the concetto pasta – an interesting chilled capellini dish.

it was not quite the famous chilled capellini at da luca or gordon grill or of course gunther.

still it was pretty flavourful & unique. & ala carte price is just S$4.90! 🙂

i like the previous version a lot better though – chilled capellini with crab & prawn tartare (tiny morsels) tossed in lobster oil & topped with lobster foam & ikura (salmon roe).

think they should just revert to the previous version, full-stop!

i pushed away most of the mayonnaise. this drier version was heavier, less refine but still tasty. 🙂

i had the kurobuta pork cheeks. 🙂

i only tried the pistachio panna cotta here before.

this time we ordered the tiramisu. again it was so pretty! 🙂

it was kind of deconstructed preparation…

as a dessert, i think it was rather good, and i would order it next time.

as a tiramisu, i think my own tiramisu is much better, both in flavours especially coffee & liquor, & also texture.

pistachio panna cotta

pistachio panna cotta

the pistachio panna cotta was as good as last time.

for a change, i will try the tiramisu next time though.

for me the only slight complaint was the poor service. the young guy was unhelpful, “tidak apa” & very poor in his service attitude. towards the end though he warmed up a little & his attitude improved from poor to ok. think he just needed some service training. the lady server was ok. 🙂

the 3-course set lunch was S$22.90, & for me that was great value-for-money! 🙂 there is a supplement of S$3 for the salmon. 🙂

we reached just about 11am so there was no queue as yet. long queue soon afterwards. 🙂

ngoh soon (the little treadfin)

ngoh soon (the little treadfin)

this time there was ngoh soon. even though the place is supposed to be 24hrs, some food especially the chilled steamed fish, may not be ready at certain time.

ngoh soon (the little treadfin)

ngoh soon (the little treadfin)

fish was excellent, very sweet, i think it only cost S$4.

pig skin & kong bak

pig skin & kong bak

i ordered the pig skin & kong bak. i heard the guy said S$4.

pig skin & kong bak

pig skin & kong bak

the kong bak was excellent! very tender, great texture.

the pig skin ok though not soft enough, maybe later in the day it would be softer.

by comparison this time then, the S$2 pigskin at ng ah sio was very much better.

salted fish minced pork 咸鱼饼

salted fish minced pork 咸鱼饼

the salted fish minced pork 咸鱼饼 is very good here.

salted fish minced pork a dish i do very well at home too. somewhat different style but just as tasty!

egg plant

egg plant

the egg plant here is really nice, very tasty.

egg plant

egg plant

i still have not try making it, but will surely do one day.

chai poh neng (egg omelette)

chai poh neng (egg omelette)

egg was very good too. i recall the steamed egg wasn’t great so this time sis wanted the chai poh neng (egg omelette), and it was good! 🙂

cabbage

cabbage

cabbage also always good. i think the vegetables at ye shanghai are especially good, even better than shi le yuan.

heng chye (spinach)

heng chye (spinach)

likewise for the kang kong. excellent dish.

we had 7 dishes including ngoh soon fish & 3 porridge for S$17. sis later went to add another fish & cabbage for another S$5, so total S$22 for 3pax.

what can i say? supernice! ^^

Easy Char Siew (Encore)

char siew

char siew

did another char siew this morning. ^^

same recipe as what i used previously here.

char siew

char siew

this is a really easy recipe as there is no basting needed, meaning there is no need to take the pork in & out & turning over & basting with sauce repeatedly!

char siew

char siew

pork collar this time less fatty. i added 1/2tsp red colouring & reduced dark sauce to 1/2tbsp.

char siew

char siew

flavour was excellent! ^^

char siew

char siew

i also reduced oven time from 20mins to 18mins as the collar was slightly thinner.

char siew

char siew

anyhow it looks like 18mins would be sufficient for charring the outside, cooking the inside, and keeping it moist & tender. 🙂

char siew

char siew

easy recipe, no turning over & basting required, just 18mins in oven.

& very tasty & tender & moist!

it’s F1 race day. lewis hamilton not doing well, starting 5th on the grid & later retired.

ngoh hiang

ngoh hiang

we have never tried the ngoh hiang here.

turned out that it was pretty good for S$9.50. i can have this again.

char kuay teow

char kuay teow

char kuay teow is always good here, S$7.20 but a large plate. the wok hae is legendary, very good here!

char kuay teow

char kuay teow

we ordered extra “hum” (cockles). they were very cooked, safely cooked, so more or less cockles didn’t feel much different.

tandoori chicken

tandoori chicken

tandoori chicken, very average for me. quite good marinade flavours i guess.

tandoori chicken

tandoori chicken

not my favourite for standalone dish, but don’t mind it if come with other curries.

garlic naan

garlic naan

naan was tasty but again eating dry w/o dhal or curries not my preference.

cheng teng

cheng teng

wife & daughter had the cheng teng.

cheng teng

cheng teng

it’s always good here.

i didn’t take any – ice kachang, ice jelly all good like the cheng teng, but they all quite filling.

dinner was S$40 for 3pax. more ex than hawker centre but pretty ok.

Wonderful Matsutake Autumn Bento @ Mikuni on 20Sep2015

mikuni autumn matsutake bento

mikuni autumn matsutake bento

mikuni a favourite destination for me.

mikuni’s chirashi don is still the best in singapore for me.

matsutake lunch special bento

matsutake lunch special bento

i wanted to try the autumn matsutake bento set, so today 3 of us came for lunch on 20.9.2015. ^^

it’s F1 race day, so many roads were closed. i googled and saw that bras basah road entrance to raffles city was open & also i could returned by beach road in the direction to middle road which was also opened.

i drove through orchard road with some traffic, but overall it was perfect. & carpark was empty.

matsutake (pine mushrooms) otoshi

matsutake (pine mushrooms) otoshi

it’s a pine mushroom set, so every dish had some matsutake. 🙂

excellent sashimi=chutoro, hotate, kampachi, uni

chutoro really melt in the mouth & hotate had incredible bite. kampachi were very sweet too. wish they gave more uni, haha! 🙂

tempura

tempura was lovely. chestnut really nice.

tempura

matsutake has a bit of woody? mushroom flavour. daughter didn’t like it so much.

sea bream teppanyaki & snow crab legs

sea bream teppanyaki & snow crab legs

teppanyaki sea bream seemed to be the dry treated type like many japanese fish including salmon & cod. you get them in japan a lot, in bentos, restaurants, supermarts.

i liked it but not so favourite for wife & daughter.

sea bream teppanyaki & snow crab legs

sea bream teppanyaki & snow crab legs

the snow crab legs were excellent.

kagoshima wagyu

kagoshima wagyu

& the kagoshima wagyu was sublime! ^^

kagoshima wagyu

kagoshima wagyu

there’s some mustard seeds/sauce. i put a bit of wasabi on the beef also. just so wonderful. 🙂

kagoshima wagyu

kagoshima wagyu

it felt like not the very chargrilled preparation. wonder if i can do this. google a bit & see.

ikura kamameshi(釜飯)

ikura kamameshi(釜飯)

i normally don’t particularly fancy kamameshi as i used to think they tasted average until i had very good tasty kamameshi at sun with moon @ wheelock.

ikura kamameshi(釜飯)

this one here though was very average.

panna cotta

panna cotta

panna cotta was very good! great texture & bite.

panna cotta

daughter though was still thinking of the panna cotta at pizzeria balognett at tremezzo lake como, but i think this was very good already. 🙂

with amex FAR (feed at raffles) privileges, the 7-course set was S$60++pax, very good deal i feel!

Chawanmushi & Steak Don Dinner

chawanmushi 茶碗蒸

chawanmushi 茶碗蒸

i had some marinated miso salmon belly in the chiller for 2days. was thinking what to match for dinner & decided to do a don.

to accompany the don, i thought maybe do a chawanmushi. i have not done chawanmushi before so googled & found this chawanmushi recipe at japanesecooking101.com.

i did not have dashi or chicken stock, so just used 2cups water & added 2tsp mirin, 2tsp light soy sauce, 1tsp sugar (basically to taste) & whisked with 3 eggs.

i marinated prawns & chicken breast & placed them in a ramekin. also added shitake mushrooms & scallops.

& steamed for 15mins.

chawanmushi 茶碗蒸

chawanmushi 茶碗蒸

texture was perfect, very light and very tasty. ingredients were steamed just right. of course cannot c/w a good crab chawanmushi like that at hachi.

but otherwise, it was a really good standard chawanmushi. beginner’s luck on first attempt! ^^

beef miso salmon belly scallop don

beef miso salmon belly scallop don

i had some 150D grain-fed black angus striploin in the freezer leftover from my last 12pax homegourmet dinner. i did the usual high fire with fat & a bit of butter on my heavy stainless steel pan until it was chargrilled to produce the maillard reaction to give it flavour (as they say, no colour no taste). i flipped once & charred the other side using the finger test for medium rare. 🙂

& i had some scallops in the freezer too. i started the scallops on hot olive oil in a non-stick pan & turned to medium low & covered. when they were grilled i turned them over & grilled the other side. 🙂

beef miso salmon belly scallop don

beef miso salmon belly scallop don

not forgetting the miso salmon belly.

i placed the miso salmon belly on a rack covered with aluminium foil which i poked holes with a knife to drain any liquids so the the salmon belly would be dry oven grilled, and placed it in a preheated 250degC oven for 15mins. 🙂

for the sushi rice, i used 1 cup sushi rice for 3pax added 1.5tsp mirin, 1.5tsp sushi vinegar, 1 tsp tsuyu (basically to taste). rice was very good but keeping low on carbs. ^^

beef miso salmon belly scallop don

beef miso salmon belly scallop don

the flavours of the beef was excellent. scallops were good too, and the miso salmon belly was super!^^

the sushi rice was perfect too, nicely vinegared sticky but not too wet & overcooked.

Worst Barachirashi Don & Chilli Crab Linguine in Singapore @ Babette on 18Sep2015

ctopus tempura & cauliflower

octopus tempura & cauliflower

daughter bought dinner @ babette on 18.9.2015 to celebrate an important occasion for her. ^^

babette

babette

ambience was quite cool i guess, though a much lower level of decor c/w say foc. the table & chairs were like canteen sitting.

service was really poor because of shortage of staff. we waited very long to be served even after signalling to the servers several times. 😦

octopus tempura

octopus tempura

octopus tempura was poor. octopus was tough, batter was not tempura standard.

octopus tempura

octopus tempura

but perhaps that is to be expected. octopus are usually sous vide (eg our favourite tako kakiage at mikuni) or slow braised & grilled. octopus done by this preparation will almost certainly be tough. 😦

cauliflower

cauliflower

cauliflower was ok i guess but non-descript.

cauliflower

cauliflower

passable i guess.

bara chirashi don

bara chirashi don

this barachirashi don must go down as the worst ever!

bara chirashi don

bara chirashi don

yes!! the worst barachirashi don in Singapore! they have pickled carrots & radish mixed in the barachirashi don??? made the don overly sour unlike a sweet vinegared don. never had such preparation before.

even the photos may look quite pretty, but in terms of taste, this would be 1 if sumiya’s is 7 & sun with moon@wheelock’s is 8.

chilli crab linguine

chilli crab linguine

the chilli crab linguine was also the worst i ever had.

chilli crab linguine

chilli crab linguine

chilli crab sauce was overly sweet. crabmeat had not much taste probably the very cheap frozen stuff.

it’s the standard of any fast food or cheap pasta joints. 😦

duck confit don

duck confit don

the duck confit was very good though. may not be better than saveur or concetto but it had good crispy skin & the meat was very flavourful & not very sinewy.

duck confit don2

duck confit don

the don was not much taste also, but at least the duck confit was a saving grace. it was very expensive though at S$28 c/w saveur & concetto!

afterall, duck confit at saveur & concetto were just S$13.90! ie 1/2 the price!

steak & foie gras don

steak & foie gras don

the steak & foie gras don was the best of the lot!

steak & foie gras don

steak & foie gras don

the steak was very good.

steak & foie gras don

steak & foie gras don

think the steak was an average cut so the preparation was really quite good to give it nice bbq flavours & not tough texture.

i made my own steak don the next day. my steak was very good but a better cut, 150D grain-fed black angus striploin, so quite commendable for the steak don here.

chicken wings

chicken wings

chicken wings was surprisingly good. better than what my helper makes, which is a very good chicken wing. we added the order at the end & it took forever (like another 20mins) to arrive. 😦

chope's promotion - does not honour chope's offer of complimentary lava cake for every S$50 spent frown emoticon

babette does not honour chope’s offer of complimentary lava cake for every S$50 spent!

we had a bad experience though-

restuarant did not honour the chope’s black & white offer of a complimentary macha cake for every S$50 spent!

the bill

the bill

we spent S$257 & got only 1 complimentary macha lava cake! 😦

i asked for just a second macha lava cake (afterall we spent 5x the every S$50) but the restuarant refused.

i guess the management & staff are not properly schooled in service recovery. 😦

macha lava cake

macha lava cake

i did not like the macha lava cake either. macha was very sweet & very strange combination of flavours unlike the macha parfait kind of flavours which i like (say) at sun with moon. one good thing though was that my youngest daughter liked it. just as well we only had 1 complimentary cake.

S$3 Meepok Tar @ Xin Lu 新路 Fishball Noodles on 18Sep2015

S$3 meepok tar at xinlu 新路

S$3 meepok tar at xinlu 新路

went to pick up something.

dropped by xin lu (新路) teochew fish ball noodles (formerly from margaret drive) at mei chin road food centre for a S$3 meepok tar on 18.9.2015. ^^

last time i did a post was 2 years ago on 3sep2015 when i came here with my son. time flies!

S$3 meepok tar at xinlu 新路2

S$3 meepok tar at xinlu 新路

i ordered my usual S$3 meepok tar, less noodles (面少)。

S$3 meepok tar at xinlu 新路

fishballs- S$3 meepok tar at xinlu 新路

& it came with 5 tasty, bouncy fishballs. the texture is one of the best.

S$3 meepok tar at xinlu 新路

S$3 meepok tar at xinlu 新路

because i ordered less noodles (面少), i get 1 more fishball. well, it’s inconsistent, depends on who is serving. sometimes i get, sometimes i don’t. not that i am too bothered.

the meepok texture was excellent, QQ. and the chilli also consistently good.

anyhow, by comparison, this is a lot better than the-

very poor one (noodles quite unpalatable with the heavy mix of sweet sauce) at food opera @ ion orchard, and also the

below par toa payoh lor 7 teochew fishball noodles (noodles a let down, not QQ!) at food republic @ lido.

and xin lu (新路) only S$3. these other 2 cost S$5!

Great Lunch @ Kopi Roti Central on 19Sep2015

chicken rendang

chicken rendang

went to my good friend’s dental clinic at central on 16.9.2015.

after that god-sis led the 3 of us to kopi roti central for lunch. ^^

chicken rendang

chicken rendang

god-sis went to get the food. i had the chicken rendang. it came with sayur lodeh & egg, for S$5.

it was a very good meal!

rendang was very good & reasonable helping size. both the egg & sayur also good. $5 is not cheaper nor more expensive than say a economic rice at coffeeshop. important thing is that it was tasty, a very nice wholesome & balanced meal for S$5. 🙂

curry chicken

curry chicken

my dental surgeon friend had the curry chicken. looked great too!

nasi lemak

nasi lemak

god-sis had the nasi lemak. came with chicken wing, egg, nuts & ikan bilis & otah.

nasi lemak

nasi lemak

i think the price of the curry chicken was also S$5, and likely the nasi lemak too.

there was laksa, but from the wall photo it didn’t appear to come with cockles.

i will try some of these dishes next time. i would say for S$5 it was as good as my favourite adam road nasi lemak (adam’s nasi lemak & selara rasa nasi lemak) kind of meal! ^^

Cook Vegetarian – Thai Red Curry Vegetables

#8 thai red curry vegetables

#8 thai red curry vegetables

the thai red curry vegetables was a variation of my thai red curry sotong (squid).

i served that (red curry sotong) for the 30+pax lunch party for my daughter last month.

#8 thai red curry vegetables

#8 thai red curry vegetables

i just replaced the sotong by vegetables. i had potato, egg plant, onions, yellow pepper, tomato.

“dancing chef” thai red curry

when i was looking for the right curries to make my thai yellow curry grilled chicken thighs & bought the “dancing chef yellow curry”, i also bought the thai red curry.

for the curry, i fried 1 sliced yellow onions with 2tbsp red curry powder & 100ml coconut milk. when the onions softened. i added a cut yellow pepper (i did not have red pepper). since it was a vegetarian dish, i added about 300ml of vegetable stock instead of chicken stock. i added cut eggplants & then cherry tomatoes last.

this is a really nice lemak, tasty dish, & spicy too, spicier than the yellow curry.

i served it at a recent 10-course vegetarian dinner for 8pax for my niece’s birthday. everyone liked it.

for me, a non vegetarian, it was no comparison with the red curry sotong of course but still an excellenty flavoured curry dish which i enjoyed thoroughly. ^^

Egg Fried Rice

#7 egg fried rice

egg fried rice

fried rice the simplest of dishes.

& really not easy to do it well i guess.

i do a pretty good seafood fried rice.

i did that during a 9pax 12-course dinner for my friends on 15.7.2014 which everyone liked it a lot.

c/w photo of the real thing – crystal jade lamian xiaolongbao seafood fried rice, i guess it was still kind of far off.

#7 egg fried rice

egg fried rice

w/o the seafood, egg fried rice is even more basic, no “wow” dish, but a good staple & accompaniment for meat and also for my recent 10-course vegetarian dinner for 8pax for my niece’s birthday.

i have the cooked long grain fragrant rice ready. usually i put slightly less water, about 1 to 1 instead of 1.2cup water to 1cup rice.

i had a non stick pan on medium fire, 2 tablespoon oil & 1 tablespoon chopped garlic. then i turned up the fire & added 1 bowl of rice pushed to one side. immediately i cracked 2 eggs on the empty side. then i pushed the egg over the rice & mixed.

i added fish sauce to taste (about 1 tablespoon) or light soy sauce if it is vegetarian, or either no or much less (again to taste) if i am adding chilli sauce (sichuan chilli or xo chilli).

the whole process is very short, so i usually do on high fire so that the rice is not overcooked & mushy & so that the aroma of the fish sauce comes out & gives the wok hae & the rice are individual grains (we say “sun sun” in teochew).

Lagi Shiok! @ Adam’s Nasi Lemak on 15Sep2015

Adam's nasi lemak fish+chicken S$4.50

Adam’s nasi lemak fish+chicken S$4.50

went to adam road food centre to ta pao (take out) nasi lemak round about 830am this morning on 15.9.2015.^^

no queues at both stalls, adam’s nasi lemak, and selara rasa.

every time my son back in singapore, he would buy from his favourite, the second stall ie selara rasa. and it seems that more also prefer the second stall to the first, judging by the usual queues at both stalls.

for me, i prefer the first stall, adam’s nasi lemak.

Adam's nasi lemak fish+chicken S$4.50

Adam’s nasi lemak fish+chicken S$4.50

i had the fish set + chicken wing S$4.50. adam’s included kachang (peanuts) which selara rasa does not.

there is also the fish cake.

Adam's nasi lemak fish+chicken S$4.50

Adam’s nasi lemak fish+chicken S$4.50

other than that, the 2 stalls almost similar, and price-wise too.

Adam's nasi lemak fish+chicken S$4.50

Adam’s nasi lemak fish+chicken S$4.50

the rice was perfect, very fragrant & individual grain. chilli was tops too. don’t feel much difference between the 2 stalls.

for chicken wing, selara rasa’s is more crispy. i didn’t feel it was better than adam’s previously but for today, adam’s chicken wing a bit average. the ikan kuning fish was quite standard.

both were better than that at mizzy corner at changi village food centre which i had last week with friends before we went for the uniquely Singapore pulau ubin “cooling off” walk.

and the horrendous sri sujana nasi lemak also at changi village food centre.

Meepok Tar @ Jalan Tua Kong Ah Lim at Bedok Simpang on 13Sep2015

jalan tua kong ah lim's S$5 meepok tar

jalan tua kong ah lim’s S$5 meepok tar

went to a friend’s place to watch us open tennis finals between djokovic & federer.

finals was rain-delayed from 4am to 7am on 13.9.2015.

another friend joined at 6.30am & 4 of us decided to go for breakfast.

our first choice, the soupy Xing Ji (興记) Bakchormee at Fengshan Food Centre, was not yet opened so we drove over to bedok simpang & luckily jalan tua kong ah lim at bedok road has just opened.

jalan tua kong ah lim's S$5 meepok tar

jalan tua kong ah lim’s S$5 meepok tar

we ordered a S$5 meepok tar each + coffee.

jalan tua kong ah lim's S$5 meepok tar

jalan tua kong ah lim’s S$5 meepok tar

this a good standard meepok tar. noodles was excellent QQ, fishballs were sweet & bouncy, chilli was good & spicy with the oomph, and there were 2 fishballs, 1 crispy dumplin, fishcakes and lots of minced pork.

flavour was good, but it was quite a bit salty. i did not finished some of the mince pork which were swimming in the quite salty chilli sauce at the bottom of the bowl.

jalan tua kong ah lim's S$5 meepok tar

jalan tua kong ah lim’s S$5 meepok tar

in comparison, their neighbour jalan tua kong lau lim (only open at 7am), & also jalan tua kong at 6th avenue, were both better.

if only it was less salty, this meepok tar would have been excellent.
