made chicken with mushrooms and fungus for teban gardens community breakfast this morning on 5.4.2019.^^

this my 89th friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

i diced and marinated 2kg boneless chicken thighs the evening before = 3 tbsp fish sauce, 2tbsp corn flour, pepper and 4tbsp shaoxing wine.

i am keeping the taste plain so no oyster sauce, no sesame oil, no light soy sauce.

i got ready wood fungus S$2.10 for 200g from sheng shiong, some left over cloud fungus (all softened), and 2 packets of shimeji mushrooms cut.

this morning just fried the chicken thoroughly added the fungus and mushrooms, covered and cooked for 6mins.

a simple and very tasty dish.

chciken was very tender and tasty. so was the mushrooms and cloud fungus and wood fungus was crunchy. very nice.

my OPS bro WM & wife J bought 4pax dinner @ 食之为鲜 eat first at siglap on 3.4.2019.^^

very good dinner..wife enjoyed the taujeon song fish head which she normally doesn’t like much by the usual black bean sauce preparation.

fish head very fresh, tasty and it was humongous  very meaty so though it was S$25 c/w with S$16 at other zichar or food centre, i think it was quite worthwhile.

this is easy to make. so i can do anytime.

watercress soup was excellent, like any good cantonese lie tong 例汤, loved it!

i took lots of watercress veg too, and the pork, very nice.

J decided to order ginger chicken instead of steamed chicken.

it had the special 酸姜pickled ginger flavour, nice. the meat was a bit on the tough side…

most chicken preparation in restaurants and zichar, even like in shoon huat at sentosa, JB, are overcooked and not tender. otherwise i duess a competent dish.

salted fish minced pork the usual, nice dish, quite big serving, also quite ex at S$18.

didn’t feel it was better than my home preparation.

prawn tofu was the usual, though J felt that it was not good as before.

tofu was well infused and great texture, and prawns and sauce were good.

also not so different from my home preparation..i think my tofu quality not as good, the inside not as smooth, maybe will try out egg tofu or other silken tofu…my prawns and sauce just as good.

4pax dinner was S$104 nett, no service and GST. charge for water and tea same S$1.

we had a really fun dinner together and enjoyed the delicious dishes, especially the taujeon fish head and watercress soup.

this my 6th cooking demo and sharing… 🙂

24 residents attended today.

i first started doing a community meal dish for teban gardens PPHCSC on 8.1.2016.

i cooked a breakfast dish for teban gardens every friday unless i am travelling or otherwise unavailable.

i did my 88th friday breakfast community meal dish at teban gardens community service centre on 29.3.2019.

today i shared and demo 2 dishes –

1 garlic steamed sotong 蒜蓉蒸花枝(墨鱼)
2 salted egg prawns…咸蛋虾

Recipe for salted egg prawns and garlic steamed sotong at the bottom page.

wasabi prawns, salted egg prawns, yuzu prawns all basically same preparation just add different sauce like wasabi mayo.

i don’t add milk or mayo in this recipe. my other variation is i don’t like deepfry as it takes and wastes a lot of oil and i don’t know what to reuse for, so i do shallow-fry just 1cm deep oil.

the salted egg prawns was fragrant and flavourful. ^^

garlic steamed sotong the easiest of preprarations.

basically it is just hk steamed and topped with minced garlic. the garlic gave it excellent flavours and is a common preparations for bamboo (razor) clams at restaurants, a heavenly sauce to add to plain rice la!

i had lots of help from the residents too.

a lady actually did the frying of the salted egg and curry leaves for me while i shared about the dishes. lol! ^^

we had lots of fun! 🙂

Recipe for salted egg prawns

15 shelled and deveined large prawns ie remove head & shell and cut centre to remove veins and clean well

2 egg yokes in a bowl and 2 tbsp cornflour on plate or clean flat surface

dip prawns first in egg yoke then in corn flour & place on clean plate

heat <2cm oil in deep flat bottom pot ..put in a clean dry chopsticks if starting bubbling means oil is hot

shallow-fry the prawns 1min on each side till golden brown ..do not crowd pot… do in batches 5-8 prawns..do 2 or 3 batches depend size of pot..set aside..

mince 3 salted egg yokes. fry with 2 twigs curry leaves in 1 tbsp oil till fragrant..add the prawns & mix thoroughly.. serve

Recipe for garlic hong kong steamed sotong

large sotong (squid) 300g

clean and cross cut the sotong

place sotong in steamer plate

add 2tbsp each of light soy sauce, olive oil (or veg oil) and mirin (optional)

place 3tbsp chopped garlic over the sotong

steam for 4-5mins

serve

more importantly, i perfected the chilli sauce for the dry noodles-

1 bunch dry noodles, 1tsp oyster sauce, 1 tsp fish sauce PLUS 1tbsp crispy chilli about perfect.

the chye sim also leftover, just poached with the noodles.

the prawns and salmon i marinated with tsuyu and mirin and pangrilled, so teriyaki prawns and salmon belly. ^^

a delicious, nutritious bowl of noodles!

bone marrow pizza and vongole linguine best dishes …seafood stew very tasty but too ex, burrata not great, tagliata, squidink pasta and octopus average..

lunch was S$329 for 4pax .. after S$300 35% off chope vouchers, total price to us = S$224 nett.

for me that is still too expensive la!

garoupa was fresh just bought from teban gardens wet market this morning but slightly lor kor “rough texture”

claypot rice always good. 🙂

a bit harder making for 9pax. i used 3cup+ rice and 1 whole chicken. i usually make 3 cups for 6pax with 1/2 chicken…estimating the amount of water to add etc is a bit less certain, needs judgement there is substantial marinade and water in the chicken.

i forgot to take photos of the cooked garoupa and sotong.

friends all commented garoupa fresh and my timing was good, however the fish was lor kor with tough texture, quite a disappointment!

char siew

i made a mistake on one dish the char siew. instead of red fermented beancurd i marinated with red chilli sauce. the bottles and content looked similar. i did not check properly.

fortunately the char siew was still very tender and the flavours were ok enough as char siew, but one could detect the red chilli oil taste which was kind of odd.

prawn tofu

my prawn tofu always good. stock very tasty and prawns excellent, bouncy and tasty, great texture and taste. i think i will try the egg tofu again see if tofu texture is better.

salted fish minced pork is dish that everyone likes. 🙂

the 回锅肉 mala belly pork with carrots and potatoes is the least tokong dish…belly pork very tender…still it was heavy dish and belly pork not most popular with the ladies.

made the egg white fried rice specially for CH in case not enough claypot rice.

fried rice was ok. i think though not salty enough, can do with a bit more fish sauce.

could get hk kailan so made do with chye sim. usual stir-fry with oyster sauce. good enough.

i steamed the whole sausages then cut them and added back to the claypot rice.

salted fish minced pork really a grandma kind signature dish and can eat often outside at zi char and teochew muay stalls.

for the fried rice, i first fried salted fish and minced pork then set aside and fried the egg white then fold over the rice and then mixed the small pieces of egg whites thoroughly.

for 回锅肉, i salted belly pork for  3hrs and boiled 1.5hrs the evening before and stored the cooked pork in double ziploc bag in the chiller overnight.

this way i can cut the belly pork nicely and cleanly this morning. you can feel the pork is tender when you are cutting it. 🙂

potatoes, carrots, onions

i cooked the carrots, onions and potatoes. added 2 tbsp of oyster sauce.

carrots had to be cooked first for 10mins, then added the potatoes, covered, add water if need, and cooked for another 10mins so potatoes were just cooked.

then added 1 heap tbsp mala chilli oil and the dish is done.

mala as i always say, is not just about spicy or numb. most importantly it is the fragrance, makes the dish really flavourful and tasty.

we booked eatgo 50% discounts at 6pm.

bill was 2pax nett $70 after eatigo discounts.

they also have ocbc card 1 for 1 set menu at $48pax even cheaper just $48++ for 2pax

i think as good as 海底捞 and like 1/2 price. 🙂

so for 2pax soup base not so worthwhile c/w large groups.

the sharksbone soup base was basically a pork bone soup with a huge bone, tasted nothing like sharks bone but was sweet.

the sauces were excellent, just like 海底捞 i had in shanghai. didn’t go to 海底捞 in singapore.

kurobuta pork not so great, maybe try kurobuta belly next time.

the water cress was very good.

the dumplings as well, stuffed with prawns, which we ordered a second helping. reminded us of 不倒翁 in hong kong, that was much larger dumpling though just as good.

button mushrooms also very good. will order this next time.

sweet potato glass noodles

we both on low carb. but this sweet potato glass noodles was good and didn’t feel heavy.

overall a great dinner and experience for S$70nett for 2pax after 50% eatigo discounts. of course it would be cheaper with 4pax or 6pax to share the soup base or if we took the ocbc 1 for 1 set at S$48 for 2pax.

the 300days aussie grain fed tenderloin good enough, not as tender as last time, considering it was tenderloin and 300day grain fed (really?), there was a bit of tendon, overall quite good standard la. sauce was good too.

in this respect the service was somewhat lacking.

i specifically asked if the mango was sweet and server said it was good, but mango was not sweet and slight sour.

also we ordered 2 red ruby, the server did not highlight to us that the platter also had red ruby.

patara excellent thai dishes

4pax dinner was about S$130+ nett.

the unsatisfying desserts alone cost S$37, so the food dishes were like just S$90+ nett for 4pax.

really excellent dishes and great value this dinner. 🙂

Good Great Value Lunch @ Lighthouse Bistro on 28Mar2019

had a leftover S$50 chope voucher expiring today, so arranged to have 3pax late lunch 2pm with RI bro LKY and OPS bro WM on 28.3.2019. ^^

the S$20 appetizer platter had a good serving of 4pieces prawns, fish fritters, mussels and nice calamari.

this a great dish, fritters was excellent though the fish likely just dory, batter was great. mussels had slight sweet sour taste done well and tasty. prawns had light breadcrumbs nice too and the calamari was the best, done just right and excellent sauce too.

the S$19 hoeny bbq chicken was very good too.

this quite easy dish to make, so i will try making this dish soon, just the usual pangrilled tender chicken and drizzling honey over then flamed the chicken. see how it goes shortly.

the pisang dessert was an impressive brownie topped with bananas and ice cream. an excelletn dessert. WM loved it.

bill was S$50 + GST = S$58.85.

the S$50 chope voucher cost S$25 and adding the GST service ++, so total paid was S$33.85 for the wonderful 3pax 2pm lunch.

after lunch we walked back across the road and LKY bought kopi.
