after delivering the 3 dishes for 40pax lunch at HCA this morning, we walked over to bendemeer fc and our RI bro LCM bought S$3 wanton mee lunch.

the stall looked exciting with roast duck and char siew hanging behind the glass shelves.

the wanton mee was delicious!

excellent char siew, qq noodles, very tasty chilli sauce.

i finished all the carbs which i rarely do, 3 wanton..

quite excellent for S$3!

2nd HCA 3 Dishes 40pax Lunch for HCA Hospice Care on 24Sep2019

today is my 2nd40pax 3 dishes lunch for HCA hospice care patients on 24.9.2019 –

1 curry chicken
2 belly pork – my own special sauce
3 cabbage

my RI bro LCM came at 1040am helped me to ferry the food containers to HCA in my car..

this my second time doing forthrightly 40pax lunch for HCA..

feedback from previous lunch HCA asked to cook a bit more..

this was some difficulty because of wok size and transport..

this time I cooked about 3.6kg boneless chicken thighs, increase from 3kg last time, and 2kg belly pork from 1.6 kg..and 1.4 kg cabbage..

& belly pork was excellent, prefect texture, and my own special braise, so tasty & delicious! 🙂

cabbage was sweet. they said quantity still not enough.

current chicken is simple to do.

just marinate 3.6kg cut boneless chicken thighs with 2 packet heng’s nonya curry paste overnight, fried with curry leaves, sliced ginger, minced garlic this morning, and added 400ml (2packets) coconut milk.

only logistic problem was the quantity took up the entire wok volume, and a bit tough for me to manage the quantity and cook with 6 cut potatoes to make sure curry, chicken, potatoes were done just right..

so i had to separate into 2 portions, wok and a deep pot. maybe better to cook 2 portions separately next time.

anyway the results was great, and feedback was they loved the curry chicken.

i boiled 2kg belly pork in bakuteh sacket 1hr 15mins, perfect tender texture, cooled down and put in chiller overnight.

and cut nice neat pieces.

the fried in work with lots of chopped garlic, 2tbsp fish sauce, 2tbsp oyster sauce, 1 heap tbsp corflour, 5 tbsp huadiaojiu ..

wonderful taste and flavours..

1.5kg cabbage

1.5kg cabbage filled up the entire wok at the start of frying.

feedback was not enough, so have to cook more next time.

this first few rounds trial and error, managing the quantity and to make sure dishes turned out nicely.

dishes were all good, i am quite certain, and feedback consistently good.

just need to manage the cooking quantity and logistics.

a very satisfying day for me. 🙂

the roast london duck super good, reminded me of tunglok’s london duck..

only the roast london duck and char siew were special, very good. the rest quite mediocre,

and they charged S$1pax for using the wet tissue..

service was good here..

prices were expensive w/o the discounts. not sure i want to come back even with 50% discounts.

101st Teban Gardens Community Breakfast on 20Sep2019 – Braised Pork with Shanghai Greens

made braised pork with shanghai greens for teban gardens community breakfast this morning on 20.9.2019.^^

i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.

this my 1001st friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

these are frozen pork cubes. i made 3 pakets 1.2kg. just blanched in boiling water and cleaned. then fried with minced garlic and added 5tbsp huadiaojiu, 2tbsp fish sauce, 2 tbsp cornflour, covered wok and cooked for 1hr.

i had 800g of belly pork which was cooked to tender, chilled and neatly cut, which i added when pork cubes were cooked and stirfried for few minutes.

then i fried the shanghai greens with oyster sauce and added back the braised pork, and that’s a delicious braised pork with shanghai greens.

Bakuteh Prime Ribs @ Lao Ah Tee 老阿弟 on 12Sep2019

my RI bro LCM came over to help me transport 3 dishes to HCA for 40pax lunch on 12.9.2019.^^

afterwards we walked over to Lao Ah Tee 老阿弟 for bakuteh.

the place was super crowded ant 12.15pm.

we ordered the prime ribs.

luckily we only 2pax, and the bakuteh came immediately….

it was expensive S$10 for 2 ribs.

i guess to put in perspective, 1kg fresh prime ribs in sheng shiong usually S$21.95, and that’s about 10 pieces, so 2 pieces would be like S$4.50. so perhaps price justified.

i still enjoyed the prime ribs. very good, great taste and texture and tasty soup…

but really doing myself at home with ilc sachet just as good, and 45% the price.

recently i did teban gardens friday community breakfast dish for the 100th times.

i decided that maybe i can do a bit more, so contacted HCA and decided to do a fortnightly 3 dishes 40pax lunch for HCA patients.

today is my first 40pax lunch for HCA patients on 12.9.2019.

i prepared –

  1. chinese wine chicken 黄焖鸡
  2. braised belly pork &
  3. baby shanghai greens with shitake

for chicken, i used 2.8kg frozen boneless thighs, cut and marinated overnight with 6tbsp huadiaojiu, 3tbsp fish sauce, 3tbsp oyster sauce and 2tbsp corn flour.

this morning, i fried sliced ginger and minced garlic and added chicken, fried thoroughly for 5mins, covered wok and cooked another 2 mins.

& voila! a delicious dish of chinese wine chicken 黄焖鸡

i fried 1 cinnamon bark, 5 star anise, 3bay leaves, 5 cloves and 1 bulb garlic cloves till fragrant.

added 2kg belly pork and 3tbsp light soy sauce, 1tbsp fish sauce, 1 tbsp dark soya sauce, and braised 1 hr 15mins till tender. then cooled and placed in ziploc bag in fridge overnight.

this morning, i cut the belly pork neatly, boiled the braising sauce, and added the cut belly pork, simmered in covered wok for few minutes.

i fried the baby shanghai greens with minced garlic and cut chilli padi, added shitake and oysters sauce. and transferred to aluminium carrier for transport to HCA.

my first HCA 40pax lunch. I could see the volunteers and patients were excited to receive the dishes.

teban gardens reminded me that today is my 100th meals i cooked for the friday community breakfast! 🙂

i marinated the 2kg cut chicken pieces with 3 tbsp fish sauce, 4 tbsp huadiao wine and 2 tbsp corn flour, in the fridge overnight.

& i cut the mushrooms and vegetables and placed in separate sealed containers in the fridge also.

so it was quite easy in the morning to do the dish.

fried the mushroom and lots of chopped garlic, then added the shanghai greens, and 2 tbsp oyster sauce.

set aside, using the aluminium carrier.

then fried the chicken.

there’s lots of fluids from marinate, so no need to add water.

just high fire, then cover and low fire about 8 mins.

chicken was tender and tasty, and gravy was delicious!

added back the shitake and baby shanghai greens and mixed well.

tasted it…excellent delicious dish, looked great too!
