this my 73rd friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

i used heng’s nonya sambal paste.

cleaned & drained 3x1kg zutchi fillet (3x800g nett weight) marinated with nonya sambal sauce in fridge overnight.

in the morning, i fried ginger, chopped garlic, leek & added fillet, fried thoroughly then covered to cook.

i removed the cooked fillet so as not to overcook the fish, then reduced the sauce.

then i added back the sauce.

dish was done. i transferred to an aluminium tray, covered it with aluminium foil and carted it to teban gardens.

Recipe = Braised Noodles with Seafood on 17Oct2018

i had some tasty, intense chicken stock in the fridge.

(i usually made by boiling chicken bones with carrots for like 4-5hrs with some salt, reduced to a very tasty, intense stock).

decided to make a braised hk egg noodles with excellent chicken stock, very tasty, with prawns & snake head fillet on 17.10.2018. ^^

my prawns were frozen prawns, and snakehead fillet i had some leftvoers.

the egg noodles, i boiled a small portion and drained.

then fried cut chilli padi, chopped spring onions and added chopped garlic, then added stock and reduced.

then added prawns and then sankehead fillet (both marinated with fish sauce and white pepper), cooked and reduced further.

then off fire, added noodles and tossed, haha like pasta. and added my magic umami ingredient, the crispy chilli.

Good Korean BBQ with RI Bro QTC at 8korean@Central on 15Oct2018

 went to my RI bro QTC’s office at central today on 15.10.2018. ^^

after that we went for 2pax lunch at 8korean @ central next to his office. had a great chat & lunch togetther.

I bought $100 chope viuchers for $59..we ordered the server’s recommendations, a flower pork set $68 which included a stew. i chose beef kimchi stew & added a grilled squid $22=enuf to feed 3-4pax actually. lol! 🙂

lunch cost $108 which i top up $8 = total $67 for lots of food for 2pax.

the grilled squid which other bloggers recommended included lots of kimchi and large bean sprouts.

squid was nicely done. good bbq flavour and tasty with the dips.

S$68 flower pork set

the S$68 flower pork set consisited of flower prok belly, pork neck steak and pork jowl.

on 8korean website, they stated that they used only hungarian mangalitza pig. and looking at the description these should be more alike iberico or kurobuta, more marbled with fat of lower melting point…i must say i didn’t feel that much different like the pork was more flavoured or marbled when eating. of the 3 meats, the belly seemed tougher.

overall it was a satisfying lunch.

the pork should be like 400g, and the beef stew was a huge serving,

but really even a hotpot stew cannot c/w a simple kimchi chigae at aburiya lor..

i don’t think i would pay S$68 for this pork set plus beef stew but for 40% discounts at S$40, it is doable and i would come here and have this again.

sadly there was zero customer except us for the entire lunch period on a monday…not sure how singapore dining establishments survive?

we had a great tete a tete having the entire place to ourselves. lol! 🙂

wife is some jadeite member 15% discounts plus got some vouchers to use, like S$10 voucher for S$50 bill.

we ordered 1/2 roast duck. it was ok but not quite as good as the roast duck we had at

  1. xin cuisine; and
  2. silk restuarant @ sicc.

this my 72nd friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

prepared the belly pork last evening..set alarm to 7am as usual for TG friday breakfast but woke up at 9.30am..checked phone NOT silent & alarm was ON..so old man couldn’t wake up even with alarm..

called Ros..she was ok if I cooked immediately & delivered at 10am which i did..use 1/2 the vegetables about 600g & all the meat 1.1kg.

for the braised pork belly, i used the seriouseats method for japanese chashu pork = 3.5hrs in 130degC oven, then kept in fridge overnight.

the belly pork was very flavourful, just slightly overdone, and was perfect to keep in a ziploc bag in the chiller overnight.

so it was easy in the morning to slice the belly pork into clean slices.

fry the nai bai vegetables, add some of the tasty marinade, cook & reduce the sauce, and add the sliced belly pork the last bit.

i bought S$700 chope offpeak vouchers at 50% discounts for this dinner at 8.30pm. 🙂

dinner was attended by 4 bros and the spouses. wife had some urgent matter to attend to but rejoined the dinner afterwards.

i ordered 4 appetizers to share.

the prawn salad was just average, ok enough i guess.

the pan seared barramundi was very good especially with the bearnaise sauce. 🙂

we considered ordering one more when wife rejoined the dinner (she missed most of the appetizers) but decided to order a main, halibut en papillote instead. 🙂

the halia’s chilli crab spaghetini was in my view not quite edible, really poor.

no hint of chilli crab flavours, and the pasta was not even al dente..that is a mortal sin!

HC ordered coffee and we had 2 or 3 pandan coco to share. afterwards when i had time to look at the menu, maybe we should have tried the smoothies also. 🙂

the vietnamese lady server Ha recommended pan seared foie gras to go with the steak mains. we ordered 4 foie gras to share..i do not take foie gras as ammater of choice. 🙂

the server recommended we took the 900g striploin…only porterhouse was on the menu, but she said there was a last piece of striploin.

actually porterhouse is one side strip loin one side tenderloin, so in theory porterhouse would be better? anyhow i prefer strip to tenderloin and perhaps a boned in strip loin would have a smaller bone c/w porterhouse? haha! who cares?

i think the striploin was plenty good, very flavourful, nicely charred, unlike many places. this came with good sides of mash etc.

i think between the halibut and the very good barramundi, the halibut was still better.

the server also recommended we ordered the ribeye rather than the wagyu rump, and so we did! 🙂

and it was very good too. ribeye is a better uct of meat c/w striploin.

we wanted medium rare but it looked totally rare to me, which was not the preferred texture.

the sticky toffee pudding was quite unexpected. it was not as sweet as expected. and it was tasty, a very good dessert.

overall i think the dessert were excellent too. 🙂

WM brought a birthday cake for WT. we sang happy birthday and shared some cake. 🙂

i am happy with the dinner overall and most of the dishes from appetizers to mains meat & fish and also the dessert. very enjoyable meal.

the ambience a bit mixed, nice place certainly, and indoor seating has aircon. the table seating were close to each other and like canteen, i guess it was the rustic feel.

dinner came to like S$683, so i used S$700 vouchers. the lady server had earlier informed us she was leaving as here shift ended. the male server nguyen (also vietnamese) advised me to order some drinks so i ordered a coffee and another pandan coco. the bill came to S$699, perfecto!

so with chope 50% offpeak vouchers the 8pax dinner cost S$350nett, i think a very good deal la!

we decided to go nearby for lunch at hk street old chun kee at commonwealth crescent.

i ordered the black bean sauce song fish head, prawn paste chicken & bittergourd pork ribs.

the S$10 bittergourd pork ribs was tasty & good amount of tender pork ris too. good standard here.

Recipe 3rd Sharing & Demo = Sausage Claypot Rice & Chinese Wine Chicken @ Teban Gardens on 10Oct2018

the recent time (my second) i was asked to do a cooking demo and sharing session at teban gardens was on 5.9.2018. 11pax attended.

they asked and i agreed to do another cooking sharing session today on 10.10.2018. today 20 attended ( plus 2 staff in the photo). 🙂

today i demo 2 dishes=

  1. 腊味沙煲饭 sausage claypot rice; and
  2. 黄焖鸡 chinese wine chicken.

as before, i tried to demo dishes which they can do easily at home.

also, i planned the dishes such that the cooking could be completed and they could try the food within 1/2hr and not wait too long.

so i put the claypot rice on high fire to boil the water  for few minutes then on low fire to cook for about 30mins. & during the time i explained the process for the claypot rice, then started the live demo on the chinese wine chicken.

the chinese wine chicken required to be marinated 2hrs before cooking, so teban gardens had my recipe circulated to the attendees.

i brought the marinated chicken to teban gardens, together with the condiments required for the cooking demo = cut ginger, chilli padi, chopped garlic, 1tbsp olive oil for frying, 2 tbsp huadiaojiu 花雕酒, and some coriander to garnish the dish.

so i added the ginger, chilli padi to the oil, added chopped garlic later, then added the chicken, fried for 5 mins to cook. added a little water and reduced as the chicken cooked.

before plating the chicken, i added the huadiaojiu 花雕酒 on high fire so the aroma came out.

sausage claypot rice

likewise the sausage claypot required 30mins just for cooking (for 2 cups+ of rice), so i fried the rice etc & basically started by putting the claypot rice to cook for 1/2 hr while i shared the recipe and the process with the residents. 🙂

so you fry cut ginger in veg oil or chicken fat, then off fire & add the salted fish and chopped garlic, then add the rice (and sliced mushrooms if available) and fry in high heat for 1 mins. then add 2 cups of chicken stock. i add the sausage whole.

when cooking put high fire first to boil the liquids then low fire to cook the rice.

when the sausage is cooked, take them out, cut & put back.

the claypot rice looked so nicely presented.

the residents loved both dishes. claypot rice was very flavourful and the chicken was tasty, sweet & tender.

Recipe

腊味煲仔饭 sausage claypot rice

  • 2cups rice
  • 2cups chicken stock
  • 1-2 slice salted fish (remove bone if required)
  • 3 tsp chopped garlic
  • 1cm cut ginger
  • 2 tbsp veg oil or chicken fat
  • 5 chinese mushrooms (optional)
  • 2-3 pork sausage
  • 2-3 liver sausage
  1. fry cut ginger in 2tbsp veg oil or chicken fat in claypot
  2. off fire and add 1-2 slice salted fish & 3 tsp chopped garlic
  3. earlier soften 5 chinese mushrooms in boiling water then cut slices
  4. wash 2 cups thai rice add to claypot & add sliced mushrooms (optional). fry high fire.
  5. off fire. add 2cups chicken stock
  6. wash clean thoroughly & dry pork & liver sausages. place on top of rice
  7. cook about 30mins, high fire to boil then low fire to simmer to cook
  8. take out sausages, cut slices, add back to rice, stir rice thoroughly to reduce burnt bottom, add coriander to garnish

黄焖鸡 wine chicken

  • 1 deboned chicken OR 4 boneless frozen legs (thigh+drumstick)
  • 2 tbsp fish sauce
  • 2 flat tbsp cornflour
  • 2 flat tbsp oyster sauce
  • 2 tbsp sesame oil
  • 4 tbsp huadiao jiu 花雕酒
  • chopped spring onions + 2 inch cuts white party
  • 2cm cut ginger
  • 3 tsp chopped garlic
  • 1 cut chilli padi
  • 6-8 taupok each cut into 4 strips
  1. debone 1 (or 1/2 chicken) or use 4 boneless frozen legs (thigh+drumstick) and cut 1.5in bitesize pieces
  2. season cut chicken with 2tbsp each of fish sauce, oyster sauce, sesame oil, huadiaojiu, cornflour for 2hrs
  3. fry cut ginger, chilli padi in a bit (1tbsp) oil, add chopped garlic & spring onions, then add chicken pieces. fry thoroughly for few minutes,
  4. add 2 cups chicken stock & reduce about 5-6mins. add 2in spring onions
  5. if cooking taupok (optional), remove chicken from pot so not to overcook, add taupok & boil for 1/2hr until soft & infused with flavout. add water as required then add back the chicken.
  6. before serving add 2tbsp huadiaojiu

 

Good Wedding Reception + Banquet Dinner at W Singapore on 7Oct2018

i fetched LCH then drove to sentosa to W Singapore on 7.10.2018. ^^

there was a reception before dinner and some canapes were served with wine & drinks..

there was a photo wall so we RI bros took couple photos together. 🙂

the dishes for the dinner banquet were good, and they were served individually. 🙂

the appetizer hors d’oeuvre comprised smoked duck, kurobuta 蒜泥白肉, prawn salad, a minced prawn wrap & wintermelon…excellent dish this. 🙂

soup was equally atas like a mini buddha jump over the wall – with baby abalone, fish maw, dried scallop and a very tasty broth. excellent!

wasabi prawns

the wasabi prawn was very well done, very crispy batter, fresh prawns, not ovewhelming wasabi cream.

garoupa fillet

the hong kong steamed garoupa fillet was good too. the sauce was good, the garoupa fillet was good but i have taken better ones eg tunglok signatures using this preparation..maybe it was the fillet cut.

wagyu

surprisingly the wagyu dish was the poorer of the dishes.

chinese styled stir-fried beef is usually not comparable to japanese or western steaks. this was ok dish but not great.

spinach & lingzi mushrooms & truffle

a great vegetable dish.

the noodles were nice too.

dessert

and the dessert was ok.

overall an excellent dinner menu befitting the wedding banquet.

it was a joyful day for my dear friend and the couple, and we were honoured to partake in their joyous moments

Good Dinner at Imperial Restaurant – 14 RI Bros Sep/Oct Birthdays on 8Oct2018

we have regular 14 RI bros birthdays dinner every few months. so far full attendance all 14 bros. the same this evening on 8.10.2018. ^^

the permanent members on the orgcom have been diligent in organising the dinners, arranging birthday present, cake & decor. sometimes with activities like loyang bbq & karaoke on 30.1.2018, and go-kart and tasty loong recently on 3.8.2018.

today we had a room at imperial (formerly imperial herbal) restaurant (located in Four Points by Sheraton Singapore, Riverview) with karaoke, though we didn’t get to do karaoke in the end. the server said we did not tell them we wanted to karaoke (although we did) and the adjacent room was having karaoke. happened that the adjacent room party was arranged by LKH’s sister and they did not do karaoke. we wanted to do when the adjacent room left but restaurant said it was late & they closing at 10.30pm (which is the case..so not really very useful to have karaoke installed?)

then we had 2 specialties of this restaurant? the beef tendon & the 赛螃蟹 egg white dish.

the beef tendons were pretty good. tender, good succulent bite texture, & quite flavourful. this the dry preparation i guess, the usual 焖 slow braised with sauce style i like too but i guess this preparation more unusual. so this was good.

LKH who arranged the restaurant & got 15% discounts did not arrange for any traditional house specialty like 牛鞭汤. he reckoned that the brothers didn’t need any help. lol! ^^

the 赛螃蟹 egg white dish can’t say it was anything special, maybe just above average?

i think the usual preparation of 赛螃蟹 at zi char or restaurants served usually with poached brocoli are better in my opinion. the key here is the good flavourful vinegar & the fluffy scrambled texture of the egg white.

i tried my hands on the 赛螃蟹 brocoli dish, not so easy this, texture needed improvements.

they served fish lip soup here. it sounded like another specialty.

it was a tasty soup, tasty. texture wise it was the slightly starchy gluey type like the fake sharksfin soup, it is gard to tell one from the other. i like maybe a clear soup with natural sweetness might be better. otherwise it felt like paying a lot for specialty and not sure what you get. 🙂

the prawns were good. it was similar in preparation with salted egg prawns or wasabi prawns, which also have a light batter deepfried the sauce added…can’t remember what sauce this was if any, but the frying was done well, and taste was good.

deepfry gave a good flavour but a steamed fresh live soon hock is still best.

the salt baked chicken 盐焗鸡 was the poorest dish. did not resemble any salt baked chicken. texture was all wrong though the stock was good. maybe a wine chicken dish or a xo frogleg dish with chicken instead of frog??

i would say the recent tasty loong’s 1/2 salt baked chicken on 3.8.2018 was what this dish should look & taste like.

and sorry to say but even my own salt baked chicken 盐焗鸡  was far superior la! lol! ^^

the sticky caramelised yam dessert was much ado about nothing for me.

and it had to be taken immediately before the hot sugar strands hardened, very hard to do for 14pax and by the time the server demonstrated what we were supposed to do.

no different from any yam and sweet potato dessert anyway.

the eight treasuers dessert? was good standard, bt then our organiser LKH made just as good ones for our home dinner gatherings…lol! ^^

the price was S$701nett for 14pax about S$50pax nett after 15% discounts.

looking at the bill, they charge S$1pax tea and 2xS$3 appertiser very reasonable. 2 plates of the beef tendon specials were S$36, also ok. & at S$458 for 10pax with 15% discounts, it was like S$39++pax for the 8-course set, with a karaoke room, longevity buns and a sticky yam dessert, actually it was a pretty ok deal la.

of course you can still get a suckling pig 10pax set for <s$500 at=”” ah=”” yat=”” and=”” hung=”” <span=”” class=”hiddenSpellError” pre=”hung ” data-mce-bogus=”1″>kang restaurants, but for this S$39++pax was quite ok.</s$500>

tired of mixed grill & other not fantastic western food we had this last week in slovenia.

decided to take chinese at zhong hua nearby..pretty good actually about €25 for 3pax dinner quite satisfying. even wife & son enjoyed it.

after checking out of our apartment, we had sometime to walk around ljubljana before going to airport to catch the flight to naples via an overnight layover at istanbul.

we were killing time. after walking we rested and had a drink and chill bu the riverside.

this week we had been taking mostly mixed grill that were so so, not great pastas, grilled trout that were good (at bovec) and not so good (at bohinj), i am kind of tired of these.

when my wife & son asked, i said i rather have chinese. and this zhong hua restaurant has quite good reviews.

虾饺 hargao passable, not near the best we get easily in singapore or hong kong, but ok.

sweet sour soup 酸辣汤

sweet sour soup 酸辣汤 just a starchy soup, not near the fragrant, flavourful up in a good restaurant, but ok too.

laziji 辣子鸡 good standard, like those we get in sichuan restaurants in singapore.

fried rice was good too. quite tasty and a bit of wok hae..:-)

dinner was €22 for 3pax, of course we did not order much.

i was quite happy with the chicken & fried rice, and wife & son were too.

i don’t really bother if it was chinese or western, and generally as a rule when we are travelling in western countries we do not take chinese (with the exception of the excellent roast duck in london chinese restaurants like goldmine and four seasons).

as long as it is nice. lousy western food just as bad as lousy chinese, and vice versa, lol! 🙂

we decided to take a walk down a street with middle eastern food and wares.

so went to buy some falafel. not really my kind of food. 🙂

we decided to sit down at a place with more shade to chill. ordered beers and a bitter lemon drink. 🙂

this fany & mary was a popular joint. at this mid afternoon hour we could get a table.

they dispense cryptic advice too! lol!

fany & mary was right by the mesarki bridge. so i went to take some photos of the sculpture of prometheus, figures from Ancient Greek and Christian/Jewish mythology. adam & eve sculpture was across adorning the other side of the bridge.

after chilling out, we debated where to have early dinner, and i decided to go chinese after a week of mostly mixed grill dishes.

slovenska hisa is popular amongst locals, and our airbnb host recommended it. 🙂

it was along riverside with a great al fresco ambience.

we were early between breakfast & lunch so no difficulty to secure a table. 🙂

scrambled eggs and roasted pumpkin seeds

menu was intriguing, supposed to be local food with a modern take, and the food was excellent. every dish we had were good.

there was also the matter that the prices here were very affordable, but the main point is that the food was good.

one of our more enjoyable meals in slovenia indeed!

today is our last day in slovenia, taking the evening flight to istanbul with overnight layover then enroute to naples next morning.

we went for a morning walk before checking out the apartment.

our apartment is located next to the university of ljubljana and the city park.

we walked past the shops along cini metodov trg where the cathedral st nicholas is located, with beautiful sculpture on its walls and metal doors..

and came to the central market, located at vodnikov trg, whichmarket building stretches from the triple bridge to the dragon bridge.

there were fruits, vegetables and cured meat stalls etc.

had dinner at restaurant most, a chargrill steak restaurant with good reviews.

actually food in slovenia not that good, so after the best steak at restaurant julijana in bled, this like the first decent steak dinner so we were looking forward to it. & of course it was expensive!

dinner started well with a amuse bouche. couldn’t quite remember but it looked at a small seared tuna.

the chargrilled mushrooms, a special of the day recommended by the server, was very good very flavourful but expensive at €15

we came to the tromostovje, the famous triple bridge.

these are three bridges across the Ljubljanica River. It connects the Ljubljana’s historical, medieval, town on one bank, and the modern city of Ljubljana, capital of Slovenia, on the other.

it was getting dark and my iphone camera lens had a small crack and not taking good pictures with sun or lights. anyway it was time to settle down to a nice dinner.

the airbnb host was waiting for. there was some traffic direction issues with the map directions so we had to make a big u turn.

the apartment was conveniently located near river ljubljanica and the triple bridge was a short walk away.

it was right next to the university, and i suspect (it totally smelled like it, old books, some stationary in the sitting room, and all) that this was like some professor’s apartment. lol!

The Incredible, Stunning Postojna Caves on 19Sep2018 Day 5 3pax Family Holiday in Slovenia 15-21Sep2018

postojna caves is the last leg of our day’s journey from bovec to ljubljana on 19.9.2018. ^^

after leaving the beautiful tolmin gorge, we drove about 2hrs to postojna caves.

here at postojna is a 3million yrs 24km cave system with electric railcar access. we rode the rail car 2km into caves, “an electric train which whisks visitors into the black abyss, with only a few lamps guiding the way. It zips through an expansive, open part of the cave called the Ballroom, which has been outfitted with stunning chandeliers—just incredible! “

then guided walk another 1hr total 1.5hrs.

we bought the combo tickets which included a visit to the vivarium. as the next available guided tour only starts at 3.30pm, we visited the vivarium first in the meantime and saw the ancient ohm & spiders, ants, beatles etc..creatures of the dark..

we are treated to dazzling collection of stalactite and stalagmite formation, breathtaking at every turn.

the most famous stalagmite of all, Brilliant is a bright-white, five-metre high limestone formation.

we alighted the train, and followed the guide to a large lit chamber.

the english guide spoke clearly, had a good command of english, and had good knowledge of the caves.

postojna caves was an awesome. the best cave i have visited.

the stalactites and stalagmites were just amazing, incomparable anywhere. but it is also the accessibility and the massive collection of tunnels and caves and chambers…

some may see this as excessive commercilaisation, for me it was good that the tour was professionally done, efficient, extensive and came with good english guides. no time wasting, nothing missed out.

it took us another like 2hrs car journey from tolmin gorge to arrive at postojna caves about 2.50pm on 19.9.018. ^^

we bought the tickets that included a visit to the vivarium.

the next main postojna cave with english guide starts 3.30pm so we were advised to visit the vivarium first before queueing up for the 3.30pm guided tour.

the ohm is a creature of the dark.

It feeds on crustaceans, worms, snails and other aquatic invertebrates,  has a lifespan of up to one hundred years and can go without food for several years.

In 2016, one of Postojna Cave’s olms laid eggs, which hatched some time later, capturing the attention of people all around the world.
