Super Delicious Chicken Laksa with Pong’s Laksa Paste on 5Jul2019

made 7pax pong’s laksa today on 5.7.2019, with my OPS and RI bros WT,WM, HC, LKY, LKH and HAB. ^^

HC had lunch with brother still came over at 2pm. I made a bowl for him. 🙂

i love curry chicken noodles.

  • according to makansutra this dish was famously created by teochews in singapore exemplifying singapore’s chumchum 参参 mixed heritage ..the 3 famous teochew nang stalls are ah heng and heng kee at hong lim food centre and da po at golden mile food centre.

I don’t have the secret recipe to make the curry chicken noodles gravy..

so i approximate using pong’s laksa paste and added the important secret ingredient haebee, and laksa leaves, AND and very tasty chicken stock, excellent taste. ..

and the usual taupok, teochew fish cake, and fish cake..no potatoes for me..

cannot c/w ah heng etc of course but still very shiok! haven’t learn how to make the dried shrimp sambal yet..

made 白斩鸡 and 白猪肉. & had lots of taupok, teochew fish cake and fish cake.

i think my 白斩鸡 is smoother, chicken breast more moist, and sweeter & tastier than ah heng. ^^

recipe

1/2 chicken, salt in fridge overnight, clean thoroughly, placed in boiling stock (chicken bones, carrots, scallions, whole bulb garlic cloves, ginger, red onions) boiled covered 12mins, off fire poached 24mins, placed in ice water bath, then in fridge for 1 hr, then debone.

drizzle sauce

for the 白斩鸡 drizzle sauce, i added 1tbsp flat sugar, 2tbsp light soy sauce, 1tbsp sesame oil, 6tbsp stock or water. taste it!

and 白猪肉 also very tender and tasty…

recipe

boiled in stock 1.5hrs. placed in fridge. and cut & added stock to warm up when serving. hence very tender yet cut neatly no fraying.

and i added the 白斩鸡 drizzle sauce, w/o sesame, very nice. 🙂

i had had lots of taupok, teochew fish cake…. and fish cake.

i think it approximate quite well in that laksa broth was wonderful, only thing not spicy, need to add some haebeehiam sambal next time, and my 白斩鸡 and 白猪肉 were excellent texture and taste. but of course it is still NOT the same ah heng curry chicken gravy…

Babi Pongteh – 98th Teban Gardens Community Breakfast on 5Jul2019

made babi pongteh for teban gardens community breakfast this morning on 5.7.2019.^^

i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.

this my 98th friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

boiled belly pork

i made babi pongteh once before almost 4yrs back. it was pretty good.

this time making a breakfast dish for 140pax at teban gardens, a bit different. i had about 500g belly pork and 800g pork chop which i cut into small cubes. and i added carrots and potatoes for the bulk, to give a substantial dish. so no taupok and mushrooms this time.

and because i cooked in the morning, it was easier for me to precooked the belly pork the evening before, about 1.5hrs and placed in fridge in ziploc.

this morning i cut the belly pork. this way the texture inside very tender, but cut nicely w/o fraying. and speeded up my preparation in the morning.

i fried 5 cut shallots to translucent and added 5 chopped garlic cloves. added 4tbsp crushed taujeon and fried till fragrant.

then added diced pork fried about 10mins. and added 2tbsp light soy sauce, 1 tbsp dark soy sauce.

then added the boiled belly pork.

stirred thoroughly to mix and it’s done. set aside.

added carrots and potatoes

then i fried carrots with oyster sauce for 10mins to soften. then added cut potatoes, another 10mins to cook.

I made teochew taujeon lime juice steamed song fish head 松鱼头. ^^
very easy S$4 1/2fish head, steamed with 3tbsp crushed taujeon, 1tbsp light soy sauce, 1tbsp lime juice, 2tbsp oil, and usual garnishes.
fresh, tender and sweet, slight tangy..very nice.

i booked 6pm and arrived 6.55pm..traffic delays, picking up other diners, parking etc..place was 20% by time we left 40% occupied.

We were asked to take a smaller table but we think more comfortable so moved to a bigger round table with the consent of server..

the young lady at counter saw it fit to come over and give us a lecture about calling up if we are late as they kept booking only for 15mins (sure they should)..

i always make it a point to call to cancel before time if i not going..this time we are coming just late because delays and i know very well the restaurant is empty..been there before..

& we could also be just walk-in no need to say we booked..and if itwas full just too bad lor, other makan places all around..since it is empty no need give customer a lecture la..

anyway we came for food to enjoy the food that part satisfied ok la..just putting on record lol!

prawn tofu and bittergourd very good standard despite this elder brother being from the steamed department..great taste, texture and good wokhae so food and price wise i think really quite good.

we had a great time ourselves, unperturbed by the poor service attitude, purposely giving customers a smaller table when so many empty tables throughout dinner, and when customer moved to bigger table, couldn’t take it must come to give lecture…just immature and bad attitude.

the babi ponteh, sambal sotong, curry chicken, pork ribs set all good 👍

set came with 2 sides, drink and dessert..

chendol this evening was excellent as good as four seasons tpy lor 8!

alacarte dishes were all good. rendang best! ikan tenggiri, fried seafood laksa and otah all good. 6pax, 5 set + 4 ala carte dishes = S$103 nett.

all came – JH, PT, ervin and we had 8pax dinner. full house.

i made the 沙茶酱mixed with 麻辣chilli with lots of chopped garlic and chinese celery. wife made fried onion oil. scallions and light soy sauce.

steamboat is the easiest food to prepare. aunty bes made the ikan bilis and yellow bean stock. all the other ingredients just buy and we had a wonderful 8pax family dinner. no effort.

we ordered quite a bit, rojak came in 2 plates S$31 for 9pax…quite enough actually but we were greedy and ordered another S$10… really nice especially taken with the chilli dip..we had cuttlefish as well as squid, crispy batter prawn, coconut piece, and of course fish cake and tau kua..

really shiok..must come back agsain!

after rojak, we decided to walk over to the fruit stall for durians.

we ordered 6 durians in total = 2 golden phoenix 2xS$10, 2 small msw 2xS$10 (these 4 S$10 each) and 3 large msw 3 8kg @ S$18/kg for D$65 = total 6 durians S$105 …

the joke is that the S$10 msw is better than the S$30 msw..the smaller ones so intense and flavourful..HAB almost wanted to buy back some S$10 msw.

this my 97th friday breakfast community meal dish at teban gardens community service centre.

happens that my RI bro KWL passed me 2 packets of heng’s vegetable curry he bought in JB.

i bought some vegetables totaling 1kg+.

and cooked a nice, very tasty vegetables curry with the paste.

just fried long beans with curry paste and curry leaves first 5mins, then added ocra, added pork stock from making the crispy pork and covered for 5mins. then added eggplants another 5mins.

added 1 packet 200ml coconut milk, mixed well and set aside.

for the crispy pork, i blanched in boiling water, cleaned and placed in 130degC oven for 3.5hrs…and drained in fridge overnight…pork very tender.

this morning i shallow fried in 2 batches, drained off oil in colander, and used the oil to fry the vegetables for the curry.

but after flaming, and it was not a thick cut, it came out very well, nicely medium rare, very consistemt and great flavours.

to model after the excellent tender, moist, tasty chicken we recently had at halia (above photo).

came up with my own recipe, and it was pretty good la..

i seasoned with sea salt and pepper and pangrilled deboned 1/2 kampung chicken breast and thigh pieces about 4 mins, high heat, just a little butter (chicken lots of oil rendering out), till crispy skin, turned over and off fire. then 20mins in 130degC oven.

chicken was very tender, moist and consistent, quite close to halia’s.

i decided to do mine as red wine reduction. it was really tender and tasty. PT commented it was very nice and chatted with me about how it was done.

food was generally good, tasty, and great teochew dishes. 🙂

anyhow it was very good, much better than the braised duck at fragrant gardens.

the 2 dishes S$60, goose was ok…don’t think i want to spend money on braised goose liver. 🙂

egg omelette also good. at S$20, quite standard price..better than fragrant gardens, about same as huat kee.

the proprietress brandied some names, anyway looked like sotong, tasted like sotong, it was sotong to me.

teochew fried kuay teow also very good here. better than both fragrant gardens and huat kee.

dinner was S$220 for 7pax, quite ok, but then we did not have the expensive dishes like halibut and pomfret which were both excellent at fragrant gardens.

i can expect them to be equally good and expensive here though. lol!

when i read the blogs, apparently their cold crab, teochew steamed treadfin also very gooda and the steamed sharks cartilage..not sure that is a teochew dish…

will try next time.

first time i ordered this steamed whole seabass.

this a very popular dish in thailand and in the distant past i had taken this many times in bangkok with thai business partners and it was very good.

i had cooked this myself, just seabass with fish sauce and lots of aromatics. today i didn’t expect much and it wasn’t much. good enough i guess. seabass with tasty sauce. should have come as a candle heated dish though.

still i expected better but this was not much tasty, i think much below par for a restaurant like patara…

had a halia chope S$100 8.30pm offpeak voucher expiring today 24.6.2019. bought for S$50.

made reservation on chope 8.30pm and went early with wife and walked to the visitor’s centre and back, contributed to 10,000 steps. lol! 🙂

they didn’t have my favourite blackmore wagyu spare rib on the menu ay more, so didn’t order more vouchers and chope doesn’t allow once reservation time so sticked with the S$100.

food was quite excellent for the price. we had-

  • 2 servings of wagyu beef carpaccio (excellent)
  • Tuna tartar (good)
  • Sauteed portobello (good)
  • Cauliflower Soup (ok)
  • Chicken breast (excellent)

all in S$53nett for 2pax with chope 50% vouchers.

i told the server it was like 1/2 the size of what i had previously, which was breast plus wingstick portion, now only breast. she replied that some customers suggest to have a side, so they had the leek confit and cheeseball. i liked both. 🙂

this doesn’t need a recipe la…lol!

just clean and steam mullet for 8mins. let it cool and then place in fridge for 1/2hr. voila!

3 important points to note –

  1. do not remove scales. the skin comes off with the scales so enable one to cleanly pick up the meat. if scales removed, then skin very tough difficult to tear and difficult to pick up meat with chopsticks.
  2. the treasures are in the belly, so this fish i clean myself cannot trust to the fish mongers haha! i remove the gills and clean whole fish thoroughly, and also the omega3, liver and the fish stomach 鱼扣 (“her shook”) with salt.
  3. only put omega3, liver and fish stomach 鱼扣 (“her shook”) into steamer 1 min or after completion and leave the fish in the residual heat. omega3 will melt off very quickly if in steamer longer.

steaming no need much recipe, just the sauce and the timing.

3tbsp light soy sauce, 2tbsp mirin (optional) and 2 tbsp olive oil (or vegetable oil).

really easy stuff.

head and meat were so fresh and the steaming sauce was so very tasty.

made 1pax all protein dinner this evening on 21.6.2019.^^..🙂

  • just cleaned fish with salt, drained by, added 3 tbsp tau jeon, 1 tbsp lime juice, and all the usual sliced ginger, chopped sacllions and chilli padi.

golden pomfret steamed with taujeon and lime juice. very nice!👍👍👍

don’t know why golden pomfret cheaper than black pomfret

2 for S$6.90 c/w black pomfret S$14.90/kg at sheng shiong…

eaten black pomfret fried before i think never eat golden pomfret..meat is firm and sweet like white pomfret and not very fishy like black pomfret..

very worth it!

this taujeon lime steamed fish i think is similar to what eat first 食之为鲜 steamed song fish head and zhia soon’s steamed sharek’s cartilage. will try on song fish head next time.

made braised chicken with potatoes and carrots for teban gardens community breakfast this morning on 21.6.2019.^^

i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.

this my 96th friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

chicken, potatoes and carrots

the usual preparation – cleaned, cut and drained dry  2kg chicken thighs in fridge, then marinated with 3tbsp fish sauce, 4tbsp huadiao wine and 2tbsp corflour overnight in fridge.

this morning, fried with cut ginger and chopped garlic about 5-6mins then set aside.

then fried carrots first about 5mins to soften, then added potatoes.

added back the chicken gravy and covered and cooked another 10mins.

then added back the chicken, mixed thoroughly and plated the dish into the aluminium carrier.

and done!

wife bought 4pax dinner at uat kee this evening on 20.6.2019. ^^

i had arranged 6pax dinner including WT and GY at tasty loong @ ortho. but WT had some urgent matters to attend to, so we decided just 4 of us all around town don’t go so far. can go tasty loong another time.

wife loves the food at huat kee, so we decided to go there, quite convenient at RELC.

we ordered 3 claypot sharksfin S$30. it was very good. i didn’t take.

surprisingly the fish maw was much below par?? not tasty, not right…

the claypot chopped spinach was good. i think maybe i can replicate that.

oyster omelette was good standard, better than fragrant gardens.

the teochew fried kauy teow was good but still not enough wokhae, not the best, can be better.

the dessert orh nee and cheng tng were good.

dinner came to about $240 for 4pax, not that cheap though the individual dishes on the menu didn’t look too expensive. of course there was 3 sharksfin and the other dishes would add up to about S$135. i guess ok.

the whole suckling pig was S$169 on the menu. however the expensive looking )as in the cost of making printing) menu not updated so the menu price for sharesfin was S$28 but the cost was S$30.

i will consider coming here with my sis and brother to try the suckling pig and other dishes.
