  3. white beehoon- excellent dish with very tasty chicken stock…prawns, cuttlefish, lala all done just right
  4. aunty bes made nice french beans with minced pork

first time i made 鲳鱼煲 Claypot Pomfret Soup, inspired by the excellent dish recently at  fragrant garden.

it was very good. soup was very very tasty, flavourful, from lots of fish heads and bones leftover from filleting, and lots of chinese cabbage, and also radish, ginger, garlic, red onions, scallions.

and the 斗鲳 really nice, firm and very sweet.

a super tasty dish! 🙂

today’s claypot tanhoon prawns also very tasty.

i added good quality haebee and the usual aromatics like coriander, scallions, ginger, red onions etc, and black pepper…

and i had teh same intense chicken stock i also used for the white beehoon.

this evening, texture of tanhoon was perfectly, moist and very well infused with the stock and aromatics. quite perfect!

and likewise for the white beehoon.

just the right amount of stock, ingredients, beehoon, so beehon also very well infused, cooked just right texture, moist and tasty, and all the ingredients were not overcooked.

Great Tapas 5pax Dinner for Wife’s Friends on 14Jun2019

spanish omelette – tortilla

wife invited her friends MW & thomas (also my RI friend) and WG (Dorothy) for 5 pax dinner this evening on 14.6.2019. ^^

we had-

1 (wife made) salad and grilled brussel sprouts
2 spanish omelette
3 miso teriyaki salmon belly
4 chorizo prawns
5 seafood tagliatelle
6 australian wagyu 6/7 striploin

wife’s mesclun salad 

mesclun salad was excellent, with agave nectar and the usual extra virgin olive oil and balsamic and some crunchy bits.

the spanish omelette – tortilla were excelelnt this evening. don’t make this often, but this evening it was tasty and the egg, potatoes were onions were just the right texture. 🙂

wife’s friend all loved this tapas dish. 🙂

they all loved the chorizo orawns very flavourful and succulent prawns, and wonderful chorizo sauce.

wagyu was a good cut, marbled and flavourful not my best rendition though not getting the right temperature and timing with this pan..

still it was very tasty and tender, and quite restaurant standard.

seafood tagliatelle

pasta was al dente and very tasty.

i used the same intense tasty chicken stock made from chicken bones, carrots and aromatics like ginger, red onions, garlic, scallions.

both had white wine reduction, browned whole garlic cloves in olive oil and basil, only that chorizo prawn sauce also had sliced chorizo so another layer of taste. and most appreciated by wife’s friends.

had a great fun dinner with good friends together.

i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.

this my 95th friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

bought 2 packets diced pork and 1 packet diced belly pork total 1.2kg from sheng shiong.

slow braised 3.5hrs in 130degC oven the evening before and drained dry in fridge overnight.

shallow fry is 1cm oil this morning. ^^

used leftover oil to fry cabbage with oyster sauce, about 1 kg cabbage.

added back the pork and mixed thoroughly.

Expensive Mediocre Food even with Eatigo 50% Discounts @ Peach Garden Miramar on 12Jun2019

went with wife & sumin to peach garden miramar for 3pax dinner on 12.6.2019..

went peach garden becos there is eatigo 50% discounts..

however, unlike patara and indian curry house the 50% discounts at peach garden is NOT GENUINE!

they marked up the prices eg 1/2 roast duck S$48..peach garden is average food below xin cuisine, tunglok, imperial treasure etc nobody priced 1/2 roast duck S$48!

and server try to push soon hock at S$70/kg after 50% discounts..nobody sells soon hock at S$140/kg..

anyway their restaurant their prerogative..

BASICALLY EATIGO 50% NOT GENUINE!!!

better off with minimum 4pax alacarte buffet S$48pax MON-THURS 50% off which is their regular promotion NOT eatigo..

we ate few dishes no point wasting money here still comes to S$93nett for 3pax..

Recipe 7th Sharing & Demo = Claypot Tanhoon Prawns and Char Siew @ Teban Gardens on 12Jun2019

teban gardens PPHCSC (pasir panjang hill community service centre) organised a cooking sharing session on 3.4.2019. ^^.

this my 6th cooking demo and sharing… 🙂

20 residents attended today.

i shared 2 dishes-

  1. char siew &
  2. claypot tanhoon prawns

char siew

char siew i had to cook at home first. and i brought along, and cut it when we were serving.

teban gardens just got thei new oven delivered 2 days ago. i have not tried it here so better to do it the usual way at home.

char siew was very tasty and tender, as Rosalind said, she could feel it when i was cutting.

i walked through the steps. the recipe was earlier provided to the residents.

for claypot tanhoon prawns, i prepared the stick at home and put together/cooked the dish on the spot. 🙂

tanhoon had just the right texture, moist and flavourful, likewise the prawns.

for tanhoon, i demo on the spot, put the prawns followed by tanhoon into the boiling stock, mixed well, covered, mixed a bit again, and as the stock reduced, the flavours were infused intot eh tanhoon which remained moist and very flavourful.

so both char siew and claypot tanhoon prawns turned out beautifully, quite the usual. 🙂

so the char siew recipe as follows-

Recipe

1 poach, clean, dry 500g belly pork
2 cut in 1/2 to make 2 slender slices 2cm thick (i have thick 500g+ slab)
3 marinade with 1tsp each of LKK char siew sauce, hoi sin sauce, oyster sauce, light soy sauce, brown sugar, honey, 1tbsp of red fermented beancurd and chopped garlic, 1/3 tsp salt overnight in fridge
4 place on rack, drizzle 1tsp honey and place in 250degC oven for 16mins. leave char siew in oven for 4 more mins.

20 large 21/25 prawns

and the recipe for claypot tanhoon prawns as below-

Recipe

Ingredients:

  • 500g deveined large prawns with shell
  • 100g sliced belly pork (optional)
  • 150g tanhoon (3 bundles)
  • 4 stalks coriander
  • 2 cm cut ginger pieces
  • 1 bulb peeled garlic cloves
  • 30g haebee
  • 2tsp ground black pepper
  • 300ml cup chicken stock
  • can use prawn stock also or mix

Directions

(for stock):

  1. prepare prawn stock – fry prawn heads & shell in butter (or oil) till fragrant. add salt, a bit of oil, water & boil for 2-3hrs.
  2. prepare chicken stock – i debone 1 chicken & boil the chicken bones with cut carrots for 3hrs – very intense stock

Directions:

  1. fry garlic cloves, haebee, sliced belly pork in oil. add cut ginger, black pepper. fry till fragrant.
  2. add 2 stalks coriander.
  3. add chicken stock and reduced further to anout 200ml
  4. marinate prawns with 2tsp fish sauce & white pepper.
  5. put tanhoon in water to soften.
  6. when ready to cook, boil stock. add prawn, stir to immerse prawns in stock, add tanhoon, toss, turn fire to medium & cover the claypot for few minutes. toss again. voila!

Great Delectable Dishes (7pax Family Father’s Day Dinner) @ Tasty Loong on 9Jun2019

my family always celebrate commercialised occasions like christmas, new year, valentine, mother’s day etc not on the actual day.

becos generally we say on actual days it cost double, quality dropped by 1/2 and ZERO service lol!

so for father’s day celebrations, children boguht me dinner one week before on 9.6.2019. ^^

i selected the place, tasty loong @ orto.

ORTO, formerly bottletree park is a multi recreational park, with prawning, fishing, karting, paintball, trampoline etc and like 8 F&B outlets.

for this evening we are dining at tasty loong, nice ambience over the pond.

we had this last year at shanghai, introduced by my OPS friend, WT and his wife GY. we loved it.

here it was very good too, everyone loved it. will order this again when i come next.

roast london duck was very good. actually better than the tea flavoured duck at xin cuisine we just had…more like the recent xin cuisine one was below their usual standard.

anyway this one great roast flavours, great texture and is up there. just that everyone didn’t think much of the mango sauce!

the hand tear chicken 手撕鸡 was good especially with the ginger scallion dip..tender, moist, sweet, nothing specail though.

smoked duck was the poorest dish. last time i tried it was ok. after trying again, i think i can pass on this dish.

lala was ok competent.

the charcoal tofu among the better dishes, great texture and taste and unique.

the carbs were below par here.

the seafood beehoon was ok competent, but not flavourful enough, not my preferred dish.

the yuan yang fried rice was a bit better, more flavourful especially the bottom bits form the stone pot. can consider next time. but wife and i really wanted a good standard normal zichar horfun. they did not have that on the menu only the chilli crab horfun which was not great when i had it last time. will ask for noraml horfun next time i come.

the dessert were the worst dishes here.

the ice jelly was a total failure. how can go wrong with ice jelly, just syrup and lime on ice and jelly? cannot order this one.

will try orh nee next time, hopefully better.

overall everyone loved the food and ambience. had a really relaxed and fun evening with the family.

Great Teochew Food (7pax Birthday Dinner for Brother and Sis) @ Fragrant Garden on 13Jun2019

food was good as always, especially the teochew streamed halibut, claypot pomfret soup, and very flavourful orh nee..

duck was below par, orh lua quite “pang” not the best. teochew fried kuay teow mediocre not enuf wokhae, garlic kailan non-descript, pig trotters jelly so so

pig trotter jelly was competent, i guess what people said “mai hiam buay pai” lol!

meat was soft, jelly was good enough not very flavourful…

the claypot pomfret soup the best, unfailingly.

very tasty soup, sweet chinese cabbage, and pomfret very fresh, firm and sweet. i like this better than steamed pomfret, and better than the very tasty teochew steamed halibut!

not cheap obviously S$100/kg and 0.98kg.

teoche steam has sour plum, salted vegetable, delivering excellent tangy sweet taste.

and halibut was sweet, delicate, firm white fish. the dish was just superb!

braised duck

braised duck was much, much below par! wet and not tasty not “pang”.

my own teochew braised duck, super “pang”, moist, tasty

wife said far below the braised duck i made. in fact now we decided not to order braised duck in restaurants, doesn’t make sense.

i find it strange that roast duck are uniformly better in restaurants c/w hawkers/coffeshop, whereas braised duck are almost equally uniformly better at hawker than at restaurants

oyster omelette

oyster omelette was good enough competent, did not stand out.

beng thin’s crispy version beats this hands down.

likewise many hawker stalls oyster omelette better!

fried kai lan

fried kailan quite nice, some wok hae but kind of pedestrian for me.

i have taken very good fried kailan elsewhere.

teochew fried kuay teow below expectation, can’t say below par but i expected it to be much more fragrant with good wok hae. not quite this evening.

this my 94th friday breakfast community meal dish at teban gardens community service centre.

curry chicken and potatoes 

preparation was straight forward. i just used a packet of heng’s nonya chicken curry paste.

cleaned, cut and drained the chicken thighs evening before, and marinated overnight with the chicken curry paste. as i am using 2kg chicken (instead of usual 1kg on the packet) and almost maybe 800g potatoes, i also added 3 tbsp fish sauce.

i fried the chicken first. added 1 packet 200ml coconut milk and covered, 6mins.

then removed chicken and added potatoes to the curry gravy. add water if required.

cooked for 10mins till potatoes just cooked ie chopstick poked clean through and breaks when pressed against side of wok.

then just added back chicken, mixed thoroughly and the dish was done.

then i plated it on the aluminium carrier and kept in 40degC oven till time to deliver to teban gardens usually about 8.15am.

put on aluminium foil and placed in a box carton lined with old newspapers.

today was great challenge as i did 4 cups for 12pax, usually i do 2cups to 3cups rice.

CCG was next to me the whole time in the kitchen watching over with me while i get ready other dishes, waiting for the rice to slowly cook, about 45-50mins.

this restaurant in particular is famous for its “super peking duck” which indeed was very good..

the skin was served first, dipped with a bit of sugar. i had this preparation at goodwood park meng jiang 岷江at rochester eons ago.

if i were to make a comparison, for myself kai gardens overall experience better with the unique crispy beancurd item adding texture when eaten together in the peking duck wrap.

wife and i leaving for hiking holiday at blue mountains so children brought forward the celebrations.

aburiya is our family go to place for yakiniku and my wife favourite restuarant.

this evening we also have JH and aunty bes so 7pax family dinner.

the wagyu “carpaccio” dish everyone’s favourite and we ordered 2 servings.

the beef platter S$35 has good combination jo karubi (prime shortribs), rossu, and i think sirloin, the best cut. we ordered 2 servings also.

we love both the bibimen and kimchi chigae here.

and we also ordered the bibimbap, i think forgot to take photo.

jo karubi

and the jo karubi (prime shortribs) was excellent. i think we ordered like 3 servings plus one serving of karubi.

always a satisfying meal and great family time together at aburiya.

Korean BBQ Buffet (14 RI Bros Apr/May Birthday Lunch) @ Daessiksin on 7May2019

we have our 14bros birthday celebrations every 2-3months. this time it was for the apr/may birthday buys, 3 chappies LKH, KWL, NCL.

organisers (LCH, LCJ, OBT) arranged really fun games at national stadium including treasure hunt, very good way to acquaint with the various locations at the stadium and many games – from frisbee, passing, kicking, netting small balls on target, skipping, 3-man race manuevring small rugby ball held up together w/o hands, chapteh etc etc.

after games we went to daesiksin 大食神korean bbq/hotpot like S$17.90pax 35% senior citizen discounts 🙂

there was both hotpot and korean bbq grill, not the combination mookata grill.

the quite large small octopus really shiok!

the cheese dip was superb. 2 types of cheese very flavourful…we finished up the serving from another table where the guys don’t tale much cheese. 🙂

we had a jolly good time.

service was very good. the staff took photos and put up with a overly active senior group. lol!

beef carpaccio was tender and sweet, with shaved parmesan cheese, a bit plain w/o dressing..

lobster arrabiata good standard with fresh whole small lobster tail..each 1/2portion came with 1/2 tail.

fish stew like buillabaise

the seafood stew very huge serving even for 1/2 portion..i have like 4 pieces of fish, lots of small cubed cuttlefish, just one prawn, and small tail portion of lobster and 2 mussels for my 1/2 portion.

…soup was nice not superb and seafood ok not super fresh…

overall 2pax dinner plus one white wine was S$94 nett after discount.

dishes were good restaurant standard and very good serving size and service was outstanding.

with 50% amex discounts dinner was S$94nett very good value for the food we had.
