this kai garden 嘉苑  truely the best fine dining Chinese restaurant i have been to…chef & staff from taste paradise…

it was nice, tasty, i guess uncommon, not sure it was better than normal steamed siu mai.

anyway siu mai not my favourite dimsum, but i know it is for 1 of my friend here. we had to order it in hong kong for him…lol! ^^

the charcoal shengjianbao 生煎包 was quite excellent, tasty quite juicy there’s actually some soup inside. 🙂

seemed that a friend asked the restaurant if they have squid-ink dish (he said i like to make squid ink dish), the restaurant said no but they have charcoal 生煎包. lol! ^^

shengjianbao 生煎包 not my favourite. like a ba pao 肉包made as 锅贴. many places no much juice. this one here a bit of soup, but overall experience still cannot compare with a good xiaolongbao 小笼包.

so very tasty, intense yet smooth. the best!

i think there was 金华火腿 to give it the smooth & deep flavours. there was also intestines & sea whelk.

it was certainly visually commanding. impressive la! 🙂

there were 5 colours skin & 5 sauces. all the skin were excellent!

we could only take 2 pieces each.

i tasted all 5 sauces. for me the original sauce & the sesame sauce were the best.

overall, a very pleasing dining experience. though i generally prefer roast duck to peking duck for purpose of eating duck.

the fried duck meat 炒鸭件 not so popular.

we were all quite full by then.

it was not badly done, but i prefer just to eat the duck, just as i like to eat roast duck.

looked nice, tasted great, but not particularly a dish i need to eat la, especially i saw it cost S$22 on the menu.

the grilled scallop was very well done, and the poached kailan crunchy & sweet.

a nice dish to round off a fabulous meal.

i tried creating this dish at home, but not too successful. will give it another go!

lovely cake! really nice.

the restaurant provided the longevity buns. quite odd that the only complimentary item they provide & it was quite bad. the lotus paste was dry not moist & tasty. the complimentary buns at hung kang & swatow all better than this. maybe they bought this item from some supplier???

this was a really enjoyable lunch for me.

my friends did me several great very pleasant surprises la! very memorable this lunch, so must commit to record on my blog & FB! ^^

among the best fine dining dishes i had so far.  for me, majestic, tunglok & xin cuisine all very good chinese fine dining. for elaborateness & presentation, kai garden maybe more fine on some/most dishes.

the other notable thing was the service was superb throughout from every server. & almost the entire staff came in to sing the happy birthday song. we stayed quite long & late & they served us very well.

i think my friends gave them a good tip.

Some Experimental Dishes on 30Oct2016

Experimented on some dishes tonight. ^^

first was a golden snapper fillet (ang kueh) with mei cai 梅菜, dry mustard veg.

basically i have been doing whole fish, whereas in fine dining dishes, it is usually served as a fish fillet.

i had a golden snapper in the freezer, so i defrost & fillet it.

i had initially wanted to steam the fillet with mei cai 梅菜, so i prepared the mei cai 梅菜. but the steam oven failed on me. it required descaling, so last minute i switched to poaching/teriyaki.

OR the cai garden style.

i didn’t have lobster broth though, if i poached it lightly like cai garden, the fish maybe quite tasteless, so it’s safer to do teriyaki, with light soy sauce, olive oil, mirin, then coat, cover & reduce. this made sure the fillet was tasty, then i addd chicken stock & thickened with cornflour & added oyster sauce.

i addd very thinly sliced celery stems & leaves & added the mei cai 梅菜, which in this instance was just an superfluous addition with little bearing on the dish.

i have done it several times, always good la! 🙂

i fried the egg tofu & set aside.

when ready to serve, i fried the prawns just a little with chilli padi & garlic, added 1 cup of chicken stock, cooked the prawns, added cornflour & oyster sauce & reduced. then cracked an egg & used a chopstick to “draw”. then added back the tofu & prawns. voila! ^^

added coriander to garnish. 🙂

my 3rd dish braised noodles is a variation of my king prawn noodles (in golden braising sauce) 黄焖大虾面.

i poached the kailan in boiling water for few minutes. tossed with oil & oyster sauce.

i grilled the scallop. today though scallop was not done well.

the prawns i just portioned out 6 prawns from the tofu prawn dish for 3 of us.

i made a very tasty braise. noodles though were undercooked as i could not estimate the amount & added some new noodles so new ones were not fully cooked. as a result i had to cook the noodles in the braise, so resulting in very less braising gravy, all absorbed by noodles.

kai garden’s beautiful dish (above) was done with braised noodles on a golden braise sitting on a chawanmushi egg white layer.

i did the thin layer of chawanmushi using egg white. it was quite tasty, but steam oven was temporary out so had to steam 3bowls over 3 times.

overall, looks not so nice c/w with kai garden’s dish photo, prawns & kailan was great, scallop was poor, the noodles was quite tasty.

my dear OPS friend WT bought me a birthday dinner recently at element @ amara recently though his birthday is in the same month as mine, so i might as well by buying him dinner. haha! 🙂

anyway tonight’s my chance to return the favour. i had a S$100 e-voucher with chui huay lim expiring this month. came in handy la!

we had a great enjoyable dinner including 2 of my close RI friends at chui huay lim on 28.10.2016. ^^

still, it is very crowded on this friday night, something not always common even in good makan joints.

wife found it too porky, too strong. i must be influenced. also thought it was not so great.

strange thing it was not served with serng ni chou (minced garlic vinegar), we had to ask the manager for it.

i was asking about fish thinking to order a treadfin tail, a teochew dish. but was told it’s S$10 per 100g & servings are 1kg. S$100 for treadfin tail? & garoupa is served in portions at S$98??

i think the prices just not right!

so it was easy for me to decide on the S$188 suckling pig la. 🙂

we were very full actually, especially 3 of us had an excellent lunch earlier.

anyway we could not cancel order of the last dish. the kailan at S$24 was kind of expensive (like c/w the S$18 braised duck), but it was an excellent dish. kailan was crunchy & sweet, nicely done! tipor added special flavours, both the veg dish (the yellow chives as well) had ti por for added taste.

6pax dinner was S$302 nett after S$100 discounts. i guess quite ok considering that the suckling pig alone was S$188++.

it was a long menu, many dishes including sharksfin, fish, scallops, braised goose, abalones, so i guess can be said to be a good value set.

the price for dinner buffet is S$65pax.

we had a special staff price at 50% discounts.

i have not been to element for more than 10 yrs.

the buffet is very different now. good standard ya. 🙂

there were crayfish, lobster, spanner crab at the cold seafood station (above photo), & crayfish & alaskan crab legs.

i picked some lobster, spanner crab, alaskan crab legs, & oysters (top photo).

the alaskan crab legs were so so, not so sweet. cold lobster also so so, quite average, also not so sweet.

likewise the oysters, not creamy & plump.

i didn’t take the mussels.

for me, this (spanner crab) was the best for me among the cold seafood. a friend though thought it was bothersome to eat.

c/w the S$62pax lunch i had at the line recently, the cold station station would be far superior to the line.

perhaps dinner at “the line” would also feature lobster etc…

i am kind of not much into the western cold seafood thing. somehow they are not so tasty & seem a waste of lobster etc. & somehow western cold crabs are never quite like teochew cold crabs (which i also don’t take often).

the cod was good! i had another helping afterwards.

the black pepper crayfish quite ok too, more tasty than the cold crayfish becos of the pepper sauce. 🙂

not the very flavourful type so don’t leave much impression. say whereas the smoked duck breast i got from phoon huat for the recent Second FGS Charity Dinner was quite distinctly flavourful & special.

it was pretty good. broth was tasty & ramen nice.

obviously not quite comparable to the broth of a S$16++ ramen (which i like never want to pay S$16++ for).

chef ah yau recommended the cempedek creme brulee.

the cempedek quite distinctly flavourful so a delight to try. just a little on the sweet side i thought.

it was a very enjoyable dinner for me. WT also ordered a very nice chocolate truffle cake for me. we had a great evening together.

this element buffet is a good standard hotel buffet.

at S$65pax i wouldn’t myself be interested.

at 50% discounts it was definitely worthwhile, more so than “the line” lunch which though have much greater variety of food but not really standout food.

anyway at my age, not good to have too much buffet la…. 🙂

we ordered 2 dishes – samsui chicken & mushroom brocoli. 🙂

it really is an excellent dish!

this dish is like 白斩鸡, the chicken rice chicken, but is served with minced ginger sauce & no chilli.

the chicken is tender, moist & sweet, and the minced ginger sauce is a perfect condiment. 🙂

definitely better than the 白斩鸡 i made.

it is taken with lettuce, but i was quite happy eating the chicken on its own. 🙂

the other dish was brocoli with mushrooms, nice & tasty.

a competent dish, nothing special.

lunch for 2pax was S$37. quite ok.

rain was heavy & carpark full as usual even at 1130am. anyway i managed to park after dropping sis & bil. 🙂

sis ordered 8 dishes (fish, sotong & 6 veg) for S$23 including 3 porridge.

2nd RI FGS (For Goodness Sake) Charity Dinner Raised S$10,020 for HCA Hospice Care on 21Oct2016

a group of RI friends have the idea that as we all have a good time coming together enjoying good food & company, making new memories together, maybe we can also do a charity fundraising while we are having our makan & chill get-together. ^^

so we came together to do the 1st RI FGS (For Goodness Sake) Charity Dinner at an architect friend’s house on 20.5.2016. ^^

we had a great fun time together that evening, and we raised S$16,948 for HCA Hospice Care.

we decided to do this again at the same architect friend’s beautiful home, this time a sit down homecooked western dinner on 21.10.2016. ^^

we gathered at the lounge looking into the tranquil koi pond, patio & swimming pool, sharing conversation & waiting for other friends to arrive.

for the food, the host have arranged for his helper to cook oxtail stew, a substantive main course.

i prepared the other dishes comprising a salad, 2 meat & a fish tapas, 2 pastas, a beef steak main course & tiramisu, a popular dessert among my friends.

2 friends came earlier to my place about 5.45pm to help transport the food/dishes over to our architect friend’s house.

we arrived in good time about 6.15pm. the helper’s oxtail stew was “brewing”, excellent aroma wafting in the kitchen.

i got the tapas dishes in the oven at 50degC to keep warm, salad & pastas ready for tossing when we starting dinner, & the ribeye steaks i would cook sometime into dinner.

we started dinner at 8pm when all the friends arrived.

my helper had prepared the tofu & pumpkin which i had added extra virgin olive oil, balsamic vinegar & some honey earlier (ran out of agave nectar).

when serving i added some ready mix of olive oil, balsamic, seasalt to the mesclun vegetables, tossed & added to make the pumpkin tofu salad. (this to keep the mesclun fresh & not soggy).

it was an excellent salad!

i had wanted to smoke duck breast myself (my own tea smoked duck breast here!), but i could not get the ready duck breast from sheng shiong & did not want to debone a whole duck for the purpose.

i chanced upon a ready smoked duck breast at phoon huat in clementi, & it turned out the duck breast was very good!

my teriyako miso belly pork was a bit underwhelming today.

taste was ok but did not stand out.

the nobu miso cod though was excellent.

everyone liked it. one friend declared it was his best dish for this evening’s dinner, and plans to cook the dish himself.

the gordon ramsay slow-braised crackling pork was tops this evening too.

my expert photographer friend was distracted this evening, focusing on some other subjects i think, haha!

the meat was very tender & flavourful, well braised, very tasty & still having the bite, not disintegrating! ^^

& the skin was very crispy, crackling.

many friends commented on the crackling skin. it was in the oven for 2 hrs to keep warm, and the skin remained crackling.

the alio olio pasta was very tasty & a friend declared that was his best dish for the evening.

it didn’t start off as alio olio, lol!^^

i bought 5 large squid (2.3kg) form chinatown the day before, and that was all the squid ink there was from the 5 squid.

so i decided to evolve the dish into alio olio, the easiest to make – just browned a whole bulb garlic, fried sliced chicken & prawns, then some diced scallops, tossed in the spaghetti when serving & garnish with thai sweet basil.

squid ink is very flavourful, so though this was not a squidink dish (my squidink pasta here!), the squid ink enhanced the taste of the alio olio pasta!

the second pasta i did was prawn pasta in pink (creamy tomatoes) sauce. a friend mentioned that this pasta was very good.

i like the tomatoes flavour, an excellent dish really, just tomato taste a bit more commonplace.

this was my best dish for the evening.

it was made the host’s helper. (i subsequently recreated this dish myself)

for me, the top 4 dishes were this oxtail stew, the sliced beef tagliata, nobu miso cod & the crackling belly pork.

as this dish was made by my friend’s helper rather than my own, i was more excited trying it.

everyone liked this dish…a friend said the beef was so tender…indeed excellent steak, tender, juicy, sweet! ^^

tagliata di manzo is a common steak dish served in italian restaurants. tagliata means cut, and manzo means beef, so just a sliced beef dish that is well plated with cherry tomatoes & rockets (i used mesclun this evening as i could not get rockets at giant the day before).

& i made tiramisu, a dessert which all my friends liked.

2 friends had extra, extra helpings! 🙂

as we shared these 2 times we came together to organise the FGS Charity Dinners-

the dinner size, donations & amounts are not so important…just old friends having good fun together with the added opportunity to have the joy to make a donation if so wishes la….

it was some redemption (though only breakfast). 🙂

i would put this breakfast up there, as meeting the standard this ryokan should offer la. 🙂

nice dining hall, and in the morning light, a different feel – bright, “airy”, feels expansive looking out at the greens. would have been lots better if they were koyo colours & momiji of course. sigh!

this method of preparation similar to the beef last evening, just placed on a oppa leave & light up below & covered. maybe steamed/simmered?

the cod was pre treated, quite often the case including in bentos.

this breakfast was not luxurious, but the food items were certainly tasty & delicious, and adequate, and so it meet the standard for breakfast for such a ryokan like shikisai, where the kaiseki diner did not la.

2 main attractions of staying in japanese ryokans are (1) the sumptuous kaiseki dinner  & breakfast (2) the onsen.

of course, guests have also come to have high expectation of the service, basically the entire experience of ryokan stay. 🙂

the very first ryokan i stayed in was at senkei 仙景 annex yamagaso in hakone.

it was literally like staying in “shangri-la”, divine scenery no less, at least that was the cherished memories. ^^ there i had my first taste of kuroge wagyu, the true 黑毛和牛. 🙂

don’t know how long ago was that, maybe 10yrs now?

the best ryokan experience over the whole holiday stays was undoubtedly in tohoku in 2010, just before it was ravaged by tsunami & nuclear fallout in 2011. how sad!

food wise though, the more recent ryokans impressed much less.

  • <partly also because Singapore’s food standards (including some japanese restaurants here) have gone very much higher, comparable to the best worldwide.>

that was the case even for the kaiseki dinner at one of the better ryokans in kyushu, Gettoan ryokan 月灯庵 at yufuin 汤布院.

shikisai is not a cheaper range ryokan, so we were expecting a sumptuous kaiseki.

the kaiseki menu looked like a long menu, but it actually was not. in fact it was quite a small menu c/w many kaiseki dinners we had at many different ryokans in tohoku (say).

at first she asked for a smaller sake as i do not drink.

the server came with sake in a glass full of ice.

we take sake chilled yes, in ice i never seen that before??? must be something lost in translation. anyway we rejected it & wife got a 300ml junmai. the sake was good, expensive i think 1800yen but good. 🙂

the duck egg was excellent, not salty, not strong gamey, quite nice flavour & great texture.

the chestnut was just chestnut, nice. the “sea urchin” shell was some cracker thing, much like deep-fried spaghetti type of nice bites.

it was not the standard of a good dobin mushi, but much better than any gohan soup, miso or clear soup.

sashimi was very fresh, sweet, quite excellent.

after sashimi, we had tochigi wagyu.

i think it’s a 国产牛,not the standard of kuroge wagyu 黑毛和牛.

but even as 国产牛, the quality was quite average. still nice, a bit beefy for wife, and the method of cooking was a bit like steaming & not pan-grilled or bbq. so maybe that suited this beef which may not be a top marbled wagyu.

we had a yuba dish, served in soya bean drink & served with dipping sauce.

a simple dish, but importantly it was nice.

the steamed dish of uni with gluten was average or poor, as the uni is the dry hard type not the sweet, fresh, melt in the mouth, exploding flavours variety.

zaru soba = an absolute disaster worse than what was served on ANA flight

the plain zaru soba ought not be served. it was hard, uncooked inedible, and had no place in a kaiseki.

as i recorded on my FB, the soba served on ANA airline packaged meal was very much better. the noodles were normal qq & the soba sauce was tasty. THIS???

even a plain rice gohan set would be better.

the creme brulee combo dessert was competent.

maybe ryokan these days try to cater for wider taste, and throw in some western stuff. this was competent so nothing to complain. i guess actually more luxurious than just some red bean dessert or a plum jelly.

overall the kaiseki was a huge disappointment. very meagre by kaiseki standards, hardly anything other than a decent appetizer, excellent sashimi, average beef, no fish, no broiled dish, no braised dish etc.

this kaiseki was as disappointing as that on the first night at gettoan at yufuin, kyushu.

ok, not sumptuous is one thing, not being luxurious or top ingredients, but more importantly taste. this kaiseki could not even said to be scrumptious. maybe just excellent sashimi & a few competent dishes!

just c/w with hachi’s S$88 set lunch with 3 wagyu dishes, huge oyster, deep-fried scallops etc.

fortunately the second night dinner at shikisai was better. tell that story later la…

Shikisai Ryokan 12-14Oct2016 = OK but Not Good Value & Poor Service – Day 1 Nikko

wife booked shikisai ryokan 12-14oct2016.

nice ryokan. room was big. n0t much view, and matters not whether lakeview or mountain view, since it was a short distance upon the slope & everywhere blocked by trees.

shikisai quite a popular ryokan. this period fully booked. there is a bus stop outside named shikisai & there is big signage at the lake chuzenji stop directing traffic at the road T junction turning left towards lake chizenji.

shikisai picked us up at tobu nikko station.

there is free coffee, tea & water at the lobby area.

there was the standard welcome tea at the ryokan room, with a nice mochi & plum sweet & green/red tea we make ourselves.

service was very poor for this price of ryokan!

in many ryokan of this price range or lower, the service staff bringing us to the room would make the tea ready for us, and several even provided macha抹茶 instead of just cheap green tea in bags.

on the next night 13.10.2016, we had to move to a different room as ryokan was fully booked & we could only get a substantially more expensive room with an outdoor jacuzzi (a completely waste of time & money!). i asked the service staff if he wanted to show us how to use the outdoor jacuzzi, he basically just waived me off. we didn’t bother as the jacuzzi looked miserable & useless.

as is the practice for ryokan, they will make the bed for you when you have dinner. nice & warm. 🙂

& they will keep them for you while you having breakfast.

one comment on the onsen. couldn’t/didn’t bring phone to take pictures, but the onsen at shikisai really poor by japanese standards for this price of ryokan – plain, rundown, no rock deco etc. many ryokan onsen are just beautiful!

they do have sulphur or natural occurring onsen. 🙂

we were hoping to catch the autumn colours koyo (red leaves) & see momiji (maple leaves) on this hiking trip at nikko 12-17.10.2016. ^^

our ANA flight arrived early at haneda (6.05am instead of 6.30am). we travelled very light, just a haversack for me & cabin bag for wife, no checked in luggage, so we were out at arrivals at 6.30am. 🙂

we took the direct keikyu train from haneda to asakusa in 40mins at 620yen which we researched earlier.

from asakusa, it was another direct train to nikko.

we were spending 4nights 5days at nikko so not fully covered by the all nikko pass. at the tobu asakusa station information counter, we were advised to purchase the all nikko pass for 4520yen in any case + buy the onward one way ticket by rapid trains 1360yen. it was good advise! 🙂

we took the 8.10am rapid & arrived tobu nikko station at 10.19am on 12.10.2016, train timetable here. ^^

taking from tobu asakusa station end station was ok, but the rapid train filled up quickly so some had to stand the whole 2 hrs journey.

we were back to tobu nikko station just past 2pm.

our ryokan, shikisai, was fetching us from the station at 2.40pm (checking in time is 3pm), so we picked up our luggage, and walked around the shops a bit.

took the popular, very nice, crispy, fluffy red bean dessert. very nice, warm & shiok!

quite similar to the one i took at takao san. 🙂

i didn’t have a good experience with new food town seafood zi char dishes the last time.

my youngest daughter didn’t want the master tang wanton noodles after looking at it, and nothing much else to order here, so decided to have the fish soup at new food town fish soup on 23.10.2016.

interestingly, this fish soup turned out to be very good!

broth was tasty, sliced fish was good, & daughter picked a slight brown stringy noodles, not the usual mee kia, and that was very good.

My Worse Wanton Mee @ Master Tang Wanton Noodles 凤城面家 on 23Oct2016

daughter wanted to try master tang wanton noodles, so 5 of us went to kopitown at 6th avenue on 23.10.2016.

so much good reviews by so many writers.

so much good things written about mr tang. at 84, among the oldest master hawkers in singapore, 20 years as chief kitchen trainer at crystal jade, makes his own noodles, hong long style noodles etc….

too bad i really dislike this noodles.

i think it’s the worse wanton noodles i have taken!

the much written about S$3.50 wanton noodles dry has no char siew. i did not take the wanton, but the noodles were really “dry” & tasteless, hardly any sauce & only tasted of oyster sauce, which as a standalone taste something i do not like…

it looks nothing like the S$3.50 wanton noodles dry photos in so many other reviews.

for me the jian kang wanton noodles, pork ribs, dumpling soup 水饺汤 (in every department) were so many times more superior.

we just had an excellent 6-course dinner here 3 weeks back on 2.10.2016, so was quite disappointed to see a change of menu!

as it turned out, the new menu was very good too.

very good! not as good as the lobster steak in the last menu, but still very nice. chef’s special sauce quite special, a bit japanese.

it was very good.

very tender & crackling skin.

not really that much different from my own gordon ramsay slow braised crackling belly pork.

wife liked it actually after she tried, though she wouldn’t take 1 serving by herself so the change was still a good one, so we could try both dishes.

it really is the best chinese styled fine dining lamb rack i have taken.

not the usual sickly sticky chinese sauce. quite western actually or fusion…

this also i can think of doing at home.

this really refreshing & enjoyable.

not better than the usual 雪中情怀we used to have but a very good dessert on its own right la! 🙂

overall dinner was S$126 (or S$63pax nett) after amex love dining 50% discounts. very good value top quality dinner set!

joo siah quite well known, but i have not tried before.

we were there at 1.50pm.

no queue at this time but the long排骨sold out, so friend ordered 肉骨.

the bkt was better than i expected.

actually i was not expecting much, as i can make very good bkt myself easily with cheap ingredients.

joo siah’s soup was good, better than mine i think.

my frozen prime ribs better than this 肉骨 though, as it is prime ribs. prime ribs are more fatty & have better bite, whereas the pork ribs have large part of lean meat not so flavourful & poorer texture.

on balance, i like seng kee (amk ave 10)’s pig’s tail soup better.

pig trotters quite flavourful. the gelatinous part was good. there was a lot of lean meat though & texture average though taste was good.

by comparison, seng kee (amk ave 10)’s pig trotters would be the kind of standard i prefer.

& chai buay ok too. i would prefer the teochew type chai buay but i guess they were quite different dishes.

lunch for 3pax was S$42.

don’t know if it was expensive. guess it is like the going price in a good bkt place, that’s why i feel quite happy having my own bkt at home.

lunch was fun. we chatted for quite long after makan. then the friends adjourned, came to my place for some kaya toast & more coffee chat.

had an excellent dinner chat with my brother this evening at tunglok signatures orchard parade on 18.10.2016. ^^

a place wife & i like & i enjoy many makans here with family & friends.

i was going to order the excellent london duck but now they priced the duck at S$26 (no discounts) c/w S$30 & 50% amex love dining discounts for 2pax i had just recently on 7.9.2016.

no point for me to order that as it would equal a S$52 order for other menu items entitled to discounts.

we had the lie tong 例汤. tunglok is excellent for lie tong 例汤. i think better than many sharksfin soup.

& this is one of many very nice lie tong 例汤. my helper can make many of these soups very well. this one though was really super here.

skin could not be more crispy & yet so fine. & the meat texture & taste simply perfect!

prawns were fresh & well fried. this one the batter not the best.

sauces were just nice not overpowering. tomato was excellent.

2pax dinner came to S$59 after 50% amex love dining discounts. now they don’t offer parking so it’s S$4 per entry parking for dinner. manageable. 🙂

we stayed & had long chat after dinner. never fail to enjoy great makans & outing here.

family decided to stay home for dinner on sunday night.

5pax…& a time for me to experiment some dishes. ^^

i had a fairly good garlic steamed seabass & stir-fried asparagus at formosa delights 清香馆recently.

i thought i gave those a try..i had bought some asparagus few days back with that in mind.

for 5pax, i added 2 other vegetables, a spinach & a sweet peas with baby corn. 🙂

my seabass was pretty good, sweet, great garlic flavour. 🙂

i added 1.5 tbsp fish sauce, 2rbsp mirin, 2 tbsp olive oil, lots of garlic, 2cm sliced ginger, 2 cut chilli padi, & some spring onions.

i fried the sliced ginger & chilli padi first, added chopped garlic, fried lightly, off fire. then added the garlic sauce & choppd spring onions on the seabass & steamed for 10mins.

but also pretty good la.

my fried asparagus was the best of the 3 vegetables, very tasty, great wok hae, and very tender, crunchy not overcooked asparagus.

everyone liked it.

c/w formosa delights 清香馆’s fried asparagus (above photo), my version was not so different.

i am more wasteful, cutting off most of the green layer, and more oyster sauce. taste-wise formosa delights 清香馆’s version also very nice. 🙂

sweet peas with baby corn is a dish my family like & my helper does it a lot.

today sunday she’s off duty.

i wanted to add prawns but there wasn’t any so i added cut chicken breast instead. it didn’t match as well as prawns, still the chicken breast was nice on its own & so was the vegetables.

i also did a stir-fried spinach.

recently i do very good fried veg, now preferring the dry method w/o cornflour just 清炒 with more garlic.

the steamed egg, the simplest dish, was akin to disaster. i didn’t want to do the usual minced pork with chopped spring onions, so experimented with mirin, tsuyu sauce & water. not the right taste, not quite “edible” la..

anyway after dinner i decided to diligently google a good recipe, i think now i have a good idea what to do next time.
