CCG brought begawan solo nonya kuehs.WM brought taiwanese coral jelly made by jessie and also png kueh and soon kuehs.

my chicken rice chicken 白斩鸡 is always good, very smooth, moist and tasty, and chilli is great!

claypot rice using chicken stock and salted fish was very tasty, flavourful. did not garnish as HC doesn’t take spring onions etc, and served the sausage separately.

CCG loved the japanese chashu very tasty.

the 2 fish were very good! friends liked both. red garoupa 蒜蓉蒸 recreated ah yat excellent garlic soy sauce flavours, and the meen si song fish head don’t know if it recreates the flavours of good zi char stalls but it was very good.

& everyone loved the tanhoon prawns very good tasty dish! quite excellent!

 

this the first friend get together homecooked meal since the covid circuit breaker now that 5 visitors is permitted.

the bros had a great evening together.

  6. yakisoba with shitake & shomeji

they find the food a bit different and interesting.

brother liked the nikujaga (slow braised pork softbones) especially and liked the chao tar bbq flavours of ika sugatayaki (flamed whole squid).

the donburi and noodles were excellent dishes. the don was layered with chashu (japanese slow braised belly pork) which i did together with nikujaga; and shabu (thinly sliced) beef.. a very very tasty chasu and shabu beef don…the shabu beef i just shabu in the same boiling sauce as chashu with fire off…much like shabu shabu the thin beef.

the yakisoba didn’t look great but very tasty, simple vegetarian dish with ust shitake and shimeji mushrooms, sliced yellow onions and noodles fried with tsuyu and mirin. i want to eat it myself haha!

WT bought lunch. 🙂

always enjoyed this stall which we went several times at tembeling. they moved to yio chu kang terrace several months, interrupted by covid-19 circuit breaker.

now we are in phase 2 reopening, allow friend gathering up to 5pax…this the first time i come to this new location. 3 of us were there 11.15am among the early birds. already 4 groups inc us. by 11.45am when we ordered, place about 2/3 full. at tembeling, almost all tables were full at by 11.30am.

our usual order S$6 which came with “everything” now S$7.

anyway it was really enjoyable for all of us, meeting friends face to face first time after like 10weeks break, and enjoying what we always like. today it was as good as always.

SM cooked brazilian seafood stew

Wenyu cooked black angus 100 days grain fed ribeye + lamb fillet (wife cooked the other piece of steak)

& crab pasta one creamy one alio olio.

seafood stew was very good. like the tomato flavour.

meats were always good. wife added mirin and served with sliced onions t soak up the juices.

son’s crabmeat pasta always good. i liked the alio olio version a bit more.

& SL baked a lemon yogurt cake. very good 👍

had a really nice father’s day dinner thanks to wife and children.

a very blessed and happy man indeed! 🙂

there were techoew steamed pomfret, chilled pek tor (rabbit fish), 3 steamed giant prawns, fried egg omelette with silver baits and fried bittergourd.

the children are out this evening , and wife and i had a quiet, nice dinner. 🙂

had leftover minced pork & thinly sliced pork fillet. using bean noodles.

a small bundle of 豆签 bean noodles offer very small serving & very light carbs, ideal for me la…

& now my chilli sauce is as good as any outside 👍😀-

  • 1tbsp oyster sauce, maggi chilli, crispy prawn chilli, black vinegar, 1tsp fish sauce-the best!👍

becos i had very little bean noodles (maybe 50g) and my minced pork and sliced pork were not marinated, so above condiments mix was good, otherwise i say same ratio but good for between 100g and 150g of noodles.

this was a perfect bowl, texture and taste! and for sure no overeating for me la…

wife bought sumptuous 4pax family dinner @ 8picure on 19.6.2020.^^

today is day 1 of phase 2 reopening. first day that eateries can receive dine in customers and we can go out in group of up to 5pax max.

our first response was to avoid dining out today…but i chatted with chef Gabriel today and decided to come for 4pax dinner.

we ordered delivery 3 times from 8picure to support this excellent boutique restaurant.

today we were the only customer, now 8picure seating have reduced to about 12pax from 16-18pax because of safe distancing.

Gabriel served us really excellent dishes,the best..like everytime we were here

& connie served us complimentary champagne to celebrate their first customers on phase 2 reopening.  wife insisted on paying for champagne afterwards…

connie also picked a aurelio, which she did for us last time. an excellent red!

crab cake was 90% crab meat, very sweet and just the the right spiciness.

galician octopus very tender and tasty and a beauty to behold.

so was the lobster pasta, very fresh, sweet, tasty lobster and perfect pasta with lobster bisque sauce, tomatoes and capsicums.

we tried chef Gabriel’s 2 new dishes – iberico char siew capellini & another with pesto and arctic surf clams..

both excellent especially the arctic clams..iberico char siew great char siew flavours and tender sous vide texture.. we prefer the arctic clams which gave crunchy texture to a very tasty al dente tagliolini pasta.

every dish & both desserts just superb! children commented this the best tiramisu! it really was… 🙂

such a wonderful evening, delicious food and the best service thanks to chef Gabriel and connie.

SL loved the ayam buah keluak. my favourite is beef rendang and babi pongteh. both i can do well myself. sambal sotong was good, the sambal sauce was excellent, and otah good too. chendol excellent la! sayur poor, not great..

I added 2 pieces lamb fillet, the ones i cooked for my brother this eveyning. 🙂

a delightful, scrumptious dinner. my brother, sil, nephew and family enjoyed thoroughly.

the vongole this evening was among my very best – al dente, tasty, luscious looking, with a touch of gourmet butter and totally mouthwatering.

seafood paella was also among my best – again luscious, a beauty to behold, and the al dente arborio rice, clams, prawns and squid were all perfect texture.

very happy with making this dinner for my brother. ^^

today made my regular midweek 4pax family dinner on 17.6.2020.^^

tomorrow i am cooking a complete western meal for my brother 6pax family dinner so this is also a dry run for some of the dishes. :-).

this evening i made-

this an excellent dinner 👍

the oven grilled baby threadfin was excellent. this using a fish teochews usually served as chilled steamed fish eaten with taujeon.

but i was trying to recreate the croatian grilled fish we had, and this was pretty good..different fish maybe i will try out golden snapper and seabass.

will do up a recipe later. 🙂

gimson nonya sauce can use to steam any fish and fry any vegetables. it is tangy and tasty and slight spicy, very appetizing sauce.

i made gimson nonya sauce steamed seabass for my brother 6pax family on 11.6.2020.^^

i know it will be good. 🙂

basically it is the same HK steam condiment mix and adding gimson nonya sauce.

just add  1 big heap tbsp or like 3 tbsp flat to the fish plus usual hk steam sauce condiments..

in this case this a large seabass maybe 800g+ so i added 3tbsp light soy sauce, 3 tbsp olive oil and 2tbsp mirin (optional)…and the usual sliced ginger, cut chilli padi and chopped and cut scallions.

and steam for 10mins.

dish was perfect la! very fresh seabass and tasty, tangy sauce.

my first experiment with spicy chicken with dried chilli 宫保鸡 cooking 6pax family dinner for my brother on 11Jun2020. ^^

i aimed to produce 宫保鸡 using 1/2 chicken to replace frogs – trying to replicate G7 sinma claypot 宫保田鸡…

sauce not too bad but not quite close to G7 sinma..maybe experiment more..my chicken always done quite perfect texture, tender and moist…

Recipe

soak 12 dry chilli in boiling water. remove seeds and drain. fry chopped shallots and garlic in oil. add dry chilli, sliced red onions, cut leeks (white part), cut scallions (white part).

mix 2tbsp oyster sauce, 2tbsp chinese huadiao wine, 1tsp sesame oil, 1 tbsp black vinegar, 1 tbsp corn flour in 200ml intense chicken stock and add to wok. salt to taste.

simmer broth to require thickness, add wing parts and cook 2 mins. adddeboned cut pieces from 1/2 chicken and cook for another 8mins.

it was a nice tasty dish with chicken stock and vegetable sweetness and glueyness for G7 sinma though taste not exactly same. chicken as always, tender and moist and not overcook, and that is the key.

sambal sotong was another dish i cooked for my brother’s family 6pax dinner on 4.6.2020.^^

lagi sedap la! 🙂

and this, the easiest to do.

1 large sotong (250g), clean wth salt, wash dry, remove skin and cut in rings.

fry 1 large sliced onions with lots of chopped garlic (1 heap tsp), add 1 heap tbsp sambal sauce and 1 flat tbsp oyster sauce. then add sotong and fry.

and that’s it!

the tip for cooking sotong, like everything else, is NOT to overcook, otherwise becomes tough and rubbery la…

can judge by eye, but if unsure just 1 piece lor. lol!^^

made thai style whole fish curry for 6pax dinner for my brother’s family on 4.6.2020.^^

tested my own recipe for the first time for my own family dinner on 31.5.2020. ^^

Recipe
made my own rempah & added tomyam paste & coconut milk

12 dry chilli
6 cloves garlic
6 shallots
2in cut lemon grass white part
1 in cut ginger
1 tbsp flat sugar
1 tbsp oil
1/4 tap salt

blend to make rempah.

pound 2in lemon grass, fry with 1 stalk curry leaves, one sliced medium onion, add rempah, fry till fragrant, add cut lady fingers, add cut eggplant, add whole fish (i used ang choe – golden snapper today),cook for 10mins

my first time trying a newly created recipe, trying to model after forture old holland road’s thai style fish head.

not quite same as can be seen in the link photos.

still this was quite excellent! wife and children all liked it…very sedap, tangy and tasty! and the vegetables were excellent too.

so this can be a recipe in its own rights…but i may try to vary this to see how i can recreate forture’s excellent thai style fish head curry.

this covid circuit breaker and now phase one period, we cannot meet and eat outside…so i cooked dishes on thurs for my brother’s family..& my brother does so on saturday for us..& my brother cooks very well….

brother has been cooking for us 4 times, and every time the dishes were very good. it showed the love & care that went into the preparation…that is the essence of cooking..loving the dishes you produce..naturally they will turn out delicious dishes…

wife & children usually don’t take this teochew style steamed seafood..today they love the crab & prawns super fresh and sweet..

cuttlefish that’s for real teochews like me…cuttlefish is tougher than squid and the teochew steamed way is perfect for dipping with kek you 吉油 or minced garlic chilli vinegar 蒜泥醋.

& my brother’s lady fingers excellent..children all loved it…

the sauce seems to have taujeon with lots of chopped garlic and chilli and some oyster sauce…i think poached lady fingers then lightly fry the chopped garlic chilli oil maybe thickened with cornstarch & pour over the lady fingers…. anyway very nicely done 👍

this dish i will be making myself…

char siew today not great belly pork too lean not fatty enuf & colour a bit off.

there were 2 smaller pieces. my usual was 1 large piece belly pork. marinade and colour not enuf. also i took out from fridge too late so that affected the grilling also too crowded..4 cut strips instead 2 i usually do. so couldn’t brown at 18mins and extended to 22mins…still the middles portion i picked for my brother still quite tasty and also tender enuf…not among my better renditions…

鱼香茄子-sil specially like this dish…i thought the salted fish was a bit much so slight salty & overpowering..actually becos my eggplant was to small…but it’s ok if taken with rice.

most important my brother family enjoyed the dinner.
