gimson nonya sauce steamed seabass i know will be good. just add 1 big heap tbsp or 3 tbsp flat to the fish plus usual hk steam..in this case this a large seabass maybe 800g+ so i added 3tbsp light soy sauce, 3 tbsp olive oil and 2tbsp mirin (optional)…and the usual sliced ginger, cut chilli padi and chopped and cut scallions.
宫保鸡 1/2 chicken – trying to replicate G7 sinma claypot 宫保田鸡…
sauce not too bad but not quite close to G7 sinma..maybe experiment more..my chicken always done quite perfect texture, tender and moist…
char siew today not great belly pork too lean not fatty enuf & colour a bit off.
there were 2 smaller pieces. my usual was 1 large piece belly pork. marinade and colour not enuf. also i took out from fridge too late so that affected the grilling also too crowded..4 cut strips instead 2 i usually do. so couldn’t brown at 18mins and extended to 22mins…still the middles portion i picked for my brother still quite tasty and also tender enuf…not among my better renditions…
鱼香茄子-sil specially like this dish…i thought the salted fish was a bit much so slight salty & overpowering..actually becos my eggplant was to small…but it’s ok if taken with rice.
most important my brother family enjoyed the dinner.
