i wanted to try the autumn matsutake bento set, so today 3 of us came for lunch on 20.9.2015. ^^

it’s F1 race day, so many roads were closed. i googled and saw that bras basah road entrance to raffles city was open & also i could returned by beach road in the direction to middle road which was also opened.

i drove through orchard road with some traffic, but overall it was perfect. & carpark was empty.

it’s a pine mushroom set, so every dish had some matsutake. 🙂

chutoro really melt in the mouth & hotate had incredible bite. kampachi were very sweet too. wish they gave more uni, haha! 🙂

teppanyaki sea bream seemed to be the dry treated type like many japanese fish including salmon & cod. you get them in japan a lot, in bentos, restaurants, supermarts.

i liked it but not so favourite for wife & daughter.

there’s some mustard seeds/sauce. i put a bit of wasabi on the beef also. just so wonderful. 🙂

i normally don’t particularly fancy kamameshi as i used to think they tasted average until i had very good tasty kamameshi at sun with moon @ wheelock.

daughter though was still thinking of the panna cotta at pizzeria balognett at tremezzo lake como, but i think this was very good already. 🙂

with amex FAR (feed at raffles) privileges, the 7-course set was S$60++pax, very good deal i feel!

bought early birthday lunch for a close friend today at mikuni on 27.4.2015. ^^

they do not serve the grand tour tasting menu for lunch. for simplicity & ease i ordered the premium bento “miyabi” from the lunch set menu.

this friend is quite busy guy & i don’t get to spend much time with him except during chinese new year. so it was a very good lunch talking about family, children, his work etc.

the food at mikuni is always pretty ok. however the premium bento “miyabi” at S$120pax (even with 50% discount to S$60pax) was to me below par.  e.g.-

the robatayaki set at S$68 here at mikuni (vs S$120) offers the same kagoshima wagyu skewer & the teppanyaki set at S$68 also offer cod, beef & golden prawns

the chirashi don at S$90 is very much superior.

likewise the S$62 chirashi don set at kuriya.

not everything is directly comparable of course…we were more interested to catch up & did not pay much attention to the menu, but they must have changed the menu as we did not get the golden prawns & bara chirashi. maybe i will write to mikuni to ask about it.

& was attracted by a stall displaying fugu sashimi & ika (squid) sashimi set.

we saw this ika sashimi set in many brochure advertisements & had planned to try it.

in the display (photo above), there was also ika tempura. there was also a choice or either beer or gohan set.^^

we could do the remaining squid as tempura or shioyaki…& wow..the tempura was just superb…better than any calamari i have tried.^^

i wanted to make sure i know where to find it when i visited fukuoka again, but i guess there are many such shops selling this ika sashimi set in fukuoka.

after the excellent ryokan breakfast this morning, we now had cause to anticipate a nice kaiseki dinner on 26.1.2015.

this time we were not disappointed.

hence i had termed these 2 dinners on 25.1.2015 & 26.1.2015 “a tale of 2 dinners”

what a difference a menu change made.

with a good kaiseki dinner & breafast, Gettoan 月灯庵 did fully meet our expectations of a good ryokan.

the chawanmushi (茶碗蒸し) was outstanding. there was bits of minced ginger on top. the texture & flavours were exquisite. maybe i will try this at home.

the braised wagyu & tendons was just superb. texture was almost like gelatinous, had bite yet dissolving in the mouth, and nice mellow beefy flavours, mildly sweet. this was par excellence! ^^

sashimi moriawase was nothing like last evening’s which was below those at sun with moon, or for that matter any supermarket basement sashimi picks in japan!

this time we had good serving each of uni, very sweet! ika was pretty good & the fish slices were very good too. the same lady server initially said it was swordfish, but when i mentioned it did not look remotely like kajiki, she corrected herself but we did not understand what fish it was actually. whatever, what counted was it’s good!

& we had an excellent tempura!

the 2 large pieces each of anago (sea or conger eel) was a large helping. the tempura batter was just great & the whole experience wonderful.^^

& we had a wonderful bungo wagyu 丰后和牛 shabu shabu. there were 10 large thick slices of wagyu for 2 pax, beef was well marbled and flavourful, very good indeed!

if we were to make a comparison with mikuni’s excellent kagoshima wagyu sukiyaki konabe, certainly what we have at Gettoan was much more marbled & better beef quality. in terms of satisfaction, mikuni’s was almost as good & a good approximation to this.

dessert was ok. we did not have much interest for the butter cake. it maybe that gettoan indeed is trying to be fusion, with the foie gras tofu last evening (tonight’s chawanmushi would beat tat hands down), and these cake stuff, which some restaurants in Singapore like kuriya etc does too.

anyway, we were immensely satisfied with the kaiseki dinner this second night. ^^

had another splendid dinner at mikuni with wife on 11.12.2014. 🙂

we had the excellent autumn course menu, like a mini kaiseki.

i have never taken a course menu or kaiseki since the name changed from inagiku to mikuni some years back. instead we had been exploring the ala carte menu, creating our own Andy’s kaiseki (just in jest). and lately i am quite sold on mikuni’s chirashi don (i would say almost choutokusen 超特選 chirashi don). 🙂

mikuni offered very good complimentary drawer tray dessert. 🙂

the 6-course dinner cost S$158pax. after 50% feed at raffles discounts, it was S$79pax exceeding sake/drinks. a quality & very good value dinner. 🙂

my wife’s good friend couple bought us a wonderful super delicious omakase dinner at hachi on 22.11.2014. 🙂

my wife & i had been to hachi several times. we introduced the restaurant to them & said we would buy them dinner there, but they sprang this superb omakase on us & bought us instead.

in fact we had never take this S$188pax premium omakase here (restaurant said it’s a new menu started 2014). every time we just took the S$118pax (now increased to S$128 pax) omakase, which was also pretty good. well no complaints. ^^ 🙂

#1 first course was a japanese persimmon came shielded with persimmon leaf. dish was beautiful & exquisite, feeling of koyo (autumn colours). persimmon was very sweet but could not recall the other items. there was goma (sesame) sauce.

#2 second course was ayu fish, tamago, ginkgo nuts, chestnut, crispy sweet potato, dish of seaweed. such delicate & beautiful plating. 🙂

ayu is a tasty but flaky (falling apart) fish, not my favourite but ayu shioyaki (鮎塩焼) is a very popular dish (see photo of the open grill here). in small bites for this starter, it was quite nice.

#3 third course was a steamed tai (seabream) on braised tofu. sea bream was very sweet & tasty. tofu was excellent, very crispy outside & smooth consistency inside.

#4 the next course sashimi moriawase for 1pax kinmedai 金目鯛 (japanese golden eye sea bream – see photo here), tai (sea bream), hamachi>> was a real treat. i have not taken sawala before & probably not kinmedai (as sashimi) too.

the kinmedai was really good. 🙂 and of course the chutoro, botan ebi etc etc. ^^

we had really good sashimi moriawase just last week at sumiya on 16.11.2014 which included uni, awabi & akami.

and of course mikuni’s chirashi don sashimi quality was top draw.

but to have this sashimi moriawase as part of an 11-course omakase was truly luxurious, sumptuous. 🙂

the sashimi moriawase for GOTO’s kaiseki was not too bad, but it was expensive & not as good value.

#6 sixth course was a large (3in), firm & tasty oyster. 1 of us found it sandy. it was ok for the rest. it was evidently good enough though as we finished the oysters before i thought of asking the restaurant to replace the oyster. i like this dish very much.

#10 the server brought us a tray of 10 to 12 sashimi. each diner can pick 3 types of sushi. my selection of sushi = kinmedai, hotate, uni. the hotate was really good, very huge, plump & sweet. the uni & kinmedai too of course. 🙂

wife had uni, negi toro & kinmedai. the 2 friends each had botan ebi, hotate & uni. 🙂

#11 i guess dessert was the least tantalising of the omakase – yuzu ice cream, kiwi fruit, grapes, strawberries, blue berries, cheese cake slice. it was a bit more quantity than quality, good standard & substantial, but not like say japanese melon.

overall this hachi premium omakase was much superior in quality of ingredients & taste c/w the kaiseki we had at GOTO on 23.10.2014, which cost a lot more.

GOTO is closing for renovations on 26.10.2014 & reopening on 11.11.2014.

i had wanted to go GOTO all these while but somehow did not get to do. a friend suggested recently & 5 of us decided to go for the  S$68pax omakase lunch on 1.10.2014. there was no GST so it was just S$75nett! 🙂

GOTO at 14 ang siang road is currently a kaiseki only restaurant. lunch is 6-course at S$68pax & dinner S$180pax & S$280pax. the chef owner GOTO HISAO, was previously the personal chef to the japanese ambassador to singapore.  after the renovation it will be remodelled to a casual restaurants. according to the server lunch sets would be like S$40 onwards.

we were wondering about the economics of a straight kaiseki restaurant where the dishes & ingredients were limited,  vs a normal restaurant with an extensive menu, dishes & ingredients. we were of course out of our depths, no expert in f&b, but perhaps the main objective was to increase traffic & customers. kaiseki restaurant would have a limited number of patrons. a casual restaurant would attract a larger customer base & the sitting could be doubled from the current 20?

seems the restaurant name would be changed as well to G-One. couldn’t figure out G-One, but we were kidding the place change from GOTO to GONE? is that good? 🙂

who cares as long as food is good right? & it was, quite excellent! 🙂

we had the first course sakizuke(先附) – a selection of small appetizers. it had a delicious pickled sanma (秋刀鱼), a equally delicious tofu, pickled ika (squid), some vege, and ikura on enoki in small bowl. really good! we were saying if every dish could be like this.  they were, quite! maybe minus the rice. 🙂

the sashimi moriawase = maguro, hirame, hamachi, hotate, anago was just incredible! they told us its maguro, but it was so sweet its like akamai (lean toro). hotate was just 1/2 a piece but very sweet. same for hirame (flat fish) & hamachi (yellow tail). the anago (conger eel) was an expensive item too but actually that was my least preferred among the quality sashimi.

the tempura moriawase was served differently w/o the dip & radish & wasabi. there was a lemon & a dish with what looked like green tea powder but actually salt. the server missed out explanation at our table for this dish, so we were guessing the lemon should go on the salt (lemon juice with salt is a very good dip for yakiniku), anyway a few of us including myself was too quick & just squeezed the lemon on the tempura. there was shisamo (pregnant fish), asparagus, 2 like fish cakes etc. very good dish. 🙂

we have a simmered duck dish. i liked it very much. 1 friend felt the duck had too gamey taste. the rest didn’t. a few thought the duck was tough. 1 said the sauce a bit sweet (japanese like to add sugar to their dishes).

for me though it was quite perfect – duck, yam etc. 🙂

a friend said that the mushroom smell was really good. & indeed it was. however i & a few of us did not think this good was great. it did not really had the wok hae of a good chinese fried rice, nor the flavours of a good japanese unagi chahan (fried rice) like say in zen or its sister restaurant en japanese dining. nor is it flavourful c/w the very nice kamameshi at sun with moon.

of course we were just picking bones. haha! 🙂

i think this a very good lunch for S$75. i consider this perhaps more refine & better than the S$68 omakse lunch at hachi & about same as (or sometimes better than depending on menu) the S$68 monthly lunch special at kuriya dining. anyway i have booked to go back next week. 🙂

went to friend’s house in the east again to watch wimbledon finals between djokovic & federer on 6.7.2014.

we decided to go another place for dinner. we had been going to east coast lagoon food village the last few times. 1 friend suggested momoya at jalan pari burong.

must say they have very good & inexpensive sets here. momoya also serves ala carte buffet, S$31++pax for lunch & S$35++pax for dinner (same buffet menu).

1 friend ordered the tempura & udon set. the tempura moriawase included 3 prawns, i guessing 1 fish & 2 vegetables. i tried 1 prawn, it was ok, the batter just average not so great.

another friend & i ordered the sushi & sashimi set. there were 12 pieces of sashimi – 4 slices each of salmon, maguro (tuna) & hamachi (yellow tail). salmon was very good, comparable with sun with moon at wheelock & might be better than or about same as chikuwatei. hamachi & maguro were quite standard, probably about same as chikuwatei not as good as sun with moon wheelock. the 6 pieces of sushi were pretty good quality – salmon, maguro, kajiki, eel, amaebi & ebiko. the set included soup & chawamushi (very average not great). at S$17++ for 12 pieces of sashimi & 6 pieces of sushi of above average to good quality, it was really good value for money.

we added 2 upsized portions of sashimi. this was same as the sashimi in the set except that there were 3 slices each so total 9 pieces sashimi for just S$5.

i would say the sashimi was about comparable with chikuwatei so S$17 set for 18 pieces was a much better deal than the S$25++ chirashi don at chikuwatei, and adding the upsize 9 pieces sashimi, it was just S$22++. the sashimi were good enough that greedy me enjoyed the overdose of 27 pieces for just S$22++. the S$20++ chirashi don set at ginza kuroson offered better quality sashimi but portion wise would be 1/2 this mount.

i would do this again when visiting my friends in the east.

Wonderful Japanese Food @ Mikuni on 31Mar2014

had another wonderful 4pax dinner – great food & company – with my wife & 2 close friends at mikuni on 31.3.2014. 🙂

i ordered the usual “Andy’s kaiseki” items per the mikuni 24.3.2013 blogpost…lol.. with some new additions, namely lobster teppanyaki & teriyaki cod.

#1 we started as usual with the truffle kampachi. this fusion sashimi dish never failed to impress, both presentation and taste, a perfect start to the evening meal.

#2 next up were 2 maki – mikuni maki topped with unagi (eel) & a salmon belly maki. they were ok but not as good as the UN futomaki & the spider maki. i did not take photos.

#3 next was the botanebi. as usual we had the excellent sashimi (these were large prawns larger than aka ebi & >4x  size of amaebi) & had the prawn heads deep-fried – you could eat up everything basically, it was that good! 🙂 there were 3 prawns per serving @ S$45, so i asked them to make it 4 prawns @ S$60

#4 after that we had the sous vide octopus tempura served with a wasabi mayo which we sprinkled with the red chilli powder. this was again very good, the sous vide meat was tender not tough & totally consistent, and contrasting texture with the lightly battered surface.

#5 then we had 2 lobster teppanyaki to share among 4pax. 🙂 the preparation was varied somewhat from the last time – instead of uniyaki i.e. with uni (sea urchin) sauce, it was a melted cheese mayo. this was excellent. the cheese could make it “jelak” = easily satiated, otherwise it was just perfect. i ate up everything! 🙂

#6 we ordered the teriyaki cod as well. this was one place where i took my inspiration for my own teriyaki cod, which by my kindly friends acclaims was almost there but i guess the one here was still somewhat better. 🙂

#7 lastly, we had 2 orders of kagoshima wagyu sukiyaki konabe to share among 4pax. the beef looked different, more marbled & slightly thinner. taste-wise it was par excellence, as were the ones previously.

with 50% FAR (feed at raffles) discounts for food & 25% on liquor, the bill for 4pax including a S$50 sake was S$284 nett=S$60pax++ after discounts. and for such an excellent meal. no wonders that we keep going back. 🙂

a quick update. last had excellent brunch here on 18.8.2013. everything was good as before. the mini kaiseki brunch was truly good quality & great value. thumbs up! 🙂

menu items same as before. sashimi (kajiki, sake, maguro) were good quality – sweet & fresh! cahwanmushi was very good – very smooth & tasty! tempura also was among the good ones. the teriyaki cod was the best – good helping & really nice! i must try this at home! 🙂

the teppanyaki beef tenderloin rare was good, but the kagoshima pork was better! 🙂

& we had 3 pieces of maki. nice too.

we asked, & they let us changed to black sesame ice cream, but the macha ice cream was good here too! 🙂

for S$60++pax, it was really very good value for the quality of food. 🙂

hokkaido sushi at M Hotel had a wagyu kaiseki groupon promotion. i always like hokkaido sushi but it is kind of ex w/o promotions. 🙂

they had the S$46.50 for 7-Course kagoshima wagyu sirloin kaiseki & a S$62.80 5-course kagoshima & ohmi wagyu set. there were 6 of us & we arranged to have the S$46.50 lunch. they charged S$1 for refillable tea & S$0.50 water, quite fair. 🙂

the 7 courses included a pitan tofu with tobiko (flying fish roe), and it was very well done here, as always. next was a sashimi moriawase. this time there was no botan ebi, being replaced by a small truffle kampichi item. the other sashimi – salmon, hamachi, tai & maguro were all good, very fresh & sweet. 🙂

the fish + 2 ebi tempura were good, nothing special. the ginkarei shioyaki was very good, and a good helping too. the kagoshima wagyu (star of the show) was very good, but a very small helping just 3 pieces. the bara chirashi don with salmon, tai & ikura toppings was good too, though not special. it was really 6 course & not 7 (they just count the soup as 1 course). 🙂

i thought it was very good value, though a smaller set c/w with previous offers & having kagoshima wagyu replaced a bigger portion of australian wagyu.

i had earlier gone for a lunch with my family & 2 of us took the $62.80 set. the truffle kampachi was ok but i thought the cheaper set sashimi moriawase which then included 1 botan ebi was far better. when it came to wagyu though, there were both kagoshima wagyu & the more ex & fatty ohmi wagyu sirloin & a good portion (100g) & they were just fabulous. when the promotion is back i will certainly do it again especially the ohmi wagyu set. it is best paired with the cheaper 7-course set to share among 2pax. 🙂

pan pacific hotel had undergone a period of retrofitting last year.  we used to head for kaiseki at keyaki especially during year end where the menu items were more attractive (with lobster, Jap wagyu etc). i had not been back to keyaki since end 2011. the only other time i visited pan pacific was for the buffet lunch at the edge, though at S$58pax i did not find it a compelling offering even with 1 free for 3 paying.

recently i noticed that keyaki has a S$60 8-course weekend kaiseki brunch (we had tried the brunch there a while back but didn’t find reasons to return). this time i also had added incentives to redeem some accumulated points which would expire Jan 2014, it was an excellent lunch (or brunch?) – don’t quite see how was it brunch? 🙂

we had a otoshi starter – a small simmered pickled fish dish. next was mixed sashimi comprising salmon, hamachi & akamai (lean toro). it was good. 🙂

the chawanmushi was good too – very smooth & tasty for a ordinary chawanmushi though many places like (say) hokkaido sushi serves one with ikura which is much sweeter.

the tempura came with 1 prawn, 1 fish & 2 vegetable items. it was a good tempura, the batter was light, fluffy & crisp. 🙂

the teriyaki cod (top photo) was best! i don’t like sweet teriyaki sauce much but this was lightly flavoured which enhanced the very flavourful cod.  excellent dish! 🙂

the beef teppanyaki was good too. on this day though the service, usually impeccable, left much to be desired. the kitchen had somehow missed our order (or misplaced the beef? haha) & they served it to 1 of us while the rest (4pax) waited good part of 1/2 hr before we were served the dish.  we had all ordered medium rare but it came all effectively well done. still surprise, surprise the USA sirloin was tender and tasty, not superb but quite ok really. 🙂

the set came with macha ice cream (& it was good here NOt the cheap sweet variety).  i asked for 2 kurogoma (black sesame) ice-cream & they served to us. that was really good 🙂

the food items were of good quality & standard, & good value for S$60++. will probably go back again. 🙂

looked at Majestic’s 8-course WGS (World Gourmet Summit) dinner menu on its website & decided to go for this dinner. 🙂 WGS dinners have been around for many years. was never quite motivated to try them as I always believe (& still do) that good food begins with taste, and presentation & creativity (including fusion & molecular discoveries & adventures) are superlative to good taste & superfluous to bad ones; and have always felt it is paying lots of $ to get average (or poor) food & service..

Majestic’s excellent 8-course WGS (World Gourmet Summit) menu ending 26apr2013

Majestic is our favourite Chinese fine dining restaurant so we are confident with the quality of its cooking (not to say bias..haha..). this 8-course WGS dinner menu is S$99++pax c/w several hundred $ for other WGS dinners & there is a 10% Citibank credit card discount, so it looked reasonable to give it a try & we were happy we did. 🙂

The lobster soup with a yasai (veg) tempura was a great start. The lobster meat were plump, sweet & tender. The soup was very smooth & tasty – the intense hae mee (prawn noodle) type stock, not the foam cappuccino bisque served at most western fine dining. the tempura batter was good.

the braised abalone and lotus roots with a minced oyster filling in batter & brocoli in brown sauce was a superb dish. 🙂 Chinese dried abalones in brown sauce are always soooo good. the abalone was smaller than the 5-head ones at Xin Cuisine, probably 8 or 10-heads but still good size. the lotus root with minced oyster though was par excellence, very good indeed! 🙂 next item on the menu (top photo) was plump, sweet,nicely seared hokkaido scallop sitting on a marrow gourd with a sprinkling of tobiko (flying fish roe), and it had an amazingly large black truffle topping it! I love the fragrance truffle & truffle oil add to dishes (especially cold Japanese noodle topped with caviar & some truffle oil at Gordon Grill) but never believe in paying stratospheric prices for them.

the 4th dish was 1 of the best caramelised (I think honey vinegared) pork rib I had. you can the glaze, glistening..not sure how it is done – whether baked or deep (or shallow) fried & braised. the plating was good with the green tea powder donning some chinese character (京?). 🙂

next was the teochew steamed promfet – as good as any good teochew restaurant, not sure the plating & pigskin topping (odd choice) was an effort in fine dining presentation? whatever –  the taste still a good robust steamed teochew promfet dish. 🙂

we were expecting panfried wagyu MBS6 – I guess maybe that was too much of an expectation for the price? haha. 🙂 what we got was panfried wagyu guotie (锅贴)..when reading menu I was thinking a panfried wagyu + a pot sticker yum yum..it was not to be..the minced wagyu was very tasty & the dough was good..not quite the same but well can’t have the best of everything, 🙂

the 2 desserts were I guess another effort at creativity & fine dining.. don’t know what to make of the cherry pie thingy..the puff pastry was excellent, lovely swans too, the filling a bit sweet & not my thing, like a sticky date pudding? maybe.

the ice dessert  I consider a 败笔 (point of failure) of an otherwise outstanding menu..the usual aloe vera sorbet at Majestic is so good no need the trouble to invent something fancy..not that it was bad really, but it was much ado about nothing – an ice jelly in a hawker centre would be more shiok!

overall it was an outstanding & enjoyable dinner. the WGS menu promotion is until 26apr2013. 🙂
