Recipe=Oven Grilled Miso Teriyaki S$3 Salmon Fish Head on 3Jun2018

did a superb roasted miso teriyaki salmon fish head on 3.6.2018. ^^

bought a few S$3 salmon fish head from song fish when i bought salmon belly recently.

there was one left in the freezer so i took it out, defrosted, cleaned/washed with salt and cooked it for lunch la. 🙂

a really simple recipe-

  1. 400g – 500g salmon fish head
  2. 1tbsp flat miso
  3. 1.5tbsp light soy sauce (if not adding miso, can add 2.5tbsp light soy sauce)
  4. 2 – 3 tbsp olive oil
  5. add sliced ginger, a few stalks of scallions (i didn’t have today)
  6. & grilled 10mins in 250degC oven

head was super fresh!

meat was very sweet & tasty, and not fishy, with the flavours of miso & the fragrant light soy sauce.

grilling gives a slight charred skin & wonderful grilled flavours, the sauce dries up a bit so more intense, and the more fatty parts of the flesh near the belly combines well with miso & light soy sauce, are not chunky in texture like the steak or fillet parts, so perfect la!

Ingredients-

& the sake was good standard. this alone would cost like S$18 easily..

#1 sensai 前菜edamame, tuna, marinated octopus

the appetizer plate included a tuna ceviche, marinated octopus & edamame.

the  tuna was very good…the octopus was tough…edamame the usual…

not the very large oyster at hachi, but neverthelessthe oyster was very fresh & sweet, not big, quite ok, and came with a tasty tomato sherbet..

#3 5 kinds of sashimi – maguro, salmon, amaebi, tai, hamachi

sashimi was nothing special, still quite good standard, fresh & sweet.

there were 5 kinds = sashimi – maguro, salmon, amaebi, tai, hamachi, one piece each for the 2 of us… 🙂

wife found it slightly fishy, so took only 1/2…i took all of it & her 1/2 piece too. lol!

the aburi sushi were great…salmon was good & of course anago sushi 👍was special. sauce though was a bit sweet.

the bara chirashi don was ok. fish was fresh though odd cuts letfovers like any bara, the sushi rice not that great.

& there was a #7 soup…it was good too, nice tasty clear soup with asari (la la clams)…

#8 yuzu sorbet

yuzu sorbet lagi shiok!…very flavourful & refreshing. great dessert ite….

a very enjoyable early anniversary dinner with wife…

this place i will definitely come back again..don’t mind to take this mini kaiseki set again, alaos to try the weekday special & lunch specials..

my RI friends decided to visit national museum & have lunch, so 3 of us met for lunch at concetto @ the cathay on 23.9.2015.^^

another 2 friends joined lunch afterwards, so 5pax. 🙂

prices have gone up from S$20.90 to S$22.90, inflation i guess, but for me it’s still a good deal. 🙂

i missed the YMCA (that being nearest to concetto & national museum & cheaper parking rates) carpark entrance, so parked at park mall & walked over to the cathay. concetto looks out onto the road, and is bright & airy. 🙂

we all ordered the concetto pasta – an interesting chilled capellini dish.

it was not quite the famous chilled capellini at da luca or gordon grill or of course gunther.

still it was pretty flavourful & unique. & ala carte price is just S$4.90! 🙂

i like the previous version a lot better though – chilled capellini with crab & prawn tartare (tiny morsels) tossed in lobster oil & topped with lobster foam & ikura (salmon roe).

think they should just revert to the previous version, full-stop!

i pushed away most of the mayonnaise. this drier version was heavier, less refine but still tasty. 🙂

it was kind of deconstructed preparation…

as a dessert, i think it was rather good, and i would order it next time.

as a tiramisu, i think my own tiramisu is much better, both in flavours especially coffee & liquor, & also texture.

for a change, i will try the tiramisu next time though.

for me the only slight complaint was the poor service. the young guy was unhelpful, “tidak apa” & very poor in his service attitude. towards the end though he warmed up a little & his attitude improved from poor to ok. think he just needed some service training. the lady server was ok. 🙂

the 3-course set lunch was S$22.90, & for me that was great value-for-money! 🙂 there is a supplement of S$3 for the salmon. 🙂

i wanted to try the autumn matsutake bento set, so today 3 of us came for lunch on 20.9.2015. ^^

it’s F1 race day, so many roads were closed. i googled and saw that bras basah road entrance to raffles city was open & also i could returned by beach road in the direction to middle road which was also opened.

i drove through orchard road with some traffic, but overall it was perfect. & carpark was empty.

teppanyaki sea bream seemed to be the dry treated type like many japanese fish including salmon & cod. you get them in japan a lot, in bentos, restaurants, supermarts.

i liked it but not so favourite for wife & daughter.

they do not serve the grand tour tasting menu for lunch. for simplicity & ease i ordered the premium bento “miyabi” from the lunch set menu.

this friend is quite busy guy & i don’t get to spend much time with him except during chinese new year. so it was a very good lunch talking about family, children, his work etc.

the food at mikuni is always pretty ok. however the premium bento “miyabi” at S$120pax (even with 50% discount to S$60pax) was to me below par.  e.g.-

the robatayaki set at S$68 here at mikuni (vs S$120) offers the same kagoshima wagyu skewer & the teppanyaki set at S$68 also offer cod, beef & golden prawns

the chirashi don at S$90 is very much superior.

likewise the S$62 chirashi don set at kuriya.

not everything is directly comparable of course…we were more interested to catch up & did not pay much attention to the menu, but they must have changed the menu as we did not get the golden prawns & bara chirashi. maybe i will write to mikuni to ask about it.

we ordered a very nice S$68 jap wagyu uni ikura don. you can also order the set which comes with ebi tempura, chawanmushi & udon for S$88. we were happy just to have the beef don.

wagyu was so marbled & flavourful. uni was very sweet & smooth.

the other tray had uni, negi toro (minced toro), ama ebi (sweet prawns), and many fish over bed of vinegared sushi rice.

the sashimi was top quality. it was as good as the chirashi don at mikuni. it did not have the botan ebi & otoro like mikuni’s but had bigger serving of uni. there were many slices of hotate & lots of sashimi including salmon, hamachi, maguro, kajiki, tai

mikuni chirashi don is still my favourite at S$90 (S$45 after 50% feed at raffles discounts) & i don’t really need a set, ala carte is good enough.

however at S$62, this chirashi don had very good sashimi cuts & larger (maybe 25% more) so it was a very good match for mikuni & i will be quite happy to have this again.

we had the superb sous vide & deep-fried tako to share. this still the best octopus dish i have tried, better than all the very nice grilled octopus dish at alle darsene lake como & miky at monterosso cinque terre.

we tried a new dish, kagoshima wagyu don. wagyu was very good. quite surprisingly to me, the rice was not great. hmmm, any of the  kamameshi (釜饭) at sun with moon wheelock or unagi chahan at zen japanese dining was tastier than this.

& another new dish – kagoshima wagyu ishiyaki. i estimated the 6 cuts to be about 80g or 100g. beef was excellent of course, very nicely marbled. JH said reminded him of hida beef 飛騨牛 on a hoba leaf 朴叶 or magnolia leaf he had at takayama. 🙂

#1 the crispy langoustine was excellent packed with meat tasted just like very tender lobster, & it was such a large helping.

#3 the 2 main course options were wild scottish salmon confit & tartare OR beef tartare. beef tartare is 1 of my favourites for appetiser. this one though was a main & it was quite tasty. this preparation had quite a bit of herb. it was very good but i would prefer to have less herb & a more dominant sweet tasting beef.

the salmon confit & tartare was very good as well. a poached or baked salmon tends to be more chunky. this confit was medium rare & had a bit of the texture of cured salmon or sashimi. very nice. 🙂

bought 2xS$33.80 groupons & went with sis to zen at ue square for ala carte lunch buffet on 21.7.2014. 🙂

normal lunch buffet is priced at S$42++pax. i had also taken their lunch sets starting from S$16++pax (but some years back) & they were pretty good. quality of food & cooking had always been good here.

for the ala carte buffet, the main event was the wagyu shabu shabu. there was also pork & whole array of jap dishes. only set back was the lack of good sashimi other than salmon for the buffet. you could order them as additional ala carte orders & they were at good discounted prices too e.g. what looked liked a very good 10 piece sushi set was going for like S$18. i wouldn’t order that while i was having a alacarte buffet lunch though.

the salmon sashimi was good, probably about chikuwatei & momoya standard. anyway these days many places served good salmon sashimi. the aburi salmon sushi & maguro sushi were both good but the rice was so huge you could not order more w/o leaving the rice. anyway i set aside the rice for later dishes like the kimchi buta & ebi ika basil dish. 🙂

the 2 thai & korean dishes showed the quality of cooking here. kimchi buta was just ok but with lots of pork & belly pork. the basil prawns & squid was very good, the standerd of a good thai restaurant. i kept my rice for these dishes. 🙂

for the main event wagyu shabu shabu, the beef was excellent. perhaps azmaya was better. hard to tell, but this was very good anyway. 🙂

it came in 1/2 & full portion (200g). we had the full portion for 2pax but could not add more. we also ordered 1/2 portion belly pork. it was just 6 slices & it was very good. we just could not add more.

decided to take 1/2 portion of unagi chahan to share. it was still very large portion & we took about 70%. it was very flavourful with unagi pieces but no better than a good fried rice at imperial treasure or crystal jade lamian xiaolongbao.

also shared a tofu cheese cake & a creme brûlée. both were good. creme brûlée a bit sweeter & we did not finish it.

the normal weekday lunch buffet price is S$42++pax & dinner S$52++pax. still ok i guess if you take a lot of beef. the S$33.80nett groupon deal was of course superb value. 🙂

just to add that the service was overall good. not always the most attentive, but very polite friendly when they served you. ice water was free unlike other places (tajimaya does not serve tap water & charges S$5.90 for 1 litre bottled water), so the S$33.80 groupon was all we paid.

we decided to go another place for dinner. we had been going to east coast lagoon food village the last few times. 1 friend suggested momoya at jalan pari burong.

must say they have very good & inexpensive sets here. momoya also serves ala carte buffet, S$31++pax for lunch & S$35++pax for dinner (same buffet menu).

1 friend ordered the tempura & udon set. the tempura moriawase included 3 prawns, i guessing 1 fish & 2 vegetables. i tried 1 prawn, it was ok, the batter just average not so great.

another friend & i ordered the sushi & sashimi set. there were 12 pieces of sashimi – 4 slices each of salmon, maguro (tuna) & hamachi (yellow tail). salmon was very good, comparable with sun with moon at wheelock & might be better than or about same as chikuwatei. hamachi & maguro were quite standard, probably about same as chikuwatei not as good as sun with moon wheelock. the 6 pieces of sushi were pretty good quality – salmon, maguro, kajiki, eel, amaebi & ebiko. the set included soup & chawamushi (very average not great). at S$17++ for 12 pieces of sashimi & 6 pieces of sushi of above average to good quality, it was really good value for money.

we added 2 upsized portions of sashimi. this was same as the sashimi in the set except that there were 3 slices each so total 9 pieces sashimi for just S$5.

i would say the sashimi was about comparable with chikuwatei so S$17 set for 18 pieces was a much better deal than the S$25++ chirashi don at chikuwatei, and adding the upsize 9 pieces sashimi, it was just S$22++. the sashimi were good enough that greedy me enjoyed the overdose of 27 pieces for just S$22++. the S$20++ chirashi don set at ginza kuroson offered better quality sashimi but portion wise would be 1/2 this mount.

i would do this again when visiting my friends in the east.

dinners at mikuni are always so very enjoyable. see recent post on a wonderful mikuni dinner on 31.3.2014.

we were there again on 23.6.2014. this time we ordered the chirashi don, oysters & golden prawns, in addition to the usual.

the oysters were good. at 50% discounts, it was S$14 for 3 pieces. the ones we had recently at chikuwatei was better but more ex – 2 large ones for S$22. 🙂

the chirashi don was so, so very nice. this must the best in singapore or anywhere for S$45++ after 50% feed at raffles (FAR) discounts. 🙂 needless to say, it was far, far better than sun with moon or chikuwatei. not only there was uni, 2 pieces of chu toro, & a huge botan ebi, all the other cuts like salmon, tai, hamachi, hotate were so sweet & fresh & so very many. 🙂

it was kind of a late discovery for us, as we dined quite a bit at mikuni but we tend to take the cooked food rather than sashimi.

& the golden prawns (basically teppanyaki large prawns with lots of mayo) was really good! each of us had about 5 prawns, so there must be 20 pieces. we took very little mayo but this mayo taste was very good. 🙂

the lobster uniyaki today was below the usual standard. i had always liked the lobster but somehow this time the lobster meat did not have the usual bouncy fresh texture. couldn’t say it was bad but c/w the golden prawns, it was substantially poorer.

& the kagoshima wagyu konabe was as good as ever.

the bill came to S$239nett for 4pax (c/w S$205 for 4pax at chikuwatei & such huge guff in quality of food). excluding the sake, it would be S$195nett or S$165++ for 4pax, really good deal. 🙂

i think i gonna go back just for the chirashi don. 🙂

Economic Quick Food Tour of Shinjuku on 10Apr2013

had a nice dinner & great view at Asahi Sushi on 50th floor of Shinjuku Sumitomo Building with my daughter & her friend last evening, so decided to go for some cheap food this time round after my exhausting 5 hr+ walking trip to Takaosan (高尾山).

as I returned on the Keio line. I recalled this soba shop which I had wanted to visit. There was no difficulty locating it after the fare gate. :-).

I surveyed the available options and picked a 350yen soba which came with an ebi (the super tiny kind) tempura – see photos below.

This is an easy way to order your food. You just self-select the item you want, make payment at a “meal ticket machine” and out comes a ticket of your meal order which you then present to the shop & wait for your food to be ready. 🙂

what can I say? the 350yen soba was immensely gratifying. was it better than the S$3 bachormee (minced pork noodles)? I think not. but it is colder here and slurping a warm tasty soba was a very comforting & enjoyable experience.

I walked around the streets dotted with restaurants just across Shinjuku West Exit which was also around my hotel Sunroute Plaza.  I found this interesting gyu don shop which advertised a thick cut beef bowl. When I first came to japan 30 years ago, I enjoyed very much the cheap gyu don at Shinjuku including Yoshinoya (吉野家). Those use the very fatty thin sliced beef which are similar to the Korean bulgogi cuts. Now lifestyle has progressed somewhat & the Yoshinaya gyu don is not a very attractive food choice.

This beef bowl however was quite excellent. The beef were thick cut as advertised (as seen in above photos) and the many sauces & chilli (see photo below) & rice were all  excellent very tasty and enjoyable. It came with a miso soup & glass of water & you could help yourself to pickled ginger on the table. The whole meal costs just 330yen. This was a small portion (but was already quite substantial), and you could pick a medium which is 480yen or large, 620yen.

Next I went to try out what looked like a better quality conveyor belt sushi.

This was what I had (total cost=862yen)-

  1. 2 pieces salmon belly (262yen)
  2. 4 pieces shellfish (2x130yen)
  3. 2 pieces maguro (130yen)
  4. 2 pieces negitoro (210yen)

The sushi was rather underwhelming. The salmon belly was good not super. Maguro looked ok but was a cheap cut, negi toro looked great but had not much taste, the shellfish was good so I ordered a second helping. 🙂

the entire dinner  –  I didn’t have lunch of course & took small amount of the gyu don rice :-)..haha..if you can call that=330+350+862=1542yen=S$17++. 🙂

So basically you don’t need to spend that much money eating in Japan!
