the 4-course set lunch was excellent the last time i came on 1.4.2014. 🙂 & today again it did not disappoint. 🙂

#1 the crispy langoustine was excellent packed with meat tasted just like very tender lobster, & it was such a large helping.

#2 the foie gras was kind of monstrous. & it was very good too. so was the smoked eel (super!) & cherries.

#3 the 2 main course options were wild scottish salmon confit & tartare OR beef tartare. beef tartare is 1 of my favourites for appetiser. this one though was a main & it was quite tasty. this preparation had quite a bit of herb. it was very good but i would prefer to have less herb & a more dominant sweet tasting beef.

the salmon confit & tartare was very good as well. a poached or baked salmon tends to be more chunky. this confit was medium rare & had a bit of the texture of cured salmon or sashimi. very nice. 🙂

I really like the quality set lunch here, and it offered good value at S$45++pax, similarly to their sister outlet au jardin which had regrettably ceased operations.

a good friend bought lunch at les amis on 1.4.2014. no april fool haha. 🙂

i must have not stepped into les amis for 5, maybe 10 years? though i did have excellent meals at au jardin (it’s now closed) couple times a year. always thought it was very ex…some months back they introduced this 4-course set lunch. having taken the food, i think it is excellent value-for-money at S$45pax, one of the nest lunches i had. 🙂

#1 & the tomato confit was incredible! 🙂 it was on a bed of grilled aubergine on filo pastry. there are tomato confit & there are tomato confit, but this was just excellent!

#2 green pea soup not my favourite, but this was again very good indeed! very smooth & nicely creamy. i may get to like green pea soup a bit more. 🙂

#3 there was a choice of patagonia toothfish (chilean seabass, my favourite fish, over cod) OR roast pigeon. both of us took the chilean sea bas. it was as good as chilean seabass usually were. the sweet red cabbage was ok but not quite my type – i finished about 40% of it.

while this fish never fails to meet expectations as you need a bad chef to screw this up, the tomato confit way surpassed expectations – most places would get it bad or mediocre.

#4 the dessert of the day a walnut apple pie? was likewise not my favourite, but again it was superbly done. 🙂 fillings not sickeningly sweet & very good pastry. the chilled chocolate mousse was very good too.

the S$60 lunch menu came with line caught seabass & choice of lobster pasta & australian wagyu etc. i had some doubts on the line-caught thingy being any different from usual & seabass like low down c/w the chilean seabass but the cooking standards here really good i will probably try it.

i was also curious about the 6-course S$120 menu. it said grilled dry aged beef so i asked the waiter (he was very knowledgeable) why this was better than the australian wagyu in the S$60 menu. he said it was OHMI WAGYU! i told him omg! ohmi (a top 3 japanese wagyu) & you don’t write that in your menu? my, my!

i had an excellent degustation at jaan on 20.1.2014 with some friends recently, and we were lucky to trade our pigeon (which was good too) for miyazaki dry-aged wagyu, but this was ohmi, not miyazaki!

i told the waiter this the second time i came across dry-aged japanese wagyu (first was jaan). dry ageing intensifies the flavours & results in substantial weight lost. japanese wagyu is so ex & already very marbled & very intense in flavours i don’t see them served dry aged in japan. 🙂

we were served bread – baguette & multi-grain roll. both were good, and especially so as they were served with duck rillettes in addition to the usual butter. 🙂

i had lunch at clifford maybe 1.5 years ago with my dining quartet which has now discontinued. food & ambience were truly excellent, especially as we had the uob 1 for 1 at S$68 (so S$34pax) 3-course lunch then. 🙂

the price is a lot more now, 2-course for S$48, and 3-course for S$58, coffee included. we took the 2-course. the appetizer choices included a salmon tartar, a mushroom veloute & i think a salad (cannot quite recall). the mains choices included a herb crusted lamb loin, a dory fillet, and a pasta (can’t recall what). there were a lot more appetizer & mains choices but they came with supplements.

PL ordered the lobster salad (top photo – looked just fabulous) – S$12 supplement, and the 220g beef entrecot (a ribeye or scotch fillet steak) – S$25 supplement. i ordered the salmon tartar & lamb loin & hugo ordered same salmon & the dory. the salmon tartar was a good-size helping.

the suave, efficient & polite restaurant manager prakash came by to ask about the food, so i gave him some feedback. i thought the salmon tartar was very fresh & sweet but the sour cream distracted & did not quite enhance the flavour (this part of course is subjective taste…). personally i like it with just sea salt & pepper & olive oil. those might already have been incorporated so perhaps just some additional fresh ground black peppers. 🙂

i thought the prices were really too high, though fortunately the regular appetiser & mains (i.e. w/o supplements) were quite excellent. compare this with les amis’ 4-course S$45pax set lunch, which included choice of patagonia toothfish (the excellent chilean seabass my favourite fish) or quail. to be fair, i have not tried the les amis set lunch yet (will do soon enough!), but you know it’s les amis! 🙂

likewise the excellent S$45pax set lunch we had at au jar din! & au jardin’s plating was also somewhat more artisan by comparison! or indeed the exquisite & simply fabulous S$48 3-course lunch at gordon grill at goodwood park, with 3 mini appetisers & 3 mini soups. 🙂

my herb crusted lamb loin was excellent, nicely medium rare & flavourful with hardly any gamey taste. my friends were asking what was the crust (breadcrumbs with spinach, basil etc) as c/w my own pistachio crusted rack of lamb. the dory looked great.

the beef entrecot looked perfectly charred. PL like it well done. somehow it did not quite look like 220g, not sure if it was dry aged for more intense flavours & so had some weight loss.

we had coffee & petit fours (which means small oven & not 4 items!). macarons were too sweet. nutty chocolates were ok. i did not try the cake but it should be good.

overall, the service was efficient & responsive, the ambience was just super, and the food quality quite excellent. i can’t say food was better than au jardin though (in fact i thought au jardin’s was better) & of course the price was not just marginally but significantly higher than les amis (S$48 2-course vs S$45 4-course set lunch) or au jar din or gordon grill. i will come here for its great ambience, service & food, but sparingly. 🙂

The Best Dinner Degustation @ Jaan on 20Jan2014

of all my reviews thus far, this was the best dinner! 🙂

went to jaan on 20.1.2014 with a friend couple who are very close to my wife.  jaan has been always our favourite degustation restaurant. i had not intended to take photos as i had reviewed jaan when we dine here on 8.5.2013. the prestige menu (summer or winter) usually featured minimum changes, and so i missed out on the 2 amuse bouche photos. the first fingerfood bites platter was somewhat different with chicken samosa etc but the same crackers with humus dip. the second cepes mushroom tea, a very intense tasty soup, was largely the same – still the best soup i had. 🙂

the freshly baked bread basket came. i picked a brioche (a puffy highly enriched bread with nice crust) & a baguette. they did not have the previous truffle bread, which was brioche with truffle infusion.

when the first dish came – #1 a seafood ceviche – i decided to take photos. i had not paid attention to the prestige menu having assumed it had few changes. the ceviche was par excellence! well so many dishes were. 🙂 it was incredible – it had langoustine, caviar on top another prawn, scallop, oyster, ikura & crab meat. i could eat this again! 🙂

#2 next was a beetroot melody thing – jelly, sorbet, some garnishes including cheese. there was some toast to go with it.

#3 the 55min 60degC  rosemary smoked organic egg with iberico chorizo & proscuito was same as before. i love the texture combination the egg yolk added to the dish & the savoury & slightly salty proscuito made it such a very enjoyable experience. a similar dish was served at au jardin for our recent new year eve dinner on 31.12.2013, and maybe this was something i could try out myself for my home dinners. 🙂

#4 there was no change to the roasted foie gras dish. my wife though preferred the caramelised pan-fried version, anyway she doesn’t take foie gras much these days. 🙂

#5 the brill, an atlantic flatfish in the turbot family, came with crayfish foam. it was beautiful to look at, fine & exquisite in taste, but the texture of the brill was not my favourite.

#6 the menu prestige had pigeon as the second main, however 1 friend did not want pigeon so we asked the chef to substitute & requested for the miyazaki dry aged wagyu which was served on the 5-course menu. thanks to our friend, i tried miyazaki wagyu at jaan for the first time! it was fabulous! we were served a black sesame puree on the side, sounded odd, but tasted perfect with the wagyu.  although it is common for western steak cuts to be wet-aged or dry-aged, i have not seen this done for japanese wagyu. don’t know why but jap wagyu are so expensive, and already the flavour is very intense due to the high marbling, so perhaps not common to incur weight loss & intensify flavour further through ageing? anyway i was not complaining as the aged miyazaki wagyu was just exquisite! 🙂

we had a citrous pre-dessert, which had blood orange etc like a palate cleanser., very nice indeed.

#7 then it was the choconut – different temperatures of chocolates..good but no better than previous versions.

we ended with petit four & coffee/tea. it was such a wonderful dinner! 🙂

the entire degustation comprised 7 courses (4 appetisers, 2 mains & 1 dessert) PLUS 2 amuse bouche & 1 pre-dessert, so it was almost like a 10 course degustation.

every dish was great, many were superlative, and it was indeed an artisan cuisine, very pretty, fine & refine, utterly pleasurable.

wanted to buy my wife a nice new year eve dinner, and saw the quite attractive menu in au jardin’s website, so decided to make a reservation for 2pax dinner on 31.12.2013.

we had couple of degustation dinners at au jardin many years back (my wife said 10 years ago). they were like 8-course priced at S$200pax  & were really good. i had considered trying the S$150pax table d’hote  (ie prix fixe)menu, but never did. subsequently, the regular menu did not look attractive as it does not today (ie 4-course at S$150pax), so i did not do dinner at au jardin but only occasional lunches (especially the recent maybank 1 for 1 promotion set lunch).

my wife & I generally have the practice not to dine out during public holidays, festive periods, mothers’ day etc as those occasions were very commercilaised & one often ended up paying through the nose (like 50% – 100% more) & getting poor food & poor service. anyhow for this new year eve dinner, au jardin served a 7-course+amuse bouche dinner at $198pax which was no difference in price from 10 years ago & far better menu than the regular S$150pax course menu, so the arrangement suited us fine.

i just wonder why they don’t do such menu regularly, especially when their business had not been good, and they are closing down by 31.3.2014 as a result of huge rental increase (& to me perhaps poor strategy & marketing). sign!

i do not rate au jardin degustation as better than the creative & excellent degustation at Jaan which cost only S$119pax after 50% feed at raffles discount, however one need a change of menu & environment, and most degus restaurants like iggy’s, gunthers etc are far more expensive. others like keystone & saint pierre are a little cheaper but not as fine, and private affairs had closed down.

wife ordered a red. it was expensive, 1/2 bottle for S$85++, but it was a grand cru classe & was really nice though i took maybe 30ml.

the 7-course dinner (+amuse bouche) came with 4 appetisers, 1 palate cleanser, 1 main, 1 dessert; as well as coffee & petit fours.

we had a warm bread basket. both the baguette & a raisin bread were good. the amuse bouche was a foie gras terrine with tobiko (flying fish roe) & jelly. this wasn’t exceptional & but still a great start to the evening dinner. 🙂

1st course was blue fin tuna ceviche with tobiko. it was nothing inventive, but very sweet & tasty.

the 2nd course, cold pasta with mud crab, caviar & sea urchin, was heavenly, par excellence. it way surpassed gordon grill’s (no comparison really as gordon grill’s was for a S$48pax lunch) & according to my wife likewise c/w gunther’s. 🙂

the 3rd course was a braised iberico pork cheek, with joselito proscuito, egg confit & winter truffle. sous vide low temperature poached egg is a regular feature in fine dining & i really loved the texture enhancement it gave to the dish, the proscuito was excellent, pork cheek so-so & i had already written about the excellent winter truffle here. 🙂

the 4th course was a lightly breaded dover sole served with razor clam & clam emulsion. the dover sole was ok, tender, i guess considered good in a good restaurant, but really average dish by comparison to other courses. the razor clam was great. 🙂

next we had the palate cleanser – a watermelon confit with sorbet & lime jelly. it was good.

the grilled wagyu striploin MBS5 rare (top photo & second above) was excellent. this was much better than what i did at home. it was done rare & yet totally charred (for maillard reaction that gave flavour to the beef) & served with carrot & root vegetables and a tiny piece of black garlic. superb! 🙂

for dessert, we had pistachio cake with raspberry sorbet. the cake was bland but when taken together with the slightly sour sorbet, it was good. 🙂

my cappuccino was great. the petit fours though was miserable (same as they served for set lunches). mini macarons were too sweet, chocolate was ok.

overall we had an excellent evening of food, wine & conversation. Jaan’s degustation gave far better value.nevertheless i enjoyed this dinner very much & would come back but regrettably they do not serve this in their regular menu. i may consider trying ala carte or their course menu. not sure for now!

maybank repeated the 1 for 1 set super lunch deal with les amis group’s bistro du vin. 4 of us had lunch at the zion road branch on 20.12.2013. it was an excellent 3-course lunch plus coffee normally priced at S$26pax. with maybank 1 for 1 we paid S$61 for 4pax lunch including 2 reds (1 glass of wine for 2pax). 🙂 this was even better than the great lunch we had at bistro du vin shaw branch on 18.11.2013.

bistro du vin zion road was located at the previous coffee shop next to nasi padang river valley & split the space with their sister restaurant peperoni pizzeria. it was small & cosy with added al fresco sitting, quite a wine bistro ambience i guess.

we met another friend who was there for lunch also on a 4pax table. soon afterwards, another friend arrived with her family also a 4pax table. 🙂

there were wide choices for appetisers, mains & dessert. i had the rabbit terrine (good too) last time at shaw branch, so picked the leek & potato soup with breaded oysters. i always like cream of leek & potato. this was certainly competent, and the breaded oysters (kaki furai) were excellent, very tasty & good batter. my friend liked the endives salad with some blue cheese. another friend picked the escargot in red wine with crispy bacon. it was good too. 🙂

i ordered grilled lamb ribs on a bed of lentils (top photo) for main. it was excellent. lamb was flavourful & fork tender. another friend ordered beer beef short ribs with mash. i had that at shaw branch, it was competent but not my favourite. 2 other friends ordered the duck leg confit & seafood bouillabaisse, both were popular diners’  choices. 🙂 i would probably try the bouillabaisse next time.

2 friends had the apple crumble (i had that at shaw branch & it was good!). i had the pear tart on puff pastry with salted caramel. i liked it, though i would probably go back to apple crumble next time. the madaleine this time was good, unlike that at shaw branch which was dense & not fresh.

a friend on the another table who had tried the lamb ribs at shaw felt that the food at zion road was better than shaw, & another friend had said previously that the service was a lot better. i agreed with both. i thought the ambience was more cosy & the service was significantly better. every server was responsive & communicated well to our queries on menu, & even agreed to let us extend the maybank discounts to another 2 friends (there was a limit of 3 redemptions each time) at the next table who came w/o knowing about the promotion though in the end that was not needed as they also had the maybank card themselves (& were allowed to use it) only that they did not know about the promotion.

so my 2 thumbs up for the really excellent service. 🙂

a very old friend was in town. we first met in 1994 so it was almost 20 years but felt like yesterday. he is dutch & 10 years older but he was in singapore 20 years & asia longer. he left singapore & returned to holland towards end 2012 and is working on the routine of retirement. anyway his son & many friends are here. i tried to get au jardin (super lunch deal!) but it was fully booked, so we went to reddot brewery @ dempsey instead on 19.11.2013. 🙂

i had been to reddot dempsey several times. they served a 2-course S$22pax & 3-course S$28pax lunch which i thought was already very good value. but it’s S$18pax & S$22pax now for 2-course & 3-course menu! if we exclude maybank’s 1 for 1 promotion at les amis restaurants, this would be a really super deal! 🙂

the place was more of a drinking joint with a micro brewery. it was probably quite busy in the evenings but i had no interest in that. parking was free & the ambience was excellent, with airy high roof ceiling & water feature. we had a great lunch & catching up. 🙂

i had the prawn citrus salad & my friend had the reddot salad. they were good, refreshing & good portion. both of us had the halibut, which was very good, and even came with very sweet vine tomatoes! this dish alone was S$28++ on ala carte previously, and that was not expensive c/w many restaurants. there was also sirloin steak for mains choice, which i had before & it was pretty good too, if ordinary. these days i don’t order beef much when i dine out. 🙂

my dutch friend had the ice cream, and i had the chocolate melt cake, & this lava cake was good! we had coffee but you could choose beer etc as your free drink also. 🙂

we didn’t go dutch (pun intended!)..haha! it was a very satisfying & cheap meal anyway for the food & ambience & we had a jolly good time. there were only 2 other tables occupied, and we had the huge place mostly for ourselves. i not sure whether it made economic sense to keep it open for lunch & reduce the price but i am not complaining. 🙂

our dining quartet decided to take advantage of maybank 1 for 1 set lunch promotion & dined at bistro du vin on 18.11.2013. the usual price for a 3-course set lunch including coffee was S$30pax.  the menu had quite wide choices. there were couple items like pan-seared foie gras & 200day grain fed ribeye that required supplement – quite reasonable unlike some places where 1 in 2 items required supplement, however the supplement were separately billed & not entitled to the 50% discount. 🙂

i love leek & potato soup (& especially this one came with 2 kaki furai – japanese breaded oysters). however i was distracted by the rabbit terrine & ordered that. it was good, tasty, competent. i was happy with it. 🙂

1 friend ordered the foie gras ravioli (the pink sauce didn’t look great or very appetizing to me like the beautiful pumpkin ravioli at al borgo did, but i think it tasted fine). the other ordered the baked camembert with sour dough. it looked ok but my friend said it was not as good as the other bistro du vin outlet at great world city.

for the main course, i ordered the beef ribs stewed in beer. again it was competent & the mash too, though in comparison my own spanish beef ribs was better because i had a very sweet & tasty vegetable ratatouille to match/balance the fork tender beef ribs whereas this one was very beefy & robust.

1 friend had the duck confit. he thought the black sheep cafe’s was better. 1 had the seafood bouillabaise with fish, clams, mussels, prawns. she said the fish was not great. anyway, bouillabaise & duck confit not my favourite. the smartest among us ordered the 200g 200-day australian grain-fed char-grilled ribeye – a S$10 supplement with no discount.it was ok really for the quality meat. i could smell the steak when it was served, & i had a small piece & it was excellent. 🙂

for dessert, i & another friend had the caramelised apple & raisin crumble with roasted apple ice cream. it was good, though it would please the eye better served on a dessert plate or long dessert dish. 1 friend had creme brulee which was recommended by the waiter & which she obviously enjoyed. the other had chocolate madaleine. the madaleine texture looked dense. i was about to say the ones at esso station looked better but my friend beat me to it. so this dessert was not good. 🙂 i had cuppaccino & my other friends had coffee.

overall, at normal S$30pax for 3-course set lunch including coffee, the food was competent enough & i didn’t consider it expensive. with maybank 1 for 1 discounts, the lunch was S$15pax (excluding the supplement) with 2 free wine for 4pax, well you could not get that at a hawker centre or coffee shop. so it was very cheap & great value.

c/w au jardin which served a S$45pax 3-course set lunch include coffee (there was also a S$65pax menu), which was also having the maybank 1 for 1 promotion including wine, i would return to au jardin (which i was to happy to pay full price at other time) rather than bistro du vin. the latter was competent & average whereas au jardin was fine dining in both food & presentation (& of course quite different ambience). eg my lamb saddle was exquisite, even better than many good lamb racks i had before.

on the service, bistro du vin was ok. the young male server was quite knowledgeable & responsive & answered my several questions on menu items & selection. 1 of my dining companion had poor opinion of the service though because he did not offer the wine to us automatically but only when asked & he replied that most people did not take wine during lunch. the attitude i think was ok, but maybe the training on managing customers was lacking here. but overall, the service again was competent & in my opinion rather better than many similar places.

au jardin’s service was of course much better. the staff were much better trained & professional, but then it was a different class restaurant so not apt comparison. 1 younger au jardin male staff though appeared to be not so great in his service attitude.

had 1 of the best value lunch with top quality food & good servings at au jardin on 14.11.2013. 🙂

had a few degustation dinners at au jardin quite many years ago. they were the best. 🙂 the set lunches were more affordable, and though i didn’t go often, i enjoyed them at full prices when i did. so 50% discount would be a real steal! 🙂

we decided to order 2 menu decouverte (discovery) & 2 menu tradition. i chose the latter as i do rather good beef myself at home so tried lamb saddle instead.

the mud crab truffle (top photo) looked fabulous with huge truffle servings & judging from my friends’ exclamations, jolly good! i tried a piece of truffle, but didn’t feel it had much flavour though.

anyhow the server told us this white winter truffle was the best c/w other seasons, and it was actually white but oxidised & shrank in the fridge as time passed, so they had to use up quickly enough. this was supposedly the price of gold=priciest food in the world. sure didn’t feel like it for this serving size. 🙂

both my friends picked the grilled ribeye, medium & medium well. sure looked good!

the chocolate fondant (lava cake) & macha mousse & ice cream looked wonderful too.

for menu tradition, both of us took the braised escagot with chorizo. escagot was good but not my favourite, more gentle & fine c/w canned top shells. i not much into the herb esacarot style but like the gratin version at dozo, so thought i tried out the braised version. i loved the chorizo, very “pang”=fragrant.

for the mains, my friend’s panfried red snapper looked fabulous, beautifully pan seared to golden. my lamb saddle was par excellence, best i tried! 🙂 quite interesting the miniature tomberries!

dessert were great too. mine was caramel sauce & ice cream with popcorn, my friend had the bombe, which was frozen chocolate cake with curd drizzled over & milk froth.

the petit four (means little oven) macarons was not great, far too sweet, though the yellow ones with lemon flavour combined well in taste & moderated the sweetness. 🙂

the price of lunch with maybank 1 for 1 promo was S$22.50++pax for menu tradition & S$32.5++pax for menu decouverte, nothing less than a steal! 🙂
