went with friends to watch captain america – civil war at shaw lido yesterday.

after the movie we adjourned to paradise dynasty at level 4 ion orchard for dinner on 28.4.2016. ^^.

another friend join us after his day seminar, so we had 4pax.

captain america – civil war was very enjoyable movie, the best comics movie for me, better than x-men etc which i like, and 1 of the best movies i have seen…

great story-telling, great dialogue, good humour… friendship…chemistry…so many good actors…super fun…

the service by the chinese server was very good. it was difficult for us to identify the 5 dishes as they appear in totally different parts of the ordering chit. she took us through, explained the dishes & ordered for us.

we started with 2trays x 6 xiaolongbao 小笼包. so 3 pieces each for 4pax.

xiaolongbao 小笼包 was good. the soup inside was very tasty. however dough skin at top slightly thicker, also the meat filling not as tasty.

overall not as good as crystal jade lamian xiaolongbao.

later we greedy lot added another 2 trays, so in total each of us took 6 pieces. haha! 🙂

the omelette 赛螃蟹 quite a meaningless dish for me, forgettable & it’s not cheap for egg whites with supposedly conpoy in it.

the romaine lettuce油麦菜 was quite misleading. it looked like a very tiny serving so i thought it was expensive at S$10 (this dish no discounts).

actually it was quite a decent helping, so not really more ex say c/w kok sen, a zi char stall.

it was ok, but really no different from any breakfast fried noodles or the hong kong style street sweet soy sauce noodles.

dinner came to S$108nett for 4pax.

a friend has his birthday next week so we bought him dinner. ^^

very enjoyable movie & a great dinner chat & time together with good friends.

price wise, if we kept to the 5 items with discount which was quite enough for 4pax, price would be S$70nett, so very reasonabe for the food.

we added of course the veg, the noodles & 2 more xiaolongbao. 🙂

quite boring really…the opposite of “the intern”, no engagement, no development, no tension/expectations/relationships/chemistry among the cardboard characters..no anything…

like i was telling a friend on facebook, as boring as terminator or a 1970s chinese kungfu movie…fight fight fight fight fight..nothing in between…

after movie, we a bit “sian” to go zion road food centre, anyway not much to eat there also (don’t think much of zion road char kuay teow even though it is PM’s favourite), & didn’t feel like driving elsewhere for makan, so went down one floor to crystal jade lamian xioalongbao for a quick bite…luckily just waited 5mins at around 9pm.

somehow this evening the same dishes didn’t seem as shiok as that at hollandv.

the briskets were quite tasty, but both the briskets & overall taste of the beef brisket noodles 牛腩面 was NOT as good as that at SICC, i think quite a bit NOT as good, not just marginally.

also both this beef brisket noodles 牛腩面 & SICC’s & in fact all the beef brisket noodles in singapore do not use the 崩沙腩 which i love in hong kong’s 牛腩面, the belly cuts they used in the hong kong beef brisket noodles.

they have layers of collagen 胶 made them very flavourful & gelatinous when braised.

these were the cut of briskets which my friend bought in chinatown market, which i also did after learning from her.

she brought her fabulous 清汤牛腩 to my place for a for a homecooked 16pax 17-course dinner on 26.8.2015.^^

somehow the food this evening just did not feel so shiok, don’t know why.

i wanted to try the laksa and order a S$4 bowl from teck hin fishball noodles for myself. my friend was having dinner at home afterwards, so we decided to just order a S$3 xiaolongbao 小笼包 from joyful palace 怡乐坊 to share.

this S$3 xiaolongbao 小笼包 (for 5 pieces) turned out to be pretty good.^^

the soup was very sweet, as good as any of the restaurants crystal jade, imperial treasure, canton paradise. skin was ok not the smoothest but pretty good still. meat was tasty, kind of a bit big but then what was there to complain if it was nice?

in addition to dimsum it sells the hong kong roast meats and also ramen with the roast as well as dan dan mian & mala chicken ramen.

not sure if i would try those if i am there, more likely to take the laksa.^^

decided to order the laksa from teck hin fishball noodles & a xiaolongbao 小笼包 from joyful palace 怡乐坊.

laksa was S$3.50 & i asked for additional “hum” i.e. cockles, so S$4.

these days, there are so many katong laksa around and many places sell good competent laksa. this laksa easily belong to the quite good category.

the cockles were fresh & plump, the laksa gravy was lemak & fragrant. there were lots of fish cake and taupok, only thing the taupok were not soft enough so not absorbing the gravy well enough.

need less to say, it was no match for the S$2 sungei road laksa. still on the whole, this really was a considerably good laksa. i would certainly take this again here.

we ordered the usual xiaolongbao 小笼包. it was good as usual – great soup & tasty fillings, skin that held together & not thick. we added a second order later. ^^

soemthing new for me was the beef brisket ramen 牛腩拉面. happy to note that this was much better than i expected. the beef brisket 牛腩 was really good. there was a bit of beef tendon as well.

this my daughter’s favourite. i didn’t think it was better than that served in sicc though. i used the spicy sauce from the spicy chicken 口水鸡 & the noodles were really nice & flavourful with the sauce.

a relax lunch on a quiet sunday. 🙂

this a quick update, as we were just here 2 days ago.^^

not that we had a choice. did not read the small prints, & bought 2 groupons which (1) could not be redeemed at canton paradise star vista but at other outlets, nearest being j-cube, & (2) could only redeem 1 voucher per visit. & today the last day for redemption, so we had to come back again before voucher expired.

this time it was 7.30pm on a friday night & parking was near impossible. we came in 2 cars. 4 of us got into the carpark at 7.10pm. the second car was in the queue but decided to try for another carpark, unsuccessfully & returned to queue again after 20 cars lining the way down the car park ramp & outside. so never get out of the queue! they came to the restaurant like 40mins later.

we tried a few new dishes.

the crispy deep-fried tofu (S$5.80) was very good, crisp outside, smooth consistent inside.

had early lunch with a friend at bukit merah view hawker centre on 14.11.2014.

i was taking my usual (S$6 mutton + tripe) from chai chuan tou chinese mutton soup 柴船头羊肉汤, so was not planning to blog & did not take photos.

it was about 1145am & i had to drive 1 round the parking lot but was lucky enough to chance on a taxi exiting a lot. 🙂

i was just as lucky as the queue was very short, just 3 persons ahead of me. my lucky day! 🙂

my friend took the chilli beef noodles (红油牛肉面) from another stall 好满意小笼包. he was exclaiming that the beef was so very tender, the best he had taken from a hawker stall!

we decided to order a S$4 xiaolongbao (小笼包). 6 dumplings, <1/2 the price of restaurants & it was good, very much restaurant standard, comparable even with crystal jade lamian xiaolongbao. i did not try the spicy dumpling (红油抄手), but i will go back & try soon. 🙂

had an early 5pax family dinner @ canton paradise on 21.9.2014.  last time we came was also early dinner on 22.2.2014.

it is first come first serve so we went at 5.45pm to avoid long queue. 🙂

it’s hk food. the hk roast duck looked particularly inviting & we decided to order 1/2duck at S$25. it was very good, genuinely hk standard. can’t say it was better than the roast duck at noodles restaurant @ centrepoint, but i would order this again anytime. 🙂

we ordered another roast 2-combo (烧腊双拼) of roast pork & char siew (did not take photos). it was competent but the char siew was not comparable with the excellent charcoal broiled pork neck & also the char siew at imperial treasure teochew ngee an city.

tastebuds had not changed since our feb2014 visit. my daughter still likes this crispy char siew pao best & i still preferred the crispy char siew pao @ timhowan toa payoh. for me though, both were not of the standard of timhowan @ shamshuipo hk.

charsiew fun cheong on this occasion was very poor, totally sub-par..the charsiew was not tasty enough & the cheong fun (肠粉) was thick & not smooth. this was the worse dish for me! 😦

we also had a xianglongbao. on this occasion the skin was a bit thick & the soup inside was not as sweet, so a poor second to crystal jade la mian xiaolongbao! 😦

we ordered the porridge 3-combo=beef, pork liver, kidney. the porridge was excellent – velvety smooth & tasted great. the beef, pork liver, kidney were all great! i could come here just for porridge & roast duck. 🙂

just had a 4pax family dinner at crystal jade lamian xiaolongbao at hollandv. it was 630pm but i managed to get parking across the road at warna road side carpark next to the mrt exit. 🙂

this time i wanted to order the spicy beef lamian 水煮牛肉面 so forgo our favourite XO seafood fried rice.

#1 xiaolongbao 小笼包 here was among the best i had tried. a friend commented on facebook that the skin look thick on the photo. but actually the skin was quite thin, and the soup in the dumpling was very tasty. 🙂

#2 spicy dumplings 抄手 was another favourite. enjoyed the spicy kick & also the vinegar flavour.

#3 i was not disappointed. the spicy beef lamian 水煮牛肉面 was not bad at all. fair amount of sliced beef, lots of vegetables & the soup was flavourful not over spicy & quite drinkable. of course it was not near to the real thing 水煮牛肉 or 水煮鱼 but that really is a different dish.

#4 & #5 we ordered both the spicy chicken 口水鸡 & the spicy chicken lamian so we could just share the noodles. this another favourite dish. chicken was sweet & the sichuan chilli sauce made it really flavourful.

#6 my daughter ordered the plain wanton lamian. it was good too.

the total for the 6 dishes plus 3 barley drinks for 4pax came to S$68, quite ok for a simple family dinner. 🙂

“Sous Vide” Char Siew

as i mentioned in my recent post on a homecooked 11pax 11-course dinner for RI buddies on 5.5.2014, i always find chinese cooking to be much more challenging than western (re my “worthwhile to do?” philosophy). peking duck for example requires such fine & painstaking preparation as air-blowing the skin to produce a very crispy skin peking duck, and xiaolongbao (小笼包) & 石榴包 are such intricate dumplings c/w ravioli served in modern european fine dining. & while perhaps not quite fine dining, teochew braised duck, chicken rice chicken, 蒜泥白肉, char siew & roast pork are such simple, tasty & very cheap food one can buy anywhere in singapore that it is really challenging to make home-cooking such dishes “worthwhile to do?”. anyhow, i did have quite successful recipes for very cheap & easy to do teochew braised duck & chicken rice chicken, but am unable to make a good crackling belly pork thus far. char siew also was not easy, and i had made quite a few attempts. anyhow finally, i think i have developed a really good “sous vide” char siew recipe, that made for a truly fabulous dish. 🙂

i scalded the belly pork as usual to remove scum. then i cut into several 3in pieces & placed in a ziploc bag when cooled. i prepared a very good marinade after much scouring through internet recipes plus some adjustments of my own. this method is similar to my very good miso belly pork except that the marinade is an adapted char siew marinade & not miso. like miso belly pork, i let it marinate for 3 full days to infuse the wonderful flavours. then i placed the belly pork fully covered/drenched in a marinade bath in a pre-heated oven at 90degC for 5hrs. 90degC is the optimum temperature (fastest) for conversion of collagen the tough connective tissues to gelatine with excellent texture & flavours. 🙂 this made the char siew especially the fatty parts, totally tender & delicious, & melt-in-the-mouth, such wonderful texture & flavours combined. 🙂 the final step was just to char over a non-stick pan on high heat. i used butter (if you want higher temperatures, use vegetable oil). i then charred the char siew on all sides which took just minutes. that imparted even more intense flavours to the char siew. 🙂 c.h.e.f andy Ingredients:

  • 500g belly pork

  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp dark sauce
  • 1 tbsp oyster sauce
  • 1 tbsp mirin
  • 1 tbsp cooking sake
  • 2 tbsp brandy (or 2 tbsp shaoxing wine)
  • 3 tbsp ketchup
  • 1 tbsp honey
  • 1 tbsp chopped garlic – 3 to 4 cloves
  • 1 tsp sesame oil
  • 1 tsp ground coriander
  • pinch of black pepper

Directions:

had a 20mins lunch at Crystal Jade Lamian Xiaolongbao HollandV on 13.3.2014. they start serving the S$9.80nett lunch set (i think used to be S$8.80) only at 12pm! 

i had great dishes here at crystal jade lamian xiaolongbao @ hollandv on 11.8.2013 & also at the taka branch with my G8 friends on 2.9.2013. i had not yet tried the quick lunch set though so today is the day. 🙂

the xiaolongbao (小笼包) here is 1 of the best, very nice tasty soup, thin & smooth skin & tasty pork fillings. 🙂

the prawn dumplings lamian serving was like 1/2 a bowl, which actually served me fine as i don’t take so much carbo anyway though others might find it too skimpy/meagre… the prawn wantons were tasty too. the set came with a drink. i had the cold barley, usual good.

for S$9.80 nett, the lunch was quite fine, and service was good. they charged S$0.30++ for the wet issue which is fine and the waiting staff told me no need to order ice water which they also charge S$0.30 which is also ok, as the set came with the drink.

it’s not quite the meal for me though. i don’t really need to eat lunch and if i do the S$18pax ++ type 2-course lunch at reddot brewhouse on 12.3.2014 would be more worth the while. 🙂 that of course is strictly my own needs, not about crystal jade’s food…

had a great 4pax fun lunch at tunglok @ central today on 19.2.2014.

i visited the clinic of my close dental surgeon friend twice a year for regular maintenance, and we went lunch near his clinic afterwards each time with 2 other close friends. 🙂

today i ordered the S$88 6-course set lunch for 4pax. PLUS i added a xiaolongbao (小笼包), pan-fried custard buns (流沙包), and a dessert 雪中情怀=杨支甘露 + ice cream for 2 to share, as 2 other of us did not want dessert. 🙂

#1 the 2 dim sums were quite ok, competent – fupeiquin (腐皮卷) was good, siew mai 烧卖 was ok..the xiaolongbao (小笼包)i added was low in tasty soup, skin average, overall average or below, the pan-fried custard buns (流沙包) which i asked to serve with the dessert was also average. overall dim sum wise cannot compare with crystal jade or imperial treasure. 🙂

#2 smoked duck breast was par excellence, as is quite obvious from the photo (top & above) & the braised bean curd too. 🙂

#3 lie tong (例汤) was very good, the ingredients included pork soft bones & 粉角 arrowroots, an excellent soup as always. 🙂

#4 the poached heng chye with beard was good too.

#5 the prawns with egg white (赛螃蟹) i guess was ok above average dish, prawns was fresh bouncy, the style of preparation not my favourite.

the pan-fried custard buns (流沙包) was ok average but really the ones at royal china & imperial treasure were much better.

雪中情怀=杨支甘露 + ice cream is my favourite here, though i didn’t take it today. the complimentary refreshment was ok welcome.

overall the set lunch (exclude ala carte orders) was S$100++=S$117 include S$8 for 4pax tea & S$4 for peanuts which could do without. quite a good set lunch deal! 🙂 including 2 more dim sum & 1 desert it was S$141, still ok.

daughter arranged family lunch, 7pax this time & went back to our favourite imperial treasure teochew on 1.9.2013. 🙂

i ordered the braised duck, pork trotter jelly, smoked sliced trotters & the pork collar char siew; and daughter decided on the dimsums. 🙂

the braised duck was fabulous. the restaurants, whether hua ting or here at imperial treasure, had a way of braising duck (maybe lower temperature) that made the meat tender & consistent yet quite firm not falling apart like overcooked (close to western way sous vide). 🙂

the pig trotter jelly was very good, tasty (though my children were not quite fond of it). western fine dining has a lot of jellied items as their standard fare for degustation as well.

the smoked trotters was also very good, and my children liked it better.

the bbq pork collar was super! 🙂 i read when trying my hands at cooking char siew (not very successfully though as a result  i developed a very good miso char siew recipe of my own) that pork collar was the best cut, as the fat was more distributed than belly pork.

i liked all the dimsums. 🙂 fried carrot cake always good with the chilli.  steamed chicken feet looked great though i did not try. char siew pao, an item we rarely tried at dimsums was good too. steamed pork ribs here was the best! very lean & much better than shang palace & also royal china. the har cheung (prawn rolls) was smooth & great. i did not take the carrot puff but it was in good demand too around the table. xiaolongbao was tasty but somehow felt crystal jade lamian xiaolongbao was still better. har gao was always good here! 🙂

for carbo items, 1 of us didn’t take seafood, so we had a yangzhou fried rice w/o prawns only with char siew. first time taking that here but my son had always liked yangzhou fried rice, & my younger daughter liked it a lot too. i liked it too. our regular favourite scallop crabmeat egg white fried rice was not so overwhelming today but still more subtle vs the yangzhou fried rice. though i felt the seafood fried rice at crystal jade xiaolongbao was better than both. 🙂

& the salted egg custard bun (流沙包) here was the standard bearer, far better than the salted egg custard bun at royal china (which recently added mango which took away instead of adding to the taste)!

in total we paid S$218 for 7pax, kind of ex for dimsum but it was certainly a very gratifying family lunch. 🙂

recently my children had been taking me places. 🙂

i guess it is quite odd that i have not been to crystal jade la mian xiao long bao at HollandV! anyway i had a really great lunch there on 11.8.2013, the day i was cooking a 7-course family dinner for 8pax at home. over-overdose of carbo! 🙂

every dish was good! so best among the good to me was the special sauce chicken (口水鸡) la mian. i am firstly partial to sichuan ma la (四川麻辣) dishes. and this chicken was so excellent & the noodles al dente & went perfectly with the chilli sauce. 🙂

the 抄手 was good, though this dish is good too in many places like imperial treasure, royal china etc. 🙂

the 小龙包 xiaolongbao was the best! the soup inside was so tasty & the meat & skin just perfect. this must be the best 小龙包 i had!

the beef brisket/tendon la mian 牛腩筋拉面(dry) was to me surprisingly good! though it is still no competition for me re my favourite beef noodles 牛腩牛杂面 in HK, & when my son ordered it i thought it couldn’t be as good as the one at SICC (which is very good)..but it was! the beef brisket/tendon were very tasty & very nice with the la mian.

the seafood fried rice again surprised me.i thought no fried rice was as good as imperial treasure’s, but it was! very good, just as good, maybe better. 🙂 we were super greedy so ordered 2 fried rice! the 6 dishes cost about S$80 for 4pax. be back for more soon! 🙂
