organiser of this month’s RI G20 dinner selected whampoa keng fishhead steamboat. ^^

it’s a place i wanted to try but never did. it seems it was the same with the organiser as he was overseas when a group of friends went & sent him nice photos. i told him 1 of the pluses of G20 was we get try places we somehow didn’t get to go ourselves.

3 of us decided to go early for a cuppa at the wheeler’s yard. i took flat white. strong coffee with very smooth frothed milk. i liked it.

great ambience & lovely coffee (apparently food not so good & the cakes looked unappealing)

i went early at 5.45pm & managed to get free parking on the road on jalan ampas next to the tai pei old people’s home. 🙂

after our cuppa, we drove over to whampoa keng fishhead steamboat. i parked at ah hood gardens (HDB) along ah hood road (lots of parking) & got to the restaurant before 7pm.

our friend the organiser ordered a S$288set for 10, and changed some dishes.

the signature braised pig trotters replaced the salted egg sotong.

excellent call! this pig trotters lagi shiok! the best of texture not overly soft & mushy & tender meat falling of the bones. my friend liked the star anise flavours. for me that was just slightly over.

the best undeniably was the fish head steamboat. my friend ordered the red garoupa.

the murky soup was such intense goodness. 🙂

& the refills were also not just water or light tasting soup, but almost the same intense stock. i guess the same stock minus the additional taste from the steamboat content.

the stir-fried brocoli with scallops in XO sauce was a pretty nice dish. there was a good serving of scallops.

& there was also something that tasted like the cheaper canned shellfish. a friend thought it was gluten but i felt that the texture was shellfish. not sure.

i guess it was nothing special just a standard dish in any zi char or restaurant.

we had a tofu dish. it was apparently a seafood sauce & the tofu was made by blending egg with silken tofu, or so according to other reviewers.

didn’t leave an impression with me.

i think the tofu dish at kok sen & also at muliangzai liang kee were a lot tastier.

it was competent but like any 排骨王, it’s a passable dish not my favourite.

a friend thought it was too processed. i totally agree! i think i like the “not favourite” pork ribs better than this.

crispy skin was there, but the sweet, moist, flavourful taste of a roast chicken was gone!

alas! i like my roast chicken at 6th avenue coffeeshop better leh!

we had too many dishes liao so did not get to try their 2 other signature dishes – the prawn paste chicken & the hae chor (teochew ngoh hiang). apparently those were quite good.

anyway he did not take much & we ended up finishing off the egg tofu & the greens.

the dinner was S$33pax, a little more expensive than the usual zi char stalls like-

but quite fair price for the food (i would say better food, maybe except for kok sen), especially the alluring fishhead steamboat!^^

there are innumerable bakuteh spices in the supermarts.

i use the cheapest ilc brand S$1.50 for 20g spices packet.

this suited the 600g pork ribs i was cooking. for 1kg i use the larger 30g packet.

the last time i used indonesia fresh pork from sheng shiong, price around S$19/kg to S$21/kg.

this time though i am just using frozen spanish baby ribs from QBFood. 🙂

for the preparation-

  1. add a bulb garlic & the spice packet (20g) to 1.5l water & boil
  2. cut defrosted baby ribs (about 600g)
  3. scald with boiling water to remove scum
  4. clean pork ribs under running cold water & add to pot
  5. boil on low fire for 40mins (50mins or longer if you prefer meat falling off the bones)
  6. & voila!

at 40mins or so, meat should come easily of the bone.

personally i prefer the meat texture to be firm with some bite, rather than completely soft & falling off the bones.

also unless you finish all in one go, you may reheat the bakuteh 1 or more times, so i prefer the ribs not to be overly cooked & soft.

& btw, the soup was just delicious!

i did not add any salt, fish sauce & light soy sauce as it was salty enough for me. also no need to add pepper seeds. it is already peppery & just right, not overly!

the pork ribs were not as good as the fresh indonesian prime ribs from sheng shiong which were more marbled & tasted better,

but they were still very good, and with the excellent tasting soup, this home brewed bakuteh was as good as most bakuteh outside except the few very good ones.

one of my friend regularly brings bakuteh spices to cook while traveling overseas. it is easy to get ribs from the supermart & do up a delectable soupy comfort food goodness at a rented airbnb apartment. 🙂

this may not be exactly fine gourmet, but with a bit of plating, it looks good enough to be served as a course meal. for me anyway haha!

i think 1 friend said the prawn was very good. this a common item in chinese restaurants, i did not find it particularly special.

the 蒜泥白肉 minced garlic pork was good i guess, but i didn’t find it special too.

it was a good serving, though the 花胶was not a whole piece but chopped up.

the key to a good soup is the stock base, and this one was par excellence!

skin was so crispy & flavourful. and the duck was very tender & moist. one of the best!

may not be better than the equally wonderful tasting tea infused roast duck at xin cuisine i had recently on 1.10.2015.

overall, a very good set. the ingredients may not be a good as some of the special promotion set at majestic or tunglok or at xin cuisine, but the cooking was very fine & delivered great tasting dishes.

the only horrendous thing was that i paid S$22.50 for parking & my friend S$20, no carpark redemption. never ever going to park at goodwood park!

last time i succumbed to curry chicken cravings on 31.3.2015? eh..more likely i makan but did not blog…

but this time had good excuse. had 11am e-appointment at singtel comcentre to get iPhone 6s.

went early at 10.45am but my queue number estimate was 45mins.

do what at comcentre 45mins? might as well drive out before 10mins parking grace period for a quickie (of the curry chicken kind!)

& i manage to tapao 2 packets some more. .so btw smart move! 

Singtel messaged 7 ahead in queue they will call soon. anyhow i enjoyed my curry chicken noodles no particular rush still got back here 11.25am, & i only got served at 12.05pm.

i only left the cashier at 12.49pm. what can i say? singtel sucks! 😦

well its 1/3 to 1/2 the price of a ramen & infinitely more enjoyable, so just a matter of perspective! anyhow, a cure for the frustrations at singtel.

i actually tried making my own curry chicken noodles, not too bad (above photo) but it was not so easy.

my own poached chicken 白斩鸡 is certainly as good. the curry gravy though pretty good as well is still not quite comparable.

so! cannot complain about S$6.50!

this my second time here this year, after a hiatus of probably 8 or 10 years. never get to use the FAR (feed at raffles) 50% vouchers for many years at this or other FAR restaurants either.

i generally not keen on main courses on food warmers in buffet, so usually go for semi buffet where the main course is an ala carte order like at one ninety @ four seasons hotel or equinox or basilico, like a fine dining main course.

so in other buffets like the edge or carousel or olive tree (all i mostly don’t really like) or 10 at claymore with ala carte buffet items (which i like), i go for the appetizer & skips most of the main course.

here at EMC, there is very little appetizer to talk about (say c/w one ninety or equinox), and the main courses did not look all that great. fortunately they tasted quite well, though they were robust dishes, and rightly so for peranakan dishes. it’s the grandma comfort food sorts.

i guess the best thing was the price. at S$38pax for weekday lunch & 50% off for FAR discounts, it was just S$19++pax, nothing to complain about, and the best thing was that the dishes were really quite good.

& the great ambience, good company & conversation. 🙂

a good friend organised a 9pax lunch at ye shanghai teochew muay today on 7.10.2015. ^^

the stall is located at kim san leng (金山领 in teochew) coffeeshop at bukit merah view. 🙂

my last visit here=like it everytime teochew muay!

there were 9 of us. 1 came late due to work after we had finished lunch so he took cha kway teow for himself. another tried the teochew muay but it was not his cup of tea so he went to get a dry fishball noodles for himself.

we ordered a total of 24 plates (generally 2 plates for each dish) for the 7pax. ^^

cost was S$68.80, so about S$10 each. i think it was rather expensive reference the usual prices here but it was a very enjoyable lunch & everyone was happy & satisfied with the food & of course the great company! 🙂

we were there around 11.30am. the proprietor helped us placed a larger table top & arranged a table big enuf for 9pax. 🙂

we started queueing for the food when everyone arrived, i figured about 1150am, and one friend said we waited about 20mins in a 8pax queue (did not feel that long to me). it became quite a long L-shaped queue maybe about 15+pax round about 12.30pm.

we ordered a total of 24 plates, mostly 2 plates for each dish. the proprietor said we over ordered (maybe that’s why a bit more than the usual say about S$7pax). looking at the empty plates afterwards, we certainly did not share her sentiments.

the dishes = salted fish minced pork balls 咸鱼饼,kong bak/pig skin, tau kee, chicken feet, brinjal (best!), bittergurd, spinach, cabbage, long beans, sotong, 1 rabbit fish, 1 selar fish, chilli shark meat, there about… ^^

the roast chicken is very flavourful, nice roast taste, meat was moist & tender, and rice too was excellent!

i added S$1 roast pork so the meal was S$5. roast pork was good too, may not be better than other similar stalls, but again roast pork is something i cannot do myself.

a simple S$5 meal, but i enjoyed it very much. now i want to ta pao 1/2chicken liao! ^^

though this is a palate restaurant, we had never use the amex palate privileges here before today.

i think this excellent lie tong 例汤 should be offered & served in a nice earthen pot like at tunglok or say lei gardens in hk instead of an individual per portion serving. at the very least, even if it is served per portion, it should be done in a nice bowl instead of a jack’s place kind of soup serving!

the tea fragrance was so lingering! amazing! restaurant manager said it was because the hk chef not only smoked but also marinated the duck in tea.

overall still a very good dish.

i tried my own king prawns braised noodles previously which tasted pretty good too.

i served this at a 11pax homecooked lunch on 15.10.2015 & everyone loved it!^^

this a really nice enjoyable dinner & with 50% for 2pax amex palate discounts, dinner was just S$69.

for me, the dishes were very fine, the soup was wonderful, & the duck quite divine, delicate & lingering tea flavours, and so was the veg. the prawn noodles & lobsters noodles were more ordinary dishes but very well executed, real good class.

service was ok, except at the beginning server took inordinately long time to respond to taking orders (even after acknowledging which already took long time) when there were just 3 tables including our own.

had lunch today with a long time business associate/friend at the white rabbit at harding road, dempsey on 30.9.2015. ^^

this the first time i dined at the white rabbit. there is free parking & the ambience is nice. the restaurant occupied a nicely refurbished old chapel, bright & airy with high ceiling/columns & stained glass windows. 🙂

the set lunch menu included the famous dishes like wagyu carpaccio, seared scallops, alaskan king crab tagliatelle, 60hr mangalica pork belly, 36hr short ribs etc. 🙂

i tried a little. pasta was perfect al dente of course. excellent flavours, nice crab sweetness with a bit of bisque veloute, not creamy. i liked the pasta.

i had the 60hrs pork belly. read one of the reviews about this special mangalica pork. for myself i don’t think it was naywhere near a good kurobuta in terms of the flavours & marbling.

pork was very tender from the slow braise, and the skin was crispy (but if it’s only about crispy skin i would prefer the chinese crackling roast pork over this anytime).

the pork overall quite nice though i not much into the white beans & miso broth. i made a tender tasty slow-braised miso belly pork myself so this dish not so wow for me.

also pretty ok, nothing special. but for the uob 1 for 1 promotion, the price difference between 2-course & 3-course was only S$2, so i took the dessert. 🙂

very nice ambience. we also managed to park just behind the restaurant. 🙂

this the favourite haunt of 1 of my friends. some months back he tried to buy me dinner here some time back but the place was fully booked, so he arranged a nice dinner at la braceria instead. 🙂

it was served on a bone marrow, but unlike the lovely delicious wagyu with bone marrow at tess bar, here the bone marrow seems to be just presentation.

i loved the beef tartare, really nice! fresh, sweet small chunks of beef, and excellent with chooped onions, capers etc.

i ordered the japanese sweet corn soup because it was chef recommendation & also featured by other food writers.

should not have bothered. looked lovely in photos, but it was the poorest of the dishes. any of my own soup would be better. not that it was bad, but just ordinary, very sweet & basically not the kind of good savoury soup i like. 🙂

i took a piece. my wife & daughter couldn’t, so we asked the restaurant to cook it more. the guy server now said their chef’s recommendation was medium (which was different from what we asked of the earlier lady server who did not seem to communicate well in english).

anyhow we went ahead with medium. it came out medium rare, & it was perfect! 🙂

so once we gotten the medium rare (though they say medium), the lamb was very good actually. & the sauce was very good too, not too “beefy”.

cannot quite compare with the da luca version. still it was pretty ok.

the dinner was S$146nett for 3pax. they forgot to charge a glass of wine (S$19++), so we told them to add in the charge.

we enjoyed the dinner, food & ambience. the 2 best dishes for me were the beef tartare & the lamb rack (when done right!). the quiche was worth ordering too. the sweet corn soup can skip. the rest were average.

wife bought omakase dinner at hachi 0n 18.9.2015. ^^

this was the best omakase/kaiseki dinner i had. it was better than most of the excellent kaiseki i had in japan ryokans, including a very good kaiseki dinner at roppongi many years back. 🙂

i have to look back to my tohoku trip in 2010, where we had several very good kaiseki dinners at notably Yamayurinoyado Ryokan in Hanamaki (花卷) & ryokan new komatsu @ matsushima (松岛) for equally good or better kaiseki.

don’t know if it is fusion, generally just take uni & botan ebi as sashimi. this was a superb combination of taste, the very sweet uni & botan ebi, in a wonderful japanese corn broth with all the flower decorations. 🙂

the akamatsu was supposed to be more fatty & marbled. maybe i still not used to the taste & it was marbled, but somehow did not feel wowed by it. 🙂

my RI friends decided to visit national museum & have lunch, so 3 of us met for lunch at concetto @ the cathay on 23.9.2015.^^

prices have gone up from S$20.90 to S$22.90, inflation i guess, but for me it’s still a good deal. 🙂

i missed the YMCA (that being nearest to concetto & national museum & cheaper parking rates) carpark entrance, so parked at park mall & walked over to the cathay. concetto looks out onto the road, and is bright & airy. 🙂

we all ordered the concetto pasta – an interesting chilled capellini dish.

it was not quite the famous chilled capellini at da luca or gordon grill or of course gunther.

still it was pretty flavourful & unique. & ala carte price is just S$4.90! 🙂

i like the previous version a lot better though – chilled capellini with crab & prawn tartare (tiny morsels) tossed in lobster oil & topped with lobster foam & ikura (salmon roe).

think they should just revert to the previous version, full-stop!

i pushed away most of the mayonnaise. this drier version was heavier, less refine but still tasty. 🙂

as a dessert, i think it was rather good, and i would order it next time.

as a tiramisu, i think my own tiramisu is much better, both in flavours especially coffee & liquor, & also texture.

for a change, i will try the tiramisu next time though.

for me the only slight complaint was the poor service. the young guy was unhelpful, “tidak apa” & very poor in his service attitude. towards the end though he warmed up a little & his attitude improved from poor to ok. think he just needed some service training. the lady server was ok. 🙂

the 3-course set lunch was S$22.90, & for me that was great value-for-money! 🙂 there is a supplement of S$3 for the salmon. 🙂

last time i came here was with wife on 8.8.2015.

i wanted to try the autumn matsutake bento set, so today 3 of us came for lunch on 20.9.2015. ^^

it’s F1 race day, so many roads were closed. i googled and saw that bras basah road entrance to raffles city was open & also i could returned by beach road in the direction to middle road which was also opened.

i drove through orchard road with some traffic, but overall it was perfect. & carpark was empty.

ambience was quite cool i guess, though a much lower level of decor c/w say foc. the table & chairs were like canteen sitting.

service was really poor because of shortage of staff. we waited very long to be served even after signalling to the servers several times. 😦

but perhaps that is to be expected. octopus are usually sous vide (eg our favourite tako kakiage at mikuni) or slow braised & grilled. octopus done by this preparation will almost certainly be tough. 😦

yes!! the worst barachirashi don in Singapore! they have pickled carrots & radish mixed in the barachirashi don??? made the don overly sour unlike a sweet vinegared don. never had such preparation before.

even the photos may look quite pretty, but in terms of taste, this would be 1 if sumiya’s is 7 & sun with moon@wheelock’s is 8.

the duck confit was very good though. may not be better than saveur or concetto but it had good crispy skin & the meat was very flavourful & not very sinewy.

think the steak was an average cut so the preparation was really quite good to give it nice bbq flavours & not tough texture.

i made my own steak don the next day. my steak was very good but a better cut, 150D grain-fed black angus striploin, so quite commendable for the steak don here.

i did not like the macha lava cake either. macha was very sweet & very strange combination of flavours unlike the macha parfait kind of flavours which i like (say) at sun with moon. one good thing though was that my youngest daughter liked it. just as well we only had 1 complimentary cake.

because i ordered less noodles (面少), i get 1 more fishball. well, it’s inconsistent, depends on who is serving. sometimes i get, sometimes i don’t. not that i am too bothered.

the meepok texture was excellent, QQ. and the chilli also consistently good.

anyhow, by comparison, this is a lot better than the-

very poor one (noodles quite unpalatable with the heavy mix of sweet sauce) at food opera @ ion orchard, and also the

below par toa payoh lor 7 teochew fishball noodles (noodles a let down, not QQ!) at food republic @ lido.

and xin lu (新路) only S$3. these other 2 cost S$5!

went to my good friend’s dental clinic at central on 16.9.2015.

after that god-sis led the 3 of us to kopi roti central for lunch. ^^

god-sis went to get the food. i had the chicken rendang. it came with sayur lodeh & egg, for S$5.

it was a very good meal!

rendang was very good & reasonable helping size. both the egg & sayur also good. $5 is not cheaper nor more expensive than say a economic rice at coffeeshop. important thing is that it was tasty, a very nice wholesome & balanced meal for S$5. 🙂

i think the price of the curry chicken was also S$5, and likely the nasi lemak too.

there was laksa, but from the wall photo it didn’t appear to come with cockles.

i will try some of these dishes next time. i would say for S$5 it was as good as my favourite adam road nasi lemak (adam’s nasi lemak & selara rasa nasi lemak) kind of meal! ^^

the thai red curry vegetables was a variation of my thai red curry sotong (squid).

i served that (red curry sotong) for the 30+pax lunch party for my daughter last month.

i just replaced the sotong by vegetables. i had potato, egg plant, onions, yellow pepper, tomato.

“dancing chef” thai red curry

when i was looking for the right curries to make my thai yellow curry grilled chicken thighs & bought the “dancing chef yellow curry”, i also bought the thai red curry. 

for the curry, i fried 1 sliced yellow onions with 2tbsp red curry powder & 100ml coconut milk. when the onions softened. i added a cut yellow pepper (i did not have red pepper). since it was a vegetarian dish, i added about 300ml of vegetable stock instead of chicken stock. i added cut eggplants & then cherry tomatoes last.

this is a really nice lemak, tasty dish, & spicy too, spicier than the yellow curry.

i served it at a recent 10-course vegetarian dinner for 8pax for my niece’s birthday. everyone liked it.

for me, a non vegetarian, it was no comparison with the red curry sotong of course but still an excellenty flavoured curry dish which i enjoyed thoroughly. ^^
