made sutchi fillet assam pedas with sliced leeks for teban gardens community breakfast this morning on 29.6.2018.^^

this my 62nd friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

bought 2x1kg frozen sutchi fillet ($4.50 for 6 fillet 1kg packet) from sheng shiong.

washed with salt & drain in colander, then marinated with mak’s assam pedas paste overenight in fridge.

in the morning, fried sliced ginger in oil then added garlic, then added the 12 sutchi fillet.

no need to add water…still lots of water, and needed to remove fillet & reduced to create an intense flavourful sauce & added back to the fillet.

a lovely, delicious dish.

next time need to add another 1/2 packet or 1 packet, 2 packets not enough.

fish was excellent as it was very fresh & the sauce was just perfect, spicy, tangy, not too sweet.

my usual recipe below.

Ingredients-

  • 1/2 song fish head松鱼头
  • cut spring onions
  • 1 cut chilli padi
  • 2cm sliced ginger

a spicy black bean sauce mix of –

  • 1 heap tbsp lee kum kee spicy black bean sauce
  • 1 tbsp lemon juice
  • 2 tbsp olive oil (or vegetable oil)
  • 2 tbsp mirin (optional)
  • 1 tbsp light soy sauce
  • 1 flat tbsp sugar
  • 1 flat tbsp corn flour

Directions-

  1. mix the sauce cold to dissolve the corn flour.
  2. heat up a bit & the sauce became slight pasty.
  3. put song fish head in steamer plate & add sauce & garnish with cut spring onions, chilli padi & ginger.
  4. steam for 11-13mins (depends on size) in the steam oven or steamer.

i made the usual claypot rice. 🙂

rice was fluffy, excellent claypot flavours, wonderful duck liver sausage from hong kong, and the chicken was so tender & tasty. ^^

i decided to do 剁椒鸦片鱼头, with loads of chopped garlic & chilli padi. 🙂

it was delicious, but really 鸦片鱼头 done any preparations would be delicious la!

flesh like cod, soft head bone structure like salmon head. 🙂

prawns with yellow chives

aunty Bes asked me to cook the prawns with yellow chives.

this an excellent, succulent fresh, plump prawns & tasty yellow chives.

at chui huay lim, this a S$48 dish. lol!

Good Claypot Liver & Zichar Dishes @ Loong Hua Seafood on 26Jun2018

our RI buddy P, resident in london, was in town & he arranged a 11pax zichar dinner @ long hua zichar blk 168 bedok south ave 3 on 26.6.2018. ^^

(HAB missed dinner, joined WC viewing at CL’s place afterwards)

after dinner we adjourned to CL’s place to watch world cup match France vs Denmark super boring first 0-0 game for this world cup..

thanks CL for hospitality & drinks, ice cream, nuts, crisp, grapes & blueberries …

1st time i come to this long hua zichar @ blk 168 bedok south ave 3.

many dishes P ordered were quite good. 🙂

排骨王 or the like

排骨王 or the like

排骨王 was good, tender & the sauce not too sweet & quite tasty.

not my favourite zichar dish but i didn’t mind it also..

roast chicken

the roast chicken was good, quite competent.

the breast meat still not the most tender & moist, so can still improve, but overall pretty ok.

claypot liver

the claypot lover was quite an excellent dish.

liver was “medium rare” parts still pinkish, fresh & tender, and a very tasty dish.

i almost never have this dish for many years. after this i went back and cooked the dish myself twice & it was pretty good too. lol! 🙂

deepfried soon hock

the deepfried soonhock was very good.

fish was done well, crispy, tender & tasty…everyone liked the taste & sauce…

虾录 fried big prawns

the 虾录 fried big prawns was also very good. everyone liked this dish.

i did a similar dish with different sauce =a dry wok garlic jumbo prawns = often some years back, though not over the recent 3 years. maybe i will do it again.

claypot sea cucumber or 一品煲 dish

there was a claypot sea cucumber or 一品煲 dish.

it was an ok dish but non too impressive. i think again missing a good tasty stock, so the dish like just thin oysters sauce taste and not a very tasty dish…

scallop & broccoli

the scallop broccoli dish had large plump scallops but wasn’t done that well, good ingredients but not tasty.

broccoli was poached, which was ok, but maybe there was no tasty stock to enhance the flavours, the large scallops were like just boiled in water…

fried rice

fried rice was flavourful, good wok hae.

it was added later, as P thought the guys were still hungry & needed more carbs. lol! 🙂

the hor fun was actually the first dish served.

it had super wok hae, very flavourful dish, very well done.

couldn’t really remember th price but it should be aroung S$280 for 11pax…not ex also not particularly cheap for these zichar dishes.

anyway we had a really good time, very enjoyable dinner with old friends. and many dishes like deepfried soon hock, fried large prawns, claypot liver and hor fun were quite delicious and the pork ribs, roast chicken were good too.

after dinner we adjourned to CL’s place to watch world cup soccer.

my OPS HC bought 3pax lunch today at sabar at japan food town wisma L4 today on 26.6.2018. ^^

saba has a top value saba S$13.80 lunch set  promo=a mini chirashi don, udon with salad, 2 side dishes & chawanmushi…

grilled saba 

the grilled saba was excellent! fresh & sweet! 🙂

well, restaurant is called sabar…lol! 🙂

chicken kakiage 

chicken kakiage was good, if the usual.

unagi chawanmushi 

unagi was good…chawanmushi just usual..

chirashi don 

mini chirashi don though was poorer by quite a distance from the usual S$9.80 kaisen mountain mori la..

bil S$52 for 3pax nett 

overall S$13.80++pax for the set was still a good deal.

saba S$13.80 lunch set

but for me, even though the sabar was good, my main interest is still chirashi don, so i would rather go for the S$9.80 kaisen mountain mori! 🙂
