Homegourmet Adventure 4-course Dinner on 15Nov2015

had great fun discovery yesterday experimenting several “first” for a wonderful 4-course dinner on 15.11.2015. ^^

truly a homegourmet adventure. 🙂

all 4 dishes had some new elements-

  • prawn veloute was an accidental invention.
  • gazpacho was completely first attempt.
  • prawn capellini was a new preparation &
  • slow-braised pork collar was my second try on a new preparation

in a sense, my recent dinner at stellar at 1-altitude spurred my interest, not so much an inspiration (excepting the gazpacho at stellar which was really good!), as i thought the food was expensive & not value-for-money. i thought i could recreate something similar. ^^

first course was pan seared scallops in prawn vegetable veloute. 🙂

i did not do the pan-searing well this evening. still the scallops were very good, plump & tasty & very good texture, not really the standard of disgruntled chef’s 100gourmet scallops, nor the stellar’s scallops.

the prawn vegetable veloute though was an accidental discovery. it was just so good! ^^

intense yet very smooth, and very tasty, and just the right body & texture. this really is an excellent recipe & among the best soup i have made.

i would say for myself, though the scallop itself was not comparable to stellar’s, but the overall taste experience including the prawn veg veloute was better than stellar’s, but not comparable with disgruntled chef’s 100gourmet scallop dish (above photo).

my second dish was entirely new.

gazpacho not my favourite & i hardly take gazpacho by choice but stellar’s gazpacho was just so good!

so i googled online recipes & produced 2 gazpacho just like stellar’s – a red tomato gazpacho & a white cucumber gazpacho.

& the result of my first attempt was a really wonderful gazpacho. so refreshing, smooth, & you could really taste the coolness of the cucumber & also tangy tomatoes.

not quite the standard of stellar’s (above photo) for sure, but almost there.

prawn capellini was done alio olio style. i also did not have uni & ikura (nor mentaiko).

still my own prawn capellini was a very tasty pasta.

i guess nothing so unusual, and may not be better than my usual seafood alio olio, but it was a different & drier style, adding butter like for my mentaiko pasta or squid-ink pasta.

king crab uni & sakuri ebi capellini

stellar’s king crab uni & sakura ebi capellini

didn’t have the top ingredients of stellar’s king crab, uni, ikura & sakura ebi pasta (above photo).

but just the taste of the pasta alone, i think mine was just as good though differernt (w/o the unique salty uni & ikura flavours).

the slow braised pork collar in red wine sauce was my second attempt, it was as good as the first, and a really great recipe i created myself.

the pork was very flavourful & so tender yet not sinewy & falling apart like the usual braised meat texture.

i think this is really an excellent recipe. ^^

Super “gonelohmee” 干捞面 aka Dried Tossed Noodles

"gonelohmee" aka dried tossed noodles

“gonelohmee” aka dried tossed noodles

my helper made a super “gonelohmee” aka dried tossed noodles for dinner this evening on 6.11.2015. ^^

wife taught her how to make this, & we have this pretty often.

i have not done this myself before, so this post does not qualify as a recipe post. 🙂

"gonelohmee" ingredients

“gonelohmee” ingredients

ingredients are straight forward. so is preparation i think.

the key would be the right mix of chilli sauce. that i do not know yet. but when i want to try it, i will experiment a bit.

totally qq..al dente noodles

totally qq..al dente noodles

noodles were totally al dente…super nice…better than most bakchormee outside i would say..

& the prawns minced pork mushroom sauce & toppings..these were outstanding, super tasty. 🙂

nice stir-fry nai bai 奶白

stir-fry nai bai 奶白 was just for balance. & a very good one too. simple stir-fry.

great dinner this evening! ^^

Immense Thrill & Satisfaction – Homecooked 15 Teochew Muay Dishes for 9pax RI Friends’ Lunch on 28Oct2015

did 15 teochew muay dishes for my friends on 28.10.2015. ^^

gave me immense thrill & satisfaction.

teochew muay dishes are supposed to be cheap food (indeed mostly cheap ingredients). but most teochew muay are not cheap, mostly overcharged for quite poor quality food.

recently my friends & i had been trying out 2 excellent teochew muay places that are truly “cheap & good”

  1. shi le yuan 实叻圆糜 at red hill market &
  2. ye shanghai at bukit merah view

i like both places. ^^

spread of 16 teochew muay dishes

spread of 15 teochew muay dishes

anyway i got inspired to try out teochew muay dishes.

for this lunch i put out 15 teochew muay dishes + 1 banoffee (banana toffee) cake.

spread of 16 teochew muay dishes

spread of 15 teochew muay dishes

the few new dishes included stewed cabbage, stir-fried egg plants, spicy black beans bitter gourd, spicy bean sauce sting ray. all these dishes i recently practiced once or twice. the dish that i did for the first time today was the spicy black beans minced pork. & it was pretty good leh! 🙂

friend's

friend’s “famous” sio bak烧肉

a friend brought his famous” sio bak烧肉. i did not put out all as we had a lot of dishes, so i was enjoying the remaining very much afterwards. it was really good – the texture & flavours were just “oomph”, though today the crispy skin was  not his usual standard.

my most popular dish was the #1 stir-fried manila clams with curry leaves!

everyone loved this, so no. 1 hands down! 🙂

the #7 steamed yellow croaker 小黄鱼 was a top dish for many friends.

this is a variation of the hk steamed style. i think light soy sauce is excellent for steaming fish, very pleasant taste. anyway i did a variation using tsuyu, mirin & olive oil.

fish was so fresh of course, and fine tasting texture, and the sauce was just awesome!

#5 teochew chilled mullet

#5 teochew chilled mullet

the #5 teochew chilled mullet was as good as any of the teochew muay stalls or bakuteh stalls that sell chilled mullet (like lau ah tee).

one differentiation was that i steamed with the scales on, so that the skin came out easily with the scales, whereas many of the teochew muay stalls here steamed w/o the scales & that makes it difficult to tear the skin when it is chilled.

#6 teochew chilled sotong - sotong texture was superb!

#6 teochew chilled sotong – sotong texture was superb!

the #6 teochew chilled sotong texture today was superb! & so sweet.

tau jeon (for chilled mullet), kik you (for chilled sotong) & the braising sauce

tau jeon (for chilled mullet), kik you (for chilled sotong) & the braising sauce

especially when taken with the condiments. 🙂

the #2 pig head jelly 猪头冻 today was awesome, my best so far! absolutely good restaurant standard. ^^

the braising sauce jelly was so tasting, the clear light colour with fat removed was just perfect, and the texture of the pig’s heat meat was perfect too, great bite! well nearly the standard of chui huay lim!

#3 braised belly pork #4 braised pig head meat, pig's ears & jowl meat

#3 braised belly pork #4 braised pig head meat, pig’s ears & jowl meat

my braised meats this time was also my best, even better than my last very good kueh chap standard! 🙂

the braising sauce was so flavourful (i will post another recipe update later), and the meat texture were just incredible, tender yet crunchy with nice bite.

my helper’s#8 salted fish minced pork 咸鱼饼 was a hit with many friends too.

and it is also one of my perennial favourites.

many liked the #9 steamed egg with minced pork too!

they all liked the light soft yet not watery texture, and the taste too.

#10 spicy black beans minced pork

#10 spicy black beans minced pork

and this was my very first #10 spicy black beans minced pork. 🙂

taste was good. look wise a bit drier & not as oily & reddish as the one at shi le yuan. i will try out a bit more to see which is the best way.

i cooked this #11 spicy bean sauce sting ray with salted veg recently for my family dinner on 24.10.2015, so this the second time.

i think colours, flavours wise was pretty ok, but not among the most popular dishes for my friends.

the #12 spicy black beans bittergourd i think was really very good standard. 🙂

tasty, very slight bitter taste enhanced by the slight salty & spicy black bean sauce.

& my friends all loved the #13 stewed cabbage! ^^

it was so sweet & tasty with the reduced stock & still crunchy not overcooked.

#14 sitr-fried egg plants

#14 sitr-fried egg plants

the #14 sitr-fried egg plants was a tasty dish, but not so wow for me.

somehow not the ye shanghai style i was trying to achieve. 🙂

must try again see how they do this.

#15

#15 “shatin” chicken congee

this was not quite yet the keung kee chicken congee standard

still congee was very good, very tasty & smooth. 🙂

and of course we ended with a nice cake.

actually friends bought a cake also, so we had 2 cakes. 🙂

very nice cake, not too sweet, nice biscuit base, bananas & light whipped cream.

we all had a wonderful lunch & a swell time together among old friends! ^^

Scrumptious Alan’s Chilli Crab Dinner on 9Oct2015

alan's chilly crab

alan’s chilly crab

alan (my very good friend’s brother) & his wife invited us over for homecooked dinner on 9.10.2015.

we had 10pax.

alan & his wife & another partner, started “why eat har” big prawn noodle stall in mar2015.

after eating at “why eat har” many times liao, we all agreed that it is undisputably among the top 3 in singapore, and it all depends on one’s personal preference which is the most preferred.

alan’s talents are NOT limited to prawn noodles of course & this evening he was going to showcase his famous crabs! 🙂

it was restaurant standard! & we were lucky that we had previously tried it at a get-together at my place 2 yrs ago on 19.8.2013.^^

for this evening we started with some salad prepared by alan’s wife. excellent salad with crunchy apples & grapes, very light myonnaise & honey. unfortunately my friend forgot to take a photo. he was busy mopping up the salad bowl after we had finished makan. 🙂

fried buns to soak up chilli crab sauce

fried buns to soak up chilli crab sauce

there were fried buns provided, perfect to soak up the very tasty chilli crab sauce! i had more than one! haha! 🙂

alan's chilly crab

alan’s chilly crab

the chilli crab sauce had clear intense crab flavours, yet very smooth, delightful & lingering. alan & his wife said it was slightly dilute but actually we all liked it that way.

the crab was not very “solid” i guess that depended on the day/timing. the body & the pincers were sweet & tasty.

drunken chicken

drunken chicken*

the drunken chicken* was good too. the 绍兴酒 was mild & fragrant, a very good flavouring to the sweet chicken. alan’s partner was saying alan’s roast chicken was even better, so we said we would all have to try that, surely, if it was better than this drunken chicken.

alan told me that the difference in his preparation for 白斩鸡 was that he did not add garlic.

salted fish minced pork咸鱼饼

salted fish minced pork咸鱼饼**

& i liked the salted fish minced pork咸鱼饼** a lot so i ate quite a bit.

it was different from the style we made at home. he minced the pork himself & had the fat in a bit chunky to give the bite. this style is the genuine one we get to eat at the good zi char stalls.

steamed red garoupa

steamed red garoupa

there was also teochew steamed red garoupa with salted vege & sour plum & sliced belly pork.

fish was sweet & tasty though the fish was in halves as the steaming dish was too small. i like both the teochew style & also the hong kong steamed style, liking the latter a bit more. 🙂

fried vege

fried vege

fried vege was simple dish but good.

fruits - golden kiwi fruits, longans & blueberries

fruits – golden kiwi fruits, longans & blueberries

& my friend did his fruit number, not bad at all! haha! 🙂

we forgot to eat the grapes another friend, our default grape supplier, brought.

& alan’s wife made a refreshing mango sago dessert.

i brought my tiramisu. i added double the usual dosage of brandy (60ml instead of the usual 30ml). my friend loved it!

actually alan’s wife, myself & my wife thought the liquor was a bit much & nicer if a bit lesser. 🙂

*my own drunken chicken not as good though i made a really awesome chicken rice chicken 白斩鸡. principally becos i used a very cheap S$1.80 绍兴酒..hehe..& my wine marinade is still experimental & need some tasting & improvement.

**i made a very good salted fish minced pork咸鱼饼 myself. it is a different style, very tasty though not as elaborate as just used minced pork from market or sheng shiong. 🙂

& i was telling my friends it’s time i start cooking crab!

i did a wonderful chilli crab capellini w/o crab for a 19pax homecooked dinner for my friends on 24.4.2015. 🙂

& an equally amazing crabless beehoon (with prawns & oysters) for a 9pax homecooked lunch on 9.3.2015. ^^

but alan was right. no matter how tasty the shellfish flavours offered by prawns heads & shells, they were not quite the same as using crab itself. 🙂

9pax Japanese Course Dinner on 28Sep2015

#1 shabu pork on grated radish & japanese cucumber, miso belly pork, & kakuni (japanese braised belly pork)

#1 shabu pork on grated radish & japanese cucumber, miso belly pork, & kakuni (japanese braised belly pork)

trying out japanese dishes like chawanmushi & steak don recently & decided to do a full Japanese course dinner for my good friends, RI friends & spouses, on 28.9.2015.^^

daughter came home & joined dinner so we had 9pax.

it was very fun! haha! 🙂

we had a 6-course menu

#1 i decided on a shabu pork starter after looking at a shabu pork salad recipe on japanesecooking101.

just to be sure, i try out with shabu beef the day before & it was very good!

the grated daikon (radish) was a great idea. below that i had 4 julienned small japanese cucumber. very refreshing.

but the key is the sauce – just 1part sushi vinegar, 1 part mirin, 1 part tsuyu. this like the best sauce ever! haha! ^^

i also had miso belly pork. this done 12hrs in 85degC oven then browned on medium low fire in non-stick pan. very tasty dish.

i also had kakuni (japanese braised belly pork), and a friend brought kimchi. that made up the first dish. 🙂

#2 second dish was a chawanmushi. it was pretty ok but not as good as my first trial of the dish few days day.

quality was inconsistent. i had to steam 2 batches of 4 ramekins for 15mins at each go when friends were here. for one batch my phone timer stopped at 12m20s in between & i lost the timing.

#3 prawn bisque - not so great today

#3 prawn bisque – not so great today

#3 my third dish was a prawn bisque. while it is european & not a japanese dish, i had been to a few restaurants in kyoto & also osaka where they served western starter & soup as part of a japanese course meal.

prawn bisque was below my usual standards.

#3 prawn bisque - vegetabkes base

#3 prawn bisque – vegetabkes base

the method was ok. i had enough good mix of vegetable base to balance the prawn shells & heads stock.

#3 prawn bisque - not so great today

#3 prawn bisque – not so great today

i think i should have reduced the liquids further to get a more intense bisque.

#4 wafu (和风) pasta, wafu (和风) braised eggplant & teriyaki cod

#4 wafu (和风) pasta, wafu (和风) braised eggplant & teriyaki cod

#4 the wafu (和风) pasta, wafu (和风) braised eggplant & teriyaki cod was an excellent dish though. ^^

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions - pasta was really good!

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions – pasta was really good!

#4.1 this the first time i did a kind of “wafu (和风) pasta” other than mentaiko pasta. & the taste was wonderful!

i followed the recipe on japanesecooking101 here.

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions - pasta was really good!

#4.1 wafu (和风) pasta with streaky bacon, shimeji mushrooms & yellow onions – pasta was really good!

simple ingredients – just streaky bacon, shimeji mushrooms & yellow onions. & the sauce again is the key – dashi (i used chicken/vegetable stock), mirin, tsuyu & a little sugar& reduced.

taste was just exquisite. it’s not better than most of my pastas which are also very good, but it’s good! 🙂

#4.2 teriyaki cod is one dish i cooked a number of times & always, invariably good.

this time i reduced the sugar & also a little less salty.

#5 wafu 和风 (japanese braised) eggplants - this dish was simply excellent!

#4.1 wafu 和风 (japanese braised) eggplants - this dish was simply excellent!

#4.1 the wafu 和风 (japanese braised) eggplants was simply excellent! this the first time i do a japanese braised eggplant. it’s so easy & the taste was just fantatsic!

again i got my recipe from japanesecooking101 here.

i still want to do the chinese version though (i like the ye shanghai one very much). don’t think much difference, probably just use oysters sauce instead.

#7 kakuni (japanese braised belly pork) don with miso salmon belly

#5 kakuni (japanese braised belly pork) don with miso salmon belly

#5 for the gohan course, i had a don.

the friend who brought kimchi doesn’t take beef, so i prepared kakuni, a japanese braised belly pork.

this time though i used a different braising method, a 6hr gentle slow braise in a crockpot from cold to 85degC (using meat thermometer). ^^

#5 wagyu ribeye & black angus ribeye steak don with miso salmon belly

#5 wagyu ribeye & black angus ribeye steak don with miso salmon belly

#5 for the other diners, i had a 400D grain-fed wagyu ribeye & a 150D grain-fed black angus ribeye. both were excellent!

and the japanese rice was perfect! so very tasty, one friend went to add rice & just ate the rice plain.

#5.1 miso salmon belly

#5.1 miso salmon belly

#5.1 the miso salmon belly was very good too.

#5.1 miso salmon belly

#5.1 miso salmon belly

very tasty, just like eating in restuarants in japan.

i also had tamago. the shape & folding was a disaster & one could not even make out the lines, but taste was pretty ok & quite a good addition to the meaty don dish! 🙂

#6 i not very sure how i lost it. haha! 🙂

lava cake was the very first dessert i made, not sure where has all the lava gone.

anyway seems that everyone like the taste though….wait till they have my really lava ones..haha!

like this one! looking back at the records, it was during a dinner on 28.1.2013! 🙂

“shanghai” moon cake

a friend brought “shanghai” moon cake, one lotus paste, the other red beans.

“shanghai” moon cake

so pretty, and very good moon cake too, mainly because the lotus paste was not so sweet like most moon cakes are, and the pastry, with some addition of nuts, was excellent! 🙂

A Great 中秋 (Mooncake Festival) Get-together Lunch at my Brother’s House

中秋lunch at brother's place

中秋lunch at brother’s place

had a great 中秋 (mooncake festival) get-together lunch at my brother’s place toady on 26.7.2015. ^^

tomorrow (27.7.2015) is the actual day for the mid-autumn festival or moon cake festival. 🙂

mid-autumn festival is the time for family & friends to come together again. as the full moon becomes whole & complete, so family & those dearest come together to be whole again. 月圆人团圆。

my favourite verse is 苏轼‘s 《水调歌头》

但愿人长久,千里共婵娟。

the verse (宋词) was actually 苏轼 thinking of his far-away brother 苏辙 on 中秋. 婵娟 means the moon, 美好 whole or prefect. so the poet is transcending time (长久) & space (千里)..sharing a moment..togetherness through time & space..but actually it was much more, many more levels of understanding. my other favourite verse is 明月几时有?把酒问青天.

the full discussion/analysis is here.

白斩鸡 chicken rice chicken

my brother thought this 白斩鸡 chicken rice chicken was pretty good.

my first impression – chicken not smooth enough, also chicken breast was moist but not sweet enough. as i took more pieces later, the chicken breast was actually pretty tasty because of the sauce.

but basically too much sauce made it not the usual smoothness & colour of a good 白斩鸡 chicken rice chicken.

(say) my own poached chicken (above).

i served it a number of times & most recently at a wonderful 14-course homecooked dinner get-together for 19pax friends on 24apr2015. always a crowd favourite. ^^

Chawanmushi & Steak Don Dinner

chawanmushi 茶碗蒸

chawanmushi 茶碗蒸

i had some marinated miso salmon belly in the chiller for 2days. was thinking what to match for dinner & decided to do a don.

to accompany the don, i thought maybe do a chawanmushi. i have not done chawanmushi before so googled & found this chawanmushi recipe at japanesecooking101.com.

i did not have dashi or chicken stock, so just used 2cups water & added 2tsp mirin, 2tsp light soy sauce, 1tsp sugar (basically to taste) & whisked with 3 eggs.

i marinated prawns & chicken breast & placed them in a ramekin. also added shitake mushrooms & scallops.

& steamed for 15mins.

chawanmushi 茶碗蒸

chawanmushi 茶碗蒸

texture was perfect, very light and very tasty. ingredients were steamed just right. of course cannot c/w a good crab chawanmushi like that at hachi.

but otherwise, it was a really good standard chawanmushi. beginner’s luck on first attempt! ^^

beef miso salmon belly scallop don

beef miso salmon belly scallop don

i had some 150D grain-fed black angus striploin in the freezer leftover from my last 12pax homegourmet dinner. i did the usual high fire with fat & a bit of butter on my heavy stainless steel pan until it was chargrilled to produce the maillard reaction to give it flavour (as they say, no colour no taste). i flipped once & charred the other side using the finger test for medium rare. 🙂

& i had some scallops in the freezer too. i started the scallops on hot olive oil in a non-stick pan & turned to medium low & covered. when they were grilled i turned them over & grilled the other side. 🙂

beef miso salmon belly scallop don

beef miso salmon belly scallop don

not forgetting the miso salmon belly.

i placed the miso salmon belly on a rack covered with aluminium foil which i poked holes with a knife to drain any liquids so the the salmon belly would be dry oven grilled, and placed it in a preheated 250degC oven for 15mins. 🙂

for the sushi rice, i used 1 cup sushi rice for 3pax added 1.5tsp mirin, 1.5tsp sushi vinegar, 1 tsp tsuyu (basically to taste). rice was very good but keeping low on carbs. ^^

beef miso salmon belly scallop don

beef miso salmon belly scallop don

the flavours of the beef was excellent. scallops were good too, and the miso salmon belly was super!^^

the sushi rice was perfect too, nicely vinegared sticky but not too wet & overcooked.

17 Courses of Delectable Dishes for 16pax Homecooked Dinner on 26Aug2015

#1 friend's 清汤牛腩 - my favourite

#1 friend’s 清汤牛腩 – my favourite

had an exciting evening with my friends on 26.8.2015. ^^

we had 16pax. i planned to serve asian dishes mainly buffet style, and a pasta, beef & lamb dish during the course of dinner. 🙂

a friend brought 清汤牛腩. it was my favourite for the evening. i had a good beef brisket noodles at imperial treasure nanbei few days back on 23.8.2015, one of the few authentic ones. still, that was a bit more beefy. i personally prefer this 清汤牛腩 style. sometimes homecook is the best! ^^

my wife could not join dinner this evening. she organised the quinoa pumpkin tofu salad for me & i mixed in the rockets when serving (so that rockets would not be soggy).

everyone loved the salad. 🙂

i did the spanish omelette. did not do this a the longest time & recently revived it when i served a 10-course vegetarian dinner for 8px for my niece’s birthday.

this was a very popular dish among my diners.

i recently tried out a new preparation for cooking char siew & maybe found the right combination to reproduce easily very flavourful & tender, moist char siew. it is also easy to do, just put on a rack in a preheated oven for 20mins.

& it worked well, very tasty, well charred & quite tender inside. the ends were a bit harder than what i made previously because this roll of pork collar was thinner, so need to adjust the timing say to 18mins for thinner rolls.

i made a  ter kar tan 猪脚冻. it was a bit meaty & not as good as my head cheese terrine 猪头冻, but still a friend who cooked this also thought it was very good. i think the taste was good, i should use either pig’s head meat or a lot of pig skin as pig’s trotter is overly meaty & heavy. & the colour should be lighter, means less or no dark sauce.

my chicken ballotine was very good today, mostly finished.

the thai yellow curry grilled chicken thighs were very good.

there was a bit left though, and when i heat the curry sauce in the microwave & applied it to the cold chicken the next day, for me it was still excellent. 🙂

the thai red curry sotong (squid) was just as lovely. it’s a bit spicier & very good with the rice.

i did the vietnamese chargrilled pork collar w/o the beehoon, just with pickled carrots & peanuts. i tried it after cooking. it was very tasty. i think it was just as good as what i had at mrs pho recently. i think better actually.

but for this evening, maybe there were too much food, it was only 1/2 taken.

#10 braised belly pork & bits of some unused trotter

#10 braised belly pork & bits of some unused trotter

the braised belly pork was done together with the ter kar tan 猪脚冻, so it was just a small portion. the braise was very tasty & the texture of the belly pork was superb by those who take belly pork. nothing was left.

#1 friend's 清汤牛腩 - my favourite

#1 friend’s 清汤牛腩 – my favourite

the friend made 3kg of beef briskets & tendons. so i guess we did have a lot of food.

i am not complaining as this was my favourite dish for the evening. 🙂

there was some leftover, so i ate the next day & enjoyed it just as much.

#11 helper's spicy black bean sauce pork ribs

#11 helper’s spicy black bean sauce pork ribs

my helper made the spicy black beans pork ribs. it was braised in the pan & then steamed in the steam oven. very tender & great sauce & flavours. it’s one of my perennial favourites. not much left afterwards.

#12 helper's sambal sauce seabass - this everyone's favourite

#12 helper’s sambal sauce seabass – this everyone’s favourite

my helper’s sambal sauce seabass was another dish that was everyone’s favourite. seabass has a slight mud taste & powdery texture, but with the sambal sauce, it was a very appetizing dish. nothing left.

#13 helper's blanched hk kailan with shitake

#13 helper’s blanched hk kailan with shitake

likewise the blanched hk kailan with shitake.

it was time for the pasta, beef & lamb dishes. my friends were all very full so we decided to forgo the pink sauce prawn pasta dish.

my tagliata was just simply fabulous. it was sooooo much better than the ones we had the other evening at the zafferano wine dinner, and haha i will say it again!^^ all my friends at zafferano were here this evening anyway. 🙂

& the pistachio crusted rack of lamb. everyone just loved it! those who eat lamb anyway.

actually we had the lamb at foc the next, and that lamb was a bit more tender than mine, but my lamb was a lot tastier. 🙂 also my pistachio crust was so good it was all mobbed up!

#16 queenie brought chempedak cake from singapore swimming club - very nice

#16 another friend brought chempedak cake from singapore swimming club – very nice

another friend brought a chempedak cake. i like the intense chempedak flavour. it’s a cake i like but won’t take often.

the banoffee (banana toffee) cake was a bit of a failure. the whipping cream was frozen & i heat it up just so lightly, a cardinal sin of laziness. should have just waited for it to get back to room temperature. it did not whipped well & caked up when set.

fortunately the cake itself was quite excellent & many friends liked it. it is indeed a very good combination of texture & taste, banana & toffee. i used very small amount of caramel so it was not too sweet.

it was a very fun get-together. i enjoyed doing all the dishes, and i also had my friend’s excellent beef briskets & my helper’s nice dishes.

10-course Homecooked Vegetarian Dinner for 8pax on 17Aug2015

made a 10-course vegetarian dinner for 8pax on 17.8.2015. ^^

it was a belated birthday for my niece who is a buddhist & vegetarian. it’s also the first time i planned & executed vegetarian dishes. 🙂

my niece & her husband are ovo-lacto vegetarians, which means they can take eggs & dairy products like milk, butter & cheese. they are also not strict vegetarians, but they will abstain & avoid meats if they can, and take only the vegetables if it comes with the meat. i like the practical, unassuming, unimposing approach.

but i wanted to do a all-vegtarian course dinner for them. for me that was quite exciting & fun to do. 🙂

for me, my interest was not about mock meats or fusion, just to make something that taste good & look good. & if they are not the usual run-of-the-mill chinese stir-fried vegetables and incorporates some non-chinese styles or good matching of taste, texture or presentation, then so much the better! 🙂

#1 first course was a spanish omelette. it’s a really simple dish.  just 2 eggs, 1.5 sliced large potatoes & 1/2 sliced yellow onions. the ingredients were already vegetarian. i just have to light soy sauce instead of fish sauce for the egg. this dish is also perfect as a tapas, a small bite, for a multi-course meal, so quite nicely each had a good slice of omelette.

#2 wife’s quinoa pumpkin tofu salad is always a great accompaniment for my dinners. the pumpkin & tofu with rockets made a very good salad on its own (wife made this after a lunch at marmalade some years back), and addition of quinoa gave it more texture & some savoury touch. 🙂

#3 shallow fried silken tofu in spinach veloute.

i created this dish (flamed squid in spinach veloute) from looking at a photo (w/o the chance to taste the dish) at porthminster cafe at st ives in cornwall, england. it was an excellent dish & i served it at 12-course dinner for 12pax 2 weeks ago.

this time for vegetarian dish i replaced the squid by a shallow fried silken tofu, so that the texture was crispy outside & soft inside. not a flamed (torched) squid but still very nice! 🙂

#4 for soup, i made a cream of carrot soup. this was tasty & smooth & very popular & everyone had a second helping & finished all the soup.

i used 1.5 large carrots, but also 1 red pepper, 1 stalk leek, 1 small yellow onions & vegetable stock which i prepared the night before. & about 4 tablespoon of cream. its a similar recipe for all my creamy soup.

#5 this the first time i attempted spaghetti alla nerano (zucchini pasta). we first tried this in fresco & cummino in milan & this was 1 of the best vegetarian pasta i had, though i like funghi pasta equally. 🙂

i followed an internet recipe, & blended 1/2 yellow zucchini with some onions after softening them in olive oil. i added some butter when tossing the pasta to give it more body.

it was a very good pasta, al dente & tasty. everyone liked it. son said more parmesan shavings would be good. i think overall it can be improved. for now i would prefer my fungi pasta over this, maybe just slightly.

#6 steamed egg plant with peas & onion sauce

my sis & i had a nice daipaidong 大排档 dinner at 富记大排档tai wai where they served an entire steamed eggplant in minced meat & onion sauce. i had recreated this & made a much better tasting one by adding oyster sauce to balance off the tomato sauce.

for the vegetarian take, i cannot use oyster sauce so only light soy sauce + tsuyu sauce, and i replaced the minced meat with frozen peas i bought from sheng shiong.

the presentation can be improved. the key to this dish is the texture of the eggplant, which has to be just cooked & not mushy. i cut it with kitchen sears (scissors) & if it were mushy it would not hold up. 🙂 the pea onions sauce with corn flour was pretty tasty too.

#7 the egg fried rice was basic, no “wow” dish, but it was good accompaniment for the last 3 dishes – steamed egg plant, thai red curry & the brocoli with cauliflower.

it had good “wok hae”, individually rice grains “tioc tioc” we say in teochew, quite good la. 🙂

#8 the thai red curry vegetables was a variation of my thai red curry sotong (squid) which i served for the 30+pax lunch party for my daughter last month.

i just replaced the sotong by vegetables. i had potato, egg plant, onions, yellow pepper, tomato. for me, a non vegetarian, it was no comparison with the red curry sotong of course but still an excellenty flavoured curry dish.

#9 brocoli with cauliflower

#9 brocoli with cauliflower

#9 the 3rd dish to be eaten with the egg fried rice was brocoli with cauliflower. i actually asked if the guys wanted eat or they were full..haha! ^^

#9 brocoli with cauliflower

#9 brocoli with cauliflower

my wife, daughter, everyone wanted it. my son said there is no discussion. 🙂

#10 i made a banoffee (banana toffee) cake for dessert. we have been having tiramisu & tofu cheese cake so i wanted a change from usual.

it was a really nice cake. a great combination of flavours – very nice biscuit base, a thin tasty layer of caramel so not too sweet & nice whipped cream topped with chocolate shavings.

D-24 durian...also had 2x maoshanwang durians (forgot to take photo)

D-24 durian…also had 2x maoshanwang durians (forgot to take photo)

and we had D-24 & maoshanwang 猫山王 durians!

D-24 durian...also had 2x maoshanwang durians (forgot to take photo)

D-24 durian…also had 2x maoshanwang durians (forgot to take photo)

an excellent finish to the 10-course vegetarian dinner. i forgot to take photos of the maoshanwang durians though. ate too fast! haha! ^^

Really Fun 12pax Homegourmet Dinner on 5Aug2015

had a very enjoyable dinner last evening. ^^

i prepared a 12-course dinner for my friends. every dish was good…

this mostly the pulau ubin durian picking group.
https://chefquak.com/2015/07/19/durian-picking-adventure-pulau-ubin-on-21jun2015/

wife & youngest daughter (who just finished her last paper in the morning) joined the dinner. 🙂

#1 wife prepared a nice quinoa pumpkin tofu salad for me. ^^

quinoa gave it a bit of texture & also savoury, some sweetnes from the agave nectar. a very nice salad.

#2 made a nice chicken ballotine. this time i steamed for 11mins, so not overcooked. maybe even 10mins will do. nice tender chicken, & the bacon & onions, spinach made it quite tasty. 🙂

#3 oven roasted kurobuta medium rare

#3 oven roasted kurobuta medium rare

#3 was experimenting on the kurobuta.

used the vietnamese pork collar marinade. 2days in chiller. browned over high heat in butter then 18mins in a preheated 250degC oven!

texture was marvelous. the marinade flavours pretty good. & the colour a very pretty pink medium rare. it is pork though so some friends might be a little worried, but restaurants like salta parilla also served kurobuta steak medium rare.

#4 my headcheese terrine was just superb.

i varied my usual pig trotters braising sauce recipe & added 1 cup of red wine. i used the slow crockpot roast method (starting from cold on low heat) for the 1/2head+hear i bought from sheng shiong, and texture was perfect in about 6 hrs.

#5 pig's ear ragout served on toast3 #5 pig's ear ragout served on toast

#5 for the pig’s ear ragout, i took out the ear & minced/chopped it, took out some sauce & heat the minced pig’s ear & reduced the sauce.

this was an excellent dish we had at dinner by heston blumenthal in london. i did not have the recipe so this is my very own concoction!^^

#6 one of my most impressive dish this evening was the flamed squid in spinach veloute.^^

i softened yellow onions, green pepper, leek & lastly spinach leaves in a pan & blend it with olive oil, chicken (or veg) stock & salt & pepper to taste. i added 1 teaspoon of tsuyu sauce.

i first did this for my anniversary dinner after our recent cornwall trip. we had a great lunch at porthminster cafe in st ives & saw a photo of the dish. i did not have the recipe so i concocted my own.

#7 shellfish bisque

#7 shellfish bisque

#7 shellfish bisque was excellent too! ^^ very intense, smooth & flavourful & excellent brandy flavours.

it’s similar to my lobster bisque. i had a vegetable base to balance the intense stock from prawn shells & heads. i used carrots, onion, leek, red pepper, & the leftover spinach stems.

#8 tagliata di manzo is my regular dish. i had 100D grain-fed black angus striploin this time.

i had ribeye recently for my daughter’s 30pax home party which was better, but striploin done medium rare was still very good. 🙂

#9 for the second main, i did a pistachio crusted lamb.

i don’t do this often. lamb rack is very expensive. i bought the cheaper ones which were still frenched but with caps on. the denuded ones were too expensive. so i had to cut away like a ton of fat, a bit tedious.

anyway, the pistachio rack of lamb was really excellent, no strong gamey taste, nicely medium rare to medium & excellent with the pistachios.^^

#10 for the pastas, i made a funghi linguine. it was good but my wife & daughter told me it was not as good as the one i did for my daughter’s recent party.

#11 prawn spaghetti in pinck sauce (creamy tomatoes)

#11 prawn spaghetti in pinck sauce (creamy tomatoes)

#11 they thought the prawn spaghetti in pink sauce was the best. and yes, it was very tasty & flavourful.

crayfish pasta was a dish which my wife does very well. and i am just trying to model after, using small prawns instead of crayfish.

#12 for dessert, i did a banoffee (banana toffee) cake.

it was very good. i put about 1/3 of the caramel i made after heating a can on condensed milk for 4hrs, and lots of bananas. so it was not too sweet & an excellent combination of flavours & texture. 🙂

very expensive

very expensive “black gold”durians – 2x price of maoshanwang!

a friend brought very expensive “black gold” durians.

it’s like 2x maoshanwang 猫山王 prices, so the 3 durians he brought probably cost $200!

very expensive

very expensive “black gold”durians – 2x price of maoshanwang!

it was super nice, very creamy, small seeds & bitter. better be! at such astronomical prices…

mangoesteen

mangoesteen

& mangosteens too, very good ones. 🙂

another friend brought an entire box 15kg of mangoesteens! i managed to get the guys to bring back so i probably kept about 3 to 4 kg.

my very good friend who took the nice photos brought a sparkling wine. and some friends brought fruits.

konyaku jelly

konyaku jelly

another friend brought konyaku jelly.

oat shortbread - it was really good!

oat shortbread – it was really good!

& a personal gift for me – a very nice oat shortbread! ^^

very fun evening with good friends, and the food turning out very well too! haha! 🙂

Scrumptious Homecooked Lunch for 30+pax on 25Jul2015

youngest daughter was celebrating an important occasion & invited 30 friends to the house on 25.7.2015.^^

we had a really wonderfully scrumptious family-cooked lunch for her friends.

we did 13 delectable dishes!^^

& her friend made a professional pastry chef standard 2-tier cake. 🙂

wife's PIMMS

wife’s PIMMS cocktail

wife also made a PIMMS cocktail!^^

wife's PIMMS

wife’s PIMMS cocktail

i cannot hold liquor but i liked it very much & took maybe 5 or 6 cups & a bit drunk afterwards. 🙂

#1 wife made a lovely pumpkin tofu salad, something she picked up from marmalade after dining there. 🙂

#2 i did a vietnamese chargrilled pork cold beehoon. 🙂

we recently had this dish at mrs pho. i would think that my version was just as good. 🙂

#3 & i made a chicken ballotine.

#3 i steamed the first batch of 2 for 15mins. it was slight overdone.

the second batch i reduced to 12mins. & this was quite perfect! tender, juicy, flavourful.^^

helper's chicken nuggets

#4 helper’s chicken nuggets

#4 my helper did the chicken nuggets. pretty good too. 🙂

helper's deepfried chicken wings

#5 helper’s deepfried chicken wings

#5 & her chicken wings are a perennial favourite. 🙂

#6 i did a thai red curry sotong.

this the first time i cooked this dish. i fried in butter the sotong (squid) like i did for my flamed squid in spinanch veloute, but w/o flaming it (too tedious for quantity for 30+pax!). i tasted the sotong & it was excellent. i made the red curry gravy using the dancing chef’s ready mix with some cut yellow onions. the curry was just superb, so the combination was just crazy, a clear winner!^^

#7 for the chicken thigh, i pan-grilled on a very hot stainless steel pan. it was perfect, and daughters’ friends walloped the 6 pieces of deboned thighs from 3 chicken in double quick time. 🙂

unlike the red curry dish, for this yellow curry, i made it as a sauce similar to busaba’s to-die-for grilled chicken green curry fried rice.^^

there was actually an egg fried rice dish (which was also pretty good) to accompany the thai chicken & sotong curries but i did not have a photo.

#8 wife made an excellent creamy tomato pasta. she usually use crayfish from chinatown & for me it’s the best pasta ever.

this time, we could not get crayfish at chinatown so she used large prawns as proxy. 🙂

helper's sausage pasta

#9 helper’s sausage pasta

#9 & my helper made her crowd favourite cheese sausage spaghetti.

the whole family like this & all my children’s friends who came to the house previously all enjoyed this pasta by my helper. 🙂

#10 i made an excellent squid ink spaghetti this time, no errors, no horrors, no misses, simply fabulous, par excellence!

very nicely creamy, i added butter (only when tossing with fire off! – you don’t want to boil the butter).^^

& fantastic colour, al dente pasta & irresistible squid ink flavour with wonderful chicken stock & squid.

#11 & the tagliata di manzo had my daughter’s friends swooning & asking for more.

in the end i cooked a second portion, total 4x300g = 1.2kg of 150D grain-fed black angus ribeye.

birthday cake

birthday cake

daughter’s friend made her a totally professional pastry chef standard 2-tier cake.

birthday cake

birthday cake

plus lemon tarts & also cup cakes. every cake item was just fabulous! 🙂

#12 i made my usual tiramisu.

it was as good as ever. daughter’s friends finished an entire tub. ^^ i had a spare tub though. there was too much cake already so we saved that.

& my daughter arranged a photo booth which was a lot of fun, & her friends came in all kinds of costumes.

the photo booth guy just finished national service & is going to london for further studies. that’s what young people do a lot these days, with internet & social media offering excellent reach, connectivity & empowerment! 🙂

what a simply incredible, most enjoyable & memorable occasion to be savoured.

6pax Homecooked Course Dinner on 9Jul2015

flamed squid in spinach veloute

#1 flamed squid in spinach veloute

did a 6pax homecooked sit-down dinner for my close friends on 9.7.2015.^^

had been doing the buffet style (which is still the more logistically optimised) for larger group of friends. since my helper is away back in philippines for 1 month break, it was easier to do a small group of 6pax, which allows me to pick dishes to be served course by course.

my first course was #1 flamed squid in spinach veloute. i flamed the squid, then fried in butter. when serving i heat up the veloute, plated the sauce, added the flamed squid & topped with a coriander branch. 🙂

i did this very well also for my early home anniversary dinner for 4pax on 28.5.2015.

flamed squid in spinach veloute

#1 flamed squid in spinach veloute

this was the best for the evening. everyone loved the bbq flavour. i was a bit worried it might be overcooked but squid turned out  just nice, succulent, not rubbery.  veloute was excellent very tasty, and plating did make a big difference! 🙂

chicken ballotine, head cheese terrine (猪头冻) & ragout of pig's ear on toast

#2 chicken ballotine, head cheese terrine (猪头冻) & ragout of pig’s ear on toast

i should have insisted to plate the second course #2 chicken ballotine, head cheese terrine (猪头冻) & ragout of pig’s ear on toast. my friends were extremely helpful & wanted to lessen the effort for me.

chicken ballotine, head cheese terrine (猪头冻) & ragout of pig's ear on toast

chicken ballotine, head cheese terrine (猪头冻) & ragout of pig’s ear on toast

all 3 were my quite new experimental dishes. i am planning to do them at the next larger dinner on 6.8.2015.

1. the ragout of pig’s ears was excellent, best of the trio. this i recreated with my own recipe modelling after the signature dish at the fabulous lunch @ Dinner by Heston Blumenthal.

2. the pig’s head meat was excellent too. the jelly, gelatine was awesome. the meat & skin were ok, but head cheese is harder to prepare than belly or trotters, so though i did scrap the skin to remove the hairs, they were not thoroughly removed. i will have to decide which meat to use for this dish.

3. the chicken ballotine was poor though. basically i had over-steamed the meat, so it was “old” and not so tasty & bouncy. the successful ones i did were here.

rockets & cherry tomatoes salad to go with tapas

rockets & cherry tomatoes salad to go with tapas

i mixed some rockets & cherry tomatoes salad to go with tapas dish. again i think the dish would be much better presented if i plated it myself. this i plan to do at the next dinner. 🙂

carrot soup

#3 carrot soup

the #3 carrot soup was very smooth & tasty. it was done with 2 carrots, and lots of vegetables for tasty soup base – 1 stalk leek, 1 red pepper, 1 yellow onions, and the leftover spinach stems (from the spinach veloute).

i added some brandy so there was a good slight liquor flavour.

i was worried that the sharp carrot taste was too strong, but my friends did not feel so.

carrot soup

#3 carrot soup

one friend thought it was too creamy. i think overall it was a very good smooth & tasty soup, and looked lovely too.^^

calamari & oyster fritters

#4 calamari & oyster fritters

i had some #4 calamari & oyster fritters to go with the soup. this was troublesome to do as i had to do the deep frying at the time i am serving the soup. i am going to skip this dish the next time. 🙂

calamari & oyster fritters

#4 calamari & oyster fritters

i think my calamari was not dry enough when i prepare the batter. also because it was rushed when i first started deep-frying the first piece, the oil was not hot enough.

also the oyster did not taste the best this evening, not quite sure why.

prawns to go with fungi linguine

#5 prawns to go with fungi linguine

the #5 prawns to go with fungi linguine were excellent though, very nicely done, fresh, bouncy, good flavours.

creamy mushroom onion sauce for fungi linguine

creamy mushroom onion sauce for fungi linguine

#5 fungi linguine was excellent too.

looked just perfect.

pan-fried prawns served with fungi linguine

pan-fried prawns served with fungi linguine

& tasted wonderful.

my friends made very good plating for this dish.

pan-fried prawns served with fungi linguine

pan-fried prawns served with fungi linguine

i intend to plate it myself the next round though, for 10pax on 6.8.2015. my helper would be back then. 🙂

squid ink risotto

#6 squid ink risotto

the #6 squid ink risotto was kind of a small disaster. haha! 🙂

i used 5 ink pouches from 5 small/medium squid but they had very little ink.

a friend took the trouble to go to 3 super marts to get for me last minute additional squids, but still with 5 more ink pouches, it didn’t do enough for my squid ink risotto.

also this dish was rushed because the extra squid ink came only when friends arrived for dinner, it was out of sequence with my usual preparation timing & steps & took a long time doing it after serving the #5 course.

i was lazy to go chinatown to buy the large flat cuttlefish which has lots of ink. so sometimes have to improve decision making. it may appear troublesome to do, but it is a lot more troublesome not doing it.

so much for the negative demonstration, for the right way see my squid ink risotto par excellence here.^^

i bought 1 2kg maoshanwang猫山王 + 2 D-24 durians for the evening (unfortunately we gobbled it up before taking photos). the D-24 were pretty good, but maoshanwang猫山王 was crazy, so creamy, tasty, very small seeds & lots of seeds for 2kg.

i had a tofu cheese cake just for backup. anyway we decided not to eat it & 3 friends each carried a piece back home. it’s a cake they all like anyway.

a friend brought angkukueh, & others brought cherries & lychees. 🙂

while there were hiccups it did not diminish any of the fun. overall the dishes were pretty good or ok & everyone had a good time! ^^

Homecooked Zi Char Daipaidong Dishes 郭记大排档美食 (Just Kidding!)

郭记大排档美食 homecooked zi char dishes

郭记大排档美食 homecooked zi char dishes

made a 4pax homecooked zi char dinner for my sis, b-i-l & daughter last evening on 7.7.2015.^^ was back home at 6pm & 5 dishes all done in an hour. dinner ready by 7pm. 🙂

whole eggplant with meat onion sauce

whole eggplant with meat onion sauce

i washed & steamed the whole eggplant first, about 10mins.

whole eggplant with meat onion sauce

whole eggplant with meat onion sauce

i portioned about 350g minced pork for the 3 dishes – steamed egg, steamed salted fish minced pork & eggplant. and cut 1 small red onion & 1/2 large tomato.

whole eggplant with meat onion sauce

whole eggplant with meat onion sauce

when serving, i browned some garlic in 1tbsp oil, added onions & minced pork then tomato, mixed 1 tbsp oyster sauce, 1 tbsp tomato sauce, 1tsp fish sauce (to taste) & 1 tsp cornflour in 2/3 cup water. i added to the pan & reduced. then i drenched them over the steamed whole egg plant.

this really an excellent dish!^^ eggplant was firm not mushy yet sweet & tender when cut, & combined perfectly with the sauce.

i basically had the inspiration & was recreating the dish from 富记大排档tai wai.

but seriously i think my dish tasted much better. 富记’s meat sauce was purely tomato sauce. by adding oyster sauce, the taste was very much better, at least for my palate haha!^^

i ran out of salted fish so asked sis to buy some on the way. sky time salted fish 250g sky time salted fish 250g2 she got me sky time salted fish which was a lot better than the one i recently used. the flavours were fragrant & you can feel it while steaming & at the table (the reason some may hate salted fish..haha!) there were about 7-8pieces in the 250g bottle which cost S$4.90. 🙂

i used 1 slice, removed the larger bones & did a very small portion about 180g minced pork, & cut lots of slice ginger, some mixed in the minced pork, rest on top, and added about 2tsp of the salted fish oil & 1 tbsp veg oil. steamed for 10mins. this dish was excellent. most comfort of comfort food. i like my own version 咸鱼饼 as much as that of shi le yuan 实叻圆糜, which i also like a lot.^^

i mixed 2 eggs, aded 2 tsp fish sauce & some white pepper. then mixed the remaining about 120g minced pork with chopped large red chilli & spring onions, and added 2tsp fish sauce. i should have added 2 tbsp water but forgot that this evening. steamed for 10mins.

the egg was still very nice & tasty, but the texture would have been better with some water. the best steamed egg with minced pork i did is here

teochew chilled mullet 乌鱼打冷

teochew chilled mullet 乌鱼打冷

i bought a small mullet 乌鱼from sheng shiong for S$4 (S$8.90/kg). i placed some cut ginger in the belly & steamed for 15mins. then cool & place in the freezer for 15mins.

teochew chilled mullet 乌鱼打冷

teochew chilled mullet 乌鱼打冷

the teochew chilled mullet 乌鱼打冷 taken with tau jeon was as good as any outside. a thing i observe (a bit of personal preference also) is do not ask the seller to clean the fish. all the livers & delicacies were gone! for my preference also not to ask even to remove the scale (if need be just remove the gills). for me i can remove the gills & clean the fish stomach myself & i feel that keeping the scale is better especially when serving the mullet chilled. then the skin will come off easily together with the scales. otherwise the skin is difficult to break with chopstick & the meat will be meshed uo when eating.

egg fried rice

egg fried rice

& i had some egg fried rice, very firm individual grains coated with egg. ^^ c.h.e.f andy

A Quick Simple Home Meal

porridge with dried scallops, chicken breast & minced chicken balls

porridge with dried scallops, chicken breast & minced chicken balls

made a simple homecooked meal this evening on 17.6.2015.^^

wife wanted porridge & i was thinking of the nice porridge in hong kong, like at keung kee chicken porridge 强记鸡粥.

steamed cod in light soy sauce & olive oil

steamed cod in light soy sauce & olive oil

i had a leftover piece of cod so decided to steam it. that went very well with the porridge. i did that for my recent 6-course anniversary dinner as well.^^

steamed cod in light soy sauce & olive oil

steamed cod in light soy sauce & olive oil

for the cod-

add 2 tablespoon olive oil & 1 to 2 tablespoon light soy sauce (to taste)

cut chilli padi & some spring onions (i did not have spring onions & i cut the green part of a leek in very fine julienne.

placed in a dish & steamed (about 10mins).

cod was really excellent! tender, sweet, tasty, oily flavours. 🙂

porridge with dried scallops, chicken breast & minced chicken balls

porridge with dried scallops, chicken breast & minced chicken balls

for the porridge-

wash 1 cup rice & put in a dutch oven with 1.5l water.

add oil, 2 pieces dried scallops, and a chicken drumstick quarter with skin removed (i used breast meat as i did not have the drumstick which is better with the bone), and boiled for 1.5 to 2 hrs until rice is broken up into consistent smooth texture. add water where required.

i also made some minced chicken balls (did not have minced pork), marinated with fish sauce & pepper.

porridge with dried scallops, chicken breast & minced chicken balls

the porridge was very nice. i think hong kong standard, very smooth & sweet. wife & daughter had several helpings.

fried brocoli with garlic 蒜蓉炒

fried broccoli with garlic 蒜蓉炒

i had some broccoli so did a fried broccoli with garlic 蒜蓉炒-

add 1 cut chilli padi, 2 teaspoon chopped garlics, & fry with the broccoli stems until soft then add the broccoli.

add 1 tablespoon oyster sauce, 2 teaspoon fish sauce, 2 teaspoon cornflour & some water. add to the pan & cover.

simple & nice, tasty broccoli.

it was a very enjoyable dinner for 3pax, simple & easy to prepare.

6-course Early Anniversary Dinner for 4pax at Home on 28May2015

flamed octopus in spinach sauce

#3 flamed squid in spinach sauce

wanted to do an anniversary dinner for my wife & children. the logistics was such that it would be easier to do it earlier & then have dinner out with my wife on the actual day. hence 28.5.2015.

during our recent cornwall travels, we had great lunch at porthminster at st ives on 14.5.2015. we had a superb mussels & a charming roasted pineapples dessert.

also i saw the wonderful photos of a flamed squid in spinach sauce and a curry monkfish. so those were the dishes i had initially planned to do. i experimented on some dishes prior to 28.5.2015. 🙂

my mussels though did not turned up so great(blame it on the cheap local mussels from sheng shiong..haha!), so i decided on a carrot soup.

i tried a thai yellow curry for the first time, planning to replace monkfish with cod. & though the curry turned up beautifully (both looks & taste), my wife & i felt that cod was such a nice fish we should not overpower it with strong curry. so i decided to do a steamed cod instead.

calamari & oyster fritters

#1 calamari & oyster fritters

#1 calamari & oyster fritters

as i was doing carrot soup, i decided to pair it with some oyster fritters, and since i am already at it (oil for deep fry, cornflower, egg & breadcrumb), might as well throw in some calamari.^^

i rolled the lightly seasoned oysters & calamari (squid) in corn flour, then egg, then breadcrumb. then placed them (just 4 or 5 pieces) in about 5cm hot oil a small sauce pan (to use less oil).

calamari & oyster fritters

#1 calamari & oyster fritters

the oyster fritters were excellent, i must say, and first time i made them this way. i liked the calamari too, just cooked right nice texture, not rubbery & tough.

cream of carrot soup

#2 cream of carrot soup

#2 cream of carrot soup

i have done-

this was the very first time i did cream of carrot soup.

& it was excellent!^^ it was silky smooth & tasty, among the best soup i made.

cream of carrot soup

#2 cream of carrot soup

i added a lot of sliced/cut vegetables – 1 onion, 1 stalk leek, 1 red pepper, 2 carrots (plus some leftover stems from spinach). i fried them in butter till soft, added 2 cups of chicken stock & boiled for further 20mins. then i used a blender to blend & added salt & pepper to taste.

when about to serve, i added 3 tablespoon thick cream, and i have some chopped basil from my garden.

flamed octopus in spinach sauce

#3 flamed squid in spinach sauce

#3 flamed squid in spinach sauce

this was the best dish of the evening, quite exquisite if i may say so, maybe alongside the soup.

the squid was done just right, excellent texture & taste, and with the bbq flamed flavours. & the sauce was  exquisite. ^^

st ives porthminster chef michael smith’s flamed squid

i only saw the photos in the cookbook at porthminster. when i tried to google, there was nothing to be found, perhaps porthminster’s australian chef michael smith is not so famous. haha!

so i invented the recipe myself. practice made perfect though, so i had 1 practice some days before.

flamed octopus in spinach sauce

flamed octopus in spinach sauce

i cross cut (very closely) a large squid into 4 pieces (about 9cmx6cm), placed them on a pan & torched. i knew that’s was not enough to cook the squid, so fried them in butter afterwards.

#3 spinach sauce

for the sauce, again i used lots of vegetable to make it so tasty. i fried in butter 1/2 onion, 1/2 stalk leek, 1 green pepper & a bunch of spinach leafs. then i placed them in a blender & added 2 tablespoon extra virgin olive oil & salt & pepper to taste. such a wonderful sauce complementing the flamed squid.

steamed cod with olive oil & soy sauce + wood fungus

there was not much to do regards the cod. i had done this once before & i know the simple olive oil with light soy sauce with chicken stock made a terrific stock base for the steamed cod.

the cod was really wonderful. wife & children liked it very much.

for me & for my youngest daughter though, we still like the equally tasty teriyaki cod better.

one mistake i made was with the wood fungus. first time i was doing this. apparently this was the wrong fungus. it was the crunchy type & not suitable. if i had looked more thoroughly i would have found the small ones in the shelves.

pan-grilled lobster

#5 pan-grilled lobster

#5 pan-grilled lobster

this was an easy dish to make. however i did not do it right this time & the lobster was overcooked & just slightly tough. wife & daughters said lobster was very tasty & flavourful but i knew meat being just right & being tough made a whole  world of difference.

i cut the lobster in halves & shelled the pincers & legs. i put a lobe of butter in the pan & when it was very hot, i placed the lobster flat on the pan. then i added 2 tablespoon of brandy & flamed. the method was right, but i just did it a bit too long.

i tried to reproduce the roasted pineapples. this i didn’t practice, just use my imagination. unfortunately it was nothing like what we had at porthminster. haha!

i guess it was immensely edible. anyway we were just eating fruit & ice cream so didn’t quite know what it was about.

Son Made Dinner for Mom & Dad on 17May2015

guo tie 锅贴

guo tie 锅贴

son made a really yummy dinner for us on 17.5.2015. ^^

we were flying back to singapore on 18.5.2015. 🙂

2 days before he went to chinatown to buy the guo tie 锅贴 because my wife wanted it. 🙂

the guo tie 锅贴 was really yummy! i wonder if i could get the same from qoo10?

apparently son had a ottenlenghi cookbook. he was telling us about pan charring the broccoli on high heat. 🙂

but the guo tie 锅贴 was the best.

i didn’t know the cooking method previously until i last visited son in august2014 & he cooked guo tie 锅贴 for me. son said just follow instructions. 🙂

you actually add water & oil in a frying pan (seems counter intuitive but that is the standard method) & place the guo tie 锅贴. so the guo tie 锅贴 is cooked as the water evaporated & when oil is left guo tie 锅贴 is cooked & browned.

so simple. so yummy!

after the guo tie 锅贴 & quinoa & wine, we had cheese jam & frozen grapes.

a most enjoyable dinner with wife & son before departing for singapore next day.

Wonderful Memorable Homecooked 19pax Dinner Get-together on 24Apr2015

had a most wonderful & memorable homecooked dinner get-together on 24apr2015.

a most fun part was the interactivity & excitement with several friends bringing their dishes, from morocan salmon, hummus, biscotti, konnyaku to tofu cheese cake & ma hua 麻花 airflow from tianjin.^^

a friend even set up a separate whatsapp chat (so as not to bore the rest of dinner friends with cooking talk). 🙂

it was just wonderful. excluding bread, humus, ma hua, fruits, konnyaku, biscotti, we had 14 dishes (12+2 desserts). 🙂

bread, hummus, carrot sticks

bread, hummus, carrot sticks

because a friend was bringing hummus, that motivated me to do a onion sunflower seed bread. i didn’t realise i had walnut (was searching for it) for walnut bread, so settled with sunflower seeds.^^

onion sunflower seed bread

onion sunflower seed bread

the laughable thing was after looking at several online recipes i decided hack just used the ariston oven bread function & recipe. of course i tried the recipe once. dough was too sticky & too much salt & i added too much browned onions.

for the actual day, the bread was quite perfect. all the friends like it. crisp not hard outside & fluffy well-risen inside. for the recipe, i used 600g plain flour, 3 packets yeast (33g) dissolved in 1 cup (240ml) warm water, & 1 tsp salt. 🙂

carrot sticks

carrot sticks

leck san's chickpea+avocado hummus leck san's chickpea hummus

my friend made excellent chickpea hummus, and the green coloured one she added avocado. i think it was new to her too, so there was a lot of fun doing this dinner for all our good RI friends.

ma hua - 天津麻花

ma hua – 天津麻花

a friend was with her students in tianjin for some exchange programs & brought back ma hua 麻花. i finished them the next day, pretty good, not sickeningly sweet like the malaysian ones.

pumpkin tofu

#1 pumpkin tofu

pumpkin tofu rockets salad

#1 – pumpkin tofu rockets salad

#1 my wife made a pumpkin tofu salad. this a wonderful salad she made after some lunch at marmalade.^^

#2 i have made tagliata di manzo (sliced beef) many times. it is a common italian dish. i had it at capri, and many time at fresco & cimmino at milan.^^

the angus ribeye was pan-grilled, charred to produce the maillard reaction to impart the flavours & nicely medium rare. 🙂

#3 teriyaki cod was excellent this evening, many commented melt in the mouth goodness.^^

i used my own teriyaki sauce recipe, this time adding 1 tsp of miso. miso cures the cod & give a firmer, less flaky texture.

friend's morocan baked salmon

#4 friend’s morocan baked salmon

Mahen's morocan baked salmon Mahen's morocan baked salmon4 Mahen's morocan baked salmon2 Mahen's condiments - lemon and Chinese chives.

#4 a friend made a very nice morocan baked salmon with pistachios & ritz biscuits, and condiments of chives & lemon. it was also his first time. for me, this was a lot of fun & buzz.^^

#5 i made a chilli crab capellini (angel hair pasta). i had the sauce made the day before, taste was not ideal & i made some adjustments on the day. it turned out quite perfect, an excellent chilli crab sauce & after pasta & prawns were added, the capellini soaked up the flavours remarkably & was very well infused with the shellfish flavours (from prawn heads & shells, and w/o crab). 🙂

& very important pasta was al dente!

#6 i made an excellent very tasty squid ink sauce & a friend came to the kitchen to help out & tasted the sauce. it was superb with a nice chilli padi spike.

unfortunately, after adding linguine, sauce looked low & i made the cardinal mistake of adding some water. did a rescue by removing the pasta & ingredients (so as not to overcook) & reducing the sauce. still when plating though sauce was sufficiently dark colour & slight creamy producing good texture feel on pasta, the top less coated linguine looked off in colour.

fortunately taste wise it was very good. i guess could have been better.

#7 i think my 白斩鸡 – poached chicken was very near perfect, certainly better than most chicken rice out there!

& today i made an excellent chicken rice. as a friend commented, he could smell the very fragrant rice as it was brought to the table!

i browned some shallots in chicken fat (this was a key) & added cut ginger. the other key was a very intense chicken bone soup for cooking the rice. the soup came from making the chicken & adding the bones after i deboned the chicken & boiled for >2hrs.

& i made the chilli sauce & ginger sauce that everyone loved.

Leck San's acahr Leck San's achar2

a friend brought excellent achar, just the right appetising condiments for the chicken rice.

jap miso salmon

#8 jap miso salmon

#8 the jap miso salmon was done like the japanese bento style.

i didn’t have the recipe so experimented myself. i marinated with miso etc & dried it in the fridge for 2 days then 3hrs at 55degC to dry it further. after that it was 15mins in foil+10mins open in tabletop electric oven at 250degC.

i would say result was almost same as the bento salmon & those we brought back from japan. it was best served on japanese rice don with tamago but will do for the chicken rice.

spicy pork ribs

#9 spicy pork ribs

my helper’s spicy pork ribs was also a perennial favourite. 🙂

#10 蒜泥白肉 was a favourite for many. very tender melt in the mouth belly pork (about 5 hrs on crockpot at low fully immersed) & flavourful sichuan chilli sauce.

#11 dry wok prawns was 1 of my standard dish. this time though i did not dry the prawns enough before adding to the wok so it became a bit wet. prawns was fresh & sweet but the charred bbq flavours were missing. some hits & some misses.

romaine lettuce

#12 romaine lettuce

#12 & my helper’s romaine lettuce, complemented the pumpkin salad & good counterpoint to the meat dishes.

#13 a friend brought a tofu cheese cake. i took the cake & taste was pretty good. unfortunately the gelatine he used seemed to be weaker concentration than the ones i got from phono huat. so though he used the same recipe, the cake did not hold. it was a waste really for the effort but i guess doing it was a fun thing we all shared.^^

$14 i did my usual tiramisu & i added quite a good dose of brandy which my friends love. it was good as usual.

friend's jackfruit

friend’s jackfruit

friend's grapes

friend’s grapes

2 friends brought jackfruit & grapes to round off the dinner.

friend's konnyaku

friend’s konnyaku

friend's biscotti

friend’s biscotti

the friend who brought hummus also did 2 very nice petite fours – a konnyaku jelly & biscotti.

it was an evening of fellowship & sharing, a lot of fun, catching up & sharing good food together.^^

Homemade Miso Salmon Lunch + Japanese Condiments/Side Dishes on 19Apr2015

miso salmon

miso salmon

wife bought some japanese side dishes/condiments from meidi ya liang court. we had a simple really nice home lunch on 19.4.2015.^^

i made a miso salmon, the best i have made..after a few tries, it’s now nearly perfected. wife said same as those bought from japan & from isetan..almost, i guess..

i marinated the salmon with 1 tbsp (heap) miso, 1tbsp light soy sauce, 1 tbsp mirin, 1 tbsp sake, 1 tbsp brown sugar. then put on a rack in the fridge (or chiller compartment) for 2days. then i put in 55degC oven for 3hrs. the idea was to dry out the salmon & marinade. this is only major difference from my usual miso salmon preparation. becos i see the miso salmon or mentaiko salmon in Japan were all dryer preparation. then 20mins in aluminium foil tabletop oven 250degC (include 5mins open foil to grill skin),

with this preparation, my miso salmon was almost same as those we bought in Japan. a lot cheaper, haha!^^

japanese condiments-marinated/cured squid, octopus, seaweed

japanese condiments-marinated/cured squid, octopus, seaweed

love the condiments, side dishes. they are perfect with Japanese rice. salty though & made you eat more rice, so unhealthy on both score. haha!

marinated squid no difference from the chinese style. this like S$5.40 small packet, chinese ones like <S$2 a whole bottle? i think like 10x the price…not worth buying la…

& i made a yuzu pepper, again modelling after what we bought from japan. it was very good in fact.

we bought yuzu from the gourmet market at savour 2015. this came from the skin of 1 yuzu. i added 3 chilli padi, 2 tbsp flat brown sugar, 1tbsp mirin, 1 tbsp sake, 1tbsp tsuyu, & 1 tbsp strawberry jam, and blend.

very nice, almost same as the Japanese yuzu pepper, good for beef, rice etc.

Carrot Magic Cake

carrot magic cake

carrot magic cake

this post doesn’t qualify as a recipe.

it was a good first attempt of a carrot magic cake.

it all happened when a friend pasted epigram book’s FB post on shermay lee on my FB page. there was a link to shermay’s cooking school & the top post was chris’ intelligent cake. that got me googling & i found this carrot magic cake recipe.

i wasn’t going to do a large cake for experiment so i modified the recipe substantially.

it’s interesting! i did manage to get a 3-layer cake the first time, and texture wise it was quite fine. it was a bit shallow so i will try a small size cake tin to get a deeper cake where i can see clearer separation of the 3 layers- fluffy sponge on top, custard layer in middle & dense pudding at bottom.

taste-wise, good carrot taste, overall quite tasty. i added very little sugar vs kitchen nostalgia recipe but the cake was just nice sweet enough for me.

i did not have gingerbread spice so i used cinnamon & minced ginger. will try looking for gingerbread spice, or i may try adding gingerbread biscuits (if i can find)  after smashing it to powder. maybe add a little salt?

anyway below was what i did.

c.h.e.f andy

1/2cup carrot puree (I sued 1 large carrot steamed then blended)
2 eggs separated
1 tsp lemon juice
1/2 tbsp water
3 tbsp sugar
1tsp vanilla essence
60g butter (1/4cup)
4 tbsp all purpose flour (1/4cup)
1 cup (240ml) milk lukewarm (20s in microwave)
1/2 tsp cinnamon 1/2 tsp minced ginger – proxy for gingerbread spice (cinnamon, ginger, allspice, nutmeg, cloves)

whisk 2 egg whites with 1 tsp lemon juice to stiff peaks
whisk 2 egg yokes with 1tsp vanilla essence, 1/2tbsp water & 3 tbsp sugar
add 60g melted butter (1/4cup) & whisk
add 4 tbsp all purpose flour (1/4cup) & whisk
add 1/2cup carrot puree, 1 cup (240ml) milk lukewarm, 1/2 tsp cinnamon 1/2 tsp minced ginger & whisk
fold in the meringue

pour into cake tin (i used 8″ but need to use smaller tin for deeper cake)

preheat oven to 165degC (or 325degF) & bake for 1 hr
