Best Lunch Ever!!! @ Hachi on 7Jul2016

edamame mousse with uni

edamame mousse with uni

wife bought lunch at hachi on 7.7.2016. ^^

that’s my best lunch ever, or at least the best lunch i can remember la! 🙂

hachi

hachi

hachi is our favourite japanese restaurant, along with mikuni & kuriya dining. 🙂

& i guess c/w chinese & western restaurants we are willing to spend money going, these 3 are still the best..

eg there is corner house but its a S$200pax degustation..there are the very expensive good ones we don’t go & the expensive not great ones we don’t go…tunglok signature & xin cuisine are very good & we go often but i would still rate the japanese restaurants better for the price i am willing to pay…

just personal preferences la…

our most recent omakase dinner at hachi though was not great…

(though before that were all excellent eg our best omakase dinne ron 15.9.2015).

just check i did not make a post on that. if it were the same, then i would not pay S$168pax for it..

that’s why we were coming here this time to try the lunch again.

edamame mousse with uni

edamame mousse with uni

the edamame mousse was very good..very light, mild sweet flavours, with a good size lump of uni inside, and so pretty to behold.

oyster with yuzu jelly

oyster with ponzu jelly

& the oyster with ponzu jelly-even more delightful..

the food plating here always so beautiful like the top western degustation restaurants & nice restaurant & ryokan kaiseki dishes in japan!

oyster with yuzu jelly

oyster with ponzu jelly

oyster so fresh, plump, juicy, big. it’s a large oyster, cut in 2 bite size, very sweet, no metallic taste & very nice with the slight tangy ponzu jelly.

ohmo wagyu sukiyaki konabe

ohmo wagyu sukiyaki konabe

there were 3 servings of ohmi wagyu 近江和牛 in this S$88pax 9-course lunch omakase.

ohmo wagyu sukiyaki konabe

ohmo wagyu sukiyaki konabe

first was the sukiyaki konabe.

this was similar to the one served at mikuni.

ohmi wagyu here is better quality than the kagoshima wagyu at mikuni, serving is smaller, & the sukiyaki broth here is much better, less sweet but very tasty!

sashimi moriawase - akamai, hamachi, shima-aji

sashimi moriawase – akami, hamachi, shima-aji

sashimi moriawase was good quality – akami lean toro was very sweet & excellent texture w/o the usual fibrous sinewy texture of maguro. hamachi & shima-aji were very good…

sashimi moriawase - akamai, hamachi, shima-aji

sashimi moriawase – akamai, hamachi, shima-aji

not the top top quality sashimi but for a 9-course lunch omakase priced at S$88pax, this would be superior quality…

hotate tempura

hotate tempura

the hotate tempura was very tasty.

hotate tempura

hotate tempura

i not sure this the best way to eat a very sweet nice plump hokkaido scallop, but it’s not a bad way too..very nice & a good change from eating everything sashimi or cerviche style…

grilled ohmi wagyu 近江和牛

grilled ohmi wagyu 近江和牛

the bestest of the best lunch has to be the grilled ohmi wagyu 近江和牛.

this was just so good, like the very best in japan, melt in the mouth tender & intense, marbled, flavourful. ^^

grilled ohmi wagyu 近江和牛

grilled ohmi wagyu 近江和牛

done so well…

it’s even better than the miyazaki wagyu i had recently at the S$100gourmet dinner at lewin terrace.

ohmi wagyu sushi

ohmi wagyu sushi

& there was a 3rd serving of ohmi wagyu 近江和牛!

sushi – first with truffle salt, next aburi (flamed) & topped with uni & caviar, 3rd aburi & some sauce.

ohmi wagyu sushi

ohmi wagyu sushi

these were just superb la…superfluous! 🙂

sakura ebi inaniwa udon

sakura ebi inaniwa udon

rounded off with inaniwa udon with sakura ebi…nice! 🙂

yuzu jelly with black beans

yuzu jelly with black beans

wife don’t like ice cream so they replaced with yuzu jelly & black beans…bagus la!

yuzu ice cream

yuzu ice cream

yuzu ice cream also very good, light, fragrant & nice refreshing change from usual macha or even the stronger black sesame. 🙂

such a wonderful lunch for S$88pax.

Chicken Casserole – 15th Teban Gardens Community Breakfast on 8Jul2016

chicken casserole

chicken casserole

did a chicken casserole for teban gardens community breakfast this morning on 8.7.2016. ^^

this my 15th friday breakfast community meal at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

chicken casserole

chicken casserole

this actually the first time i am making chicken casserole.

the thing is for cooking in bulk for 80 -100pax, i need to invent new dishes that are tasty & easy to cook.

while i have not made chicken casserole before this, i make a very tender & tasty steamed chicken for my claypot rice. means i got a good marinade recipe for the chicken & steaming (or part smoking in claypot) produce very tender chicken.

  • so, i debone 2 chicken this time cutting into smaller pieces since it is accompanied by veg. i did my usual marinade (double the amount usually just 1 chicken) & steamed it for 30mins in the steam oven (or any steamer).
  • then i cooked the veg, first fried chopped garlic 2 cut chilli padi, 1 small sliced yellow onion, then added diced carrots. lastly i added potatoes timing to finish the potatoes in 10mins. i added chicken stock + the sauce from the steamed chicken.
  • & basically cooked the potatoes & veg while reducing the sauce.
  • last, i off the fire & emptied the steamed chicken into the casserole & toss.
  • the transferred to the aluminium container to be transported to teban gardens.
chicken casserole

chicken casserole

the dish tasted as good as it looks!

chicken was very flavourful & tender. potatoes were done just right, just breaking so not soft & mushy.

carrots a bit soft, i guess that is ok. 🙂 of course veg very sweet & the dish combined very well.

Superb 7pax Early Birthday Dinner @ Ah Yat Seafood on 6Jul2016

pumpkin sauce crab

pumpkin sauce crab – S$19.80 per crab

had a really nice 7pax dinner for a very close friend @ ah yat seafood at grandstand on 6.7.2016. ^^

it was an early celebration for his birthday. 🙂 today is also hari raya puasa aidilfitri!

i ordered 6 dishes for 7pax.

peking duck

peking duck – S$52

peking duck was good, the good restaurant standard.

price is S$38 on weekdays & S$52 on weekends & PH.

peking duck

peking duck – no charge

there is a cooking charge for a second eat, S$10 small, S$15medium & S$20large for (say) noodles. might as well order another hor fun or fried rice right??

peking duck

peking duck – no charge

so we just had the duck meat. no charge. 🙂

it was good, moist, juicy, tasty. 🙂

pumpkin sauce crab

pumpkin sauce crab – S$19.80 per crab

i ordered 3 crabs.

these are specials at S$19.80 per crab of about 500g, not sure if it was heavier than 500g but they all looked decent size to me. the larger sri lankan crabs (800g or more) selling at S$55/kg, quite a bit of difference.

2 of the crabs i asked to cook with pumpkin sauce.

this a sauce that my wife likes & we used to eat this many years ago when children were younger.

pumpkin sauce crab

pumpkin sauce crab

all my friends loved this, a bit of thai style flavours.

steamed soon hock

steamed soon hock – about S$30

the live soon hock was selling at S$55/kg. this one was about 560g, S$30.

steamed soon hock

steamed soon hock – about S$30

steamed soon hock was excellent! ^^

the meat is finer than red garoupa & just as firm & sweet, excellent fish this! 🙂

claypot alaskan crab tanhoon

claypot alaskan crab tanhoon – S$32

the alaskan crab claypot tanhoon was my recently discovered dish here. it as really nice. the tanhoon was so well infused with the shellfish flavours, pepper & coriander, so very tasty.

claypot alaskan crab tanhoon

claypot alaskan crab tanhoon – S$32

this dish in fact inspired me to do my own claypot tanhoon prawns, which was quite excellent too la! 🙂

crab beehoon3

crab beehoon – S$19.80 per crab

the last crab i asked them to make crab beehoon, paying S$15 for a medium portion of beehoon.

quite ridiculous if you think of it – S$19.80 for crab & S$15 for beehoon ????

anyway it was an excellent dish, so very tasty la! ^^

in the end it is what we want & enjoy la…so let the restaurant make a bit from other places since the crab is cheap….

crab beehoon

crab beehoon – S$19.80 per crab

it looked a bit messy c/w crab beehoon at other places like (say) –

  1. ming kee live seafood
  2. kamjiazhuan (this one looks really good!)
  3. yi jia seafood
crab beehoon

crab beehoon – S$19.80 per crab

but taste was good, equally good, and that’s all that counts! 🙂

birthday cake

birthday cake

a friend went to get the birthday cake.

birthday cake

birthday cake

a very nice very light cream cake from chateraise. excellent cake!

it was a really great evening. great camaraderie…this friend is very busy, and he finds time to do many overseas missions a year, run a clinic for foreign workers, & also help many people in singapore. this a good time to get him to relax & chill a bit. ^^

Good Food Reasonable Prices @ Sik Bao Sin on 5Jul2016

bittergourd pork ribs

bittergourd pork ribs

my OPS primary school friend bought 5pax lunch at sik bao sin, geylang lor 34 today on 5.7.2016. ^^

food was better than i expected actually.

we were originally supposed to go to sik wai sin, but there was a sign on the door saying temporarily closed. so we called sik bao sin (which my friend said is run by the brother) & they said “just come over, got table”.

when we got there, there was a queue of like 8pax. 3 large tables looked like occupied by tour group. my friend spoke with the lady that we called & we got a table.

only 1 time i been to sik wai sin was a dinner organised by my RI friend like 5 yrs ago. the proprietor was well known as nazi chef – they say “no menu, no air con, no service”. not sure how it is now.

sik bao sin is quite the opposite. looked like a typical totally efficiently-run, orderly place. high ceiling, air con, not warm nor cluttered. 2 servers, but efficient, food came 5-10 mins after.

menu very short, limited. we ordered 5 dishes, which is like 1/2 the menu items.

bittergourd pork ribs

bittergourd pork ribs

bittergourd pork ribs was good.

tasty, nice sauce, pork ribs were tender, bittergourd not bitter, very soft, which was not my preferred texture but most people would like it this way. very good, i didn’t think outstanding.

lar pok

lar pok

the lar pok, deep-fried pork lard or chee yao char cost $1, came with oil.

i didn’t think much of it at all. i think even some bakchormee lar pok are better. think pork lard should come dry & not in oil.

steamed song fish head

steamed song fish head – S$25

all the dishes were good except their steamed song fish head.

this came with tau jeon. i am not familiar with this style as i thought the common styles are spicy black bean sauce, hk steam, sichuan chilli (剁椒), and maybe minced ginger (which is more common on pating fish).

i myself have never taken a tau jeon steamed song fish head. i can see though that tau jeon is ok with such a dish. my cantonese friends said this is called “meen see”.

steamed song fish head

steamed song fish head – S$25

whatever the style, basically this dish was underwhelming. still nice dish so not poor la, just underwhelming.

any stalls in chinatown, hk street chun kee, even hawker centres (like dunman) would serve equal (many better) fish head than this & at 1/2 the price.

steamed minced pork with salted fish

steamed minced pork with salted fish

steamed minced pork with salted fish was competent.

steamed minced pork with salted fish

steamed minced pork with salted fish

quite nice. i enjoyed it. always like salted fish minced pork.

this reminded me of the scrumptious meal we had at alan’s place. i think alan’s rendition was better than this.

alan is my good friend’s brother who is the proprietor of WEH (why eat har)

tofu prawns

tofu prawns – S$26

the tofu prawn was the standout dish here today.

tofu prawns

tofu prawns

prawns were huge & really excellent.

& the tofu, sauce with egg was just fabulous la…

fried kai lan

fried kai lan

kai lan also very good. good wok hae, just slight salty. the standard of a good zi char!

lunch was S$107 for 5pax, pretty ok for the food we had.

after lunch we went to the friend’s place & had karaoke with his internet TV. ^^

had a swell time with these old friends.

Delicious 4pax Lunch @ Mikuni on 4Jul2016

mikuni maki

mikuni maki – S$25

had a great lunch with my OPS primary school friends at mikuni today on 4.7.2016.^^

there is 50% discounts for up to 4pax on monday for feed@raffles.

the last time i made a post on mikuni was on 3.1.2016.

mikuni maki

mikuni maki – S$25

for today i decided to go ala carte to let my friends try the dishes i like.

we had a maki. usually i take the united nations futomaki, can’t remember if i took the signature mikuni maki before, probably did.

anyway it was good. unagi was the thick kebayaki fresh unagi type not the thin dry type, the standard of good maki in a good restaurant.

golden prawns

golden prawns – S$40

golden prawns seem to be a small helping today, or perhaps mikuni has reduced the size of the serving, was quite big portion previously. prawn was bouncy, but one friend didn’t like it, felt it was treated (processed type), like the chinese crystal prawns. maybe it was, don’t know.

boned-in kurobuta belly pork

boned-in kurobuta belly pork – S$42

i think the boned-in kurobuta belly pork was very good.

boned-in kurobuta belly pork

boned-in kurobuta belly pork – S$42

marbled & flavourful, and a very good serving size.

lobster uniyaki

lobster uniyaki – S$48

i ordered a lobster uniyaki, then added a second as my friends all liked the dish. lobster was a fair size, i guess maybe 450g.

presentation was good (as always) & taste pretty good too.

kagoshima wagyu sukiyaki konabe

kagoshima wagyu sukiyaki konabe – S$48

the kagoshima wagyu sukiyaki konabe is my perennial favourite.

today we have 2 orders to share among 4pax.

each order had 3 large pieces of thick cut marbled wagyu. one friend commented very good. in fact at 50% discounts, it was only S$24, and for that price you probably get thin cut ordinary NZ beef in an average restaurant.

mizayaki wagyu don

mizayaki wagyu don – S$48

i ordered the miyazaki wagyu don to share. took this for the first time. i think it was really good, next time i come i will order one just for myself. ^^

lunch was S$204 for 4pax = S$51pax nett.

more importantly i enjoyed the lunch. i think all my friends do.

nowadays i do avoid set if i can unless i like the set & they are very good value. rather eat less & cherry pick the dishes i like lor…

Economical Satisfactory 5pax Family Lunch on 3Jul2016

whole peking duck - S$52

whole peking duck – S$52

silk is kind a newly discovered joint for me, only becos i had to spend S$89 by end jun quarter or would be charged the levy.

i did have a nice 3pax dinner here with my sis & bil few days back on 26.6.2016.

wife & family have not tried the restaurant so we went today for 5pax family lunch on 3.7.2016.

i ordered one whole peking duck. as it turned out, we ordered quite a bit of dimsum but managed to cancel one dish as we had too much food.

crispy char siew pao

crispy char siew pao

overall dimsum here not really up to good restaurant standard.

the crispy char siew pao was ok, not the best but quite accpetable, something i would order again.

har gao虾饺

har gao虾饺

har gao虾饺 not too great, both prawn & skin.

glutinous rice chicken糯米鸡

glutinous rice chicken糯米鸡

the glutinous rice chicken糯米鸡 was quite ok, i would say pretty competent. 🙂

xiaolongbao小笼包

xiaolongbao小笼包

xiaolongbao小笼包  was poor. skin, fillings both poor & not much soup at all (& that is failure of the most important ingredient)!

prawn fun cheong虾肠

prawn fun cheong虾肠

prawn fun cheong虾肠 was poor, rubbery skin, prawns not great, sauce, passable.

crispy fupeiquin腐皮卷

crispy fupeiquin腐皮卷

crispy fupeiquin腐皮卷was good.

soup dumpling汤饺

soup dumpling汤饺

i did not try the soup dumpling汤饺.

both wife & daughter said it was very good, so it must be good la…

steamed prok ribs

steamed prok ribs

steamed pork ribs quite good, a bit fatty, but tender & tasty.

steamed chicken feet

steamed chicken feet

steamed chicken feet ok, passable.

whole peking duck

whole peking duck

the peking duck was ok.

peking duck

peking duck

quite nice with wrap etc.

chinese rice wine frog米酒田鸡

chinese rice wine frog米酒田鸡 – S$24

i ordered a medium portion of the chinese rice wine frog米酒田鸡. everyone liked it, fresh frog & nice rice wine flavours.

duck meat crispy noodles san meen

duck meat crispy noodles san meen – complumentary

the duck meat crispy noodles san meen was complimentary (second eat for peking duck). it was a really huge helping good for 10pax.

everyone liked it. i think it was a really good standard san meen, crispy & tasty with the duck & sauce.

we were just too full though, took only about 1/3 & decided not to ta pao since we were having some other dinner & no one would be taking this.

we had another medium order of garoupa fillet (S$24), but managed to cancel it as we really could not take any more food. would have to ta pao the entire dish if we did not manage to cancel la…

the 5pax lunch was S$114 after 15% discount. there is GST but no service charge.

dimsum was overall poor & the food was not like super. but the dishes we ordered (other than dimsum) were i think well better than average & S$114 for 5pax lunch was a fairly good makan.

Chilli Crab

chilli crab

chilli crab

i did chilli crab for the first time at a recent 9pax lunch on 7.6.2016.

quite useful to have a group of friends who are confident & relax to try your first time food.

chilli crab

chilli crab

i have done chilli crab sauce pasta previously, so i used the same recipe for sauce preparation.

crab is troublesome stuff, to eat, to buy (how to get live crabs same day as cooking lunch for 9pax?), and to prepare – kill, crack pincers etc.

chilli crab

chilli crab

lately (last one year) i have cooked lobster (some live) on a number of occasions & learned the “mercy killing” method, basically deep freeze!

2xvery meaty crabs from chinatown market 1.1kg @ S$31:kg2xvery meaty crabs from chinatown market 1.1kg @ S$31:kg3

i bought the fresh crabs (2 crabs 1.1kg @ S$31/kg) from chinatown market the day before & put in freezer.

on the day i was cooking i washed & cleaned crab thoroughly (easier to clean w/o a hole by chopsticks or knife in the crab), then opened crab & cracked pincers. very meaty, & no less fresh for freezing!

chilli crab

chilli crab

my chilli crab sauce was pretty ok except it was a bit sweet, no reference to calibrate i guess.

chilli crab

chilli crab

reduce the sweetness, it should be a pretty good standard crab. for me i also like it to be a bit spicier.

the recipe & directions (with adjustments) below.

Superb Crab Beehoon

crab beehoon

crab beehoon

this my very first crab beehoon on 23.6.2016.

i do a great crab beehoon soup.

crab beehoon soup needs a lot of stock since it is a soup.

crab beehoon

crab beehoon

i was doing a 12pax claypot rice + crabby dinner for my OPS primary school classmates on 23.6.2016.

quite difficult to crab beehoon soup to serve 12 la…so i did crab beehoon instead.

i bought 4x500g crabs at chinatown market @ S$30/kg for the 2 crab dishes.

i did not want to get the larger crabs (there was only 1 other option as the only larger crabs the women had were like 600-700g crabs) as it is easier to manage smaller crabs (cracking the pincers etc) & i thought 2x500g crabs were ok for 1 dish.

i precooked the crabs.

then when all guests arrived, just added beehoon into stock & braised (infused) & added the crab last.

crab beehoon

crab beehoon

beehoon was super. everyone loved it. & crab was ok.

we had a 7pax lunch at yi jia seafood at macpherson recently on 21.6.2016 (above photo).

crab beehoon

crab beehoon

i think my beehoon was as tasty & flavourful. my crab though pales in comparison.

my 2 crabs from chinatown (1kg) cost S$30. make me wonder if it is worthwhile to do this dish myself even if it is done well.

see below for the recipe & directions.

c.h.e.f andy

Ingredients:

  • 2x500g crab (use 1 x larger crab 800g – 1kg for better results)
  • 200g bee hoon
  • 200g thinly sliced chinese cabbage
  • 2 chopped chilli padi
  • 3 cm sliced ginger
  • 3 tsp chopped garlic
  • 2 cups prawn stock
  • 3 cups chicken stock
  • coriander (for garnishing)

Directions (for stock):

  1. prepare prawn stock – fry prawn heads & shell in butter (or oil) till fragrant. add salt, a bit of oil, water & boil for 2-3hrs.
  2. prepare chicken stock – i debone 1 chicken & boil the chicken bones with cut carrots for 6hrs – very intense stock

Directions:

  1. add chilli padi, ginger, chopped garlic. fry till fragrant.
  2. add chinese cabbage & fry.
  3. add prawn stock & chicken stock & boil the cabbage for 1hr. reduce stock to 2 cups.
  4. cook crab in stock
  5. put beehoon in water to soften. when ready to cook, boil stock. add beehoon, toss, turn fire to lowest & cover for 5 minutes. toss again. add cooked crab, cover briefly. garnish with coriander. voila!

that was near perfect la!

so flavourful & tasty the tanhoon, prawns good, can be improved though!

actually after i tried again ah yat’s claypot alaskan crab tanhoon again on 2.7.2016, i guess mine was a little less perfect…lol!!! 🙂

garlic steamed razor clams – S$8.80ea after 40% discounts

had a really delicious meal at ah yat seafood @ grandstand with wife on 1.7.2016. ^^

ah yat seafood @ grandstand

ah yat seafood @ grandstand

my brother hosted a 2-tables birthday dinner here recently on 13.6.2016.

wife & i craving for the claypot alaskan crab tanhoon since. 🙂

actually, ah yat turf city was 1 of our favourite makan stops many many moons ago when children were young. that time prices were a lot lower. they had 50% discounts weekdays & 40% weekends. bamboo clams were S$4.80 & frogs S$3.50, pating fish S$30/kg & crabs like S$20/kg. i guess that was eons ago…haha! prices increased a lot so we hardly come here except for some set meals during birthdays.

but prices have gone up everywhere. crabs are like S$78/kg at red house, S$68/kg at uncle leong jurong, S$55/kg at yi jia, so i guess ah yat prices actually ok….

claypot alaskan crab tanhoon

claypot alaskan crab tanhoon – S$32

we had to order the claypot alaskan crab tanhoon!

it was so very good!!!!!

claypot alaskan crab tanhoon

the tanhoon was just so, so tasty, flavourful, excellent stock, pepper, garlic, coriander.

claypot alaskan crab tanhoon

claypot alaskan crab tanhoon – S$32

there were lots of crab legs. at S$32 i think it was a lot more worthwhile than lobster, crabs or prawns.

garlic steamed razor clams

garlic steamed razor clams – S$8.80ea after 40% discounts

we had always like the steamed razor clams here, even at S$8.80 each now. we were greedy so ordered 3 razor clams for 2pax. ^^

garlic steamed razor clams

many seafood restaurants here like jumno, long beach etc made good razor clams. still ah yat’s is one of the best!

even c/w say (below) which were 1/2 the size & fraction the taste –

HK steamed tua tau

HK steamed tua tau – about S$11 after 40% discounts

usually we take chilli or sambal fried tua tau at zi char stalls or restaurants.

but recently i had very good hk steamed tau tau at yi jia seafood.

HK steamed tua tau – about S$11 after 40% discounts

so wife & i decided to have it steamed this time.

it was excellent, very well done same as yi jia. also had either a but of sand or tiny broken shells (more like sand) just like yi jia…

it was an excellent meal, really enjoyed it!

chap chye was very tasty. daughter stole a bit to eat. ^^

chap chai (cabbage, taupok, tanhoon) with lean pork

chap chye (cabbage, taupok, tanhoon) with lean pork

i switched from fatty belly pork & pork collar to lean pork after feedback from my OPS friends. more healthy la..

i had about 1.2kg lean pork in a brine of 1 tbsp sugar, 1 tsp salt, 2 tbsp shaoxing wine & 2tbsp mirin.

then 5hrs in 90degC oven in a oven dish.

i sliced the pork thinly & placed it in the steam oven for 45mins. this produced a very tender pork.

this four seasons chendol only sells chendol.

however a friend told me later that there is another four seasons stall at the other end that sells cheng teng.

Four Seasons GCT Chendol

Four Seasons GCT Chendol

the first time i had this four seasons chendol was on 30.4.2016.

& i have been quite keen to come here again.

2 days back, we went to JB. there were 11 of us. we had chendol at this teochew chendol place at city square. it was pretty good too, but i was quite sure this toa payoh lor 8 FC stall’s is better.

today just happened that my OPS friend suggested having this GCT chendol. it was quite convenient to get here from sicc bukit clubhouse, so after lunch we came by in one car.

& the chendol was better much better, coconut milk was thicker & the gula malaka was really intense & flavourful, & there were lots of kidney beans which i like….

i enjoyed this chendol thoroughly.

peking duck – S$26

went with sis & bil to silk restaurant at sicc island location on 26.6.2016. ^^

it’s quite a beautiful place, great ambience.

& surprisingly the service was pretty good. surprising becos just below at level 1 the lookout/the eagle the service sucks! the servers look past you there & you can wait 10-20mins for menu & service.

peking duck

peking duck – S$26

we ordered 1/2 peking duck, S$26 & 2 eats.

i don’t take peking duck often – hardly is the word! this peking duck was pretty good la…totally competent. we all quite liked it.

shredded duck meat with sun meen crispy noodles

& the price is for 2 eats, which means you get an accompanying dish free, like noodles, fried rice or cabbage wraps with the shredded dick meat.

we took the san meen crispy noodles 生面.

& the noodles were good.

these noodle hor fun dishes were like S$16 on the menu, so this was a good combo dish to order – peking duck + noodle dish free! ^^

Claypot Rice + Crabby 12pax Homecooked Dinner for my OPS Buddies on 23Jun2016

7 dishes + steamed soon hock later

7 dishes + steamed soon hock later

my OPS primary school buddies came over for a 12pax homecooked dinner on 23.6.2016. ^^

i did 8 dishes + dessert.

7 dishes + steamed soon hock later

7 dishes + steamed soon hock later

dinner menu

#1 claypot rice
#2 claypot tanhoon prawns
#3 crab beehoon
#4 chilli crab
#5 fine braised pork ribs
#6 steamed soon hock
#7 白米粉
#8 ocra in nonya sauce
#9 choc banana cake (dessert)

i make an awesome claypot rice.

most recently-

i usually cook about 2.5cups for claypot rice, obviously not enough for 9pax lunch or 12pax dinner.

hence added 3 other dishes with carbs – claypot tanhoon, crab beehoon & white beehoon (WBH)白米粉.

for this evening i cooked 3 cups rice. still a delicious, excellent dish everybody liked, but not quite as wonderful as the previous 2.

the claypot tanhoon was superb la! ^^

very nice peppery taste with coriander flavouring & whole garlic. plus i added quite a bit of thinly sliced belly pork, all i fried till fragrant before adding stock.

i used a fried prawn heads & shells stock & added a very intense chicken stock (from 2 chickens + carrots). & i only added the tanhoon & topped with cooked prawns when the guests were here & ready to serve.

this the second time i cooked this dish. first time was some days ago just to test out the dish.

will post a recipe later! ^^

i fried the prawns with shells in butter first.

prawns were quite good, but next time i will cut out this step & just precook the prawns in the claypot stock first la…

its really a wonderful dish & quite easy to make.

the tanhoon were so infused with the pepper, stock flavours, very tasty la…

i was doing the final cooking for several dishes only when all arived & ready to serve, so forgot the garnishing.

just throwing a few coriander stalk will make the dishes even more appealing la.

the crab beehoon was my very first attempt.

it was really excellent, very intense & flavourful.

i had a stock base of chinese cabbage to balance the shellfish taste, then added the same prawn stock as the tanhoon prawns plus a lot more intense chicken stock. it was a big dish with quite a bit of beehoon so needed quite a lot of stock.

several friends liked it better than the white beehoon because it was more intense. for myself i like both.

i bought 4x500g crabs at chinatown market @ S$30/kg for the 2 crab dishes this evening.

i did not want to get the larger crabs (there was only 1 other option as the only larger crabs the women had were like 600-700g crabs) as it is easier to manage smaller crabs (cracking the pincers etc) & i thought 2x500g crabs were ok for 1 dish.

same thing like tanhoon prawns, i precook the crabs.

then when all guests arrived, just added beehoon into stock & braised (infused) & added the crab last.

beehoon was super & crab was ok.

the chilli crab i did 1 hr+ beforehand. couldn’t manage so many dishes even though just the final cooking when all arrived.

i knew my chilli crab sauce was good, tasty. but as some friends mentioned the crab meat seemed to have like “disappeared” 散去a bit.

so this dish not quite satisfactory to me….need to improve.

i think i will try to get 800g crabs next time, and only cook when guest arrived.

it may seem like there is no difference why not just cook when guest arrived anyway.

but in fact, there will always be errors in preparation, and when a dish is done in ample time, there is time & focus to rectify, adjust the taste. whereas if everyone is waiting for dinner, it is rushed & unless everything turns out perfectly, there is unnecessary stress & we will forget things in a rush. my cooking philosophy is the whole process must be a very relax, fun, enjoyable one so i plan the dishes & preparation in a way that there will not be last minute rush & stresses.

chilli crab & ocra in nonya sauce

chilli crab & ocra in nonya sauce

i had an ocra dish with nonya sauce. easy to do, can be done a bit beforehand & real easy stuff.

the fine braised pork ribs deserved a special mention here. 🙂

i had the motivation to reproduce a really tasty & tender pork rib dish after tasting my friend’s dish at the OPS potluck dinner on 21.5.2016.

even though the above 2 photos did not look as nice as the ones i had in the recipe post, in fact the pork ribs were super tasty & tender.

i am very happy with this dish! ^^

for purpose of photography, it would be better to serve on a dish with bits of simmering sauce like the photo in the recipe posts. haha! 🙂

steamed soon hock

steamed soon hock

i was deciding on hk steamed song fish head or 金香鱼头.

the latter requires deep-fry which i avoid if i can. & song fish head is fishy not for everyone.

steamed soon hock

steamed soon hock

happens that when u bought crabs the day before, i also bought a soon hock.

so i did a hk steamed soon hock, 11 mins for about 700g fish, about S$10.

steamed soon hock

steamed soon hock

very very nice fish, meat so so tender 幼 but firm like red garoupa not mushy like seabass.

by comparison, it’s finer more幼 than red garoupa and same sweet fish.

white bee hoon 白米粉

white bee hoon 白米粉

this the second time i made white bee hoon 白米粉.

i decided it was not worthwhile making 三楼米粉. for me both are essentially the same dish same preparation.

but for 三楼米粉you need to crisp the beehoon. so it took really quite long & more precise, to me quite unnecessary effort to produce almost similar results (but got crispy beehoon outside).

& also to have it flat & crispy it is difficult for the big quantity i had. i would have to fry 2 times or serve a small dish (1/2 the size).

white bee hoon 白米粉

white bee hoon 白米粉

So, white bee hoon 白米粉 it was!

white bee hoon 白米粉

white bee hoon 白米粉

& a very good one at it. 🙂

very tasty. it did not have the shellfish flavours like the crab beehoon as i only used chinese cabbage base + chicken stock, but it was very tasty.

to me as good as tampines 844.

wiped clean

wiped clean

all the food were wiped clean! 🙂

red dragon fruit

red dragon fruit

a friend brought red dragon fruit.

very sweet & good texture.

lychees

lychees

another friend brought lychees the small seeded 糯米荔枝, very nice.

& a friend brought a big bag of very sweet mangoes for me. not ripe yet so we did not take this evening.

ah seng durians

Good But Very Ex Fish Head Steamboat @ Whampoa Keng on 22Jun2016

red garoupa fish head steamboat - S$50

red garoupa fish head steamboat – S$50

went with my sis & bil to whampoa keng for fish head steamboat on 22.6.2016.

it’s really expensive here.

the red garoupa steamboat for 1-2pax is S$40 & for 2-3pax is S$50!

we took the S$50.

luckily the steamboat was good. the red garoupa were thick cut fish fillet. i think we each have about 4 maybe 5 big pieces. the soup was very good – tasty, intense…even the refill soup was good.

and of course there were veg, seaweed, yam, ti poh etc.

whampoa keng

whampoa keng

the other room was closed, so now the space quite small & restuarant was crowded.

we were quite early around 6pm & we got seated immediately as we agreed to share table.

stirfried hk kailan - S$9

stirfried hk kailan – S$9

the stir-fried kailan 清炒芥兰was very good.

dinner was S$68 for just 2 dishes for 3pax. for me that was far too ex.

i guess i rather pay S$50 for a really good fish head steamboat than S$25 or S$30 for mediocre or worse, still it was not quite matching my price expectations.

at this price point i would come very rarely if at all.
