bought wife & family a fab 5pax mother’s day lunch at majestic today on 8.5.2016. ^^

look at the crab roe sharksfin soup (top photo), a perennial favourite of ours at majestic. it was still so good! one of the very best soup i had, so sweet & tasty.

i did not find a recent post on majestic on my blog. perhaps i did not record.

the one i had was 3 years ago, a world gourmet summit dinner in apr2013.

for today, there was a self service station. the roasts were excellent!

roast duck was especially good. we had a few individual helpings. char siew was good. siew yoke ok not as good as the usual cube roast pork servings in these kind of good restaurants.

the lotus bun was good. we shared one among 5 of us. i took the braised duck wing. the pumpkin with 肉松was non-descript for me. wife liked it though.

the braised belly pork was very flavourful. texture was tender though it didn’t look it in the large serving claypot.

from the ala carte menu, har gao was average. many dimsum places like crystal jade, imperial treasure better.

chilli gravy was good especially with the bun which was excellent.

lobster meat was not bouncy. did not feel like live or fresh lobster.

the thai lemongrass chilli lobster i had recently at red house was far, far better.

did not look it though with too much of the green mayo. but the batter was very good, not like most places where they were thick, hard, tough. prawns were very fresh, water melon a great balance, counterpoint.

i love chilean seabass, & majestic served very good steamed ones in their regular menu.

the galbi style beef ribs were ok.

somehow it works better when served in individual small portion courses.

the sharksfin soup was limited to one order. there were like 3 or 4 other soups unlimited orders. we ordered 2 lobster crab roe broth to share.

a pretty good soup, though no comparison with the crab roe sharksfin soup.

it was very tasty with nice oyster flavour.

this also something quite easy to do myself-basically a good stock, as also for the spinach wolfberry, that’s about it.

wife bought me an excellent chirashi sushi zen set at lunch at kuriya dining on 9.6.2015.^^

it was for early father’s day.

we had a mother’s day lunch at gurnard’s head on 10.5.2015 and a mother’s day dinner at mackerel sky at newlyn, cornwall.

there was a lot of salad, a bit little dressing. we asked for more. of course to be added in moderation. it was good. 🙂

the chawanmushi was excellent, especially with the very tasty snow crab sauce, though i felt the sauce was a bit starchy.

i still cannot decide if this is better or mikuni’s better. i guess overall i still favour mikuni’s chirashi don but this was really really good too.

Marvellous Mother’s Day Lunch @ The Gurnard’s Head on 10May2015

today is mother’s day in singapore,10.5.2015
(it seems that in UK it was 15mar in 2015, must confess i never knew that!). we all sent greeting messages, and my friends were quite active on the group whatsapps. ^^
yesterday morning on our first day arriving in cornwall, we were blessed with glorious sunshine when we visited minack theatre & hiked a bit at porthcurno & porthgwarra, and later from sennen cove to land’s end.
this morning, weather was ok albeit not a bright sunny day, we managed to visit cape cornwall & botallack mines.

after botallack, we decided to press on to the gurnard’s head.
my wife had been reading about the restaurant, and it turned out to be such an excellent mother’s day lunch experience.^^

 we had 1 of the best lunches in UK 2-course for £18.50. my wife said she would skip friday’s set lunch at Dinner (Heston Blumenthal’s Pellegrino 50 restaurant) as it is no better than this!

we had complimentary rye bread. the butter was very tasty.

for appetisers, wife ordered a chicken ballotine & i ordered a ham hock terrine.

i was thinking ter kar tan (pig trotters jelly)! the ham hock terrine looked more like a luncheon meat or 镇江肴肉

this was quite excellent, very flavourful if robust. i was surprised that wife took a whole piece. & the sauce & sides were superb.

we were sharing the dishes, which was great as we each got to taste & enjoy the dishes w/o getting satiated with 1 portion. we were saying this was like a 4-course degustation lunch!

for the mains we ordered the slow braised beef ribs, and the whole megrim sole.

beef was more like a prime rib or beef on a wagon. it was a good prime rib, but not the specialty standard of prime ribs at SCC (singapore cricket club). 🙂

the prime rib itself tasted pretty good. & the red wine sauce & condiments – chinese cabbage, potatoes, turnips & carrots etc were excellent too! i recall form my student days 30+years ago they used to match yorkshire pudding with roast beef, & we used to joke that roast beef was like paper – i.e. tough & tasteless. now with modern cuisine it was not just roast beef but a slow braised beef ribs preparation. 🙂

i had the whole megrim sole.

the fish was quite sublime, very tender & tasty!^^

i would say the sole was far better than the prime ribs, and for me much better also when compared with the very good hake & john dory we had last evening at tolacrne inn.

the food was excellent & wife was in very good spirits!^^

after enjoyable walks at cape cornwall & botallack mines followed by a really scrumptious lunch at the gurnard’s head, we decided to have a light dinner on 10.5.2015.^^

mackerel sky penzance was closed for dinner on sunday, so we decided to try the new mackerel sky seafood bar at newlyn (we saw the place when having dinner at tolcarne inn last evening. 🙂

according to their website, the seafood bar was only open on 1.5.2015. 🙂

we found a convenient parking lot (1 hr free) just facing the restaurant across a small stream.

it was 8pm & still bright outside. 🙂

there were like 3 tables including ourselves the whole time we were there.

we ordered just 2 small plates & a salad.

after that we ordered 1 flat white. that was the best i had so far during this trip, i think equal or better than monmouth, & better than the one i had at sennen cove. so we ordered a second cup.^^

we usually do not eat out on mother’s day or other festive occasions OR would go to places that serve their usual menu & not charge hefty premium prices for usually poorer food & poor service. anyway for mother’s day tomorrow, wife has already decided to go cycling & go to hawker centre for dinner afterwards. 🙂

i decided to try out lobster pasta, having looked at several online recipes & videos, and also how to kill a live lobster (2 i referenced were lobster bisque by chef john of food wishes.com & lobster spaghettini by dude food), supposedly humanely, something one can only take on faith.

i went to sheng shiong & bought a 625g live lobster. price was S$39.90/kg so cost S$24+. there were no mussels today but i managed to get some littleneck clams (“la la”) & also razor clams, so decided to cook seafood risotto. tried this once recently very successfully, emulating the incredibly tasty flamed seafood risotto we had twice at miky at monterosso.

lobster was really quite large & could not fit into the usual metal basin, so i placed it in the roasting tin. poor lobster, looking miserable.

there is supposed humane way to kill the live lobster – i am cooking lobster pasta & killing a live lobster for the first time – so i followed the steps.

#1 i cleaned & placed the lobster in the freezer for 30minutes. lobster was supposed to be knocked out – like in deep sleep?  then you plunge the knife just behind the back of the head & just cut the head in 1/2. i watched the videos. it was not difficult.

i removed the head & pincers & cut the lobster tail in 1/2.  i lightly browned some garlic to flavour the olive oil, took the pan away from the fire & added the lobster head, tail & pincers, then turned up fire to high. i then added 1/3 cup brandy & let it flamed & burned off the liquor to leave the sweet taste. i cooked the lobster for about 4 minutes (slightly undercooked), then removed from fire. when cooled, i cracked shelled the lobster pincers & knuckles.

i set aside the head & tail & put the remaining lobster shells into the shellfish stock. i had earlier fried in butter prawn shells & heads (from about 1 kg of prawns) then added 600ml vegetable (or chicken) stock. i added some water & let the shellfish stock boiled lightly over 2 hrs, then sieved & reserved the stock for the lobster bisque & risotto.

when ready to serve dinner, i removed the lobster tail from the shell & cut into 2.5cm serving size & added back the lobster head & shells to the pan. i then add diced tomatoes plus a 14oz canned tomatoes & white wine & reduced, and added sea salt & paprika to taste. lastly i added the prepared angel hair (slightly less cooked than al dente) & the lobster tail pieces to the pan, added about 3 teaspoon heavy cream & tossed, and garnished with coriander. voila!

a really, really tasty lobster angel hair pasta. really excellent! 🙂

#2 for the lobster bisque, i added chopped yellow onions, celery & carrots to olive oil & butter, softened the vegetables & added chopped leeks & diced tomatoes, some salt & paprika. i added 1 tablespoon of flour to thicken. then i added 400ml shellfish stock (kept 200ml for my risotto) & added water & boiled for another 1/2hr & reduced to about 600ml. then i used immersion blender to blend to a very smooth, rich soup, then added 3 teaspoon heavy cream & sea salt to taste. 🙂

it was a very intense, tasty soup, smooth & consistent, sweet with lobster & prawn stock & vegetable base, & with a nice mellow brandy flavour. 🙂

#3 for seafood risotto, i cooked the same carrot, celery, onions, then leek & garlic in olive oil as a stock base, added turmeric for colour, added 1.5cups of arborio rice & then added the prawn stock & bring to boil. then i placed the oven-proof pan in a preheated 210degC oven for 10mins. then removed & set aside.

meanwhile i fried shelled prawns & cross-cut squid in butter, and also very lightly fried the razor clams which i had earlier removed from shell, cut away the innards & cleaned. then i added ginger & some orange peels & added the littleneck clams to a pan ove high fire, adding a little white wine. then cover & let the shells open. discarded any unopened clams.

when ready to serve, i added remaining stock & juices from the fried prawns, squid, razor clams & just some from the littleneck clams enough to cover the risotto & placed on high fire w/o cover, added salt & paprika to taste. once risotto was almost cooked i added all the ingredients & covered for 1 minute.

i am very proud of this risotto actually. it was still far from the super tasty one we had at monterosso, and today, as my wife & daughters said, it was not as tasty as my first as i had to split the stock between the lobster bisque & the risotto, it was still a very sweet & tasty dish. will improve next time. 🙂
