bought wife & family a fab 5pax mother’s day lunch at majestic today on 8.5.2016. ^^

look at the crab roe sharksfin soup (top photo), a perennial favourite of ours at majestic. it was still so good! one of the very best soup i had, so sweet & tasty.

i did not find a recent post on majestic on my blog. perhaps i did not record.

the one i had was 3 years ago, a world gourmet summit dinner in apr2013.

for today, there was a self service station. the roasts were excellent!

roast duck was especially good. we had a few individual helpings. char siew was good. siew yoke ok not as good as the usual cube roast pork servings in these kind of good restaurants.

the lotus bun was good. we shared one among 5 of us. i took the braised duck wing. the pumpkin with 肉松was non-descript for me. wife liked it though.

i wanted to try the porridge. took a tiny bit. it was good!

the braised belly pork was very flavourful. texture was tender though it didn’t look it in the large serving claypot.

from the ala carte menu, har gao was average. many dimsum places like crystal jade, imperial treasure better.

the crab roe sharksfin soup was limited to one serving each. top draw stuff!

the chilli lobster was so so for me.

chilli gravy was good especially with the bun which was excellent.

lobster meat was not bouncy. did not feel like live or fresh lobster.

the thai lemongrass chilli lobster i had recently at red house was far, far better.

did not look it though with too much of the green mayo. but the batter was very good, not like most places where they were thick, hard, tough. prawns were very fresh, water melon a great balance, counterpoint.

i love chilean seabass, & majestic served very good steamed ones in their regular menu.

here it was non descript.

the galbi style beef ribs were ok.

somehow it works better when served in individual small portion courses.

the sharksfin soup was limited to one order. there were like 3 or 4 other soups unlimited orders. we ordered 2 lobster crab roe broth to share.

a pretty good soup, though no comparison with the crab roe sharksfin soup.

it was very tasty with nice oyster flavour.

this also something quite easy to do myself-basically a good stock, as also for the spinach wolfberry, that’s about it.

i ended up eating 1.5 portion.

really enjoyable lunch & family time on mother’s day.

after that, some of us had what my children called food induced coma.

not eating dinner this evening.

this time we were expecting a wonderful breakfast on the second day on 27.1.2015.^^

it proved to be as great as the wonderful breakfast the day before. 🙂

i looked at the dishes for both days and surmised that both basically had rice & good pickles and 4 side dishes.

the pickles included a tasty seaweed dish in the middle (i drank up the sauce) + konbu, some veg pickles on the right & another on the left.

one more with radish, veg & seaweed.

1st side dish was a steamed tofu dish. you scooped it out onto a bowl, and added some sauce from the curve beak pot. it was tasty & had excellent texture. i added just enough sauce so i could finished off everything including the sauce.

the second side was a simmered veg with sweet peas, pumpkin etc was very good. this is a common dish for japanese breakfast & course dinners.

the 3rd side was a braised wagyu with sticky mountain yam topped with a dash of grated wasabi & a shiso leaf. this was excellent though the braised wagyu side dish for the dinner kaiseki on 26.1.2015 was even better.^^

the 4th side was a grilled fish, not saba this time but nice too.

there was some special rice with toasted sesame and dried scallops. i added the pickles. very nice.

the server told us we could cracked an egg & add it over the rice. i did that. i liked it as i liked the silky texture of egg yolk.

the rice was quite fine on its own. & it was nice too with the egg. i liked it both ways.

decided to try making the popular teochew dessert orh nee with pumpkin & ginkgo nuts (白果金瓜芋泥).

looked up some internet recipes, surprisingly turned out to be quite easy to do. 🙂

i bought a thai taro (yam) from sheng shiong (about 600g) & 1/2 a pumpkin (i used a 1/4 about 300g). i also had an unused packet of ginkgo nuts (200g) in the fridge.

ginkgo nut took a while. i added 3 heap tablespoon of brown sugar over the ginkgo nuts & melt the sugar over medium heat. i added some water & boiled the ginkgo nuts until the syrup reduced. then i repeated the process. took 15 to 20 minutes for ginkgo nuts to fully soften & be infused with the syrup.

i fried 2 shallots (sliced) in 4 tablespoon oil over low fire till brown and set aside.

i peeled & cut the yam in 1/2 & then 1 cm thickness. i diced a 1/4 pumpkin. then i placed both in a steamer & steamed for 20 minutes. i then mashed the yam & pumpkin (separately), pressing with the flat of the knife. it was quite easy to do. i added 1 tablespoon brown sugar to the pumpkin & 2 tablespoon to the yam. i then heat the yam over low fire in the non stick pan & added the onion oil, and checked for taste. i added another 2 tablespoon oil & some water, then mixed in the ginkgo nuts & topped off with the pumpkin.

the orh nee was quite good in colour, texture & taste. i would say better than the average ones in restaurants, some quite bland & tasteless.

my wife makes awesome packed lunches. she brings to office most days and they are much healthier of course than eating at the cafeteria. sometimes she packed for 1 or 2 colleagues as well. 🙂

the centre-piece of the healthy packed lunches are the salads & vegetables.  these could be standalone simple salad lunches, or often enough also, some meat items were added as a counter-point. sometimes i would cook miso cod, miso salmon, miso char siew (belly pork), miso ebi yaki (grilled miso prawns) or my pan roasted brined chicken breast for her. today she made oven grilled big prawns for herself 🙂

the pumpkin salad (top photo) was excellent tasting – sweet australian pumpkin with cherry tomatoes, deep-fried tofu, red onion. the pan grilled portobello (low heat slow dry grilling) was super, packed full of flavours, and together with the mesclun salad made for a very healthy delicious lunch.
