my RI friend bought an exquisite lunch at la ventana @ dempsey today on 12jan2017. ^^

this friend not easy to meet up. i enjoyed his company & looked forward to the lunch.

the outside looked a bit untended outside. inside ambience was great. 🙂

there was the crispy breadstick & hummus.

& they also served the warm bread basket – some baguette & olive oil. baguette was good.

my friend recommended the S$48 3-course set lunch.

for appetizer, there was a gaspacho, tapas & something else i cannot remember.

friend recommended tapas & we both ordered that.

it was very good! ^^

nice anchovy bruschetta, a marinated pangrilled mackarel??, a nice croquette (or both were croquette?), a potato dish? & grilled jalapeno pepper.

one thing about the service – for a place like this, strange that the server did not explain the dishes they served.

for the main course we both had iberico pork & crayfish. i think there was a salmon main option.

this was a really delectable dish. the iberico steak was served slightly pink which i liked.

my friend cannot take pork medium rare, so the restaurant took back & made it well done & served to him nicely presented again. that was good, commendable!

i enjoyed this dish! as i did the tapas appetizer.

the inerico pork steak was excellent & not as fatty as the iberico collar that i do.

the crayfish was quite a fair size helping. it was not overwhelming but was more than competent, so overall it was quite a great pairing.

server recommended creme brulee, said it’s most popular.

creme caramel stuff really not my preferred dessert. if it was a good pannacotta i meight take.

friend recommended cheese cake, and it was very good. it was done the japanese cheese cake way – very light cheese. it was good!

my friend took the fruit sorbet. so nice! i am sure great too, refreshing.

we had a wonderful time, nice food & conversation, great company. something to look back & reminiscence.

my car was in the garage for maintenance, and my friend did not have a car at his disposal last minute so he cabbed to my place to fetch me for lunch. after lunch we cabbed back.

but having tried it second time, clearly it was NOT as good as Tunglok signatures at orchade parade hotel.

my friends thought the char siew NOT so great this time.

not flavourful, some parts no charring, overall just didn’t taste that great.

& the pricing is totally out of whack! most places would serve char siew like S$9-S$12.

so we refused to order the siew yoke – roast pork because of the price.

& at this price, i won’t order this again if i come back.

the porridge not as smooth & tasty as i expected, since the last time the plain porridge was very tasty.

also like quite small bowl although ingredients were quite ok, maybe that’s what counted.

already knew that poached treatment don’t have wok hae like the simple garlic fried, but it can be very nice, crunchy, tasty.

this time it was quite mediocre, which i guess means poor. my helper can do this dish a lot better la…

dinner 4pax was S$95. other than the char siew price & the mediocre kailan, nothing much to compain actually.

so after dinner we went to bukit merah view food centre & eat durians.

the stall holder gave me 2 slices 1/2prawns. that should be N05. i think he made mistake.

anyway it looked like no difference. i got a lot of cockles & chicken still PLUS the prawn, maybe a little less taupok?? anyway not complaining.

recently i had sungei road laksa on 1.12.2016.

still good i guess, but really this weiyi laksa 唯一辣沙 much more savoury & intense gravy, very much my liking.

& i like curry chicken noodles better. but i guess they are just different food. i like both.

ok food & price ok with the groupon vouchers.

i had one more S$50 groupon expiring shortly on 13.1.2017.

so today went again with sis & bil on 9.1.2017. ^^

we ordered 4 dishes. lunch was S$61, so S$11 after S$50 groupon which i paid S$26. so lunch 4 dishes for 3pax was S$37. ok la…

porridge not sweet despite dried scallops, unlike the  艇仔粥, and this porridge wrong texture so w/o the sweetness it is quite poor porridge.

& the soft bones pork ribs were excellent, very tasty.

it may not be a special dish, but immensely edible. goof stuff!

the worst dish for me was the sliced fish porridge. rest were ok. S$37 for 4dishes boleh da!

was introduced to this place recently by my OPS classmate who bought 9pax dinner on 30.12.2016.

very enjoyable & cost S$240 for 9pax.

this evening we came at 6pm on a sunday. this a good timing. traffic is horrendous on weekdays. & 6pm is perfect! there were already few tables but basically, everything went smoothly. in fact the food was served just too fast! we were done like in 50mins!

very enjoyable dinner for my family. everyone very happy with the dishes & enjoyed a great makan & get together.

Very Shiok! Kongbak 卤肉 – Braised Pork Belly on 7Jan2016

made a very good lor arh – braised duck 卤鸭 & had a wonderful 3pax lunch with sis & bil today on 7.1.2017. ^^

left with a big bowl of duck oil & also some leftover lor – braising sauce.

though of using the duck oil for confit (maybe confit a belly pork since don’t have duck breast), but really all these unhealthy in the extreme so decided to just discard the duck oil.

the lor though was really “pang” & tasty. i didn’t want to do a 5.5hrs gentle braise in 95degC oven so decided to just do it over the hob like i did the duck.

i think it was about 40mins.

the meat was tender, juicy, very tasty especially with the braise, & looked a beauty. ^^

the method is the same as braising duck & chicken.

basically, braise the meat with quite a thick braise at first, don’t dilute the flavours too much (in my case 1 cup braise to 1 cup water for the duck, and since i am reusing the sauce, no water added), so that the braise flavours can infuse well into the meat. turn the meat over.

cover the wokpan – for me this method, where the braise is intense & not covering the meat is better as covering the pan (whether for duck, chicken or belly) results in gentle steaming of the meat, and the thicker braise coating & infusing the meat.

maybe after 10minutes, add water & continue doing at intervals so the braise do not dry up, but also not too diluted.

i placed over a bit of rice, like a don, haha! & spooned some fragrant lor over it.

i think that in terms of tenderness texture, the 5.5hrs oven gentle braise at 95degC is better (& that is easier w/o need for adding water & supervision),

today made on eof my best lor arh = brasied duck on 7.1.2017. ^^

last cooked lor arh noodles & kueh chap for my RI friends on 5.10.2016.^^

also i am making one for my OPS primary school classmates get together in 2 weeks time, so today is a good practice for me too.

for 3pax lunch today, i also have chilled mullet 冻乌鱼, and sis fried a young celery stems with tipoh (dried flatfish)..these ones are softer & indeed different from the ones we received from our relatives in shantou汕头 which are quite hard & not suitable to add to fried dishes.

i fried whole bulb of peeled garlic cloves, cut ginger, 2 cinnamon sticks, 4 star anise, 3 bay leaves, 2 cloves in little bit of oil till fragrant.

cleaned duck throughly – rubbed with salt & washed clean, dried then rubbed with sugar. then added the duck to the wokpan, turned over after a short while, then added the braising sauce. in total about 2tbsp sugar.

i added 1 cup tai cup marinade, and braised the duck first on both sides for 5mins. then i added 1 cup water.

this duck from sheng shiong (fresh duck from abattoir) 2.2kg-2.4kg for S$13.90.

i usually prefer to get smaller duck from giant, but this time giant’s 1.7kg duck at S$9.90 not fresh duck, but thawed from frozen, so i went to sheng shiong & bought the fresh duck.

the braising took 1 hr 10mins…it’s agaklogy, but about right, and i did also check with the meat thermometer.

the braise was very tasty, quite “pang”, lagi excellent! ^^

the dishes & prices now clearly displayed. the mutton leg with tulang most popular. the tripe looked good too. anyhow i opted for the ribs, which i like also.

i ordered S$6. there’s about 10 pieces.

i think the ribs really good, very tender, excellent texture.

the soup, at its best, is very good too.

but never quite comparable to good chinese herbal mutton soup like at chai chuan tou chinese mutton soup 柴船头羊肉汤 at bukit merah view food centre.

this evening, soup not as intense as what i had before. still good but not near the best.

all items, plus chilli & sweet sauce, nice, except kang kong/othe veg small servings.

have been eating more ytf recently-

  1. best for me = hillview ytf at meiling food centre.
  2. meixi’s kitchen yong tau foo 美茜酿豆腐 at commonwealth drive blk 115B also very good, more fried stuff, somewhat different items.
  3. a poor one at SGH kopitiam, &
  4. a real bad one, hakka yong tau foo at holland drive food centre.

this one here would be on par wiht meixi’s kitchen just somewhat different items.

going back a bit earlier, the best i had so far (partly because of the nice mined pork noodles) is at u hakka at circuit road food centre.

i am quite happy with jing house overall,

it’s the start of new year 2017!

i did a gentle braised pork belly 回锅肉with celery for teban gardens community breakfast this morning on 6.1.2017. ^^

this my 25th friday breakfast community meal at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

it’s a gentle braise because it is done 5.5hrs in a 95degC oven, the belly pork covered with water in a sealed oven dish. 🙂

and it’s 回锅肉because after the braise & quite easy cutting (above photo), it was marinated with 1 tbsp cornflour, 2 tbsp fish sauce, 1 tbsp oyster sauce, 2 tbsp shaoxing wine, & returned to the wokpan for quick searing.

totally tender, & very tasty.

& some may notice the brown colour pork pieces in the photos.

i was experimenting with using tai hwa braising sauce. so a smaller portion was done with braising sauce in oven dish in same 95degC oven for 5.5hrs (basically overnight while i slept soundly la!)….

in this case i do not sear it, so it was just kongbak final version.

for feedback, the teban centre director preferred the kongbak, very well infused 入味, she decided.

another lady prefer the 回锅肉 (i think slightly more tender as the marinade firmed up a bit the pork) but likes the kongbak gelatinous skin.

good feedback!

anyway now that i can just use tai hwa braising sauce, it becomes so easy to do a good kongbak, braised belly pork… 🙂

had a nice lunch with my running buddy at tunglok signatures today on 3.1.2017. ^^

food here always nice, but parking is expensive, & now they refused to give free parking. so my friend piked me up & we went in one car. go green anyway!

the siew yoke – roast pork always good here. it’s amazing all these good restaurants, they can render out the fat layer almost completely, so it’s like a crispy skin plus fairly lean meat below! 🙂

they are always good, and often better than many sharksfin soup la…

1/2 pot = S$16 serves 4 bowls, so good for 2-3pax.

today it’s arrowroots, still good but not the best. the best include 鸡骨草 & green papaya etc…

it looked nice, and came with a 2 large prawns – wasabi & salted egg, very well matched with a sweet water melon. today it was done very well. sometimes the deep-fry not light & just right.

all these are 1 person portion. but really the meal would be too heavy if you order a few course, so we took 1 portion to share, and for my friend, for him to taste more dishes.

so shared by 2, still a very welcoming portion. 🙂

quite edible, but neither presentation, look nor taste belongs to the dish quality in this restaurant.

it’s more like from a quite mediocre zi char. most zi char will do better than this. & i would do too myself la…lol!^^

the lobster noodles here always good.

i order 1 portion each. the lobster steak was done very well, as always, very good grilled flavours & excellent bite texture.

the  yellow sauce was ok. today the dish came early while we were working on the kailan & we took it a bit later, so the yellow sauce not as great when cold. noodles remained al dente & good. 🙂

this the dish i emulated & rehashed 2+yrs back = king prawn noodles (黄焖大虾面)

noodles & sauce-wise, mine wasn’t too bad too. of course cannot compare with the lobster steak.

6 of us including our helper went for a family out, a walk up bukit timah hill, on 2.1.2017. ^^

we parked at jalan bingka along rifle range road, and walked along the rail corridor, passed (under) the PIE then the anak bukit flyovers, about 10mins to hindhede road.

we were fast “walkers”. we started at 8.22am up the south view path to the summit, then down along the road at arrived back at the visitors’ centre at 9.16am, about 54mins all in.

we decided to walk over to the courts side.

it was early, so joo seng teochew muay & many stalls were not opened yet, so we decided to walk over to bukit timah food centre.

quite tasty, good wok hae, not many cockles, overall experience quite nice.

wife wanted to relax & have a good dinner. it’s public holiday so some amex lovedining places like tunglok do not offer discounts.

i called up portico prime @ dempsey & they had the usual discount so we went on 2.1.2017.

the taste though was awesome!

this a popular dish here, & i would order it again.

the truffle flavour was endearing with the al dente pasta, and the sakura ebi very tasty, crunchy and added some saltiness to the dish, combined perfectly. i think taste wise better than saveur & concetto which were also good.

we ordered the usda choice ribeye first.

it was really good, and the brown sauce was great too. done medium rare quite perfectly, very sweet, tender, flavourful steak. pencil asparagus was the cheaper variety, but it was good.

labrezza’s 300g angus ribeye with salsa & rockets was cheaper though & equally good.

we were not particularly hungry but we decided to try another steak, though it was grass-fed & sirloin, altogether poorer cut & price not much different.

portico prime inherited the largely same arresting ambience of prime society. the restaurant seems to be priced a bit lower end than prime society, and a bit more variety. portico group is helmed by nixon low who was with petite menu, and before that andre & saint pierre.

made a simple dinner for 3pax dinner this evening on 1.1.2017. ^^

lazy to go out & eat, & lazy to think of dishes to cook.

just used gochujang to marinate pork chop with chopped ginger & garlic.

then fried with small bit of butter on a hot nonstick ceramic coated pan.

pork chop (this cut is called西施骨, a pork ribeye) was quite tasty, especially the thinner part with some fat.

my very discerning wife & daughter thought it did not taste korean enough, just a tasty pork chop. they thought it needed some kimchi taste, not just gochujang.

probably so, don’t really have answer for now. didn’t have recipe & just “gazak” anyhow marinade.

can try again but this dish not a top priority for me.

i marinated the sotong with the leftover marinade.

the chopped ginger went very well with the pork chop, less well with the sotong.

so no need to add chopped ginger for sotong next time, just chopped garlic will do fine.

again the dish did not taste distinctive, and was not any better than say chilli fry, oyster sauce or squid ink. so ok but nothing special.

so far, the best result still the pork chop, just that i would probably do just nice a pork chop with other marinade. let me check up later on any better marinade recipe to produce “more korean” distinctive flavours.

went with wife to meiling street food centre this morning on 1.1.2017.

we wanted to take the hill view yong tau foo 山景酿豆腐 , but the stall was closed.

since we were already there & parked we decided to take the xinlu 新路 S$3 teochew fish ball noodles.

we both had the meepok tar, less noodles.

usually it comes with 5 fish balls.

but as we asked for less meepok, they gave 1 extra fishball, so 6 fishballs.

fishballs were bouncy & sweet. noodles qq, done well, and the chilli today was quite good. sometimes they gave too little chilli.

this used to be our favourite fish ball noodles >20yrs ago when it was at margaret drive when children were small. cheap & good then, still now.

the standard has not changed. it was as good as before. i guess there’s a lot good quality hawker food now & tastebuds have changed.

i still don’t mind this noodles. not the best now for me, & i would prefer jln tua kong meepok tar at 6th avenue. it’s different style…i just prefer that over this.

we having a 5pax family home dinner.

we have been cooking western dishes for christmas eve & christmas day family home dinner.

so for new year evem we decided to have some simple chinese/local dishes.

the tofu prawns were modeled after sek bao sin’s.

& after a few tries, my tofu prawns approximate very well in look & taste to sik bao sin’s.

i used quite intense chicken stock. the tofu was the extra silky tofu, excellent soft texture, and was well infused with the tasty stock, with a nice fried skin.

prawns were quite the right texture, and the egg drawn over made the perfect dish.

today, my claypot rice was nearly perfect, among the best i’ve made.

wife gave very good feedback after our recent 6pax dinner with friends on 22.12.2016.

she thought the bottom layer was too burnt, & the rice texture was not that good, a bit soft.

today i made some adjustments, and it was perfect! almost…

rice was not wet, & separate, individual grain…the flavours etc all like before, quite excellent.

& chicken today – the best! super tender & tasty….

moral of the story = do whatever wife says….

so because i had 1 whole deboned chicken it took about 45-50mins to steam & more rice got burnt & the less rice remaining were overcooked.

i took out over 1/3 of the chicken & cooked separately, had the claypot on low fire for 30mins.

i think can reduce the burnt part further…wife said the lightly burnt 锅巴the best..currently my burnt part still over…still will try out the smallest low fire.

the 2 fried vegetables were all good.

i settled to the 清炒style = high fire, lots of chopped garlic & no water or cornflour added, just oyster sauce & fish sauce. perfect!!

so key for the tofu dish is fry the silken tofu well w/o breaking.

i used intense chicken stock, very tasty & made sure prawns not overcooked.

the final touch is drawing the egg with a chopstick, to keep the cooked pieces together.

for the claypot rice, i fried chicken fat & ginger, last the salted fish lightly before removing to be added back later. & i fried the rice.

i prefer a bit more skin less lean meat or use the more fatty pig head meat instead of trotters which have quite chunky lean meat, but the taste was good!

don’t think it added anything to the taste though..but keeping it warm & moist, rather than cold & dry, i guess improves the taste.

the sour plum teochew steamed halibut my favourite. first time i taking this teochew style in a teochew restaurant.

i had a nice hk steamed whole turbot 港蒸多宝鱼 at富记大排档 in tai wai, hong kong 5.6.2015.

that was HK$98. this one S$70.

but i think worth every cent. this a much larger fish & very thick, tasty, tender fillet.

the teochew fried kuay teow with chye poh was quite excellent, very flavourful.

one of the better ones i had.

& the dish there even better than this. the kuay teow was more burnt PLUS there were sliced fish like in sanlo horfun. 🙂

the right side was the look when it as served. the server demo-ed the whisking & the left was the result.

it was good, the yam paste was very smooth, it was not too sweet & the taste was great!

the dinner for 9pax cost S$240, quite a good price & very enjoyable evening together, good food & fun.

the stall holder explained that there is a lot of big intestines, but very few big intestines head 大肠头, so it is relatively quite expensive. next time i will just order big intesties.

my friend thought it was not good, some parts not so tender, and the lean meat a bit chunky..

for me, most of the gelatinous parts were quite ok, just not the best i had.

it’s not the usual hong kong congee preparation, which is totally smooth.

a mix of teochew which is grainy but not much taste, and the hk style. so this was grainy but very sweet & tasty. not bad though i prefer the hk smooth style.

my god-sis, among the 4 together with her hubby with the closest birthdays, loved this dish & mentioned a few times, so made for her tonight. 🙂

very nice, the flavours very well infused.

one of my favourite dishes. i like the slightly oily fish. the flaky meat firmed up by the marinade, and the special sweetness & texture especially near the bones. 🙂

this evening, it was a bit upstaged by the teriyaki salmon.

wife added the dill grown by our helper, a nice touch & very matching for the dish.

i made a mistake actually.

was not familiar with the controls of the new oven & burnt the most precious parts, the skin, so had to lift off most of the burnt skin, what a waste.

anyway it was still such a wonderful tasting dish.

after wife’s salad, i think everyone loved this salmon belly.

belly was slight oily, went very well with the marinade & nicely grilled, so very flavourful.

i did the pan-grilled kurobuta. it’s fatty but very tender & flavourful so quite easily well received by the diners.

to have more vegetables, i prepared a roasted vegetable dish, something i don’t do often.

it was very easy to do, just cut vegetables, drizzle with olive oil, sea salt & black pepper, & lined with some butter, then for this quantity, 30mins in a 250degC oven.

it turned out to be very nice, according to my daughter & wife & guess.

i made the usual browned garlic in olive oil, with fresh basil, added quite intense chicken stock & white wine, a bit of sugar. it was creamy & tasty, fettuccine was nicely al dente.

still, i think i would reduce the sauce further & increase the cream next time.

the baked beehoon dish was intended to proxy the fideua dish.

we had this excellent fiduea dish at foc. it’s a pasta but feels like a very tasty well-infused beehoon.

i couldn’t find any fideua in the shops, so i thought i would proxy with beehoon.

i soaked & cut the beehoon & placed in the dutch oven, then added intense chicken + prawn stock with prawns & squid covering the beehoon, then placed in 250degC oven & baked for 15mins.

it was actually a very tasty dish, & my friends finished all. but it was not quite western or fusion, and if it was a tasty beehoon dish, it did not feel like anything else.

maybe i will still go look for fideua, maybe at phoon huat delicatessen.

the last dish is the tagliata, so wife opened a red brought by one friend.

this a bottle they ordered from a charity fundraising event, which they bought a few bootles & maybe bringing over the malacca the following week when 5,6 of them are going.

a very nice quite full body red & quite smooth.

i used a 400day grain fed wagyu MBS 3/4 (1 in thick about 300g+) for the tagliata di manzo.

wife did the plating.

as usual beef was very tender & tasty. for this evening daughter & wife found the wagyu beefy. for me it was ok, the taste that i like.

this was supposed to be a millefeuille cake. i don’t see any layers though, and as my daughter said looked more like a struddle, lots of nice light cream but not quite layered like millefeuille.
