children came back for dinner on 16.7.2021.^^

wife made salad. always tokkong!

aunty bes made chicken wings & octopus calamari & halibut….chicken wings and calamari always good..

grilled halibut I prefer to brown & crisp, wife liked this as she thought inside more tender..it’s easy to crispy and still inside tender…

I will make this for SL’s birthday dinner next Friday.

I made oven sous vide reverse sear pork collar…children loved this pork super tender & tasty and the ratatouille was excellent!

for ratatouille I browned garlic then added 1 peeled chopped fresh tomatoes, the added chopped red pepper and zucchini …then chicken stock and red wine and reduced, add to pork chop in oven dish 90degC oven 1 hr about 65degC meat temp, then pangrilled…

this cheap frozen pork collar from chinatown market…next Friday will use the Atas Aussie pork ribs.

& seafood squidink pasta

& youngest daughter SL mirin angus ribeye steak.

kampung chicken very good, smooth and tender and sweet, homemade chilli was good always, and the sauce was perfect.

made mistake on 烧肉temp..

should be oven @130degC 2hrs then 20mins 250degC I put lower temp had to rescue so 40mins 250degC

tested the skin was crackling but still not blistered…meat was ok not overcooked because wide square slab and sides covered with aluminium foil, but would have been even better otherwise….

canton paradise dimsum really good, basically HK standard la!

we had 7 dimsum – hargao, spicy dumplings 抄手, crispy char diew pao, 珍珠鸡, steamed pork ribs, steamed chicken feet, har cheong PLUS beef brisket noodles dry…^^

& just S$42.45 after 40% discounts!

every dish was good…maybe hargao skin not as good as imperial treasure, hargao almost as smooth as HK…

steamed pork ribs and chicken feet were perfect! and beef brisket noodles dry was super!

  1. sesame tofu with foie gras, crabmeat, ikura sashimi
  2. sashimi moriawase – kinmedai, kampachi, amaebi, chutoro, sea grape (a sea weed)
  3. grilled kamasu-Japanese barracuda
  4. poached fish with very nice sauce (like beurre blanc sauce)
  5. kagoshima wagyu steak
  6. sushi moriawase individually served- sutuki (Jap seabass), aburi akaebi(forgot to take photo), unagi temaki handroll, uni, binchotan aburi otoro
  7. dessert-Japanese melon super sweet

really shiok, delicious lunch, one of the best omakase I had for the price. this the sakura omakase @ S$138, the mid price omakase good enough for me la! 🙂

of course kuriya dining omakase dinner even better la!

RECIPE = Perfecto! Oven Sous Vide Reverse Sear Australian Pork Chop on 11Jul2021

after tasting the best ever super tender pork chop @ silk’s bistro blue mountains

I decided to make my own using atas S$38/kg pork chop from Cold Storage – more expensive than beef leh!

using the sous vide machine.

today lazy decided to use oven instead! on 12.7.2021.^^

super tender & tasty slow roast reverse sear aussie pork chop in tomato red wine saucethese best! – excellent texture & taste.

recipe

  1. brown garlic cloves, add 1 skinless chopped tomato & 1/2 red pepper (i use 1 chilli proxy..if got zucchini will be perfect!)
  2. add red wine & chicken stock & reduce
  3. place clean pork chop seasoned with seasalt & coarse black pepper in oven dish. pour ratatouille over pork chop.add slab of butter
  4. place in 90degC oven for 1 hour (meat temp about 65degC)
  5. add little butter & sear both side..

perfecto!

children ordered prawn noodles from prawn house at Ghim oh today.

I took some from wife. it was good!

decided to try 1pax prawn mee tar myself👍🏻👍🏻👍🏻using spaghetti & beehoon lol!🤣 on 11.7.2021.^^

almost as good.

I don’t make prawn noodles as jessie made it so well and I got invited often lol!

& usually got to make large quantity fry and boil lots of prawn heads and shells for stock etc…lay cheh la!

today I use what I have…didn’t expect much.

no yellow noodles no problem la use spaghetti.

good thing I still have excellent large prawns..

just cook spaghetti, and beehoon separately..very small portion for me..:-)

did my usual mee tar…1/2 tsp fish sauce, 1tsp oyster sauce, 2tsp black vinegar, 1tsp tomato sauce, lots 1tbsp+ crispy prawn chilli, 1tbsp oil….

boil 4 large prawns deveined in chicken stock…

& it was very good, almost excellent!

best thing was the soup basically a very tasty prawn stock soup..of course very important very little soup (reduced)..and because the prawn heads and tomalley, very very tasty..

char siew excellent today..among my best..

super tender & moist..lightly charred& the marinade, taste all good – quite perfect couldn’t charred more already max out 250degC oven for 16mins..

& the 口水鸡 (半只)1/2 saliva chicken and chicken rice very good too.

beng san brought fruits – jackfruit cherry & pears.

CCG was unable to join cos taking of urgent family matter.

today bkt was excellent…perfect texture, bite and taste!

easy to overcook this tender meat… today I cooked 40mins instead usual 1hr for Indonesian prime ribs.

Cold Storage had special discounts at S$26.90/kg for the aussie prime ribs (usual S$38/kg once S$40/kg)…

c/w Sheng Shiong S$22.90/kg Indonesia prime ribs which have huge long bone plus useless huge loin meat (not always possible to pick the smaller ends), this far better quality prime rib is also more worthwhile…I usually buy even at S$38/kg!

1/2 kampung chicken 白斩鸡 perfect too. tender, moist sweet, and I served with ginger sauce, homemade chilli and dark sauce.

& chicken rice very flavourful…

chinese cabbage was just whatever I had left in the fridge. lol!

we chatted quite long after lunch…had a great time with RI bros today…

been attending taiji class with wife almost 2 yrs liao, becoming an important activity in our life, also meeting the few but regular friends every saturday…

dishes are all good this evening..they liked the claypot rice, hk steamed soon hock and spinach, V and Lisa don’t take mala, so most the drunken chicken…师父and daughter liked both saliva chicken 口水鸡drunken chicken 醉鸡, and I think 师父 liked the ter kar – braised pork trotters 卤元蹄 best. lol!

not much said of the tofu prawns 豆腐虾…it’s a tasty dish too but I guess nothing special…wife always prefer my tanhoon prawns to tofu prawns.

had a great time, and S made a very nice video afterwards…great memories to relish…

  2. oven slow roast kampung chicken (my best thus far …super moist & tender…1.1kg kampung chicken 100degC 1.5hrs 250degC 12mins)
  3. miso glazed large prawns

roast chicken was excellent today…all the staff loved it, super tender, moist, tasty.

I lightly salted the chicken skin and inside cavity, marinated with EVO on skin and inside cavity and with truffle olive oil below the skin and also inserted sliced garlic. chicken roasted 1.5hrs at 100degC and 12mins at 250degC. super!!!

the squid ink past was excellent too, very tasty sauce of red pepper and leek ratatouille, with reduced white wine and chicken stock.

the staff had a wonderful lunch, spirit lifting in this covid times permit only 2pax dining out or ordering in.

RECIPE = Duck Confit Ragout Bucatini on 30Jun2021

decided to make duck confit ragout pasta this evening on 30.6.2021.

I made this once before here.

bought a S$4.50 boneless duck thigh from sheng shiong.

just confit in duck fat, crisping the skin by cold pan low fire.

recipe below-

  1. clean duck leg. lightly salt, add 2 tbsp EVO rub and marinate 1hr
  2. low fire fry duck fat (taken from duck leg) in pan, place duck leg skin down fry till crisp (about 6mins)..turn over..add chicken stock, cover, boil low fire 1.5-2hrs
  3. brown 1 whole bulb garlic cloves in 1 tbsp olive oil..add 1/2 zucchini 1 red pepper cube cut..add salt, black pepper, soften to make ratatouille..
  4. remove duck & pour reduced stock & oil to ratatouille..
  5. cut 5,6 duck slices with skin for display..cut remaining & mix into ragout sauce
  6. boil bucatini 1min before aldente & add to ragout sauce
  7. when serving, heat up, can add shredded parmesan cheese & basil

the sauce & duck very good.

I use bucatini. son thought it would be better with tagliatelle or penn pasta basically a flat pasta which ragout sauce attached better.

I thought the pasta was good as it is but certainly a flat pasta would be better.
