1st time coming here since amex love dining (palate) now included this restaurant.

a bit like the clifford at fullerton bay w/o the seaview.

we looked at the dinner menu.

there was a connoisseur dinner semi-buffet.

the hors de eouvres buffet items quite limited, not even as good as the below par equinox i recently visited where the spread was like halved.

the main courses though looked better than equinox, and i was eyeing the prime ribs.

the captain advised that the prime rib for the semi-buffet was about 2/3 the serving c/w ala carte (S$76), but if one were taking that then might as well have the semi-buffet (S$73).

i may come back for this, but for this evening, i didn’t want the buffet so we did ala carte.

pan fried scallops were dry & below par. felt old, not fresh not gummy texture. i think very poor for a good restaurant standard.

even my own pan-seared hokkaido scallops was better than this!

we were a bit the non complaining type. the scallops were not spoilt or bad. but actually it would be better if i told the restaurant immediately whether they replaced it or not. it’s better to feedback to them.

fortunately the skirt steak was very good.

very flavoruful & tender enough, though some parts just slightly tendonous.

the mash, herb butter were good too. 🙂

this audtralian wagyu with jap name & a secondary cut so i was wondering how they prepare the steak as it would be tough with connective tissues. the captain couldn’t really explain or he didn’t understand the question, but anyway steak was good which was all that mattered.

dinner was S$161 for 2 after 50% discounts. the glass of wine wife had was expensive. i think S$29 no discounts. at this price even with discounts dinner was ok not great & could get much better value elsewhere.

but i will still come back for the prime ribs, and maybe also the tajima steak & oysters w/o the other items.

did a very good seafood alio olio this evening on 7.8.2016. ^^

i have not done this for a really long time.

mainly because my helper does an excellent alio olio. she usually uses prawns & sliced chicken breast. on balance i think her best would still edge out my dish tonight.

i browned the garlic cloves on medium fire. fantastic aroma…added cut chilli padi.

then added prawns & squid seasoned with fish sauce & white pepper.

then added chicken stock.

i removed the prawns & squid then reduced the stock. tasted it, was tasty & intense. i did not add white wine & sugar this evening.

then i added back the prawns & squid, off fire, added the spaghetti & tossed.

last, i added some butter, so the spaghetti & sauce mixed very well.

i topped it with some basil.

the result was a very tasty pasta.

daughter commented the sotong (squid) was excellent, just the perfect texture. so was the prawn!

& i like the spicy tinge from the chilli padi.

a simple dish & enough for 3pax on a sunday evening.

  • 200g spaghetti
  • 1 whole bulb of peeled garlic cloves
  • 2 tbsp olive oil
  • 6 medium prawns
  • 1 whole medium squid
  • 2 tbsp fish sauce + 2 tsp white pepper (season prawns & sotong)
  • 300ml chicken stock

Directions:

  1. brown garlic cloves on medium fire. add cut chilli padi.

  3. remove prawns & squid and reduce stock.
  4. add back prawns & squid, off fire, add the spaghetti & toss.
  5. add some butter, so the spaghetti & sauce mix very well.
  6. top with some basil.

we started with some durians from ah seng. 🙂

i prebooked MSW (mao shan wang) 2 days before. still they ran out of MSW & told me i had to wait till past 6pm for another batch to arrive. i couldn’t so switch to golden phoenix + D13.

i was lucky i got my durians soon enough. as i was leaving at 4.45pm on a saturday, the queue had built up. these people just queueing to get a queue no.

i had 4 golden phoenix at S$49 + 4 D13 durians at S$29=total S$78.

as it turned out we were very happy with the golden phoenix + D13. D13 was flavourful but actually not as good as the other day. golden phoenix was excellent, very nice flavour, mild but lingering. ^^

the host made some lor mai kai 糯米鸡.

i like never take this except for dimsum. this one was very good, chicken very tender, rice was tasty, top slightly dry but inside ok. even ginger was nice.

after all these eating we started our movie. it was a korean movie “the man from nowhere”. quite a nice action movie, good acting.

after movie host drove us to the bark cafe just by changi prison. it was about 9.30pm. quite an interesting place.

when i started writing this review, i looked at other reviews. strangely they were almost all negative, only hungrybunnie mentioned that the smoked duck was good.

for the dishes we ordered for this evening, they were mostly ok, good by my standard.

the caesar salad was pretty ok, like any other caesar salad.

dish was overall tasty, razor clams no sand & not overdone = which should equal good la!

sauce i think was the xo type, so the strong flavours type, a bit robust, but then chinese style dishes supposed to taste this way.

the spicy beef tenderloin was a chef’s special on the menu. i asked & the server said it was tenderloin. i asked if preparation was chinese style, he said there was vinegar.

a friend said the beef was “joon” teochew for tough. actually for me it was ok, for this price not expecting the expensive beef cuts. i have never tried this preparation before, sliced like tagliata, not raw like carpaccio, & with quite a lot of vinegar?

anyway i quite like the taste, and texture was ok for me, just slightly tough.

for me also, the smoked duck was the best dish for the evening.

the smokey flavour was excellent, and the duck was juicy & tender. like hungrybunnie said, this dish belongs more to the atas restaurants, and they did it exceedingly well here. for me that was top restaurant standard. the mash & rockets were good too.

saw Gordon Ramsay’s slow roasted belly pork on youtube the other day.

decided to give it a try. very interesting! ^^

i used just 200g belly pork (instead of 2kg in the video), cut a smaller piece from 500g frozen belly pork bought at sheng shiong.

& didn’t have fresh whole fennel & host of other stuff, so used 1 small carrots + 1/4 corn.

din want to open a white wine so used red wine.

anyhow the belly pork turned out almost perfect – texture perfect & very tasty….

only thing is couldn’t produce the crackling skin…though it sounded crackling when ran with a knife, the skin was actually chewy & not edible. other the pork was excellent.

2 ways i thought i will adjust this, either reduce the time at 180degC then do 250degC for say 10 to 15mins, or just cut away the skin.

so method was same but my ingredients quite different from Gordon Ramsay-

  • 200g pork belly (cross-scored the skin)
  • 1 small carrot cut into 2 or 3 pieces
  • 1/4 corn
  • 3 cloves garlic
  • 3 star anise
  • 1 cut chilli padi
  • 3 bay leaves
  • 2 tsp fennel powder
  • 2 tbsp olive oil

fry the garlic, star anise, bay leaves, chilli padi in an oven proof mini wok. fry the carrot & corn & remove to allow space for the belly pork.

salt the skin & fry belly pork skin down. then stand the pork skin up held by the carrots & corn, & add –

  • 2-3tbsp red wine
  • 1 tbsp white wine vinegar

then put 180degC oven for 1.5hrs.

as Gordon Ramsay mentioned the nicely flavoured braising liquid reduced & cooked the pork belly while the skin is cracked (but this part i couldn’t get right yet).

the pork was delicious, just the perfect texture & wonderful flavours.

i will do it on a bigger 500g square slab later on when i have the numbers (of diners) to do. ^^

cannot find parking at 2pm, so went over to park at guthrie house. it charges by minutes – 4cts/mins 1st hour 2cts/min after, so 92cts for this time quite ok, no hassle. 🙂

i think the thing special about jln tua kong’s mee kia tar is mainly the chilli.

chilli was just very tasty & had the kick. of course noodles was qq, al dente. 🙂

2 OPS close friends came for lunch today on 4.8.2016. ^^

just 3pax so nothing much to do.

we are planning a OPS bbq to celebrate 3 birthdays in august 2016.

i though i might do a prepped pork ribs to bbq. so i tried it on my friends today.

it was same method as my mock kurobuta ribs, only that i chargrilled it after(not before) slow braising.

i had the ribs in a sealed oven dish with marinade in a 90degC oven for 5.5hrs.

then i chargrilled on a high heat non stick pan with a bit of butter to approximate bbq.

it was a wonderful tasting ribs, very flavourful both from the marinade but also from the slow braising which dissolves the fat & convert the collagen (connective tissues) to flavourful gelatin.

i did 3 other dishes.

was trying to replicate the prawn tifu dish at sik bao sin.

my dish was tasty not no comparison to sik bao sin.

i did a minced meat prawn sauce with the usual oyster sauce & fish sauce & white pepper.

as one friend said, my dish didn’t need recipe, just a general knowledge of mixing condiments & cooking the right texture.

i shallow fried silken tofu, wanted soft texture inside didn’t want to use the tau kua, or the egg tofu. maybe i try egg tofu next time.

looking at sik bao sin’s photo, actually they deep-fried the tofu. i hate deep-fry use so much oil

then the ingredients were ready, so just a matter of putting them together in a wok when friends arrived.

i didn’t have any veg in the chiller, literally emptied out, so i just used the leftover 2 stalks of leek & the potatoes.

came out a very tasty dish! both the potatoes & the leek. very nice! 🙂

i fried the potatoes separately. the key is not to overcook. potato cook test is to push it against wall & if it breaks into halves means it’s cooked.

an even better test of course is to eat a piece, which was what i did. 🙂

the leek has to be covered & braised after frying in garlic & cut chilli padi, so soft & still green, and very sweet with the oyster sauce & fish sauce.

like my friend said, this kind of dishes no need recipe la! ^^

though still quite nice, it was nevertheless a slight disappointment for me.

all 3 of us thought the sauce was very nice.

i used 3 tbsp of top quality light soy sauce 陈年生抽王, 2 tbsp olive oil, 2 tbsp mirin, & that’s it. i used that for red garoupa, soon hock, song fish head.

& to demo at my cooking demo at teban gardens community service centre on 29.4.2016 becos it is so easy anyone can do this, which is the purpose of a cooking demo, so everyone can do it afterwards.

for pating fish i added finely chopped ginger & garlic, and some cut scallions.

so the sauce was nice, but 2 of us thought the fish was not the very fresh type. the meat had a touch of powdery & not the super fresh bouncy type.

still ok texture & good taste to eat, but below par for me la… 🙂

the pork loin & belly pork were slow braised first. i forgot to add salt & pepper when frying. it was better when i added salt & pepper on the board for dipping. didn’t have good mustards also. must buy!

all the friends liked the leek, a tasty dish.

it’s comfort food 家常便饭 so i just cooked what is in the fridge.

i had a fatty pork loin, so cut out fat for crispy lard & used lard oil for white bee hoon.

had small piece leftover pork belly & cut 1/2 of pork loin for slow braising then chargrilled.

no vegetables in fridge so used the only leek left & cooked with leftover pork (sliced pork).

did a kong bak 鲁腩肉 for teban gardens community breakfast this morning on 5.8.2016. ^^

this my 16th friday breakfast community meal at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

next monday 9aug2016 is national day, so every of the staff & volunteers decked in national colours red & white. ^^

& today they have special catering, more food for the residents! 🙂

for my kong bak 鲁腩肉, i used my kueh chap recipe. maybe will do a separate recipe later.

basically i used my “cold crockpot method”. about 1.2kg pork belly in crockpot make sure braising sauce covers pork. turn on low for about 5hrs or meat thermometer temperature reaches 90degC. this will give very tender belly pork that is still firm have good bite & not falling apart.

braising sauce –

  • 3 tbsp dark sauce
  • 5 tbsp light soy sauce
  • 2 tbsp zhengjiang black vinegar
  • 1 tbsp heap sugar
  • 1 cinnamon bark
  • 2 star anise
  • 2 cloves
  • 1 bulb peeled garlic
  • 3cm sliced ginger
  • 1 tbsp 5-spice powder
  • 1 litre water (enough to cover pork in crockpot)
  • salt to taste (about 2 -3 tsp)

when done removed pork, strain the braising sauce & cook the tau kua & tau pok about 15mins. 🙂

it was very easy to do. defrost, clean with salt water.

placed on steaming tray. added 2.5tbsp light soy sauce, 2tbsp olive oil, 2 tbsp mirin, and added cut chilli padi, sliced ginger, scallions.

then in the steam oven (or a steamer) for 13mins….voila!

the fish head was just so tasty & delicious.

the light soy sauce very important. i used top quality 陈年生抽王,top quality la…very “pang”.

this the smaller 1/2 of the fish head. i bought S$6.90 whole head from sheng shiong on saturday, ate 1/2 with friends on monday & having the 1/2 in the freezer.

kurobuta set S$25

the server (good lady) recommended the kurobuta set.

it was good. we liked every cut, 3 spanish on the left & USA on the right (above photo). 🙂

wife liked secreto best & also the collar (second from left) today which was not too fat. can be quite fat sometimes & not so good.

i liked all the meats. & while the jo karubi this time was good, the kirobuta set was much better value, and together an excellent combination.

we were offered a complimentary red tea ice cream. first time, & we have dined here several dozen times. 🙂

good gesture. the tea flavour was strong & nice. it was sweet, maybe could not say too sweet, but sweet. 🙂 we took about <1/2 each.

dinner was S$101 inc sake. not cheap but i think quite ok & we enjoyed dinner very much.
