Prawn & Oyster Beehoon (the Crab Beehoon Style)

recently a friend bought 4pax dinner & crab beehoon at seng kee on 1.2.2015.

we were all quite disappointed with the food, especially the crab beehoon which cost S$70 after my friend was given a special discount.

i was thinking, maybe i should cook this myself. it did not look difficult at all.

subsequently i did have a very good S$60 crab beehoon (i think at this price all stalls selling crab beehoon must at least be of this standard) at kamjiazhuang organised by my daughter on 7.2.2015.

anyhow, today i decided to give it a try, on 26.2.2015. ^^

i didn’t have crabs & did not intend to get crabs to experiment, so i did a flavourful stock of prawn heads & shells with salt & oil. (i did the same for my chilli crab pasta w/o crabs).

i fried some chopped shallots, garlic, 2 chilli padi & 1 cm sliced ginger in oil in a wok on medium to a nice aroma. then i added the cleaned chinese cabbage & fried till it softened, and added some fish sauce. i removed the vegetables and added about 200g of beehoon softened in cold water & stir fried a short while. then i added the prawn stock together with the unshelled prawns & turned the fire up to reduce the stock. i added 2tablespoon of oyster sauce & 1 tablespoon of cornflour.

once the stock was reduced and checked for taste & making sure the beehoon was not overcooked, i added the oysters, covered it with the beehoon & off the fire.

& it was ready to serve. voila!

for me the test was –

1. that the shellfish stock flavours were infused into the beehoon (入味)
2. the beehoon are NOT marshy, stick together

i had tasted the dish during cooking, so i knew it was tasty & flavourful & the shellfish stock was properly infused. overall i was quite satisfied with the result, so maybe will try with crab or lobster.

while the current preparation was not really superb, it was still probably better than seng kee’s which was more like a singapore fried beehoon than a crab beehoon.

c/w with kamjiazhuang’s crab beehoon & ming kee’s crab beehoon though, mine was quite some way to go. so let’s see if i can get close using crab instead of prawns.

funghi risotto was very good, a good restaurant standard, intense aroma and taste.

i like the crab risotto even better than the funghi.

& i am usually not so hot on duck confit but this was good, nice crispy skin & tender, soft meat, not sinewy which was often with braised meat & some duck confit, the reason braises are not my favourite.

i liked also the pesto tagliatelle, though pesto can be overpowering if taken much, but this was an excellent accompanying portion.

the kurobuta pork cheek with gnocchi was another pleasing dish. i liked the tender & flavourful pork & also the gnocchi.

we had a dark chocolate tart to share. nice too. deconstructed.

the bill for 4pax include 1 glass of wine (S$6) was $107 about S$27pax nett,  a perfect family evening out, nice food & ambience.

food was mostly better or as good as petite menu, which my daughter said was now closed, and some chef had gone on to start portico, a new eatery. i guess that would be our next family go to place to try out.

spicy crab spaghetti was very good, same as what we had last time on 5.10.2014 but w/o the 1 for 1 discounts.

there were lots of crab meat & a good arrabiata (spicy tomatoes) sauce.

wife liked the bruschetta with melted cheese, cherry tomatoes, parsley (or basil) & good bread. we can make this at home.

son was leaving for london the next day. this a good place to chill, not cramped & crowded like assembly coffee, and parking was free. we had nice, relax chat & good time together. 🙂

OK but Expensive Seafood @ Rainbow Restaurant Lamma Island on 27Sep2013

油局蟹 - oil or butter baked roe crabs

油局蟹 – oil or butter baked roe crabs

was with a few friends in hong kong over the weekend 27-30.9.2013, mostly just hiking & makan & some shopping. 🙂

a friend booked rainbow restaurant at lamma island which i had also wanted to try. the restaurant offered a private ferry pick-up at central pier no. 9 & also tsimshatsui star ferry pier where we boarded (usually at the private pier no. 5 this time at no. 6). it was quite a fast boat & good fun 30mins ride sitting on the deck level feeling the night breeze & looking at the string of pearl-like lit coastlines & beautiful night skylines of central & repulse bay. 🙂

we were debating how 南丫岛 get to become Lamma Island but soon realised that 南is lam & 丫is ah in cantonese so its like lamah or Lamma Island. 🙂

we were served (and charged) a pickled jelly fish & cucumber plate, which was good. the seaweed egg littleneck clams (la la) soup was quite good though 1 friend said it was not as good as before. the steamed sea prawns was excellent, really sweet & fresh. the mantis prawns (2 large ones) in salt & pepper 椒盐濑尿虾 was good too. most friends liked this, some felt a bit salty. i was ok with it – meat was sweet stuck a little to shell. the last one i had at chung cuisine at times square was much better though, and the ones we had at Keong Kee the next day was small but also good & a lot cheaper. 🙂

the 油局蟹 (oil or butter baked roe crabs) at the top photo. we had wanted 黄油蟹 yellow roe crab famous in hk & south china. there weren’t any & the stall recommended this which was a poor substitute roe-wise, the crab meat though was very sweet & compact – i liked it but price was ex.

garlic  fried kailan

we had wanted the larger razor clams 蒜茸蒸garlic steamed. unusually, the seller was more insistent than us that it was better fried & we should have the venus clams garlic steamed instead, so we picked the smaller ones, feeling that it was a waste for the large clams. i quite liked this dish, though would have preferred large ones garlic steamed. it was still better than the garlic steamed razor clams at Keong Kee the next day though this was a lot more ex. so far in HK, we had not had the same excellent razor clams that we had commonly in any singapore seafood restaurants, probably because we didn’t know where to go to have them. btw, i also did a good steamed razor clam in garlic oil myself.

i not much into the garlic steamed venus clams with tanhoon 蒜茸贵妃蚌. it was quite good but never a favourite with me, should have insisted on large bamboo clams. 🙂 a friend loved the garlic fried kailan (just like me, i like all vege in hk). 🙂

the fruits, particularly the pineapples, were very sweet. a friend went over to the neighbour stall to get ginger syrup tau huay. it was very good & smooth. 🙂

the dinner came to about HK$2300 for 7pax = HK$330. i felt it was rather ex for the food we ordered in a hk seafood restaurant. another friend said he had much better at lei yue mun 鲤鱼门. anyway it was a very pleasant, relaxed & enjoyable evening, night breeze in the hair, string of pearl-like litted coastlines & beautiful night skylines, great company & food. i will definitely come back but, as with any restaurants, will need to pick the right dishes. 🙂
