Funghi Risotto – Simple & Wonderful!

made a fabulous funghi risotto today on 18.3.2015. ^^

bought 2 boxes of 250g white button mushrooms from sheng shiong earlier i think it was on sale like S$2.80/pkt. they were turning brown though so i had to cook them & i decided it would be fungi risotto.

youngest daughter was just back from library, taking her exam last paper tomorrow & wanting to have food. & this was something easy to prepare. ^^

everything was excellent. good intense mushroom flavours, just enough creamy texture, very nice texture of rice, slightly al dente in the centre.

even when i got back from dinner (my wife & i were going out to enoch’s for dinner so we had just couple spoons before we went out. my daughter had most of it but left some in the microwave), the risotto was not mushy, still moist & individual grains, flavourful & intense. very nice!^^

i looked up the recipe i used last time (2 years ago) as i had not cooked this since.

i said then –

It was just so satisfying but also spoke volumes of Foodwishes.com Chef John’s baked mushroom risotto recipe that I could reproduce such a great dish with ease even though this was my very first risotto. 🙂

looking at the beautiful photos then, it was probably as good or better than what i did this time, but it was quite some time back, so i enjoyed it just as much this time.

i had the mushroom sliced & then placed in an oven proof pan with butter (20g or 1+ tablespoon) & 1 teaspoon salt. i went through the dry, wet, dry process, about 10mins until pan was almost dry & mushrooms started to caramelise.

meanwhile i chopped 1 large yellow onion & added to the pan & fried till soft (about 5mins). i also washed 1 cup of arborio rice, added to the pan & fried with the mushrooms & onions.

i thought i had vegetable stock in the fridge but i did not. so i had to improvise. i mixed 1 teaspoon sugar, 2 tablespoon mirin,  1 tablespoon sake & 2 tablespoon tsuyu in 1 cup of water, tasted it & i liked the taste. i added this to the pan so it just fully covered the rice & put to medium high until the liquid boiled.

i placed the pan in the oven preheated to 205degC & baked for 10mins. i removed & tasted the risotto. taste was good & centre was still hard. then i added water to just cover the risotto & added 1/3cup (80ml) thickened cream, put to high heat to bring to boil then turned to medium heat, stirred & reduced.

it probably takes 5mins to reduce. taste to make sure that risotto is not overcooked & still al dente in the centre.

it was a very good standard risotto. ^^

Shiok Home Lunch for 9pax Friends on 9Mar2015

did an interesting & fun 9pax lunch for my RI friends on 9.3.2015. ^^

this time i did –

  1. “hong lim FC curry chicken noodles”
  2. chilli crab angel hair w/o crab
  3. crabless beehoon (with prawns & large oysters)
  4. a char siew pork neck & curry miso belly pork (both first try)

a friend brought very nice appetising achar made by his m-i-l.

i started the 2 dishes – crabless beehoon & chilli crab angel hair pasta when all my friends arrived at 1pm+.

all the ingredients were ready, so i just fried chopped shallots, garlic, chilli padi & sliced ginger to get a fragrant aroma then added & fried the beehoon which were softened in water. i then added the intense prawn stock & prawns (with shell) & the chinese cabbage & reduced under high fire. i added oyster sauce & corn flour & when almost done, i added the large oysters & some cooked prawns (shelled) which i had earlier fried in butter. voila!^^

it was delicious! the beehoon was well infused with very intense shellfish stock. prawns & oysters were plump & tasty. 🙂

chilli crab angel hair pasta was the easiest to do. i had earlier browned some garlic cloves in olive oil, & so emptied these to the pan. then i added the prepared chilli crab sauce & brought to boil (i was distracted & forgot to add an egg which is standard for chilli crab). then i added the angel hair & same pre butter-fried prawns, off the fire & tossed. then topped with fresh basil front he garden. that’s all to it!^^

the angel hair was great in soaking up the chilli crab sauce. my friends liked this dish a lot. 🙂

for the “hong lim FC curry chicken noodles”, this had to be served last. first its stronger taste would mask the other 2 dishes. second, it has to be served hot in individual bowls – would be completely cold after all the group photos etc.

1 of the key ingredient was the poached chicken 白斩鸡. & my was really good, among the best.^^

the curry was more difficult, but on this second try, i think it was quite close to the real thing.

i am benchmarking hong lim FC ah heng curry chicken noodles. i have to say between the 2, i will still go for ah heng’s, but mine was pretty close la… 🙂

my close friend’s brother just started a prawn noodle stall Why Eat Har last week, and some of us had already tried it.

i was sharing that it was such a difficult thing to achieve. for me, his prawn noodles was already among the best & serving in large volume to paying customers, but for me, i can get close to ah heng’s curry chicken noodles but still not quite!

char siew was 1st time using pork neck & also this preparation. char siew sauce was the same recipe i used previously but i used slow cooking for 8 hrs in the oven (at 90degC for 2 hrs and 80degC for 6hrs), then browned slightly at 250degC for 15mins.

char siew was flavourful & tender. many friends did like the taste, but i felt it was not anywhere near a good quality char siew, so i may experiment a bit more with it.

the curry miso belly pork was edible but many things were wrong with it. i made a very good curry miso lamb recently (1st try) so had wanted to experiment on belly pork.  for the lamb i added stock & vegetables & the result was like a casserole, very flavourful, tender & moist. but i decided to do this using just the dry rub. the result was the skin was tough not quite edible & the curry taste was too strong & not moderated with the miso & vegetable sweetness. got to rework this.

wife brought back hotate sashimi, ikura, uni & hairy crabs from hokkaido after her skiing holiday yesterday.

we took the uni earlier as that could not keep.

this evening, we made our own hotate ikura don, plus hotate sashimi & hairy crab.

i made some tamago – japanese pressed egg omelette.  tamago texture & taste was very good, but the shape was not yet right. need some more practice, haha!^^

we had very good wasabi. we did not have the sushi rice vinegar, so the sushi rice was not ideal, but overall it was an excellent don.^^

we also used the nori (seaweed) to make a temaki (hand roll).^^

3 Days of Non-stop Feasting @ Chinese New Year 2015 (19-21Feb2015)

as usual, had a very foodful chinese new year. it was just a spate of continuous eating, meals & snacks. no matter if i skipped meals, as there were continuous munching of snacks to fill the gaps, so weight watching was quite simply a lost cause.

this year i made buddha-jump-over-the-wall(BJOTW), 1/2spicy duck 盐水鸭 & using the same marinade, a spicy belly pork.

the BJOTW was a poor man’s version. apart from a can of 6 pieces small abalones & good thick mushrooms, the other ingredients were cheap (limpets) and mostly unhealthy (pig trotter, pig ear, belly pork, pig head meat).

look was impressive (top photo), taste was pretty good. but i was not overly impressed with my own effort. there was too much food anyway & didn’t really need more unhealthy food – will skip this next CNY.

my sis brought the pencai 盆菜. flavours was very good, and the small abalones much better than what i had. this year pencai 盆菜very expensive everywhere. hers was a very much cheaper one only S$138 for 6pax.

my s-i-l’s mom made the braised pig stomach (though nowadays the person actually making it was the helper). this a dish i always like.

my niece made very good char siew & roast pork. she made a small business of it, selling 20kg of the tasty dish over the internet.

my spicy duck 盐水鸭 was good too. it was a lighter version c/w my teochew braised duck. in fact this dish is served as appetiser in shanghai, nanjing, jiangnan locality.

my brother bought very large mantis prawns, 5 pieces for S$35. i did not take any. it wasn’t too great also but certainly looked nice. the chilli though was very good, better than most chilli crabs. 🙂

i liked all the vege.

my brother tried eating out for 3 years for CNY eve. we went to joyden (previously called west coast seafood). food was quite good & not too expensive, however with say 13pax or more, it still came to >S$600. all of us cook, so it was so much more fun just to cook some dishes & bring over. i definitely preferred our own homecooked CNY eve dinner. ^^

CNY Day 2

CNY Day2 is my wife’s tradition. she would invite her brothers & sister & their families (nephews & grand nephews & grand niece).

this year we took a family photo. & there are 26pax + our dog rusty. ^^

i made my usual poached chicken 白斩鸡. this time it was especially good – colour, texture, sweetness! everyone just loved this dish.^^

the miso pork was very good too. this the longest i put in the oven, 8hrs at 90degC/85degC.^^ the result was excellent. the miso marinade gave it excellent flavours & the slow low-temperature braise an excellent texture. i have learned that 90degC is the optimum temperature to convert collagen to tasty gelatine & texture, so this made the miso pork texture & bite really good!

for my niece & her husband who are vegetarians, i made a funghi linguine. also for my wife’s sister. it was really good. they all loved it, and there was a bit of leftovers for the nephews.

after that it was my tofu cheese cake & tiramisu, which disappeared in no time.

12-course Homecooked Buffet Dinner for RI Reunion Committee & Friends on 6Feb2015

had a homecooked dinner for 22pax RI friends on 6.2.2015. 🙂

these group of friends were mostly of the committee that organised the recent RI reunion dinner on 22.12.2014 attended by 118 old schoolmates & 10 teachers. well done people!^^

i prepared 12 dishes including 2 desserts. & a friend brought shepherd’s pie & another brought cookies.

shepherd’s pie was very good. my daughter had some from the little leftover the next day & she thought the potatoes were moist & soft & the beef flavour was good.

maybe i should try making this too. shepherd’s pie is a great party food.

#1 my helper’s thai prawn tanhoon is usually a very appetising dish, spicy, tangy, tasty. this evening though it seemed to be a bit dry. about 1/4 was leftover (where usually it is finished). a friend (who comes for dinner regularly) later told me that some parts the taste was not quite the usual he had. not sure why, maybe the quantity was too much for the wok & the tanhoon was not mixed consistently.

#2 i did a Nobu miso cod.  it can be pre cooked & served cold, and the miso firmed up the flaky texture of cod so it is easier to cut into small serving pieces.^^

#3 i did my usual poached chicken 白斩鸡. this is easy to prepare dish. on this day though, i was dreaming & removed the chicken after 10mins boiling (w/o poaching it for another 20mins) & placed in ice water. though i recovered by poaching it again for longer 25mins, the temperature change caused the parts near the bones to be red/pink when i deboned it later. so i had to poach the cut pieces another time. sian! haha!

i asked several friends afterwards & they all thought the chicken was alright (& well finished), i guess it was quite ok but the moist, glistening look (like the duck had in photos below) was gone & the meat would be less tasty.

#4 盐水鸭 spicy poached duck was a replacement dish (i went 3 times to get salmon belly for miso salmon but they were unavailable). this nanjing 盐水鸭 is a 风味鸭, a bit more exotic flavours with sichuan peppercorn chillies.

it is 1 of my favourites as it has less strong flavours c/w teochew braised duck 卤鸭 & is often served as a starter in taiwanese restaurants & in shanghai, nanjing etc, the 江南region.

#5 蒜泥白肉 spicy garlic pork had been a crowd favourite in my dinners (when i served chinese food). it was easy to make as i adapted the pot roast method (cold crockpot on low slow gentle braising). so i just needed to place the belly pork in a cold crockpot with water (added salt & sugar for brining) on low for 5hrs to temperature 79degC.^^

the only thing left to do was just to prepare the spicy sichuan sauce to drizzle over the pork & japanese cucumbers.

#6 my helper makes a very good spicy pork ribs, so that is a staple in my chinese dinners. one friend repeatedly proclaimed how much he liked the dish.^^

#7 my dry wok prawns combined pan-grilled bbq flavours with a baked-in-shell moist texture + the nice flavours of chilli padi & fish sauce infused under high wok temperature. always a popular dish.

#8 my helper’s sambal seabass, another bedrock of my chinese dinners, was almost cleaned up before my “professional photographers” had time to train their cameras.^^

#9 the spicy seafood fried rice was modelled after crystal jade lamian xialongbao’s. unable to match that, but it was pretty good with bismati long grain rice & nice sichuan peppercorn chilli flavours.

#10 my helper’s poached romaine lettuce with shitake is also a regular in my chinese dinners (usually she uses hk kailan but this time it was romaine lettuce just as good).^^

#11 everyone fell in love with the tofu cheese cake. maybe the trick was just to cut an ultra thin slice, so everyone thought it was so good & clamouring to have more. a friend had 3 helpings.^^

#12 one friend had a photo with him holding up the emptied tiramisu dish & biting the serving spoon (like nadal biting his grand slam champions trophy). i think tiramisu was just as well received but tofu cheesecake was a bit less common so everyone was intrigued by it.^^

now i am thinking of trying almond & shortbread. mamor looked too exquisite & too high effort-to-results ratio for lazy & utilitarian me. told her if i want it, i will just invite her. haha!

another friend brought 6 bottles of wine & another the whole ice box with water & softdrinks.

there was also grapes. another friend packed a fruit basket for me so we were eating custard apples, mangosteens, chiku, guava, mango etc for the next several days.

& a friend brought some seaweed & almond biscuits.^^

it was really a fun, enjoyable & most satisfying get-together.

Wonderful Homecooked 11pax Dinner on 22Jan2015

made 1 of my best dinners on 22.1.2015. ^^

invited a few close friends. my weekly running partner brought his son, and my dentist friend brought his daughter.

also invited my god sis & her husband.

this time, i reverted to a sit-down course dinner. for a start, i served 3 dishes as tapas.

#1 we had an excellent pumpkin tofu salad. this was my wife’s creation. my helper toasted the pumpkin & fried & cut the tofu & mixed in the extra virgin olive oil, balsamic vinegar, sea salt & agave nectar the night before, and my wife tossed in the rockets just before starting dinner. 🙂

#2 miso cod is my god sis’ favourite. she mentioned it so many times. ^^

i have not made it for a long time as my wife prefers the texture & taste of plain grilled cod. i had it in the oven for a tad too long but managed to rescue it, only had to take off most of the skin. still it was excellent to my taste, both the firmer texture & also the miso flavour. my god sis liked it very much & had 2 servings. i liked it as much as the plain grilled cod & slightly better than my teriyaki cod. this dish was prior done about 1 hr before dinner.

#3 the tagliata di manzo (using 150D grain-fed ribeye) was really quite excellent this evening, very well charred for maillard reaction. i did the steak only when all guests had arrived. also seasoning the rockets & cherry tomatoes with olive oil & balsamic vinegar was done just before plating & serving so they would not be soggy. plating was a bit rushed & not ideal this evening.

#4 after the 3 tapas, i served the lobster bisque, very nice mellow & intense flavours with good amount of brandy, not too creamy. very nice. my friend’s daughter took a second serving.

#5 lamb is usually not such a favourite among my dinner guests, but my friend’s daughter loves lamb, so i did 1/2 a rack of pistachio crusted lamb. i bought at mmmm at west coast plaza & the lady instead of cutting 1/2 rack started to cut out 2 slices before i could stopped her. so i had to improvise & used a kitchen twine to hold the 1/2rack together. again i have not done this for a while but the rack turned out very well. i managed to cut 5 pieces. my friend’s daughter had 2 helpings, my friend’s son & another 2 friends had the lamb.

#6 lobster spaghetti was just splendid this evening! very tasty & good chunks of lobster meat (i used 2x375g frozen lobster from cold storage). the lobster head & tomalley (liver etc) were excellent. i thought though using capellini (angel hair) i did previously would be better both in looks & texture.

#7 my own version of  “monterosso miky” seafood risotto was wonderful this evening. very very tasty, with excellent lobster & prawn stock balanced with lots of vegetables. the carnaroli rice i bought at stresa, lake maggiore was excellent & the texture was just al dente. 🙂

#8 the squid ink pasta was also very good. i had squid & lots of manila clams which were plump & succulent. i agreed with my wife though that the manila clams were much better done the asian zi char style with curry leaves & olive oil, & lose some of the distinct taste & flavours, and tasted only like good littleneck clams “la la” in this preparation.

#9 i had a japanese A4 wagyu which was better served as a separate dish than together with the tagliata di manzo & rockets. the 150D grain fed ribeye earlier was very good, but this was par excellence!^^

#10 we rounded off with my tofu cheese cake, as good as always. ^^ wonderfully light texture, mildly sweet sour with lumen juice, yogurt, whipped cream, silken tofu & cream cheese, & a nice biscuit base.

i was just happy to have the cosy, warm get-together with my close friends, and very happy & satisfied with the dishes & dinner. 🙂

Quick, Simple Home Dinner on 9Jan2015

bought some live manila clams & mussels from sheng shiong in the morning.

the manila clams were expensive this time at S$13.90/kg. mussels were priced as usual at S$3.50/kg. i bought 500g mussels & 600g+ manila clams. 🙂

i decided to cook the manila clams & mussels differently.

for the manila clams, i cooked with curry leaves, chilli padi, sliced ginger, oyster sauce & starch, similar to the wok-fried manila clams i did last time minus the white wine, orange peel & butter.

for the mussels, i decided to use the western mussel pot style. i used butter, chilli padi, sliced ginger, sliced orange peel & white wine, & added a teaspoon sugar.

as my youngest daughter decided to join the 2 old folks, i added a oyster omelette. i used the large frozen oysters, fried the egg first, pushed that to one side, put pan to high heat & added the oysters, and stir-fried for short while (about 20secs).

very nice wok hae (flavours) for all 3 dishes. manila clams had the best flavours.

a friend organised for us to watch exodus (& we had light dinner at timhowan at west gate mall after the show). got homecooked lunch thrown in some more. fully fed before crossing the red sea. haha. ^^

another friend came later & brought back the thai curry & some other food which they then had for dinner after “dry swimming” & was singing praises on how good the thai curry was over whatsapp.

the teochew ah hia bought some “her poon” cooked fish (鱼饭) = 1 “gnor soon” (treadfin), 2 “ang huay tor” (yellow croaker or 小黄鱼) & some silver fish. the friend prepared some bean paste 豆浆 & some “sng ni chor” 蒜泥醋 for fish dip. great stuff!

i am teochew & though i like cooked fish (i mostly prefer mullet 乌鱼) i am not overly enamoured with them. we managed to finish 1 treadfin & 1 yellow croaker & some silver fish among us.

Fun 14pax RI Friends & Spouses Homecooked Dinner on 18Dec2014

invited my regular group of RI friends (this time with spouses) for a homecooked dinner on 18.12.2014.  we had 14pax = 5 couples + 4 guys. 🙂

i prepared mostly pre-cooked food that could be served buffet style, so we could all sit down & enjoy the food & conversation together. 🙂

planning was important. i intended several items which i cooked/made final preparations only when all the guests arrived – tagliata di manzo (angus striploin steak), dry wok prawns, pumpkin salad, fried rice.

in the end timing was quite well managed for dry wok prawns & fried rice. for the salad & the rockets/cherry tomatoes bed for tagliata di manzo, they were done too early & the rockets were soggy (unlike my recent lunch which the pumpkin salad & the rocket bed for tagliata di manzo were quite perfect).

#1 my wife’s pumpkin tofu salad was an excellent dish when i served during the recent lunch.

this time it was a bit lacklustre. seasoning with sea salt, olive oil & balsamic were done too early. somehow pumpkin was not as sweet.

#2 beer can chicken was good as usual – tender, moist, tasty. 🙂

#3 oven grilled miso salmon belly had been a favourite with my family (& friends also during recent lunches), and again a favourite this evening. 🙂

#4 teriyaki cod was good as cod goes. i made it very much less sweet & healthier (no sugar only mirin this time).

#5 the 6hr “sous vide” miso lamb shoulder chop was ok, very tender, with strong lamb flavours nicely masked by miso.

#6 tagliata di manzo (using angus striploin). the bed of rockets & cherry tomatoes were mixed too early so a bit soggy.

steak was medium rare & flavourful, but i was slightly distracted & the charring was somewhat insufficient to produce good enough mallard reaction. also the angus striploin, unlike ribeye, had a bit of tendon, not so ideal.

#7 spicy belly pork 蒜泥白肉 was simply wonderful. it was slow-braised using cold crockpot on low almost 6 hrs to 79degC. belly was very tender & the sichuan 麻辣 chilli mix was excellent. 🙂

#8 my dry wok prawns is of consistent good standard, charred & flavourful, taste of chilli padi & fish sauce.

#9 my spicy seafood fried rice will never get to crystal jade standard, but it is also consistently good, nice wok hae & flavours with lots of prawns & squid.

it was a lovely 2-layer vanilla cake with banana in between & covered with chocolate ganache – a really standout first attempt by him! 🙂

#12 my no-bake tiramisu is now another crowd favourite. it was 1 of the easiest dessert to make.

a friend brought a #13 healthy peanut candy (held together by maltose instead of unhealthy sugar), it was nice.

i had a #14 pumpkin cheese cake on standby. i sensed that the friends wanted to try, so it was served & we managed to finish 1/2 the cake. it was ok but not as good as the pumpkin cheese cake we had for our recent lunch which was really good.

Lobster Linguine in Spicy Pink Sauce & Lobster Bisque on 7Dec2014

bought cheap cooked lobster S$26.90 1 for 1 (i.e. 2x375g) from cold storage. ^^

cut lobster in 1/2 and shelled the meat including pincers & legs. put those with prawn heads & shells to boil as stock base for lobster bisque.

put butter in pan on high heat, placed 1/2 lobster heads with tomaly side on pan, added brandy & flame & let it flamed off. then added in cooked lobster meat for quick stir fry. set aside.

added 1 can whole tomatoes and 1 diced fresh tomatoes to 3 tbsp olive oil, some water (from boiling linguine) & some lobster bisque. added the can tomatoes & fresh tomatoes. added paprika &  heavy cream to the tomato based sauce to create the spicy pink sauce, & added sea salt to taste. set aside.

cooked linguine to just before al dente, and drained.

when serving, reheat the pink sauce. added the lobster head & meat, off the fire & add the linguine & toss.

voila!

for the lobster bisque, boiled prawn heads & shells & lobster shells for 1 hr or longer.

cooked diced onions, carrots, potatoes (i did not have leek & celery) in pan with olive oil & butter in a large sauce pan till soft. added 1 tsp turmeric for colour.  drained the lobster stock into the sauce pan with a strainer, then used hand blender to blend to smooth. added heavy cream & 2 tbsp brandy & sea salt to taste.

i also prepared some caramelised shimeji mushrooms to garnish the lobster bisque.

a very tasty bisque & pasta lunch.

only 2 of us eating dinner at home last evening.

our helper cooked a mee sua soup (面线汤), a simple dish put together by wife.

mee sua (面线) is a very thin wheat noodle, can be a light, tasty meal especially in soupy preparation.^^ 🙂

kang kong (morning glory) & tau gay (bean sprouts) were blanched & set aside.

prawns were pan fried & minced pork cake cooked in the stock, & set aside.

when serving, cook the mee sua in the stock, serve & add kang kong, tau gay, prawns & minced pork cake. most important add chilli padi. brings out the flavours wonderfully. ^^ 🙂

10-course Homecooked 11pax Western Buffet for RI Buddies on 6Nov2014

did another of my homecooked meals for my friends for lunch on 6.11.2014.

usually for western dishes,  i did sit-down dinners serving course by course. but there’s advantage in having pre-cooked food & serving as buffet. though i enjoyed every minute of cooking (& often experimentation) for family & friends, the purpose is not just about food & cooking but to be part of the conversation & shared memories. 🙂

for this lunch, i did 10 dishes. 🙂

the best dish, most popular by far & winning hands down, was the #1 oven grilled miso salmon belly – marinated & kept in chiller for 3 days & in the oven for 15mins at 25odegC. taste was excellent, perfect combination of flavours.

the #2 miso belly pork was an experiment. i used the same marinade for the miso salmon belly. i did slow braising using cold crackpot to 79degC, so the pork belly was very tender before marinate. however my marinade was just too little & did not infuse the flavours well. also i used the same 15mins oven grill to do the sliced pork (to save electricity). i think i need to use a hot pan on high heat then the searing could be done very quickly w/o overcooking the already cooked meat.

#3 the beer can chicken was another experiment! i brined a small 1kg whole chicken in usual sugar & salt (but boiled with a packet of chinese tea this time). i put sliced garlic under the skin & use a bbq meat dry rub. then i did the usual beer can chicken oven grill at 250degC for 25mins & 175degC for 15mins.

wa..this chicken was really tasty, moist & tender – my best roast chicken ever. 🙂 but no hint of any tea flavours though!

my helper prepared the pumpkin tofu salad. it’s a dish put together by my wife after dining at some place that served that. i could do this but my helper did this regularly for my wife’s packet lunch, so i got her to do it.

i did the extra virgin olive oil, balsamic, sea salt & honey (did not have agave nectar) mix, and did the tossing when about to start the meal. 🙂

#5 striploin was another experiment – slow crockpot braising to 52degC (rare) placed in fridge overnight then pan grilled. i did this before for my daughter’s packed lunch. she said it was very flavourful.

today though it was overshadowed by the #7 tagliata di manzo, which had a better usa harry’s grain-fed angus striploin cut & was done on the spot just before start of the meal. 🙂

#6 kurobuta was prepared in the same way – slow crockpot braising to 79degC (well done) placed in fridge overnight then pan grilled.

the meat itself was very flavourful so the dish was well received. this was an experimental variation of my usual pan-grilled kurobuta.

i wasn’t confident of the result of the slow crockpot striploin so had a back-up usa harry’s grain-fed angus striploin which i decided to cook anyway.

#7 tagliata di manzo is commonly served in italian restaurants. e.g. as 1 friend mentioned during lunch, capri, but also in say alborgo, valentino etc.

i did this #8 “monterosso miky” seafood risotto with a vegetable base & prawn stock, so it’s a tasty dish. the prawns & squid were fried in butter separately, and the live mussels were cooked separately in butter, chilli padi, sliced ginger & orange peel. mussels were very tender & tasty too.

the #9 squid-ink seafood linguine was good too. one friend liked it especially for the mango clams. 🙂

the #10 pumpkin cheese cake was my second try. a really lovely cake. the first i made for family dinner on 24.10.2014 was very good. and it’s great that this one was just as good.

a very nicely balanced cake. it was though a bulkier cake than the other lighter cakes i made, and while i liked it a lot, it was a cake that i would probably not take 2 helpings at one go.

wife made a very nice quinoa salad, with some avocado & roasted nuts. i really liked this. she brought this salad with some packed food sometimes for office lunch in.

i recently came up with a new very light miso salmon recipe. this was quite different from the miso belly pork & nobu miso cod recipe which used a lot more miso & infused flavours. i served this to my friends during 11pax lunch on 15.10.2014 (first attempt of the new recipe). they all loved it. & i did this the second time this evening. again it was everyone’s favourite. even my wife & eldest daughter who generally didn’t like salmon that much, liked this dish.

i did a pan chargrilled kurobuta. it was not as good as the other day. i should not play safe & try to cook it totally well done & have it just a little pink instead.

the tagliata di manzo (sliced pan chargrilled beef) was excellent today, both the USA grain fed ribeye & australian wagyu MBS 4/5, very nicely charred for maillard reaction and nicely medium rare. my wife did the very nice restaurant plating with rockets & cherry tomatoes. 🙂

i did a squid-ink linguine today, with squid & littleneck clams (la la). it was excellent, and the la la were done very nicely. 🙂

& i have kind of perfected my “miky monterosso” seafood risotto, very sweet & tasty prawn stock (head & shells) with vegetables (celery, leek, yellow onions, carrots). 🙂

1 charmed dish was my very first time new dessert – a pumpkin cheese cake. i could taste the cake paste i mixed & knew the taste was good. but it was the first time i baked it so uncertain about timing & texture & how it would turn out. as it turned out it was almost perfect – beginner’s luck! 🙂

& this lunch highlights-

like the last time, a friend brought his 成名 renown supergood sio bak (crackling roast belly pork) – this time the crackling was less than the last. i told him he made me gave up on sio bak & saved me from a lifetime of unfulfilled tedium (making sio bak unsuccessfully)..haha! 🙂

my motto – why try so hard when someone can do better? just invite him to bring lor! 🙂

big prawn noodles in golden broth – this should be served last in a course dinner, before dessert. lately i decided to try to serve all the food buffet style instead of as a course meal. it is not always possible but many dishes can be adapted. as this has to be served hot, we took this first dish first. 🙂

the key was the golden broth. it was my own recipe emulating the lobster noodles at tunglok (above). 🙂

from the feedback everyone loved this dish.

the 1/2 poached chicken – 白斩鸡saliva chicken – 口水鸡 were now a standard dish. it was easy, require little effort to make, and both were very tasty.  i brined the chicken in sugar & salt for 48hrs before poaching on the day.

miso salmon belly was another new experiment.  i created this new miso marinade recipe & was not sure if i would serve it for lunch. it turned out to be an excellent dish. my wife brought some to office for her packed lunch & all her colleagues liked it. & all my friends at lunch liked it! 🙂

i bought mint but forgot to serve both the mint & my homegrown basil!

& i forgot to make the all important fish sauce mix beforehand to serve together, so had to make 1 batch then a second batch while having lunch.

anyway the guys all liked it. although our self-proclaimed vietnam expert was actually clueless when it came to assembling the dish. haha! 🙂 this a dish that you feast on sitting on a very low stool next to a very clean vietnam street vendor!

my help made a nice garlic fried romain lettuce which everyone liked.

the banoffee (banana toffee) pie was the very first virgin attempt!

the guys walloped the whole cake, though a few including me, felt it was kind of sweet though ok to eat. anyway i made another one the next day with 1/2 the toffee & 50% more bananas, & it was an excellent very well balanced cake. 🙂

was in 2 minds whether to make this post.

anyway i had 1/2 duck leftover from my recent 15pax homecooked dinner for friends on 3.10.2014. i used 1/2 duck to make a 盐水鸭.

& i read 2 interesting recipes & thought i would try out sous vide duck breast & use the drumstick for a tea smoked duck fettucine. 🙂

the results were not that great so i thought of not posting it as a recipe. anyway, i will give the tea smoked duck another try to see if i can get it right.

the 6hr sous vide pan-roast duck breast was fine actually. i made quite a good one for my canard l’orange anyway, so the main difference was just the sauce.

the grape ginger sauce was kind of an overkill. next time i will just do it as a small dip. pouring it over the medium rare duck breast actually killed the photo & also masked the taste. i tried the duck w/o the sauce & it was quite good on its own. unfortunately i did not take a photo of the nicely medium rare duck after slicing it. 😦

i would rate it as passable but not great.

the tea smoked duck fettucine was an exciting recipe for me, as i can use this method to smoke meats (duck, belly pork, pork kuckles, even beef i think) w/o a real smoker.

however my first attempt wasn’t right in terms of timing. i did only 45mins in the oven at 130degC after smoking the tea & other condiments on a aluminium foil in an oven-proof wok over high heat & crimping the foil to make a fully sealed “smoking chamber”, i placed it in a preheated oven at 130degC for 45mins. for the crispy skin i used gordon ramsay’s cold pan method.

removing the aluminium foil, the tea smoked duck gave off a nice aroma in the room but the flavours could not really infuse to the meat..need longer than 45mins. i will probably try it for 2.5hrs to 3 hrs instead.

the fettucine recipe was actually ok & my 2 daughters ate up the pasta on the day & next. but the tea smoked duck achieved nothing & the texture was a bit tough nearer the bones as it was not smoked for long enough time.

my current standard of sous vide duck breast (much ado about nothing) is no match for my simple & easy to do 盐水鸭…

i can use both methods – 6hrs sous vide at 70degC OR smoking chamber method to produce the tender meat & then the cold pan method to produce the cripy skin. then a small grape ginger sauce dip would do.

i will post the recipe later when i get the correct preparation & results for the tea smoke duck.

wife made packed lunch most days, for herself & sometimes daughter. 🙂 it’s nice & healthier for busy lunch. & very simple to do. 🙂

i made pan-roasted brined chicken, miso cod, teriyaki cod or simply plain grilled cod which was just as nice for her some days. she (& helper) made her own very nice oven baked prawns, pan-grilled chicken breast, grilled pumpkin, quinoa, rocket salad, very sweet grilled peppers etc and lately very nice wraps. 🙂

today’s wrap was excellent. so was the one few days back. chicken breast was seasoned & pan-grilled by helper, very tasty & heathy.  the salad included grilled sweet peppers, rockets, cherry tomatoes, honey mustard, agave nectar etc.

Fun & Satisfying Homecooked 13-course Dinner for 15pax on 3Oct2014

had a very s  satisfying homecooked dinner last evening on 3.10.2014. 🙂

while i really enjoy cooking for my family & friends even if there is considerable effort (& a close friend said exactly what it felt like – he really enjoyed it so he did not see it as effort), the point is how to plan the dishes & keep improving to manage the dinner smoothly & achieve best results with least effort. this is also part of the fun. 🙂

i decided to follow a friend’s lead to serve all dishes pre-cooked or served at the start buffet style instead of course by course (i enjoyed the delicious food at 4 of his makan sessions, most recently at a scrumptious homechef mooncake dinner on 8.9.2014).

it is quite important actually not to be disrupted from dinner conversation even though going into the kitchen to cook every course does have its own satisfaction. 🙂 i may even try that for my monterosso seafood risotto, lobster pasta. for king prawn ramen in golden sauce etc which are best served in individual portions, it seems best still to serve them course by course. so i do those for smaller sit down dinners. 🙂

#1 poached chicken – i brined in sugar & salt for 48hrs which made it tasty & moist & then 10mins simmered & 20-25mins poached, then cold water. this a crowd favourite with many supporters. 🙂

#2 braised pig trotters & #3 braised belly pork – i did them together using the cold crockpot method & set meat thermometer to 82degC. this would take about 5hrs, gentle slow & low temperature braising. i did this 1 day before. both were tender, gelatinous but still firm. i prefer this firmer texture.

#4 盐水鸭 – i applied a dry brine seasoning rub & put in chiller for for 48hrs (main condiment is sichuan spicy chilli sauce). cooking method same as poached chicken, but 15mins simmered & 30mins poached. duck was tender & tasty but i felt the 风味 taste was not pronouced enough like last time.

#5 蒜泥白肉 – i got the pork a day before dinner so only brined 24hrs. used the same cold crockpot method to produce a very gentle braise using chicken stock from the poached chicken. this one again many supporters.

#6 6hr “sous vide” miso lamb shoulder – more or less perfected this dish. the miso tempered the strong gamey taste & 90degC was apparently the optimum temperature to break down collagen (tough connective tissues) to tasty gelatine, so a very tasty, tender dish. 🙂

1 friend said she especially liked the dish. another mentioned it was a bit sweet. i would probably reduce the sweetness in the miso marinade a bit.

#7 peanut carrots pig trotter soup – peanut porkrib soup is a common nice lie tong 例汤. i preferred to do my pig trotters w/o bones & the toe ends so i used those leftovers for the soup, which worked perfectly & added a gelatine texture to the soup. i added some carrots & also as the amount of soup was not enough for 15pax & i did not want to dilute the soup (better not enough soup than enough diluted soup), the chicken stock came to rescue. this i added & the soup tasted quite perfect for me. 🙂

so it was kind of a planned & orderly execution. braised pig trotters & belly pork i did 1 day before, and the leftover pig trotter bones & tips I made soup 1 day before. this freed up the crockpot for the 蒜泥白肉 on the day. chicken & duck were brined 48hrs before & an easy 10mins+20mins for chicken & 15mins+30mins for 1/2duck simmered + poached. miso lamb was marinated 3days before & just gone into oven for 6hrs on dinner day.

easy eh? 🙂

i only had to do the seafood fried rice & wok grilled prawns, nearer dinner time.

i cooked the rice in rice cooker in the morning (forgot to do day before), & i fried the rice with the sichuan spicy chilli early.

about 1 hr (530pm) before dinner at 630pm, i fried in butter the small prawns & squid. when 90% guests arrived, i heat the fried rice & seafood in the wok together, & i did the dry wok king prawns with ginger, garlic, chilli padi & fish sauce. so every dish was ready to serve together. 🙂

aunty bes did the #10 sambal seabass & #11 poached hk kailan with shitake. everyone loved the fish. 1 friend commented the kailan was so vibrant in colour. kailan was poached & usually looked greener.

& everyone loved the tofu cheese cake & tiramisu. i did them 1 day before. 1 friend said the dessert topped everything. 🙂

1 friend would be celebrating her birthday few days later, so i asked another to bring a candle (i did not have one) & used the tofu cheese cake as the birthday cake. 🙂

i have been applying the pot roast method using a crockpot (slow cooker) to produce very tender & moist & more gentle slow-braised meats. 🙂

i tried it very successfully on 蒜泥白肉, spicy garlic pork, and i used it once also to make a good braised belly pork, pig ears & ter tau bak (猪头肉).

for this 10pax lunch for my friends on 17.9.2014, i added braised pork trotters & also kampong chicken.

the gentle braising started with a cold crockpot on low & took about 4-5hrs to produce the very tender & still firm texture (“kar kar”) which i prefer over the more overcooked soft texture. i was able to reproduce the same tasty braising sauce. see the detail steps in the recipe here.

i used the braising sauce for the tau kua & lor nerng (braised egg) to infuse the flavours. i cheated for the tau pok & added water to dilute the braise as tau pok absorbs too much & i won’t have any sauce left for the “kueh chap”. 🙂

i braised the ter kar (pork trotters) separately by the same method, and took out some braising sauce to do the big intestines separately.

the big intestines from sheng shiong were already cleaned but i could not take the risk so i washed them thoroughly then rubbed with flour and salt & turned inside out. of course all the meats were scalded with boiling water to remove the scums before braising.

getting feedback from the friends –

  1. they all felt the dishes (belly pork, ear, pig head meat & trotter) were all quite ok comparable with good hawkers, both taste & texture.
  2. one mentioned that the intestines were good w/o the odour (even though it was still a strong tasting dish) and good texture.
  3. another didn’t think the intestine was as good as these were the thicker-walled tua terng tau (大肠头) whereas usually the ones outside were the thinner walled type. it’s just that on this day sheng shiong did not have the thinner walled type. 😦
  4. & of course they all noted as i did that i added the braising sauce to the trotters & big intestines but forgot to add to the 2 large plates of belly pork/ear/pig head meat & tua kua/tau pok/lor nerng. that would have enhanced the flavours. the braising sauce were used up after diluting for the “kueh chap” which i used hor fun to substitute as i could not get the flat sheet kueh chap. one thought the kueh chap sauce was a bit sweet though it was ok for me.
  5. one friend missed the “crunchy” birth intestines (生肠) i made last time. this time round sheng shiong did not have 生肠 so bought large intestines instead. not quite the same i guess. 🙂
  6. & i thought my pig trotters was almost the standard of 幸福潮州小食 pig trotter at whampoa, and much better than the han jia bakuteh pig trotters at east coast lagoon food village.

a friend brought 1kg of shi0 bak (roast belly pork). it was really good. just look at the crackling skin + the really nice meat layers colour. texture & taste was excellent. this motivated me to want to try again to do this difficult roast pork dish. 🙂

i experimented on a slow braised beef briskets & ribs with daikon (radish) & carrots but it was not good & we did not take photos. i will give it another try again, having thought about how i can do it differently & hopefully better. 🙂

was invited to a friend’s place for “makan kueh bulan” dinner on 8sep2014, to celebrate (though in subsequent whatsapps, there was discovery that for some it was celibrate – ok just kidding la. 🙂 )  mid autumn festival.

the last 3 times i was invited – it was a peranakan feast on 30.5.2014, and before that another “michelin star” home gourmet peranakan feast on 7.6.2013, & a teochew gourmet lunch on 12.4.2012. running out of vocab but who can blame me? haha! 🙂 that btw is why i blog = help me to recall all the fun moments! 🙂

one important promising observation – the invitations seem to get a bit more frequent. keep it up my friend!…lol. 🙂

the buddha jump over the wall (b-j-o-t-w) was absolutely delicious. myself, and the other “buddha” among us, were among the first in line, and of course once a buddha was not quite enough. 🙂

the sharks fin, sea cucumber & fish maw were all very good with the b-j-o-t-w, which had pig trotters & dried scallops (& i guess chicken) as soup base, and thick mushrooms – very sweet, tasty, intense. i loved it! 🙂

the very expensive abalones made it a sumptuous & not just scrumptious dinner. i tried 1 slice for each bowl of b-j-o-t-w i had.  couldn’t say that i fully appreciate this delicacy. texture was quite fine, not tough. i like abalones with deep flavours with just a slight chewy bite, & not rubbery.

my own peasant “poor man’s” version of buddha jump over the wall (b-j-o-t-w) is more like an imposter, not quite in the same class. haha! 🙂 & i had a S$9.90 can of limpets masquerading as abalones, from the “lowly ntuc type” (in this case sheng shiong) according to the teases on our group whatsapp. 🙂

the teochew braised duck was very tasty. meat was tender. the flavours & braising sauce a bit different from my own teochew braised duck (i just use tai wah braising sauce), and seems like a longer cooking time than mine, which is about 1 hr for a 2kg duck.

crackling belly pork is a dish that i failed many times. this one was good, both the crackling skin & the meat flavours, maybe it would give me some impetus to try again the crackling part. has been difficult for me to have motivation on this dish which is a bit unhealthy & i had to eat myself or throw away when i missed the mark, so i did not post any recipe to date. 😦

drunken chicken was tender & tasty, perhaps could do with a bit more chinese shaoxing wine (绍兴酒). not sure. i did this drunken chicken pretty ok myself but a good 绍兴酒 is costly & may cost 1/2 the price of the chicken unless you reuse the marinade, so i mostly just do the poached chicken (白斩鸡) sans the wine. 🙂

the friend who also brought back b-j-o-t-w added macaroni to the drunken chicken 3 days later & was apparently in divine drunken stupor in some nirvana state he converged the drunken chicken with the b-j-o-t-w, something clearly requiring advanced practice in mental discipline & powers of perception. 🙂

the heng hua beehoon was well infused with the littleneck clam (“la la”) flavours. according to my friend, heng hua was the only cuisine to add clams to beehoon. haha..if you exclude vongole..lol (but you don’t usually use capellini for vongole). 🙂

one interesting, nostalgic journey this evening was bringing back the dissappearring food. one friend brought the 潮州 月饼, 月糕. the 潮州 月饼 was kind of similar to pong piah or ma tai soh (1 soft skin & 1 crispy). the 月糕 is a black sesame version. the ones i now remember were white versions of月糕 used to come in cheap red paper wrappings & i had them when very young.

the host also prepared homemade moon cakes with coloured 冰皮 & very smooth, not too sweet 莲蓉. yum!

a friend’s birthday falls a few days after the dinner, so we bought a mille crepe cake from lady M, put on 1 “big” candle & sang happy birthday. 🙂 still managed to polish off the cake despite being “very full”. haha! 🙂

we sat at the garden afterwards. very nice evening with friends!

there are many hawker places one can get good kueh chap in singapore, so may not be a very worthwhile venture.

since i can use either of the (1)5hr sous vide method OR (2) cold crockpot on low method to produce just the right texture belly pork, i figure it should be quite easy to do the other items for kueh chap.

anyway i decided to try it on 24.6.2014 for my sis. it was pretty ok (bottom 2 photos). 🙂

a few friends decided to watch guardians of the galaxy (which btw was an excellent movie), so i invited them to come over to have simple kueh chap dinner, and with 1/2 a kampong chicken thrown in. 🙂

i went to sheng shiong & bought a 400g frozen belly pork (about S$4) & 1/2 pig head or face (S$4). the pig head came with the ear, so i had both ter tao bak 猪头肉 & ter heenh 猪耳. i tried the big intestine last time on 24.6.2014. both texture & flavour were good but it was still a bit strong taste, so i decided to be more conservative & bought the birth intestine aka fallopian tubes 生肠 instead. maybe you don’t think that was conservative. haha! 🙂

i prepared my own braising sauce (see recipe), which later became the soup for the kueh chap.

i did the usual preparation, scalding the belly & pig head after cleaning (i used a large kitchen knife to scrap off hair from the belly & face) to remove the scums. i then placed the pig head, belly & ear in the crockpot, added the braising sauce to cover the meat completely, then turned on low.

i learned this cold crockpot method to make a good pot roast which i have applied to cook belly pork very successfully e.g. 蒜泥白肉, a spicy garlic pork. what it does is that because the temperature rises quite slowly initially over 2-3hrs depending on the amount of cold liquid, it is equivalent to mild low temperature braising, resulting in a gentler, moist & tender meat. for this meat, total about 1kg, it should take about 5 to 6 hrs. you can also use a meat thermometer which i do & set at 90degC. i then set the meats aside. the braising sauce was now very tasty. i added the tau kwa, tau pok & the shelled cooked eggs & cooked on low for 2-3hrs.

for the birth intestine, i washed with salt (for large intestine the last time, i washed with salt & flour), cleaned thoroughly & left in a large bowl of water in the fridge overnight.  i was worried about the taste so i took out a small amount of braising sauce & cooked over the stove on low fire for 20minutes then dropped it in cold water. my friends later commented the texture was excellent, crunchy as it should be, flavourful & no strong taste. 🙂

the belly, pig head meat & pig ear were all quite good. nice flavour & just the right texture. 🙂

on 4.8.2014, i could not get the kueh for kueh chap from sheng shiong (i went to 2 different stores w/o success), so i used kueh teow instead. the next day my sis brought the kueh from another sheng shiong outlet & we walloped the leftovers. 🙂

the kueh only took 1 minute. by now the sauce was very tasty & i just added water & salt to taste to make the soup to add to the kueh. 🙂

when serving, garnish the dishes with chopped coriander & add fried shallots to the kueh chap.

overall, i think it was very successful, and comparable to a good kueh chap at the hawker stalls. 🙂

Ingredients:

  • 400g belly pork

  • 1 birth intestine
  • 1 packet (2 pieces) tau kwa
  • 1 packet (10 pieces) tau pok

braising sauce

  • 3 tbsp dark sauce
  • 5 tbsp light soy sauce
  • 2 tbsp zhengjiang black vinegar
  • 1 tbsp heap sugar
  • 2 cinnamon bark
  • 4 aniseed
  • 4 cloves
  • 1 bulb peeled garlic
  • 3cm sliced ginger
  • 1 tbsp 5-pice powder
  • 1 litre water
  • salt to taste (about 2 -3 tsp)

Directions:

  1. mix the braising sauce.
  2.  scalding the belly & pig head after cleaning (use a large kitchen knife to scrap off hair from the belly & face) to remove the scums. place pig head, belly & ear in the crockpot, add the braising sauce to cover the meat completely, then turn on low & braise for about 5 to 6 hrs. you can also use a meat thermometer. set it at 90degC. the mild low temperature braising results in a gentler, moist & tender meat.
