made teriyaki pangasius fillet for teban gardens community breakfast this morning on 11.10.2019.^^

i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.

this my 104th friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend TKF who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

i bought 3×0.8kg packet(drained weight) of pangasius fillet. this a cheap vietnamese catfish.

the main thing about cooking this fish is to dry it as there’s lots of water content.

i defrosted, washed with salt, drained, then dried with kitchen towels and laid out on rack overnight.

this morning i dried some more with kitchen towels.

then fried ginger, cut chilli padi, shallots and added the fish fillet. high fire, added 4tbsp light soy sauce, 3 tbsp mirin, cooked/reduced about 6 minutes. i did in 2 batches.

basically this is like teriyaki style i would do for a whole garoupa fish, but not reduced as much as i did not want to overcook the fish fillet.

then garnished with more cut scallions and fried shallots.

it was was a nice tasting dish…pangasius has a strong “chao chey” basically mud taste so need to flavour well to mask the mud taste.

my close RI bro QTC was a bit out of sorts today, missing a bus and slight detour when attending –

5pax lunch with RI bros @ 8picure on 24.10.2019.

chef Gabriel Lee came by had a long chat with us and took photo together

YKK remarked that the green pea poached egg soup was the best he had..

the meatballs pappardelle was good but not my preferred pasta..the alacarte pastas here are superb – alio olio, sakura ebi, & gamberro rosso (using amaebi)..i have not tried the uni pasta..

the french poulette was excellent, tasty and tender..

I had a single order french poulette with alio olio- just perfect and just S$16 inc coffee

QTC had 2 courses others had 3 courses..they all loved the tiramisu too 👍

my early birthday dinner.

we had wonderful evening and excellent food.

suckling pig was crispy and tasty. usually ok but for this evening though, it was porky.

both frog leg dishes were good. gongbao dish not too sweet, and ginger scallion was tasty and great.

both pepper crabs and pumpkin crabs were good and nice sauce. and lobster in superior stock always good.

no patin fish today so  settled with tilapia, very well done with minced sauce to take away the mud taste.

& the hk steamed garoupa very good.

children needed carbs, so ordered fried rice and horfun all good.

always enjoyed the good at ah yat.

4th HCA 3 Dishes 40pax Lunch for HCA Hospice Care on 22Oct2019

made 3 dishes for HCA 40pax lunch today on 22.10.2019-

  1. chicken rendang 3.5kg
  2. babi ponteh 2kg
  3. vegetables 2kg

I do this fortnightly. this the 4th time i cooked for HCA.

for chicken rendang i use happy family rendang paste.

marinated 3.5kg cut chicken boneless legs with 3tbsp fish sacue and 1 packet of rendang paste the evening before. fried with chopped garlic in the morning, covered and simmered 8mins, then added 200g packet coconut milk. tasted and it was lovely, chicken nicely tender and sweet and rendang was tasty and flavourful.

for babi pongteh, i fried chopped garlic, added 2kg (5x400g packets) pork cubes, 3tbsp mashed taujeon, 2tbsp oyster sauce and 2 tbsp gula melaka,& cooked for 45mins till tender and to taste.

for the vegetables, i fried & softened the carrots first, added oyster sauce, then added cabbage and fried…a simple and very tasty dish.

my RI bro LCM came by around 10.45am, we loaded up and delivered to HCA at 11.30am.

the patients were doing their regular exercise with volunteers guiding them. the staff and kitchen volunteers were busy laying out the dishes we delivered and serving them to the patients in individual plates.

they were all very happy with the dishes. 🙂

i had some injury during a nov2019 overseas trip and took some time to rest and recover.

my RI bro LCM came at 1040am helped me to ferry the food containers to HCA in my car..

this my third time doing forthrightly 40pax lunch for HCA..

doing 40pax 3 dishes lunch is not quite the same as doing one dish for 130pax for teban gardens friday breakfast.

teban gardens is well provide with beehoon, porridge, yutiao etc and they do very well without my one dish, whereas for HCA i am basically providing the full lunch (except for rice and fruits) for the patients.

it took a bit of trial and error to cook enough, and not having to cook each dish in one go and NOT 2 separate times. 🙂

i had about 3.2kh boneless chicken thighs, 2x200g shitake plus quite a bit of clud fungus. 🙂

it was a delicious dish using my own marinade/braising sauce=6 tbsp huadiaojiu, 3tbsp oyster sauce and 3tbsp fish sauce.

i had 2 kg bean paste 红油豆瓣酱 pork cubes and pork softbones.

it was tasty and tender tender. later i received feedback that it was not enough. will increase to 2.4kg next round.

and i had 4 brocoli…thought it was a lot, but again feedback not enough. will increase to 6. that is quite a lot of cutting to do as well. 🙂

the chicken dish was evidently enough..3.2kg plus quite a bit of cloud funguss and shitake.

a tasty, delicious dish.

2kg bean paste 红油豆瓣酱 pork cubes and pork softbones

the bean sauce pork is a also not a difficult dish. just fry thoroughly pork with lots of chopped garlic, 2 tbsp of bean paste and 2 tbsp of oyster sauce. then added water and cok for 1hr 15mins till tender, while reducing the gravy and infusing the taste to the pork.

a delicious dish, salivating indeed.

brocoli quite standard, and it is always nice, with good wokhae.

Excellent Dimsum @ Imperial Treasure Fine Chinese on 7Oct2019

had excellent dimsum @ imperial treasure fine teochew cuisine at ion orhard with sis & bil on 7.10.2019. ^^

menu prices here are ridiculously expensive..a whole braised duck is S$80 and cold crab is S$24/100g..

luckily dimsum prices are “normal” like S$6 per item..I wouldn’t dine here except for dimsum lol! 😂

we had 9 dimsum plus tea & appertizer, came to S$80..I had S$50 welcome voucher so nett was S$27 ..

the residents are already well provided with beehoon and other dishes, so i just cook an additional dish..

i cooked 3 packets of pangasius fillet = 3x800g nett weight = 2.4kg or 12 pieces of fillet.

today i am just using my ubiqitous braise – 5 tbsp huadiaojiu, 2 tbsp oyster sauce, 2 tbsp fish sauce.

just marinate fish overnight.

this morning i cooked the fish in 2 batches of 6…anyway they only require like 6 mins, so very easy and quick to get the dih ready.

fried in oil, cut onions, and chopped spring onions, and over high heat to reduce the liquids to a flavourful tasty sauce.

i browned some shallots and topped off with garnishing of shallots and spring onions. 🙂

afterwards i had coffee and good chat with TKF at 古早coffee stall at the food centre.

Ah Yat food consistently good and seafood especially, cheap and good. 🙂

excellent food & even better service..we gave S$30 tip..

we had –

2 steamed lobster superior stock very good S$29.80 each
2 claypot frogs with ginger scallions excellent S$4.50 each
2 gongbao frogs not that great S$4.50 each
2 pumpkin crabs excellent everyone liked it (2crabs for S$39.90)
& we ordered mantou to dip the sauce
S$40/kg 1kg patin with minced ginger was just perfect
$48 peking duck very so so plus S$15 for second eat beehoon (tasty)

complimentary red bean soup good too

& QTC brought very sweet alfonso mangoes

just S$29.80 for each 650g live boston lobster (like S$75 at lobster and burger) and cooking was excellent. lobster fresh, sweet and tasty.

i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.

this my 102nd friday breakfast community meal dish at teban gardens community service centre.

i think heng’s curry better but this is ok too.

fried curry leaves and chopped garlic, then added chicken and fried about 5mins.

removed chicken and cooked cut potatoes for 10mins.

added back chicken and mixed.

i finished all the carbs which i rarely do, 3 wanton..

feedback from previous lunch HCA asked to cook a bit more..

this was some difficulty because of wok size and transport..

this time I cooked about 3.6kg boneless chicken thighs, increase from 3kg last time, and 2kg belly pork from 1.6 kg..and 1.4 kg cabbage..

& belly pork was excellent, prefect texture, and my own special braise, so tasty & delicious! 🙂

current chicken is simple to do.

just marinate 3.6kg cut boneless chicken thighs with 2 packet heng’s nonya curry paste overnight, fried with curry leaves, sliced ginger, minced garlic this morning, and added 400ml (2packets) coconut milk.

only logistic problem was the quantity took up the entire wok volume, and a bit tough for me to manage the quantity and cook with 6 cut potatoes to make sure curry, chicken, potatoes were done just right..

so i had to separate into 2 portions, wok and a deep pot. maybe better to cook 2 portions separately next time.

anyway the results was great, and feedback was they loved the curry chicken.

i boiled 2kg belly pork in bakuteh sacket 1hr 15mins, perfect tender texture, cooled down and put in chiller overnight.

and cut nice neat pieces.

the fried in work with lots of chopped garlic, 2tbsp fish sauce, 2tbsp oyster sauce, 1 heap tbsp corflour, 5 tbsp huadiaojiu ..

1.5kg cabbage filled up the entire wok at the start of frying.

feedback was not enough, so have to cook more next time.

this first few rounds trial and error, managing the quantity and to make sure dishes turned out nicely.

dishes were all good, i am quite certain, and feedback consistently good.

just need to manage the cooking quantity and logistics.

a very satisfying day for me. 🙂
