made sauteed dory fillet for teban gardens community breakfast this morning on 4.10.2019.^^
i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.
this my 103rd friday breakfast community meal dish at teban gardens community service centre.
i first started doing a community meal dish for teban gardens CSC on 8.1.2016.
the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.
the residents are already well provided with beehoon and other dishes, so i just cook an additional dish..
i cooked 3 packets of pangasius fillet = 3x800g nett weight = 2.4kg or 12 pieces of fillet.
today i am just using my ubiqitous braise – 5 tbsp huadiaojiu, 2 tbsp oyster sauce, 2 tbsp fish sauce.
just marinate fish overnight.
this morning i cooked the fish in 2 batches of 6…anyway they only require like 6 mins, so very easy and quick to get the dih ready.
fried in oil, cut onions, and chopped spring onions, and over high heat to reduce the liquids to a flavourful tasty sauce.
i browned some shallots and topped off with garnishing of shallots and spring onions. 🙂
the residents all enjoyed the dish.
afterwards i had coffee and good chat with TKF at 古早coffee stall at the food centre.
