stopped by Esplanade & decided to try jiak modern tze char on 29.11.2021.^^
ordered the small $22 crayfish squidink beehoon which came with a free side dish..we picked minced chicken eggplants
not expecting much so very pleasantly surprised..
the beehoon squidink flavours superb ..very good indeed…& again surprisingly 3 large crayfish so 6 halves! and very fresh bouncy sweet..an excellent dish by any standard!!
the complimentary side dish minced chicken eggplant was good standard too..
excellent meal for 2pax for $22++

the sour dough butter & EVO were good..
the amuse bouche was great..I think I can make this like a nicely garlic flavoured mash somewhat less viscous like gazpacho
the smoked duck salad was good dish but a bit let down as we asked server if it was prepared by restaurant..he said yes..it tasted artificial just like the ready made ones ..perhaps that is the method of preparation..I will try to do this see if different result
every table was feasting on the tiger prawns capellini..
it was really good, with a very flavourful cheesy taste to the angelhair..I will try to make this soon..
the tiger prawns were done well..nothing special though..I do that all the time & aunty bes can do too..
the iberico pork collar was another excellent dish..including the pak Choy sides..
dessert was good standard, and restaurant offered a complimentary chocolate mousse cake for special event.

dishes were good standard not outstanding just above average..
appetiser trio- prawn sweet sour sauce a bit sweet..batter a bit hard than crisp..battered scallop slight overcooked not moist, char siew flavourful texture a bit old the leaner type some fat
soup was good, tasty, abalone and 花胶 good & cordycep flowers nice too..
red garoupa was below par, chunky not 滑basically old 老
lobster noodles was ok..noodles on the softer side but ok …taste ok not the best..lobster also a bit old not bouncy and sweet tasting as other places
dessert a sherbert with champagne jelly ok
good dinner not outstanding..

took 4pax $78 lunch set which included 2 appetisers cloud fungus and spring rolls, 1/2 roast duck, soup of the day, salted vegetables sliced snakehead soup, and dessert.

braised pork trotters – mediocre

food standard here is good and especially with the 4pax S$78 value set

made boneless tea smoked chicken on 25.11.2021.^^
RECIPE (tea smoked chicken)
1 add 1tbsp oil in Dutch oven. add banana leaves then 1 Chinese tea, 1 tbsp sugar, 1/2 cup rice, 1/2 bulb garlic, 1/2 cut onions, 5 bay leaves, 5 star anise
2 heat medium fire on stove for 5 mins..when smokes, place deboned (1 kampung chicken) on rack into Dutch oven, cover, reduce to low fire for 5 mins..judge by amount of smoke & aroma..
3 transfer to 100degC oven & slow roast for 1hr..
4 can check meat temp when ready (my 80degC)
serve chicken with barley risotto
RECIPE (barley risotto)
1 brown garlic in olive oil (alio olio) set aside
2 add 100g clean Chinese barley 300ml chicken stock cook & reduce about 35mins..check aldente
3 add white wine and milk & reduce 5mins..off fire add 15g butter mix toss
4 place tea smoked chicken on barley risotto & serve.

seafood penn pasta was ok tasty & al dente not much ingredients few clams & small prawns but really ordinary nothing much to talk about
