RECIPE= Truffle Roast Chicken on 11Nov2021

made my best ever roast chicken today

RECIPE

1 salt 1.1kg kampung chicken skin & cavity

2 sauce marinade – 2tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp 花雕酒, 1tbsp honey, 1tsp sugar, 3 cloves minced garlic, lots of black pepper

3 rub chicken skin & cavity thorough with marinade

4 add 1/2 red onions sliced, 1/2 lemon, 1 chilli padi, 2 stalks scallion in cavity

5 fill coke can with water to 80% & stand chicken over can (this the beer butt chicken preparation)

6 place in fridge 4hrs or overnight

7 bring to room temp..place in 100degC oven for 1.5hrs..I check meat thermometer 71degC

8 baste chicken with sauce..plus 1tbsp olive oil 1tbsp honey…place in 250degC oven 15mins

this absolutely delicious crispy skin, flavourful, totally moist, best roast chicken I made

yuzu abalone $20 was good, tender, tasty,
foie gras cigar
sea perch $26 was excellent, wonderful texture & flavours

had alacarte @ peach blossom restuarant

the foie gras cigar $24 is our favourite now

the 例汤$12 was very good, almost (like 90%) as good as the soup last evening

the sea perch $26 was excellent, superbly done, wonderytexture & flavours

the roast combo $48- roast pork all fat cannot make it, roast duck they gave breast average for good restaurant, the apple wood roasted iberico char siew was superb..a must order..will order the $38 char siew dish next time

we booked restaurant thinking to use Amex love dining 50% discounts for 2 but so many restrictions..doesn’t apply to dimsum, dessert etc

decided to take this rediscovery menu no discounts…not disappointed…

1 appetiser prawn fresh & sweet bit of caviar totally ordinary thousand island salad dressing

2 both soups were good ..prawn head soup more 清 prawn dumpling good..better than the prawn ball whelk soup

3 sea perch was good..both styles ok I prefer the 剁椒 to 港蒸, not the standard of peach blossom

4 added kurobuta steak $10 very good tender & tasty

5 1/2 lobster crispy noodles excellent stock one of the best 👍🏻👍🏻👍🏻 lobster the 400g not 550g size..lobster 泡饭good too tasty stock too strong for wife..we both like the lobster noodles better

6 dessert quite ordinary though presentation was creative..look better than taste lol!

very good actually..much better than expected..

there is a lot creative presentation but most important for us the taste..

the cheese seafood lychee was good & foie gras cigar were excellent

the soup one of the best like a very smooth delicious 佛跳墙

the wild caught 笋壳very nicely done & tasty if not wow

the abalone sea cucumber fish paste one of the best, with tasty brown sauce

the lobster 泡饭lots of lobster meat very nice dish if not my preferred lobster preparation

the dessert very sweet ecuador yellow dragonfruit ..nice very sweet, no skill though just a jelly scoop in the middle…more plating than gastronomic..

the petite four so so not much attraction quite average cream puff tart & panna cotta
