had lovely 4pax dinner with SMM & B @ akira back 19.4.2021.^^
chef akira back is Korean, grew up in aspen colorado USA, professional snowboarder for 7 years….
the set dinner wasn’t interesting like before, so we decided to go ala carte instead. 🙂
the tuna and crepes mushroom thin pizza was excellent as before. they allow a combo version and that was enough for 4pax appetiser.
we ordered the miso eggplant with mozzarella first tie. it was excellent too. good.. I can improve my miso glazed eggplant.
we ordered 4 mains to share = 2 portions of halibut and 1 portion of ji dori chicken and 1 portion of F1 wagyu.
halibut was excellent, and it was from akira previously that I replicated my own pangrilled halibut on soy beurre blanc sauce.
likewise the jidori chicken on truffle mash was tender and delicious, something I replicated as well (sous vide 75degC 1 hr and pangrilled).
the 350days grain fed F1 wagyu was underwhelming, especially after having the best ohmi wagyu at 8picure several times…
F1 is only 50% Jap wagyu, but I find that Lisa and sulin’s homecooked USDA prime or even just grain fed black angus are as good or better…
the best F1 wagyu I had was at chef Ace Tan pop up at one altitude
we selected our own sushi moriawase from the ala carte menu-aburi otoro, uni, akami, hamachi and unagi, I think about S$90.
sushi of course fresh and sweet…we think though can get much better value at kuirya dining…
had a great dinner conversation and sharing with this friend couple.
