didn’t come here for a while.

business seemed to have drop, not many tables occupied.

razor clams garlic steamed was good as usual. relative to other restuarants which charge S$10-S$12, this price is good, but at a time it was just S$4.80, and a razor clam shouldn’t cost this much…

the server said i had not been here long time and price only went up S$4 from S$38. i laughed.

it was really good! tanhoon so super tasty!

i must do my prawn tanhoon again la…

and we had like 8 pieces of crab legs, which were fresh and meaty and tasty..

live lobster price gone up to S$39 from S$29.80. of course even at S$39 it is a lot cheaper than most restaurants which charge S$60+.there were 2 dead lobster on ice, so we inquired.

satisfied that the lobster was fresh, we ordered that (in many western or newton circle or bbq restaurants, its always on ice, and in markets we buy fish and prawns all dead).

the lobster turned out beautifully, fresh, bouncy, sweet. wife and i couldn’t tell any difference from what we usually eat. i guess we took a risk if it had turned out poorly but still edible…

and steamed with superior stock 上汤焗was just perfect!

the best deal here really the bull frogs 田鸡.

i mean even here at ah yat, a lala dish would cost .S$10 and in many zi char and restaurants S$18.

and the ginger onion frogs 姜葱炒here is first class, better than most restaurants and zi char.

dinner was S$112. of course this could feed 3 or even 4pax.

and lobster and alaskan crab are expensive stuff.

had excellent food 1/2 tea flavoured roast duck S$32, mei cai with hk kailan S$20, and fish noodles 花胶丝鱼茸面 S$18..

added a new dish stirfried garoupa with onions, leek & chilli-super wokhae excellent dish👍👍

I will make the garoupa dish and meicai dish myself 🙂

meicai kailan was very good. mei cai was tender and the mild, sweet flavour stood out.

wife found the kailan a bit tough. for me they were ok.

the garoupa fillet was an excellent dish, great flavours, very different from the pedestrian one at first culianry and the poor one at peach garden metropolis.

the fish neat noodles was good as before. i do feel the broth was less tasty than previously.

wife ordered a dessert we shared. a good dessert but i can do without.

there is a eatigo 50% discount at 11am. i was here last week, and food was good and great value for the price.

however today the duck had a “soh mei” meaning a strong gamey taste, not great! i fed back to the restaurant afterwards.

taste wise tofu was tender and refine, sauce was good, seafood mediocre. a good dish overall.

and this time i ordered some carbs. the meesua came with garoupa fillet and green peppers, again competent, as good this one.

having tried the various dishes last week and this, if i come again i would take the fishmaw, KL charsiew, chef sauce pork ribs, hesitate about the roast duck, ok with garoupa meesua. maybe try the roast pork and the toman fillet dish.

Delicious Kurobuta Belly Dry HK Noodles on 16Mar2019

i bought some dry stingy hk noodles from sheng shiong a while back.

there were 2 types i know – dry scallop flavoured and prawn flavoured.. i thought prawn flavoured better but that day there was only scallop flavoured so i bought that.

this evening i made a simple 1pax dinner.

just boiled noodles about 2 mins in water and drained. poach chye sim in boiled water. make sure qq and not overcooked.

mixed 1 tbsp flat each of oyster sauce, chilli, ketchup, 1 tsp fish sauce and toss.

i placed 4 strips kurobuta belly on plate, drizzle with tsuyu and microwave 1.5mins.

then add kurobuta belly and poached chye sim to the qq noodles.

quite perfect!

noodles qq and tasty with the sauces a standalone.

kurobuta belly very taste and flavourful.

for this evening i also added some leftover toman fillet.

just took 4 slices from freezer.laid out flat on plate, drizzle with tsuyu sauce (nice japanese sauce for soba, like mild sweetened light soy sauce). put in microwave 1.5mina. dada!^^

the lobster linguine in spicy arrabiata was very good. we ordered 2 servings.

the photo didn’t do justice. there were 2 half lobster and the sauce was awesome.

i must try making this dish again.

it was good, but not comparable with akira back, which was the best beef short ribs i had.

made braised chicken and potatoes for teban gardens community breakfast this morning on 15.3.2019.^^

this my 86th friday breakfast community meal dish at teban gardens community service centre.

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

braised chicken with potatoes

this my regular dish, so quite straight forward.

just clean and drain 2kg cut chicken. then marinate with 2 tbsp of fish sauce, oyster sauce, light soy sauce, cornflour and sesame oil overnight in fridge.

fry chicken with chopped garlic till cooked in the morning, cover about 6mins. add little water if required.

removed chicken and use the sauce to cook 6 large cut potatoes. add water if required. oiled 10mins to cook poatoes and reduce sauce. poke chopstick clean through or press potato against side of wok to break. that would be perfect doneness.

made 5pax dinner for my good friends this evening on 14.3.2019.^^

for J for her special diet-
1. poached seabream fillet ikan bilis soup
2. oven grilled saba with sea salt
3 pan grilled portobello with sea salt

for 4 of us-
1 poached seabream fillet chicken broth
2 claypot rice
3 tofu prawns
4 fried romaine lettuce
5 fried hk kailan

J brought vinegared saba from japan.

CL brought flores birthday cake for CCG.

i like the vinegared saba. japanese cured and pickled stuff all added sugar and a bit sweet. wife and CCG didn’t take.

for J’s seabream soup i used only ikan bilis, so i added a larger seabream fillet to give it natural fish sweetness.

when serving i poached sliced seabream fillet and added few leaves of organic chye sim per J’ request.

for the 4 of us, i used chicken broth, intense chicken stock, added sliced ginger.

and poached sliced seabream fillet and added organic chye sim.

fish was fresh and the broth was very tasty. ^^

i did grilled saba, first time for me.

the saba i bought from sheng shion was very fresh, could feel pressing on the flesh and belly – firm and bouncy.

i rubbed sea salt inside cavity and outside and grilled on a rack in 250degC oven for 15mins. quite perfect – natural taste of the sea, very fresh, sweet and tasty. J, CL, i all enjoyed the grilled saba.

(i had 1 more saba in the chiller so i made another for J the next day)

the pangrilled portobello had only sea salt so a bit lacking in taste.

could do with the usual olive oil, balsamic and drizzle of agave nextar. the dish mainly prepared for J so didn’t add.

today’s claypot rice was excellent, great aroma and great, and super tender, moist, tasty chicken, breast and all.

nicely shallowfried tofu well infused with chicken stock, and prawns perfectly done, just cooked, succulent and bouncy.

for preparation, just ikan bilis stock with large seabream fillet for taste, then poached sliced seabream fillet and add organic chye sim when serving.

fried tofu for prawn tofu dish

for prawn tofu just shallow fried 300g tofu cut into 12 pieces.

then fried chopped garlic, cut chilli, add 1cup chicken stock and 1 tbsp oyster sauce, 1tbsp flat corn flour and reduced to taste, then add 1 egg, let it formed then draw out the egg.

when serving, add prawns, mix and cover to cook prawns, about 3mins, serve!

i had some bean paste sauce which i made spicy bean paste pork cubes for teban gardens friday community breakfast last friday on 8.3.2019.

i stored some leftover sauce in the fridge and used to make a 1pax 豆签 bean noodles with bean paste chicken.

just boil 豆签 bean noodles about 2.3mins. remove and drained.

fried cut chicken pieces with the bean past sauce for 5 mins till cooked. off fire add back 豆签 bean noodles and toss.

bean paste cook anything also nice la…and i really like 豆签 bean noodles ..very light and soothing.

noodles looked plain but were tasty enough. char siew was good, lots of larpok (crispy lard), a small and simple dish, quite tasty.

but i think fatty thai S$4 wanton mee at beach road was better, tastier, cheaper and larger serving..

also this wanton mee no better/tastier than jian kang wanton mee which just S$3 and you add S$1 for 3 pieces very tender and tasty pork ribs.

or 6th ave or queens road wantonmee..still kok kee wantonmee best for me

the chicken was poor & very expensive at $7! no comparison with my own 白斩鸡.

a friend told me later the stall not related to the soi 19 at banglok.

chilled mullet and yellow croaker are teochew favorites, perfect taken together with taujeon.

not much difference in quality eating out or homecook (i would say my homecooked mostly better). just a lot cheaper homecooked.

i bought 2 mullet for S$9.80 and the very large yellow croaker (>50% larger than normal size) for S$8.90.

very fresh and sweet. both very good, myself i still prefer the mullet.

sotong these days more ex than fish. at sheng shiong it’s like S$15.90 to S$18.90.

today’s large sotong >300g so i would be cost >S$5 ie more expensive than the mullet.

this an easy preparation as i can do the evening before and just add potatoes this morning.

i ordered 2kg pork cubes (i think S$7.95/kg).

defrosted and cleaned with salt and poached in boiling water to remove scum, and drained.

then fried with 1 tbsp chopped garlic and 3tbsp spicy bean paste 辣豆瓣酱 for 5 mins. added water and boiled for 1hr 15mins (till tender – chopstick poke thru cleanly).

this morning i added 5 cut large potatoes, cooked and reduced, about 12mins (until potatoes just cooked – chopsticks poke thru cleanly or potato breaks when pushed against the side of the wok).

CCG birthday this week and he was free for dinner.

4 of us (NCL, LKY, CCG, me) had a small home meal at my place on 7.3.2019. ^^

i made a few dishes-

i bought a tiger garoupa, the cheapest type, from sheng shiong. it was S$7.50/kg so just S$4.30 for the near 600g garoupa.

usually tiger garoupa not so sweet and tasty like red garoupa which is much more fine.

this evening it turned out beautifully, very fragrant hk steamed from the light soy sauce and actually the flesh was quite fine and sweet. this was NCL best dish for the evening.

we had recently taken several times hk steamed sotong and lala at-

  1. crab at bay on 11.2.2109; and
  2. 7th miles seafood on 26.2.2019.

it is really a simple dish to do, no preparation almost, just hk steamed and heaped with chopped garlic.

the sauce was fantastic, basically the same as garlic steamed razor clams 蒜蓉蒸, really perfect with the tender squid and perfect with plain rice. 🙂

this a dish i cooked for teban gardens often. usually for the 140pax at TG i used 2kg – 3kg frozen boneless legs.

of course today i used fresh 1/2 deboned chicken. the braise was excellent and nicely reduced, and the chicken and potatoes were timed perfectly so very tender and tasty chicken and just the right “mouthfeel” for the potatoes.

hk steamed fish

5 dishes for 4pax

dinner was really simple, as i only had to cook the chicken dish. fish and sotong steamed on the spot and fried broccoli too. and char siew was marinated 2 days in the chiller and grilled in the oven for 16+4mins at 4pm. so not much to do.

recently we had a bigger 10pax RI bros dinner on 21.2.2019.

i didn’t get to hear CCG share much as i was in the kitchen for a few dishes. this time we had lots of time to share and chit chat.

a most wonderful evening with close friends.

Poor Tsukiji Fish Market 1 for 1 Wagyu Don Lunch Set on 7Mar2019

had lunch with my godsis at tsujiki fish market L12 at orchard central on 7.3.2019. ^^

last time went to godsis housewarming 2 months back..didn’t sit down for a chat for a while..had a good time sharing…godsis was concerned with my god daughter too which i am not much in contact recently.

tsujiki had various lunch set (above).

we decided to go with the chope 1 for 1 lunch sets.

ususally i would take the chirashi don, but since godsis doesn’t really take sashimi so we decided to have the beef set. the server recommended the S$39.80 Japanese Wagyu Yakiniku Jyu Yakiniku Beef on Rice in box which was also the most expensive.

the set came with salad, chawanmushi, potato salad, soup, pickles etc…but all these not important if the main dish beef not good la…

unfortunately the wagyu beef was a disappointment!

some parts of the wagyu was tough! wagyu tough?

& it was not grilled, more like stir-fried.

even though 1 for 1 at S$39.80, meimei commented the heijoen wagyu yakiniku lunch set much better. indeed it was!

this wagyu donburi i absolutely DO NOT recommend.

was asked to do a cooking demo at teban gardens on 6.3.2019. ^^

this my 5th cooking demo and sharing.

today i chose –

  1. salted fish minced pork egg white fried rice
  2. 回锅肉 doublecooked pork

fried rice i could do on the spot. 回锅肉 doublecooked pork i cooked the belly pork first and also the leeks and onions first as leek took some time to cook. then i fried with leeks and onions on the spot.

so there were many ingredients/boxes i have to bring – like cooked rice, minced pork, salted fish, egg white, chopped garlic, oil chopped scallions and crispy chilli for garnishing the fried rice, mala chilli for frying the 回锅肉 doublecooked pork etc.

i started with fried rice dish as it took a while to cook on the spot.回锅肉 doublecooked pork is easy & quick just mixing the 2 items – belly pork and vegetables together.

this a very interactive class. they have many questions throughout the session = like can use salted egg or olive vegetable instead of salted fish, why egg white, what’s the difference using whole egg etc..

i started by explaining that i fried the chopped garlic and salted fish together as i didn’t want to burn either and i happened to have broccoli stems which i cut into small pieces to give texture to the fried rice.

salted fish gives a very fragrant flavour when you fry. i turned the fire to high and added the cooked rice and fried, mixed thoroughly, high heat, not too long, then dished out and set aside. the fried rice is tasty as it is.

(so of course one can add salted egg or olive vegetables instead of salted fish OR not to add any..likewise one can can seafood or prawns instead of minced pork etc..or char siew in yangzhou fried rice…so many ways la…)

i explained that the proportion balance of ingredients is important so by agaklogy i did not add all the rice (2cups) so as not to diu=lute the taste.

now i fried the egg white – i had 5 egg whites, so maybe equal to 2.5 eggs.

it is important to let the egg white formed, so that it would not be messy. this step is most important whether using whole egg or egg white.

now i added the fried rice and folded the egg over and broke it up so like in the restaurants you see the distinct bits of egg whites. if the whole egg or egg white is added to the rice and fried, then it coats the rice and the texture is more sticky and mushy, whereas this way the rice are individual grains.

egg white or whole for me is just aesthetics..of course the taste also a bit different and a golden colour fried rice is also appetising as well. i like both preparations.

the fried rice is best presented on a large plate garnished with chopped scallions. i added crispy chilli.

they all like the crispy prawn chilli and several added extra to their bowls.

回锅肉

the 回锅肉 doublecooked pork is quite straight forward.

i explained that 回锅肉 is a sichuan dish 四川菜肴 and generally done with mala chilli and fried with various vegetables.

the english translation is doublecooked pork (double cook as in returning the pork to the wok to cook a second time so the name 回锅肉).

doublecook though is a common technique used in every cuisine western or asian…teochew has 半煎煮鱼1/2 fried and braised fish and western dishes even steak has reverse sear method sous vide then pangrilled or flamed etc.

today i have leftover leeks so i fried leeks (the white part) and yellow onions with a bit of oyster sauce. covered wok to cook for 5 mins and make sure leek was just done and not overcooked. the simple veg dish alone smelled great actually.

the belly pork i salted for few hours then boiled in water for 1hr 40mins, most important test poking a chopstick through the lean meat going through cleanly. cooled it and put in fridge. this so that i could cut the belly pork cleanly w/o fraying when adding to the veg.

so now just put the leek and onion to the wok on high heat, added the cut belly pork, then added 1 tbsp of mala chilli oil…(because request to add less, i added 1tsp…later everyone said it was very fragrant not enough though so some added more themselves).
