quite ex actually 2pax not much food almost S$50.

noodles were good, qq and good chilli….duck & char siew average

3 combination cheong fun was good..maybe skin not the smoothest, no comparison with hong kong…

14Bros 10pax Homecooked Dinner @ Dining Lounge on 24Feb2020

did 10pax RI 14bros homecooked dinner at dining lounge on 24.2.2020. ^^

CCG joined dinner and HCK dropped by and left earlier for dinner with family.

also celebrate CJ’s birthday.

LCH brought drinks, HAB yuzu umeshu, LCJ brought rambutans, CCG brought nonya kuehs..LKY & KWL came over to help ferry food to dining lounge..

for this evening’s dinner, i prepared only 5 dishes-

  1. wine chicken with cloud fungus
  2. braised belly pork with taupok, taukua & egg
  3. black bean sauce pork soft bones
  4. assam ang sai (emperor red snapper) fish head
  5. broccoli with cauliflower

so i pace my cooking in the course of recovery from my accident,

and was able to restart cooking for HCA Hospice Care 35pax lunch on 18.2.2020.

and for this evening, i cooked less dishes in larger quantity for 11pax, and it worked quite well. dishes were finished and food was just about enough.

a great evening of food and fellowship with RI bros. 🙂

so 6mains + 4drinks 👍

the usual (3) lower priced items free.

lobster pasta and squidink were good.

bouillaboise ok good serving not special. soup was tasty, good seafood tomato flavours, ingredients not the best texture could be better done..overall not super..

cod was pedestrian. lamb was very good, tender and tasty.

this place offers a good satisfying meal when there is good discounts. food is good standard if not spectacular..service is always good.

made fortnightly HCA Hospice Care lunch today on 18.2.2020.^^

HCA asked to reduce slightly to 35pax..

  1. cloud fungus wine chicken
  2. nonya tau you bak with taupok
  3. fried carrots & cabbage

for wine chicken, i marinated with 2tbsp fish sauce, 2 tbsp oyster sauce, 2 tbsp cornflour, 4 tbsp huadiaojiu overnight. soaked, drained and boiled cloud fungus for 1/2. fried chicken with chopped garlic, sliced ginger, 1 cut chilli padi, then add cloud fungus with water and reduced, about 5 mins. chicken should be just cooked, NOT overcooked.

for belly pork i boiled in bakuteh sachet with whole garlic for 1.5hrs. chilled it and cut. cooked taupok (each square cut into 4 slices) for 1 hr.

then fried cut belly pork with chopped garlic. added 2tbsp dark sauce, 2 tbsp oyster sauce and some bakuteh sauce with the softened taupok. cooked another 10mins to reduce & to infuse the tau you to pork and taupok.

for the vegetables, i fried & softened the carrots first, added oyster sauce, then added cabbage and fried…a simple and very tasty dish.

KWL & LCM came to my place to help and go HCA together.

after that we met CCG for rong ji wanton noodles at bendemeer food centre.^^

had a really fun walk with metamorphosis bros at thomson nature park..we started 5pm on 12.2.2020. ^^

saw wild boar & 2 babies & lots of hainan history here..

cheow ghee suggested dinner at ban leong wah hoe casuarina road.

pleasantly surprised the food was good standard ..

liked the assam fish head especially..

really delicious and sedap..

ambience & service good👍

price ok 5pax 5 dishes S$83.

will certainly come again if nearby.

really good, among best i had..

super sashimi - toro, tuna cheek, saba, sayori (flying fish), kampachi

all 16 dishes sans the en papillote fish were super delicious.

the best 3 for me were –

  • tuna headmeat with uni & egg white👍👍👍…never knew tuna headmeat so delicious..and according to chef, very small portion like 150g in a large tuna fish
  • super sashimi – otoro, tuna cheek, saba, sayori (flying fish), kampachi..sashimi such superb quality..not only otoro but the tuna cheek was fabulous…
  • charcoal grilled wagyu with foie gras miso sauce…wagyu was excellent…wife found the foie gras miso sauce too strong…wagyu would be excellent standalone just with grated wasabi..but it was really good combination anyway..

all the other dishes were super delicious too, and we haven’t even get to the sushi!

  • shirako (cod fish sperms) not wife’s favourite..slight fishy and texture may put off those unfamiliar, but it was very well put together with tobiko (flying fish roe) etc
  • awabi (abalone), jelly fish, yuzu jelly was superb..i eaten awabi sashimi in japanese restaurant in crown casino like 20+ yrs before and it was tough…this one here very tender and superb with jelly fish texture and yuzu jelly
  • anago (conger eel) with crabmeat & ponzu jelly very good too..though i prefer a simple anago sushi..
  • the en papilotte (bake din paper bag) dish amberjack was the only let down. fish was not sweet, not tender..much ado about nothing lor…lol!

we had a seabream soup to clear the palate, and good quality not salty pickled ginger and chye por.

and excellent sushi-

  • uni very sweet
  • aburi otoro superb, interesting done with burnt amber not torch flaming
  • negitoro temaki very good
  • hotaruika (firefly squid) was simply delicious…seasonal item
  • and kinmedai 金目鲷a top quality fish

the dessert was excellent too..though just a good cafe tea dessert…what to say? very good la…

i made it like an heng curry chicken noodles, just that laksa gravy can never match curry chicken noodles gravy…

added teochew fish cake & taupok just like ah heng

had it for 3pax lunch with wife and daughter. 🙂

& then 2pax dinner..

enough leftover for son & tomorrow.

made 1pax hae lua 虾烙, no oysters to do orh lua 蚝烙 lol!

recipe-

1tsp cornflour, 1 tbsp sweet potato flour, 1 tsp fish sauce, white pepper, 3-4tbsp water

fry in 1 tbsp oil non stick pan, add 1 egg, brown, turn over..fry 4 prawns marinated with fish sauce & white pepper.

add crispy hae bee chilli!

by the best of traditions, CJ hosted his annual 14bros+HCK CNY steamboat featuring the round round things (this edition round brown things aka canned braised abalones) and bak kwa blind test..

with large angka prawns & usda prime shabu beef, and red garoupa fillet..wa seh!

plus homemade chicken rice, chilli, stock base from 2 whole chickens.

this year also added atas fruits- yellow dragon fruit, giant cherries & S$14 a piece japanese mikan..

a fun, warm, precious makan & chill together & treasured tradition to be repeated (maybe more times a year?)…for the next 30yrs+

this chinese new year, we decided to have homecooked dinner. 🙂

wife made pan fried usa prime ribeye, always good.

I made-

  1. kani konabe – jap crabmeat claypot rice
  2. capellini alio olio
  3. hay smoked chicken (10mins stove 20mins 200degC oven) – recipe here

trying to model esora’s kani konabe…

rice was flavourful..son liked it…need an even tastier stock..canned crabmeat excellent when son made crabmeat pasta…doesn’t seem to come out best in this preparation..got to figure out a bit.. this the first time..can experiment further.

capellini alio olio was good with truffle sauce and extra virgin olive oil, modelling 8picure. this was a huge serving, taste far better than the presentation.. can never match 8picure but good enough la..

hay smoked chicken was pretty good too…(recipe here)

good smoke & flamed flavours and very tender too, also modelling esora hay smoked pigeon.

during this period while i was recovering from my accident, many RI bros (& also OPS bros – this evening though for RI bros) visited me & also drove me for many followup medical appointments & for makan..

i restarted slowly my large group cooking.

last week i did for the bbq at aloha loyang bungalow RI bros with matthias family, doing fewer dishes served in larger quantity.

this evening, i made much few (just 7) dishes, in larger serving quantity…also to prep for restarting the fortnightly HCA 40pax lunch next week.

CCG booked aloha loyang bungalow with the help of E & her husband JH..

this was arranged through matthias earlier – it was on planned on 6nov2019 and later postponed to 16jan2020.

the bbq was for RI metamorphosis bros to celebrate our retirement studies initiated and led by KWL and the memorable time we had together (especially with matthias), and to wear the metamorphosis magnificient seven T shirt designed by LCM…

CCG organised the games & tai kor LCM organised & took care the bbq logistics, all the drinks, snacks, charcoal, starter, tongs etc…& fruits…

KWL and LCM started the fire beautifully..later LKH came and taught us the proper way to bbq chicken wings..lol!

this evening we invited matthiass family, an initiative by NCL who invited matthias’ wife J and mom E, and joined by E & hubby JH, and meimei & hubby WEH👍

matthias mom aunty E made very tasty fried chicken wings, and pineapple tarts & also brought mango she planted at her house..

I made 4 dishes –

  • nonya curry chicken
  • nonya tau tou bak
  • bean paste pork soft bones 豆瓣软骨and
  • nonya chap chye..

& prepared the bbq food items chicken wings, sotong and saba fish. HAB strong man helped me with the marketing as i still could not carry heavy things..

& we had fruits, snacks, chat and lots of fun….

CCG got everyone to tell some stories relive their memories and played games…E brought some of matthias ties and Ts and we kept some for remembrance…

i had kuay teow mee soup. it was ok, pedestrian…soup was ok, noodles ok not overcooked, fish ball average not like xinlu at meiling fc.

later david, on home visit from cupertino residence, joined us for coffee at coffeeshop. he was earlier with CTS having nasi lemak at adam road fc….afterwards david & WT had tong shui at bukit merah view fc stall.

excellent taujeon steamed song fish head 酱松鱼头

the sauce is better than all the other taujeon song fish head i taken include my own, sweet not too salty taujeon, sour plum & slight sour lime👍 got to vary my recipe a bit to produce this very tasty preparation 👍

stirfried kailan was the usual ok..

lunch was S$21.50=S$15 for fish head, S$6 fried kailan, 1 rice S$0.50

after lunch we walked over to nanyang coffee at smith street..WT bought coffee 👍

after visiting my daughter’s place, 7 of us went over to newly renovated malaysia chiak at great world city on 19.1.2020.^^

happy to report the hawker food here quite good standard. 🙂

penang laksa pretty good..ban mian good too, very tasty!

S$5 bkt ok i can do lots better

S$2 chendol amoy street standard ok, not quite four seasons tpy lor 8.

overall pretty good standard grouping of hawker fare in one location. 🙂
