I hate to deepfry..waste lots of oil so tried my own shallow fry method…just need tilapia to be very dry …
I butterfly the fish…I use a curve wokpan so not really that much oiloil must be very hot…
ease in the fish and use metal lader to baste very hot oil over fish, and move fish around the hot wokpan..
I use lots of chopped garlic, some white part of scallions, 2.5tbsp light soy sauce, 1/2 tsp sugar, and 1/3 the oil (about 2-3 tbsp) left from frying to prepare the garlic hk steam sauce…t
his basically the delicious sauce ah yat restaurant style…
