curry chicken and pork soft bones are my regular dishes for HCA and very popular with the patients.

for prawns, I tried different sizes of prawns. previous I had smaller prawns I think 81/100..this time larger prawns 41/50. pan grilled gave it a great flavours but even 1 kg prawns is a small dish for 25pax so I used it as a supplement on the vegetable dish.

today my turn to buy 3pax lunch @ la tapiera on 1.12.2020.^^

have not been here for a while.

the excellent set lunch menu still same. I recommended the spanish octopus leg ala plancha and the asparagus.

asparagus was excellent. octopus legs today ok still nice but not done so well slightly tough. my friend went back with family few days later and tried the octopus again. he said this time excellent. 🙂

the lamp rump was still superb, so tender and tasty and excellent salsa and sauce.

a friend ordered the duck. he tried some of my lamb rump & commented duck was ordinary by comparison.

a wonderful lunch & chat with these 2 younger friends.

fish was so good & gravy so sweet & tasty..

we had expire S$100 voucher which requires S$280 spending so ordered a roast suckling pig, and tapao…but we ate most anyway lol!

suckling pig 南乳去骨猪 excellent!

just a bit too much sweet sauce at the bottom…

dims were all good, though SL thought crystal jade garage better.

crispy char siew pao, fun cheong were all good..xo carrot cake and crispy fupeiquin good too.

quite happy with results…quite moist & tasty..will brine for 24hrs next time.

not good carving…need to do better next time, and wife thought the skin was not browned enough…

maybe try 100degC for 3hrs, then 250degC for 10mins…meat temp >75degC ok…

bought capon (castrated male) chicken from cold storage.

trying to produce a very tender tasty moist breast like turkey breast for Christmas lol!

recipe

oven 130deg 2hr 250deg 10mins

1.6kg chicken

rub inside with dry herbs paprika, black pepper, parsley, sea salt,

1tbsp mustard, 1 tbsp melted butter

add 2 halves cut red onions, celery, whole bulb garlic, 2 halves cut lemon

rub 1 tbsp truffle evo(extra virgin olive oil) under skin & over skin

place thinly sliced butter under skin

filled soft drink can with 80% water & stand chicken for oven roast

I arranged at ming tang 重庆烤鱼

excellent service & dishes!service is very good by every server we spoke with & asked questions

the signature mala 重庆烤鱼was excellent,very fresh, sweet & tasty.

my china chinese friend commented this not oily, the best he had c/w many 重庆烤鱼 eateries in chinatown usually oily.

all the 凉拌dishes very tasty, flavourful..

水饺good standard if nothing special.

for the fish, we only added bamboo shoots, maybe try tripes even beef next time.

very happy to come back again..& I was back real soon! lol!:-)

Jessie brought excellent jelly dessert. I love this dessert not too sweet and very refreshing.

WT commented the mean is song fish head was excellent, the meensi sauce quite perfect.

wine chicken also very tasty even with frozen chicken thighs.

sambal ribs was ok but a substitute… need to get the woh hup assam sauce to make my really nice assam ribs..

回锅肉 was ok. texture was greta and malt sauce flavourful nd not spicy.

& the superior stock spinach with 3 eggs was quite wonderful.

we had a great time, good food and company.

beng san just arrived when we return to the house.

had very nice homemade primer bakuteh..

fall off the bones, very tasty and sweet, and fabulous soup….

Enjoyable Yummy Yakiniku with Family @ Aburiya on 22Nov2020

wife bought 5pax family dinner @ aburiya our favourite yakiniku on 22.11.2020.^^

wonderful yakiniku dinner. my whole family love this place and short of covid restrictions, everyone will reschedule to join in dinner at aburiya lol!

our favourites inc the yukked, a shabu thin sliced raw wagyu beef. can eat as sashimi or many like a quick short grill like 5secs on the fire…

jo kanubi great too… and recently we had the tokachi karubi leaner cut, also the akami lean platter…very flavourful too..

& the sweet corn, cabbage and king oyster mushrooms were quite excellent.

& of course, we always have our kimchi chigae and bibimen (and sometimes bibimbap)…

very enjoyable evening and good food with family.

PT bought tiramisu.

her parents don’t eat so much.

my braised duck and trotters always good.

pig trotter jelly had the right colour and gelatinous texture, and the taste was good.

I don’t do pomfret much. I think the sauce a bit on the low side.

first time I tried the fishmaw broccoli dish. it was pretty good. wife thought the sauce not enough and not taste enough. I basically use the sauce from braising pork trotters. a bit not enough. so couple hit & miss.

Sedap! Prime Ribs Bakuteh on 15Nov2020

sedap, really shiok!

fall out the bones and still with good bite.

definitely as good or better than outside. 🙂

bakuteh so easy to make…just the bkt sachet (I use ilc) and 1 whole bulb of garlic. about 1 hrs 10mins.

key is in picking the ribs.

fresh prime ribs best (I don’t like baby back ribs, and spare ribs no good) – meaty and has layer of marbled fat.

selecting the ribs is key…always pick the thinner end…the thicker end comes with huge piece of loin meat…pay a lot for low quality “chiak bak”.

truffle dumplings

friend bought 3pax dimsum lunch at madam fan @ nco club south beach on 11nov2020.^^

..dimsum was good standard, comparable with imperial treasure..just more ex lol!:-)

congee

congee was good, tasty, smooth..

truffle dumplings were flavourful, nice truffle flavours, nice overall though one friend found the skin too thick..

radish pastry

radish pasty was crispy, flaky not too thick and sweet..

char siew soh 叉烧酥

I prefer crispy char siew pao which they don’t have but this char siew soh is good.

scallops siew mai

scallop siew mai were good.

crab meat dumplings more like 抄手……

the spicy veg dumplings similar just vegetable filling..

crispy fupeiquin 腐皮卷 was good standard. the 咸水饺was good.

overall very good dimsum but don’t seem to have 潮州粉果…

friend didn’t order not sure got 肠粉or not…

very nice and enjoyable lunch and chat catching up with good friends.

last time i ate here was 5.5yrs back in mar 2015. that long huh…

still a very good prawn noodles.

we had S$5.50 thick beehoonmee dry.

mine was bakut prawn, came with 3 pork ribs & 2 1/2 prawns

the other 2 bowls had 5 1/2prawns.prawns were good.

may pork ribs also good, tender & sweet.chilli was very good & noodles just right.

the soup was intense, flavourful & sweet.we all enjoyed the breakfast..we were early 9.35am on a saturday..

a good breakfast…good prawn noodles.

not as good as my friend j homemade ones though.

Superb 7-course Korean Fusion Degustation by Chef Ace Tan at Stellar @ 1-Altitude on 12nov2020

had excellent 2pax dinner celebration at stellar @ 1-altitudet.

his a pop up by chef ace tan who helms 1-vu (pronounced one view) at outpost hotel sentosa..

outpost hotel is closed till jan2021 becos covid & chef ace tan has pop ups at various locations this month including at stellar which belongs to the same one group.

the view from stellar is stunning in daylight & when litted up in the darkness

chef tan’s dishes equally stunning..

korean fusion degustation

after the first dish of pen shaped shellfish (fan scallop) we asked to upgrade from 5-course to the 7-course menu

every dish was excellent!

superb F1 wagyu2

my favourite of all the great dishes = the F1 wagyu (1st gen cross between wagyu & angus) was simply amazing, marbled & beefy flavoured at same time.

korean wrap dish

the wrap dish was very interesting too. like a Vietnamese rice paper wrap…very tasty too. like it!

squid, pork, oyster umami sauce2

the iberico pork was very good (chef said korea not exporting jeju black pig yet)..

though the squid preparation cannot c/w galician octopus and the even better spanish grilled octopus..

tile fish, snow crab

amadai (tile fish) was superb too! & the sauce bestest!

chef ace tan expert in sauces..very good, umami!

abalone oyster porridge

& the abalone porridge so tasty especially the oyster flavours..actually it is oyster porridge with abalone slices..abalone great texture, sweet but not same tasty as chinese braised abalones..

maybe I can try improvise here..no need abalone or used can braised abalones ok ..the porridge itself already so tasty..

korean yuzu, nashi pear

the ginger tea jelly dessert was super very refreshing!

hope to try out ace chef tan’s other dishes at 1-vu outpost hotel when they teopennin jan2021.
