白斩鸡 & chicken rice the usual good standard today..chicken very smooth, tender,moist, tasty..chilli very good..& rice very flavourful

mutton rib was from bedok market S$18/kg clearly frozen

mutton rib soup still very good though last 2 times fresh ribs & better cut much better than this…

my old friend of 30yrs+ couple KH & L came for dinner on 3.9.2020.^^

I find it more efficient cooking & delivering dinner to my brother & doing a dinner for a close friend couple..

eg i cooked one whole 白斩鸡, delivered 1/2 to brother and keep 1/2 for dinner.

son & daughter joined dinner so we had 6pax.

6pax dinner menu

1. half 白斩鸡 （other half delivered to my brother)
2. 三葱斑柳sliced garoupa with yellow onions,leek &spring onions
3. 金银蒜蒸鳕鱼 garlic steamed cod fish
4. sambal fried spinach
5. chicken rice

all the dishes quite perfect this evening..chicken rice also very tasty flavourful this evening food, rice all finished.

made & delivered dinner to my brother on 3.9.2020.^^

1. 白斩鸡 plus a bottle honemade chicken rice chilli
2. 回锅肉
3. 清炒空心菜garlic fried kang kong topped with prawns

回锅肉my first using an online recipe

• 400g belly pork (tui bak is better)after cleaning remove scum
• boiled in water (i boiled in chicken stock) 35mins then put in cold water
• sliced thinly, fry in hot wok 2 tbsp oil.
• add 1heap tbsp 老干麻辣酱，1tbsp flat oyster sauce, mixed well off fire..remove pork
• keep oil in wok cooked chopped leek,.add spring onions & add back pork, and voila!

it was an delicious dinner, wonderful evening with friends.

the canapes and tapas all very good, except the lamb rack which was undercooked (forogot about bringing fully to room temp before oven cooking). this was rescued with panfrying.

& the flamed squid on cauliflower puree, lobster squidink pasta and wife’s mirin ribeye steak were all excellent, top draw dishes which everyone enjoyed.

tolmas had to go back office..forgot to take a group photo earlier..the perils when NCL not around lol!

tolmas brought cheng chow & KK brought very nice muffins from ivy..went perfectly with coffeereally fun relaxing lunch with bros.
