made 3 dishes for 5pax office lunch for wife’s office on 11.5.2020. ^^

  1. spicy bean paste pork softbones
  2. tofu prawns
  3. stirfried romaine lettuce

this the 3rd time i cooked for the office lunch during this covid circuit breaker period..the first was claypot chicken rice. the second was assam pork ribs. next week i am cooking wine chicken with cloud fungus and shitake. 🙂

today mother’s day, 10.5.2020. 🙂

I made 5-course home dinner for 5pax=wife, me, daughter, aunty bes & son working back 8.30pm so i get food ready when he back..

missing eldest daughter SM & JH they couldn’t join us during covid.

  1. flamed squid on cauliflower puree
  2. pan seared scallop on pumpkin puree
  3. bouillabaisse- seafood stew with fish, prawns, squid
  4. prawn spaghetti in prawn bisque sauce
  5. squidink linguine with squid

every dish was excellent..wife & children loved every dish…

bouillabaisse & squidink were the best dishes this evening, especially delicious…

bouillabaisse soup was very tasty & smooth…definitely better than burlamacco & most seafood or fish stew we had taken outside..fish, prawn, squid were just the right texture, fresh sweet & tasty..

squidink was the best i made..the very flavourful chalky powdery texture & al dente pasta..simply excellent! this though many good restaurants can do the same la..so even best still cannot say better than outside..

prawn pasta was excellent too but squidink was better..

the cauliflower puree and pumpkin puree were good today better than my first try on valentines day…very good standard now…

this evening i made red fermented beancurd deepfried chicken wings on 6.5.2020.

my very first time. and it was excellent! simply delicious! ^^

wife and children all loved it, and wife asked me to cook this dish again on 9.5.2020. 🙂

very nice fermented beancurd flavour and moist juicy succulent wings. perfecto!

i don’t cook deepfried chicken wings cos aunty bes makes super prawn paste chicken wings.

this time though i was inspired by jessie who used red fermented beancurd 南乳for another dish….

my repeat red fermented brancurd chicken wings – 9.5.2020

i marinated the chicken wings in fridge overnight, and dust the chicken wings with some flour before deepfry.

so delicious! taste, succulent, juicy! motuckting!无得顶!

Recipe

Ingredients-

  • 10 chicken wings (about 1 kg)
  • 2 red fermented beancurd
  • 3 white fermented beancurd
  • 1 egg
  • 1 tbsp oyster sauce
  • 2 tbsp corn flour
  • 2 tbsp huadiaojiu
  • 1/4 tsp sesame oil
  • 3 cloves chopped garlic
  • 3 chopped shallots

Directions-

  1. marinate in fridge overnight
  2. dust some flour over chicken wings before deepfry

wife wanted the red fermented beancurd deepfried chicken wings so i made again. good as before.

wife made kimchi fried rice. she added bacon to fry, and prawns…

so chopped garlic, onions, bacon, then prawn, rice and last egg.

very tasty kimchi fried rice indeed.

meepok slight soggy becos dapao..chilli mediocre, fishball not as good as 新路at meiling at fc..

overall average not great..

the kopi at this coffeeshop is very good though, kao & pang 👍

during this covid circuit breaker period, i cooked one family dinner during my helper’s rest day and one dinner mid-week..took the opportunity to try out some dishes when i can…

ayam masak merah was the highlight this evening. it was my first time trying it, and i made my own chilli rempah.

it turned out to be really delicious and wife and children all liked it. this style (preparation) not really my preferred..

i like the indonesian nasi padang curries with coconut milk…anyhow this was good, very tasty dish..will put up the recipe shortly.

sausage claypot rice was very good as usual, very “pang” fragrant, tasty and perfect moist individual grain texture.

steamed egg was good, basically the economy rice stall kind.

lady fingers not so good, as i this time i had to buy ready packet ones & couldn’t get to pick the lady fingers so 1/3 or 1/2 were a bit stiffer, less ripe even though i knew that and cooked a little longer, but otherwise good sambal vegetables dish.

this evening i assigned food taster, so just wait and eat do nothing lol! ^^

our helper aunty bes, made 4 dishes-

  1. crabmeat pasta
  2. chicken wings
  3. calamari
  4. broccoli

chicken wings, my wife bought the mid-wings and calamari were all excellent.

crabmeat pasta deserves special mention.

this a dish “created” by my son, and perfected by all = son, wife and aunty bes. so there is no need for me to learn how to make this. lol! 🙂

& this evening’s crabmeat pasta was excellent too, as always, everytime i tried.

she used good quality canned crabmeat, fresh tomatoes and good tomato paste, and cream…and pasta was al dente..i think all of us made very good al dente pasta..

excellent home dinner during CCB = covid circuit breaker…
