made a simple pasta dish = prawn capellini in white wine sauce for myself on 1.6.2018. ^^

eating alone this evening, so just use whatever leftovers.

i had some very tasty intense chicken stock, an open packet with like 100g capellini left, some small frozen shrimps…

pasta is all about stock, actually any dish western, japanese, chinese, asian all about stock…

very simple dish –

  1. brown a whole bulb of garlic cloves in 1-2 tbsp olive oil, add 1cut chilli padi
  2. off fire, add 50ml white wine & 2/3 cup stock & reduce the pasta sauce, add seasalt to taste
  3. boil 150g prawns, wash & drain
  4. cook capellini to just below al dente
  5. heat pasta sauce, off fire, add capellini & prawns, and toss
  6. add shaved mozarella cheese, sweet basil leaves to flavour & garnish
  7. add 15g gourmet butter (optional)

such a wonderful dish! 🙂

cooked mentaiko capellini (angelhair) this evening on 2,5,2015.^^

we brought some mentaiko from fukuoka during our recent trip to beppu, yufuin & fukuoka. and i cooked this a few times.

i did a check, only mentaiko available here by kuriya on rakuten & cost S$48 for a tube of 500g. so until the next time i brought back some from japan at a decent price (or maybe some sales at isetan or taka or meidiya), i won’t be cooking this. haha! 🙂

it is a really simple dish to cook.

i googled for recipe & found this 2-

Mentaiko Pasta (明太子パスタ) at norecipes.com; and

Mentaiko Spaghetti (Tokyo-Style Fish Roe Pasta) at www.saveur.com

anyhow, i modified & adjusted to my own needs-

Ingredients:

200g capellini

100g mentaiko

2tbsp olive oil

1tbsp mirin

1.5tbsp tsuyu

30g (2tbsp) butter softened

dash of pepper (1/4tsp)

cut 3 sheets of nori (seaweed) in thin strips (i didn’t have so used scallions)

Preparation:

  1. cook capellini to al dente (put in colander add ice & run cold water through hand) & set aside
  2. mixed mentaiko & other sauce ingredients
  3. heat sauce in pan, off fire & toss in the capellini
  4. plate it & add seaweed (or scallions)

eldest daughter organised a 3pax family dinner at saver @ purvis on 1.3.2015. 🙂

we had very good family dinner recently at concetto (another saver restaurant) on 18.1.2015.

& this place was just as fun.

the next day i came with my godsis & a good friend’s daughter for the set lunch at S$22.90, & it was just as good. the set lunch menu here is more attractive than that at concetto, which really had very limited choice (they really should review that!).

the restuarant had 2 adjacent dining area. this one was absolutely packed. we were not able to get sitting at the other side where the sitting was more spacious even though we booked beforehand. i booked the next day lunch, making sure i could get the other, but that turned out to be unnecessary as we were the only table. what a difference lunch & dinner!

this saveur pasta was different from concetto pasta. that had crab bisque & ikura, this one minced pork sauce & sakura ebi & priced cheaper at $4.90 (vs S$6.90). i liked both (& was quite happy to take it again the next day).

one reviewer said it tasted like bakchormee? it didn’t to me, but it was nice, very al dente & flavourful.^^

the belly pork was excellent, very tender, moist & still having the texture, excellent low temperature cooking. the crackling skin was not crackling like the chinese roast pork, but totally edible. love the lentils.

the seabass was excellent too! this was really a very good pan seared seabass! liked the potatoes too. 🙂
