had 8pax + k k full attendance family lunch @ ishinomaki on 30.4.2022.^^

early celebration of JH birthday.

got a nice spacious private room. which k k could run around. lunch was like 3 hrs.

the premium chirashi don always good, the most value for money dish.

poh ting cannot take raw food so ordered the set with tempura and unagi.

we also added many dishes like tempura udon to share.

and recommended to take the hamachi kappa and a deep-fried maybe kinmedai?

both were good, the kama was excellent. I will order this again if ordering alacarte.

red garoupa fish head was excellent very fresh tender sweet tasty..perfect restaurant standard..sauce was a mix of meensi sauce & hk steamed 港蒸 soy sauce

salted fish belly pork & pork softbones good standard

steamed prawns big & fresh very good better than most on a bed of fun cheong..real hk standard sauce for fun cheong

the 2 double boiled chicken soups cordecep etc better than hawker soup which I don’t take..restaurant standard smooth & sweet

poached kailan big serving very good not “siap” good bite texture taste..simple dish very good standard

GYS had foie gras looks great..joel had French onion soup..my goat cheese tart with salad was excellent! really enjoy it..

my grilled seabass also good, & the sides too..Joel had aubergines which I tried not bad..& GYS had the duck confit looked great too..

GYS ordered the lava cake which I wanted to try also..very good crispy outside flowing dark chocolate inside

the fishmeal soup or stew here is the best! haven’t had it better anywhere else.

the sea cucumber duck very tasty and delicious…I think I should try doing this…

the salted egg crayfish..S$44 for 3 crayfish, 1/2 each, quite ex…well, it was nice and enjoyable

& I enjoyed the noodles too really delicious!

really good food – $244 net inc 5 龟苓膏 for 6pax.

the red wine belly pork char siew was par excellence

steak was ok for this quality of meat & price, medium rare done quite well..sauce also tasty

salmon with pasta was good 👍🏻

fish & chip mediocre, waffle chips ok I prefer thicker chips soft in middle

hian hai ok with his grilled chicken salted egg pasta

tak meng had seafood poached rice, seems passable

the lunch set $12.80 came with drink or soup..my friends took the mushroom soup..

tap water chargeable S$0.50 quite ok

but we were the only table throughout lunch..quite poor thing..let’s support these local F&B!!

just returned from a wonderful melbourne/gr4at ocean road/grampian trip. will document that later.

Lisa still on leave today and earlier decided to invite our in-laws Sunil & Linda for dinner.

we took the tasting menu …

we had this before but the A4 kagoshima wagyu was replaced this time with regular tenderloin, a far cry really.

so understandably dinner quite below expectations la.

bread was nice & warm.

amuse bouche was underwhelming.

scallops was tender, sweet, competent.

lobster bisque was usual flavourful and tasty, still good standard.

chilean seabags was good not the best…

tenderloin was like any other…there is just no reference to make with A4 Kagoshima wagyu.

pre dessert and dessert ok…but this tiramisu no comparison with 8picure chef gabriel’s, not even with my own tiramisu la…

I guess basically below expectations and also same food as saline’s wedding at andaz…should have gone somewhere else.

still a nice dinner chat catching up with in-laws and sharing the fun trip we just had.

calamari one of the best I had, really good batter

squidink & crabmeat pasta among the best I had…nice creamy excellent squidink flavours perfect aldente texture ..crabmeat also very tasty..

mentaiko ikura pasta too overly creamy & a bit fishy

the hotaruika fire squid risotto was again excellent very tasty & flavourful ..

carpaccio was good & the 2 pizza very good too very nice dough..the truffle better than salami.

best dish = jap A4 wagyu, squidink and risotto…

this evening, no razor clams and live abalones @ $12 piece was quite good for the price.

abalones fresh and succulent, nicely done. though still razor clams nicer for me..

australian lobster quite good price so ordered one 1.2kg. a lot of meat, even in the legs, basically like 2 Boston lobsters.

沙煲姜葱田鸡claypot ginger scallions frogs always good. today the 宫保田鸡 less good than usual still nice la!

油浸尼罗红deepfried tilapia basically same preparation as soon hock..though fish is not as tender 幼as soon hock but it’s like 1/2 the price for almost same…

amuse bouche less wow than previous.

first course yellow tail carpaccio ok, hard to compete with the alaskan crab before.

second course scampi was nice and sweet.

3rd and 4th course turbot was good, the pasta not that great.

5th course A5 sendai wagyu was superb! the duck also pretty good actually.

deserts were less interesting as before.

petite four were ok.

overall still a great dinner. 🙂

RECIPE = Lobster Squidink Sauce Beehoon on 23Mar2022

trying to model jiak’s crayfish squidink beehoon on 23.3.2022.^^

good squidink flavour and tasty beehoon with lobster stock.

scallop was good

frozen cooked lobster was overcooked when mixed into beehoon over long period

better served lobster over been w/o mixing.

lar pok very good.

RECIPE

Ingredients:

  • lobster – I used a S$19.90 350g frozen lobster – shelled body & pincers, fresh set aside
  • squidink – I used squidink sacs accumulated from 10 squids
  • 10 scallops (optional)
  • garlic and spring onions
  • fried shallots
  • lark (crispy lard)

Directions:

  1. fry lobster head, pincers, shell with 1/2 tbsp butter and salt, add 500ml water and boil/reduce for 1.5hrs
  2. brown garlic in olive oil. add intense lobster stock.
  3. boil stock and add beehoon, cook beehoon while reduce and infuse beehoon with stock.
  4. put lobster meat in microwave 30s.
  5. off fire. plate with lobster and garnish with spring onions, shallots and larpok.
