this my 2nd community lunch dish for newgate learning hub on 12.3.2016. ^^

my 1st for newgate community lunch was on 27.2.2016. 🙂

as the dish is apportioned on each plate then serve to the residents, the main consideration was to have enough pieces to feed 80pax.

for this preparation, i used 1.4kg pork collar-

  1. i had the pork collar in a 90degC oven for 2hrs
  2. the slow braise made it more tender & flavourful & also easier to slice (i counted about 90+ slices)
  3. i browned a bulb of peeled garlic cloves, added 1 cut chilli padi & about 2cm sliced ginger, then added 1.4kg cut cabbage, added chicken stock, cornflour, oyster sauce & reduced. added salt to taste. the cabbage was done just right, soft still crunchy & very tasty with the reduced stock.
  4. fried the pork collar separately. this was a bit similar to 回锅肉, which means to cook the pork a second time by wok fry.
  5. then i mixed the pork with the cabbage.

it was a good dish to add to the beehoon & kuay teow.

pork was tender & tasty from the 90degC slow braise.

& cabbage complemented well the meat dish. 🙂

tasting the dish is an important step in cooking. make sure that salt was to taste to bring out the flavours, pork & vegetables had the right texture etc.

the octogenarian father of our friend who started this meaningful & beneficial community activity 4 yrs back contributed a pulut hitam dish every week. i tried the dish. it was very good, not too sweet. 🙂

a RI friend organised a teochew muay this morning at shi le yuan 实叻圆糜 on 29.6.2015.^^

we had lunch & long chat 2 weeks ago at happy duck at bukit merah view food centre, and arranged to come for this teochew muay.

a queue started at 10am. my friend was already there in the queue. we arranged to meet 10.15am. i arrived just a bit later.

our expert teochew ah hia earlier spoke with the stall proprietor & we had the ngor soon fish-baby treadfin. this was really good. sweet, tender, tasty, especially with the tau jeoh.^^

earlier the teochew ah hia & i were wondering about the stall. we were thinking maybe the food is ok & the price is cheap. that would be enough reasons for a constant queue. basically i don’t think too much of teochew muay in singapore myself. i just feel that its really expensive (like >S$10pax) for very cheap ingredients & ordinary cooking.

overall, this stall is certainly very cheap. we only paid S$43 for 7pax & so many dishes. we had repeat helpings for 3 dishes – the spicy black bean minced pork, salted fish minced pork (kiam her bak) & black bean pork ribs. so its easy to tell, in addition to the ngor soon fish-baby treadfin, these were among the best dishes.

the other dishes were not like supergood but they were generally also competent. 🙂

salted fish minced pork (kiam her bak) was very good. texture was slightly firmer & different from my own salted fish minced pork dish. maybe it had a bit more flour. it had less salted fish. that’s good. minced pork & salted fish should not be competing.

black bean sauce minced pork was good. it was not out of the ordinary but was quite good really.

the other dishes were all quite ok. kor leh – cabbage was like any other.

chim char lor nothing standing out, but it was not very salty so that’s good.

fried bean curd with leek, a favourite of mine, not particularly tasty but ok. i think my sis in law did a better one for chinese new year.

fried egg felt a bit like my tamago (japanese egg roll) w/o rolling up. there might be a bit of sugar, which is what i do with my tamago.

salted egg, not the very reddish oozing with oil kind. i guess it will do.

bean curd – this was non-descript & the second poorest item among the mostly nice dishes.

somehow i did not take a photo of only 1 dish = the teochew fishcake, and that was the poorest dish, felt like a lot of starch, totally not the texture & sweetness of a teochew fishcake. strange!

well, this teochew muay totally suit my palate, very competent food with quite a few standout dishes & very good price.

went with sis & b-i-l to lim joo hin teochew porridge at bukit ho swee for lunch on 16.1.2015. 🙂

had not been here like forever, maybe 10years? reason is i always feel that teochew porridge is ultra expensive for nothing food. well, today was no exception, just a confirmation, so in a sense i was not overly disappointed since already expecting it to be so!

place was bright & clean. not crowded yet at 12pm.

servers were rude & unhelpful, not rude in talking to you but rude in mannerism & ignoring you.

mullet 乌鱼 was still moist so soft. this not the usual style, her bun 鱼饭 or teochew chilled cooked fish should be cold & dry. meat was sweet & nice dipped in taojeo (bean paste), overall just average. unlike cold crab, we can do this easily at home ourselves.

braised duck was ok average. my own braised duck though is a lot better, more “pang” i.e. tasty.

“kor” her -this method of braising fish is rarely seen nowadays. the fish tasted like sardine (likely was) which was very different fish from the ones my grandma made 50yrs ago. the dish was just slight sour due to the sour dried veg, i think, which made it very appetising.

the vegetables were nice, especially the leek & “chiu kuay”, a gourd (my sis added 2 veg dishes later – “heng chye” spinach & “chiu kuay”).

3pax lunch cost S$47.40 for eating almost nothing. i am never coming back – well, maybe another 10yrs! ^^
