really shiok!

very easy to make.

just boil stringy hk noodles.

add to bowl to 1tsp each of fish sauce, oyster sauce, tomato ketchup, and 2tsp vinegar, oil and 1 tbsp crispy chilli, and toss.

add large prawns…I grilled…if want to have soup, then just boil prawns in chicken stock.

garnish with spring onions and fried shallots.

chef thanks for a great veggy dinner. you have corrected a few ‘myths’ about eating vegetarian foods. from presentation to different ways of cooking and the taste. just so delicious. looking forward to suresh’s tyle next! thanks once again for the evening and the great conversations we shared…learnt much tonight!All the dishes are great.He is right the soup is sweet and definitely you can straight away distinguish it.

had a wonderful time together, delicious fine vegetarian dishes and great fellowship and chats…

1pax ord lua on 4.9.2021.^^

quite simple to make.

add 1 tbsp flat sweet potato flour 蝴蝶粉, 4tbsp water, 1/3tsp fish sauce, add white pepper, mix well.

hot pan, add flour to give a soft starch layer…crack 2 eggs, and spread over the flour… let it cook, brown…

flip to one side add oyster to pan, cook oysters, brown a bit.

off fire, add 1 tbsp crispy chilli, toss…

plate it and garnish with coriander.

6. 24hrs sous vide rump steak

potato croquettes and scallop cauliflower were delightful..

Bothe pastas were very good, especially the spicy tomato based…will do more of this angel hair pasta…

the pork chop always good…

today the 24hrs rum steak a bit dry though same recipe at 62degC not sure why? probably not do rum again..

HC brought excellent Leong Ji rojak cuttlefish kang kong (everyone loved it!) ..

I added giant cockles ure poached how long, certainly more than 3mins! WT made the right decision to open one and check doneness…turned out pretty good..

all the dishes 梅菜扣肉,chicken rice, tanhoon prawns, dragon tiger garoupa 龙虎斑 all excellent! lala very succulent & tasty..water a bit much so Thai basil taste diluted…will improve next time…
