made braised chicken with potatoes and carrots for teban gardens community breakfast this morning on 3.5.2019.^^
i cook a dish for teban gardens every friday unless i am traveling or otherwise indisposed.
this my 91st friday breakfast community meal dish at teban gardens community service centre.
i first started doing a community meal dish for teban gardens CSC on 8.1.2016.
the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.
130 to 140 residents queued up for the food.
i only make 1 dish, teban gardens catered for fried beehoon and yutiao or butterfly or porridge…
and often the centre director R also made some dishes for them. her dishes – laksa, porridge etc all quite awesome… 🙂
for today, i marinated 2kg cut chicken fillet with 3 tbsp fish sauce, 3 tbsp huadiao wine, and 1 tbsp heap corn flour overnight in fridge.
in the morning, i fried in non stick pan for 5-6mins, added a little water as required, and set aside.
then i fried carrots first with chopped garlic and 2tbsp oyster sauce to soften, abut 5mins, then potatoes, added back some gravy from chicken, covered and cooked for 10mins. potatoes cooked when break when pressed against side of wok. do not overcook.
the added back chicken, mixed thoroughly and off fire. and transferred to aluminium carrier to bring to teban gardens.
tasted it. a beautiful dish, very tender chicken, sweet carrots and nice tasty potatoes.
