community lunch at newgate learning hub

community lunch at newgate learning hub

i first started doing a community meal breakfast dish for teban gardens CSC on 8.1.2016.

thus far i have done 6, once every week.

community lunch at newgate learning hub

community lunch at newgate learning hub

2 of my close friends have been helping out at newgate learning hub by bathesda community at bedok which provide free saturday lunch for the old folks in the community.

so i arranged to do alternate weeks, a friday at teban gardens breakfast & a saturday at newgate.

community lunch at newgate learning hub

the weekly lunch, started by another RI friend, was funded and managed by a few volunteers including himself & D, the person in charge. 🙂

quite similar to teban gardens CSC, they already provide bee hoon & noodles, and the RI friend who started, his father does a pulut hitam dish for them almost every week. ^^

so i had just to add a dish.

stir-fried chicken with ginger & spring onions 姜葱鸡

stir-fried chicken with ginger & spring onions 姜葱鸡

to start off for the first time, i decided to do the stir-fried chicken with ginger & spring onions 姜葱鸡. 🙂

stir-fried chicken with ginger & spring onions 姜葱鸡

stir-fried chicken with ginger & spring onions 姜葱鸡

the main difference in logistic is that here they don’t have tables, the folks sit on chairs & they portion & serve the food-

  1. which means i need to make dishes that provide for more than 80 pieces
  2. so for today, i debone 2 chickens, cut & counted to make sure i have more than 80 pieces
  3. i still plan to ask my helper to do some dishes eg the bean sauce pork cubes & the cloud fungus chicken, but it means i have to prepare/cut the chicken & pork myself for her to cook to ensure that there are >80 pieces to be served.
stir-fried chicken with ginger & spring onions 姜葱鸡

after i deboned the chicken, i made a tasty stock of chicken bones, carrots & radish (happens to have it in the fridge) in crockpot overnight.

the cut chicken were marinated with 2 tbsp fish sauce, 2 tbsp light soy sauce & mixed with 1 tbsp corn starch for 1 -2 hrs.

i finely julienned 2-3cm of ginger, cut 1/2 large yellow onions, finely cut white part of spring onions, 1 cut chilli padi, and threw in some basil & fried in a tbsp butter + some oil. then added some minced garlic.

having a nice aroma & fragrance, i then added the cut chicken & fried.

then i added 2 cups of the chicken stock, 1tbsp oyster sauce & 1 tbsp corn starch, brought to boil & covered for 10mins (chicken pieces already deboned so cooked for shorter time).

then i removed the chicken pieces & left only the wings & reduced.

i off the fire & added 2/3 of the cut spring onions & mixed.

then i transferred to the aluminium tray & added the remaining spring onions.

i tasted. sauce, mildly starchy was very tasty, the chicken were tender & sweet. ^^

beehon mee with chicken

bee hoon mee with chicken

at newgate learning hub, we all helped to serve the bee hoon mee & chicken.

there were 80 plates & all were taken up.

there were more than a dozen volunteers including ourselves.

they had a sermon before the lunch at 1pm, & they have people to sit down with the folks for 15mins before lunch starts to talk & understand more about the folks.

this part is different from teban gardens CSC.

some NTUC canned food to take home

they also collected canned food courtesy of NTUC to give out free to the folks. very good! 4 times a month can mean fair savings for many.

Stir-fry Chicken with Ginger & Spring Onions – 6th Teban Gardens Community Meal on 19Feb2016

stir-fry chicken with ginger & spring onions

stir-fry chicken with ginger & spring onions

guess i can say this my first stir-fry chicken with ginger & spring onions also. but it’s just a common dish. i just have not cooked it this way before.

anyway cooking is just about making the food taste good (& looks good – generally not always if it looks good, more likely it will taste good).

this my 6th friday breakfast community meal at teban gardens community service centre (CSC).

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

stir-fry chicken with ginger & spring onions

i cut up 2 chicken. & marinated in 2 tbsp fish sauce & 2 tbsp light soy sauce in the fridge for 1 hr.

i also julienned 2-3cm of ginger, cut 1/2 large yellow onions, 1 cut chilli padi, and threw in some basil & fried in a tbsp butter + some oil.

stir-fry chicken with ginger & spring onions

when fragrant after few minutes, i added the cut chicken & fried.

stir-fry chicken with ginger & spring onions

stir-fry chicken with ginger & spring onions

the i added 1 cup of stock (chicken or vegetable stock), covered & boiled over medium/low fire for 10minutes.

i removed the breast meat & meat pieces w/o bones so they wouldn’t be overcooked, covered & cooked another 10mins.

stir-fry chicken with ginger & spring onions

stir-fry chicken with ginger & spring onions

then i added back the meats & the cut spring onions, and added 1 heap tbsp oyster sauce & 1 heap tbsp corn flour.

& reduced. the sauce should be just enough to coat the chicken pieces & not much more.

(My First) Ayam Pongteh – 5th Teban Gardens Community Meal on 12Feb2016

ayam pongteh

ayam pongteh

wasn’t sure what to cook for teban gardens community meal today.

this my 5th friday breakfast community meal at teban gardens community service centre (CSC).

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

ayam pongteh

ayam pongteh

my first 3 were pork dishes.

the last was the very popular red fermented bean curd cloud fungus mushroom chicken prepared by my helper.

so i thought maybe continue some chicken dishes.

also i wasn’t sure if there would be a breakfast today because of the chinese new year period. last evening i whatsapp R the centre executive director & she said they were having lo hei this morning to celebrate CNY.

they would still have bee hoon & porridge so if i do a chicken dish it would be fine.

ayam pongteh

ayam pongteh

i have never done an ayam (chicken) pongteh.

but i did my very first babi pongteh on 21nov2015.

so recipe would be just the same except that i substituted belly pork with cut chicken & also increased the quantity (this serving to 80-100pax).

ayam pongteh

ayam pongteh

so this time i used –

  • one-and-a-half 1.5kg chicken from sheng shiong
  • 10 chopped shallots
  • 4 cloves chopped garlic
  • 3 flat tbsp tau jeon (to taste)
  • 2 tbsp gula malaka (palm sugar)
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce (to taste)
  • 1 packet (10 pieces) taupok each cut to 4 strips
  • 2 x 4″ russet potatoes cut to 12 – 14 pieces

i fried the chopped garlic & shallots in 2 tbsp oil to soften & bring out flavour. then added tau jeon, fried for a while & added palm sugar.

i marinated the cut chicken in 1 tbsp dark soy sauce. then added to pan, fried & coated chicken with the paste. then added 3 cups water, 1tbsp light soy sauce, 1 tbsp dark soy sauce, the added 2 cut potatoes (about 12 pieces), boiled & covered.

i took out the chicken breast after 10mins & off the fire after 20mins.

i took out the sauce & added tau pok (i cut each square tau pok to 4 strips) to the sauce, let it soaked in the sauce & reduced. after tau pok achieved the right texture – soft & tasty but not falling apart, i added all back to the chicken.

ayam pongteh

ayam pongteh

i did this the night before, kept in covered pan in the fridge, & reheat over low fire the next morning.

ayam pongteh

ayam pongteh

obviously it would be better done on the same day.

anyway, the chicken was just excellent! so tasty & tender.

Red Fermented Beancurd Cloud Fungus Mushroom Chicken – 4th Teban Gardens Community Meal on 5Feb2016

red fermented beancurd cloud fungus mushroom chicken

red fermented bean curd cloud fungus mushroom chicken

my helper did a red fermented bean curd cloud fungus mushroom chicken腐乳云耳香菇鸡丁 today on 5.2.2016. ^^

this my 4th friday breakfast community meal at teban gardens community service centre (CSC).

i first started doing a community meal dish for teban gardens CSC on 8.1.2016.

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

red fermented beancurd cloud fungus mushroom chicken

red fermented bean curd cloud fungus mushroom chicken

this dish was especially popular today. everyone liked it, the residents, the volunteers alike. 🙂

red fermented beancurd cloud fungus mushroom chicken

red fermented bean curd cloud fungus mushroom chicken

my helper used the softer small cloud fungus, not the large thick black fungus.

she fried the soaked fungus & chinese mushrooms with the red fermented bean curd & sliced ginger to bring out the flavours. then added the diced chicken & cooked for 30minutes.

red fermented beancurd cloud fungus mushroom chicken

red fermented beancurd cloud fungus mushroom chicken

then she steamed in the steam oven for another 45mins.

it was a simple dish to do.

there are regular attendees for this teban gardens friday community breakfast, last week there were like 100 people, this week looks a bit lesser, also i had to take leave a bit earlier, but probably it would still be over 80.

great place for the residents & older folks to gather, have a good meal & get in touch a bit.

Black Bean Sauce Bitter Gourd with Mock Kurobuta (Pork Collar) – 3rd Teban Gardens Community Meal on 29Jan2016

black bean sauce bittergourd with fake kurobuta (pork collar)

black bean sauce bitter gourd with fake kurobuta (pork collar)

i did a black bean sauce bittergourd with sliced pork today on 29.1.2016. ^^

this the 3rd time i am doing a dish for the friday breakfast community meal at teban gardens community service centre (CSC).

the centre was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC.

i was told by A, the deputy executive director, that for the last 2 times, attendance were 88 & 82 respectively. today the crowd looked even more, so maybe it would be near 100.

black bean sauce bittergourd with fake kurobuta (pork collar)

black bean sauce bitter gourd with fake kurobuta (pork collar)

black bean sauce bitter gourd is a common teochew (& my cantonese friends said cantonese) dish & a popular dish at zi char stalls, very commonly with pork ribs or fish.

some examples –

  1. sliced fish with bitter gourd in black bean sauce at keng eng kee (KEK).
  2. pork ribs with bitter gourd at hong kong street (sin rong) at blk 325 clementi ave 5.
  3. teck kia fish (leather jacket) with bitter gourd in black bean sauce at ah orh at jalan bukit merah.
  4. black bean bitter gourd pork ribs at 香港街珍记 – Hong Kong Street Chun Kee Commonwealth Crescent

the dish can also be done standalone just as a spicy black bean sauce bitter gourd at many teochew muay stalls. i also do that for my homecooked teochew muay makans for friends. 🙂

black bean sauce bittergourd with fake kurobuta (pork collar)

black bean sauce bittergourd with fake kurobuta (pork collar)

why i called it “fake kurobuta”?

recently 6 of us RI friends toured hong kong together, a “hong kong eat & hike adventure 10 to 14jan2016”.

one interesting & enjoyable dish was the black beans bittergourd with kurobuta we had at yue bo 鱼宝食馆.

after returning to singapore, i got my friends together to reminiscence/relish the enjoyable food fun moments in singapore, so i recreate the dish. ^^

black beans bittergourd with kurobuta

yue bo 鱼宝食馆’s black beans bittergourd with kurobuta

yue bo 鱼宝食馆 used kurobuta which was unusual. most eating places with pork ribs, sliced pork, fish.

the dish was quite well done. kurobuta was marbled & tasty.

black bean sauce bittergourd with fake kurobuta (pork collar)

black bean sauce bittergourd with fake kurobuta (pork collar)

i used a frozen pork collar (S$9.90/kg from sheng shiong) instead of lean pork for the marbling to give amore tasty pork.

pork collar of course has more connective tissues (collagen) & is tougher. so i placed it (in a water bath) in a 90degC oven for 2 hrs to help convert the collagen to flavourful gelatine.

i did all these the night before & kept the pork in the fridge.

black bean sauce bittergourd with fake kurobuta (pork collar)

black bean sauce bittergourd with fake kurobuta (pork collar)

next morning, i was up early. i cooked the bitter gourd (which had also been cut, washed & soaked in a salt & sugar brine so it would not be bitter) the usual way.

then i cut the pork collar in very thin slices…by cutting very thin, we severe the connecting tissues & thus tenderise the meat.

it was a very tasty dish & suitable for these community meals – no bones, meat were very tender & tasty, & so was the bitter gourd.

Bean Sauce Pork Cubes – 2nd Teban Gardens Community Meal on 15Jan2016

last week, i started bringing some dishes t0 teban gardens community service centre (CSC). ^^

they do free friday breakfast & a halal monday lunch every week for the residents.

last week i brought some char siew & also miso belly pork. they all liked it as it is always good to add some new dishes & variety.

actually the CSC is very well run & they already have a very good breakfast going.

for this week, i decided on black bean sauce pork cubes. i was away with my RI buddies (6 of us) in hong kong & only back home last evening, so i asked my helper to help me prepare. my friends love the usual spicy version using pork ribs.

for today, i used 2kg pork cubes (boneless) and asked my helper not to add any chilli. i tasted the sauce – still very nice & not spicy.

recipe is simple, just the pork cubes & the lkk (lee kum kee) black bean sauce. 🙂

A Joyful Friday Breakfast @ Teban Gardens Community Service Centre on 8Jan2016

about 60-70pax came for free friday breakfast

about 60-70pax came for free friday breakfast

a close friend, my weekly running kaki (mate), and i wanted to see where we can help out a bit.

we had a practice session of cooking & bringing food over for 28pax RI friends at this friend’s residence recently on 3.12.2015.

idea, apart from having fun eat-together ourselves, was: 🙂

  1. when we get together again in the new year 2016, maybe many joining future eat-togethers will be in the mood to make some small donations to a beneficiary charity.
  2. some of us who loves cooking (& there are many among us) may offer to cook community meals for some groups of residents…

we did not have to look far as many of our good friends are already doing community meals for groups of residents for many years.

we went to take a look at teban gardens community service centre (CSC), which was started in 2002 after much effort & challenge by our RI friend who is a pastor of pasir panjang hill brethren church (pphbc) which owns & runs the CSC. they have a weekly free friday morning breakfast & another monday halal lunch which cater to between 60 & 80 people. of course the CSC does a host of other important family & community services like tuition centre etc (which 1 of our RI friends may be volunteering) & also projects.

the food is already catered for from the hawker centre next to the CSC, and the centre executive director R is herself a very good cook & we had opportunity to enjoy her excellent fish maw soup on more than one occasions we were invited to pphbc events etc.

R thought that the residents would enjoy having 1 or 2 homecooked dishes added to the meal at times.

+++++++++++

so today on 8.1.2016 i did 2 dishes, a char siew & miso belly pork, packed them in alumium foils & tranported over to teban gardens at 8.40am.

my friend was already there. the food, including fried beehoon & hum chee pen were on the table. the friendly centre staff helped to transfer the char siew & miso belly pork to serving aluminium trays & served the residents as they queued for the food.

today i made a very tender, moist, tasty char siew. ^^

the key thing with char siew & miso belly pork (well with any food!) is taste & texture.

i had a simple excellent char siew marinade (recipe on my blog). i use pork collar for the more marbled texture & flavourful meat when it is slow braised.

since i was having the miso belly pork in the oven at 90degC for 6hrs, i added the char siew during the last hour (at 90degC) & left it in the oven in residual low heat.

the char siew was then roasted in 250degC preheated oven for 20mis, turning & basting just once to coat the sauce.

& many of the residents especially loved the miso belly pork.

90degC is the optimum temperature to convert connective issues to flavourful gelatine.

the result of the low temperature (90degC) gentle braise was a very tender belly pork that was not overbraised & still holding the shape & bite.

& it was so easy to do – just scald to remove scum, marinate, put in a oven dish with tight cover so no liquid loss & drying out.

& 6 hrs later, voila!

i placed the belly pork in the fridge overnight after it cooled down, so that it is easy to cut cleanly.

the next morning, sliced & wrapped the sliced pork in aluminium foil & placed in 40degC oven for 1/2hr or more, then transport. and it came out nice & slightly warm.

fried beehoon

fried beehoon

the fried beehoon looked good.

R was busy serving it & some water to a few residents who were infirm, so i helped out a bit.

the quite old chappie in red helmet came in battery motorised “scooter”. R was chiding him to be careful! haha! 🙂

centre staff serving the residents

my pastor friend was talking to me about some of the centre staff. quite a few including a young lady, want to be missionary.

about 60pax came for free friday breakfast2

centre ED R getting the residents to share monthly birthdays & cake

i think A, R’s assistant want to go cambodia or laos.

there is another lady not present today who bakes a cake every month for the folks. R has the residents celebrate monthly birthdays for those whose birthdays fall on that month. i guess she does that on the first week of each month. 🙂

the cake i took, & it was an excellent cake, not one i can make at the moment. fluffy sponge cake with cherries compote. nice! 🙂

we really enjoyed this opportunity! as i told my other good friend afterwards, felt like everything runs like clockwork we only there to “ka chiao” (disturb or burden). but it was fun all round for the residents & for us! for me! ^^
