went with wife to watch the movie “spectre” at gv grand on 7.11.2015.

quite boring really…the opposite of “the intern”, no engagement, no development, no tension/expectations/relationships/chemistry among the cardboard characters..no anything…

like i was telling a friend on facebook, as boring as terminator or a 1970s chinese kungfu movie…fight fight fight fight fight..nothing in between…

after movie, we a bit “sian” to go zion road food centre, anyway not much to eat there also (don’t think much of zion road char kuay teow even though it is PM’s favourite), & didn’t feel like driving elsewhere for makan, so went down one floor to crystal jade lamian xioalongbao for a quick bite…luckily just waited 5mins at around 9pm.

we ordered xiaolongbao小笼包, saliva chicken 口水鸡 & beef brisket noodles 牛腩面.

somehow this evening the same dishes didn’t seem as shiok as that at hollandv.

the briskets were quite tasty, but both the briskets & overall taste of the beef brisket noodles 牛腩面 was NOT as good as that at SICC, i think quite a bit NOT as good, not just marginally.

also both this beef brisket noodles 牛腩面 & SICC’s & in fact all the beef brisket noodles in singapore do not use the 崩沙腩 which i love in hong kong’s 牛腩面, the belly cuts they used in the hong kong beef brisket noodles.

they have layers of collagen 胶 made them very flavourful & gelatinous when braised.

these were the cut of briskets which my friend bought in chinatown market, which i also did after learning from her.

she brought her fabulous 清汤牛腩 to my place for a for a homecooked 16pax 17-course dinner on 26.8.2015.^^

the saliva chicken 口水鸡 always quite good at the hollandv outlet that we usually go.

here it was ok too but somehow this evening like not as shiok as expected.

you can see the soup inside the xiaolongbao小笼包. it was very tasty & flavourful as always, the skin thin & the fillings very tasty.

we ordered a second tray of xiaolongbao小笼包.

dinner was S$34nett for 2pax after DBS card 10% discounts.

somehow the food this evening just did not feel so shiok, don’t know why.

had dinner at tian bao restaurant (天寶閣) at taka with wife & daughter on 18.4.2015 but wasn’t impressed.

i had one S$50 groupon voucher left expiring on 30.6.2015, so not much choice than to go with sis for dinner on 28.6.2015.

the placed had 2 seatings 5.30pm & 7.30pm. it was quite packed and this was a monday. everyone was using the vouchers. i wonder how traffic be like if no vouchers, but groupon vouchers tend to keep reappearing anyway.

we ordered the saliva chicken口水鸡 – S$8.80. it was pretty good actually.

i would say crystal jade lamian xiaolongbao version had a lot more kick.

this one was a large helping. chicken was good, chilli was mild but still quite flavourful especially taking a little together with the chicken. maybe my own saliva chicken口水鸡 standard.

i had soup dumplings海味抄手the last time & it was good, so i ordered it again.^^

never knew there was a different version than spicy dumplings 红油抄手, which was the usual we had at crystal jade lamian xiaolongbao.

there were 6 dumplings. dumplings skin was smooth & meat filling was good.

we were deciding between braised beef & bamboo shoot & this dish. server said this dish was more popular. but it was a very average dish at S$13.80.

can’t really say the dish was not good. it was quite average if competent, nothing much to say about the tofu. & in comparison would be the worst dish we ordered.

again the spiciness seemed to have been moderated, but it was still tasty & flavourful. i liked it!

i did not actually remember it, but somehow i seemed to have gravitated to ordering the same item.

it was refreshing. a small dish at S$3.80, i guess not cheap or expensive in particular. 🙂

i find the pricing generally far more expensive than a good restaurant like crystal jade e.g. 小笼包 S$9.80 (i.e. w/o the groupon discounts). guess problem with such a place is always what dishes one orders. this time we ordered mostly good dishes we liked, except that we still had a lemon (the deep-fried tofu dish).

the dinner for 2pax came to S$30.80 using my groupon vouchers (S$25 for S$50 voucher value). at this price i would say the food was pretty good!^^

went for a light lunch with wife & daughter @ crystal jade lamian xiaolongbao at hollandv yesterday on 11.1.2015.

we ordered the usual xiaolongbao 小笼包. it was good as usual – great soup & tasty fillings, skin that held together & not thick. we added a second order later. ^^

ordered the other favourite spicy dumplings 抄手 too. today this was not too good. the sauce seemed dilute, overall not flavourful enough & not as attractive as canton paradise.

soemthing new for me was the beef brisket ramen 牛腩拉面. happy to note that this was much better than i expected. the beef brisket 牛腩 was really good. there was a bit of beef tendon as well.

this my daughter’s favourite. i didn’t think it was better than that served in sicc though. i used the spicy sauce from the spicy chicken 口水鸡 & the noodles were really nice & flavourful with the sauce.

a relax lunch on a quiet sunday. 🙂

had a homecooked 11pax lunch for my RI buddies on 15.10.2014. the last we had was a 10pax kueh chap lunch on 17.9.2014. 🙂

& this lunch highlights-

1. sio bak (crackling belly pork) from a friend
2. “tunglok” big prawn noodles (in golden broth)
3. vietnamese street food – chargrilled pork neck with cold beehoon & fish sauce (forgot my mint leaves & basil leaves)
4. banoffee pie (very 1st try)

like the last time, a friend brought his 成名 renown supergood sio bak (crackling roast belly pork) – this time the crackling was less than the last. i told him he made me gave up on sio bak & saved me from a lifetime of unfulfilled tedium (making sio bak unsuccessfully)..haha! 🙂

my motto – why try so hard when someone can do better? just invite him to bring lor! 🙂

big prawn noodles in golden broth – this should be served last in a course dinner, before dessert. lately i decided to try to serve all the food buffet style instead of as a course meal. it is not always possible but many dishes can be adapted. as this has to be served hot, we took this first dish first. 🙂

the key was the golden broth. it was my own recipe emulating the lobster noodles at tunglok (above). 🙂

from the feedback everyone loved this dish.

the 1/2 poached chicken – 白斩鸡saliva chicken – 口水鸡 were now a standard dish. it was easy, require little effort to make, and both were very tasty.  i brined the chicken in sugar & salt for 48hrs before poaching on the day.

miso salmon belly was another new experiment.  i created this new miso marinade recipe & was not sure if i would serve it for lunch. it turned out to be an excellent dish. my wife brought some to office for her packed lunch & all her colleagues liked it. & all my friends at lunch liked it! 🙂

vietnamese chargrilled pork neck with cold beehoon. i did this the second time. first was for 3-4pax, so this first time for 11pax.

i bought mint but forgot to serve both the mint & my homegrown basil!

& i forgot to make the all important fish sauce mix beforehand to serve together, so had to make 1 batch then a second batch while having lunch.

anyway the guys all liked it. although our self-proclaimed vietnam expert was actually clueless when it came to assembling the dish. haha! 🙂 this a dish that you feast on sitting on a very low stool next to a very clean vietnam street vendor!

my help made a nice garlic fried romain lettuce which everyone liked.

the banoffee (banana toffee) pie was the very first virgin attempt!

the guys walloped the whole cake, though a few including me, felt it was kind of sweet though ok to eat. anyway i made another one the next day with 1/2 the toffee & 50% more bananas, & it was an excellent very well balanced cake. 🙂

i can do a very good poached chicken, so like many dishes, getting the spicy sauce right is the key.

i decided to use a modified 蒜泥白肉 sauce recipe, as it was a dish i served several times & everyone liked. 🙂

i did without all the additional stuff like cinnamon bark, clove, anise seeds, cumin, and just added chicken stock, sliced ginger, chopped shallots, chopped garlic, brown sugar & sichuan spicy chilli oil, looks something like this-

  • 1 cup stock (chicken stock or from the pork)
  • 2 tbsp light soy sauce (80ml)
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 cm sliced ginger
  • 2 tsp chopped garlic
  • 2 chopped shallots
  • 2 tbsp sichuan spicy chilli oil

the sauce was delicious, mildly sweet & delivering the spicy punch.

comparing with crystal jade version (above photo), it looked just as potent but actually not as 麻辣 as crystal jade version which is itself not very 麻辣. guess i missed the toasted sesame part (i did have coriander for garnishing though not in the photos).

though some like me will take it even spicier, the current preparation is easier on the palate for most. & many friends had enjoyed the 蒜泥白肉 in no small part because of the sauce. 🙂
